1 lb Basic American Lentil Penne (481330), prepared, cooled 2 cups Broccoli Florets (360065), chopped 2 cups Quartered Artichoke Hearts (601340) 1 cup Capital City Tomato Medley (362155), halved 1 cup Capital City Seedless Cucumber (360483), sliced, quartered 1 cup Blue Cheese Crumbles (903870) 1 cup Ventura Hidden Valley® Golden Italian Dressing (630400) 1-1/2 cup Roasted Chickpeas (see recipe) PREP | Toss all ingredients together except chickpeas. Garnish with the chickpeas. YIELD | 12-16

2 cups Bush’s Low Sodium Garbanzos (601060), rinsed, drained, dried 2 Tbsp Roland Pomace Olive Oil (620390) 1/2 tsp McCormick Ground Cayenne Pepper (472571) 1 tsp McCormick Garlic Salt (472361) 1 tsp McCormick Dark Chili Powder (472211) 1 tsp McCormick Ground Cumin (472291) PREP | Preheat oven to 400°. Toss ingredients together. Pour onto a baking sheet. Roast for 10 minutes. Toss. Continue to bake for another 10 minutes. For crispier chickpeas, toss and continue to cook another 5-10 minutes. Remove from oven. Cool. Store. Tip: If you want to keep them crispy, do not seal the container. YIELD | 12-16
