Season the loin with salt, pepper, and granulated garlic. Place into heavy duty foil, keep the top open, mix the honey and minced garlic. Pour over the loin, coating well. Seal the foil. Roast until internal temperature reach 100-110⁰ degrees. Open the top of the foil, continue to roast util internal temp reaches 145⁰ Approx. 1 hour. Ovens will vary. Remove from oven and let rest for 15-20 minutes before slicing.
