PREP | Convection Oven. Preheat convection oven to 325°F. Remove plastic. Place product on roasting rack coated with vegetable spray. Cook uncovered for approximately 2 hours. Remove from oven and let stand 10 minutes before slicing. For immediate consumption. Place a slice of prime rib between leaf lettuce, place on a microwavable plate, cover with plastic wrap, heat in microwave until desired temperature. Microwaves will vary.

MUSHROOM PEPPERCORN SAUCE

1 each Container Demi Glace (90472707)

48 oz Warm Water

8 oz Red wine, dry

1 cup Heavy cream (904161)

2 Tbsp Cracked black pepper (472411)

3 lbs Fresh mushrooms (360940) sautéed

PREP | For best results use Masters Touch Demi-Glace Sauce Concentrate at room temperature. Mix 13.6 oz (386 g) Sauce Concentrate with 48 oz. water, 8 oz. red wine as follows: Bring water & wine to a rapid boil; reduce heat. Immediately add 1 jar of sauce concentrate and mix with a wire whip until sauce is smooth and thickened, remove from heat. Add the heavy cream and mushrooms.

2 lbs Beef tender tips (309890) As needed Salt, pepper, garlic powder 1 1/2 lbs Root vegetables, your choice. Prepared

PREP | Season and sear the beef tips, continue to lightly cook until tender, add 2 cups of the sauce, cook for an additional 2-3 minutes. Serve with root vegetables.

YIELD | 4

MUSHROOM PEPPERCORN SAUCE

6 oz Brown gravy mix (504010) 1/2 bag

48 oz Warm Water

8 oz Red wine, dry

1 cup Heavy cream (904161)

2 Tbsp Cracked black pepper (472411)

3 lbs Fresh mushrooms (360940) sautéed

PREP | Pour warm water (100°F/38°C), wine into a saucepan. Gradually add 1/2 bag (6 ounces) of mix to warm water, whisking thoroughly. Bring to a boil (212°F/100°C), stirring frequently. Reduce heat and simmer 3-5 minutes. Add the heavy cream, peppercorn, and mushrooms. Simmer 2-3 more minutes.

RASPBERRY FUDGE CAKE HEARTS

PREP | Bake brownies as directed. Cool on a rack, then place in freezer for approximately 30 minutes. You’ll want to have them start to freeze but not fully frozen. Pull from freezer. Using a heart shaped cookie cutter, cut brownies. Set aside the hearts. Take two of the heart brownies. Spread Raspberry Cream Cheese Filling on one of the hearts. Top with second heart. Lightly press together. Chill for 1 hour before glazing with icing. To glaze, heat icing just until it runs off a spoon. Place hearts onto a cooling rack or screen. Spoon icing over hearts. Let set up. Chill until ready to serve. Hold up to 4 days in cooler. Garnish with dessert sauce, whipped topping, raspberries and/or chocolate shavings.

RASPBERRY CREAM CHEESE FILLING

1 lb Kraft Heinz Philadelphia® Cream Cheese (903718)

1/2 cup Lawrence EZ Squeeze Raspberry Fruit Filling (754460)

1/2 cup Powdered Sugar

PREP | Mix all ingredients together until smooth. Chill until starts to stiffen.

PREP | Combine shrimp, olive oil, lemon juice, salt, pepper and garlic powder. Let sit for 15-30 minutes. Remove shrimp from marinade. Grill until cooked through. Brush zucchini with olive oil, season with salt and pepper and grill until starts to soften and there are nice grill marks. Serve shrimp on top of Monterey Sunrise Blend along with tomatoes and zucchini.
