Over $372,000 Has Been Awarded to Our Graduates For 57 years the Napili Kai Foundation has strived to preserve the Hawaiian culture by passing it on to Maui’s keiki through the teaching of dances, language, history, arts and crafts of Polynesia. Our keiki perform in the weekly keiki hula show at the Napili Kai Beach Resort and participate in travel every 2-3 years. This program is available free of charge to keiki ages 6-18. Maile's Hawaiian Pi Pancakes Recipe & Photo by Maile Crewdson

Inrediens

• 2 cups all-purpose flour or gluten-free flour of choice • 1 tbsp baking powder • 3 eggs (or 3 flax eggs, if vegan) • 1 cup poi (homemade cooked taro root mashed with water to desired consistency, or store-bought) • 1/3 cup coconut oil, melted, room temperature • 2 tbsp sugar • 3/4 cup milk (whole, soy, or coconut milk)

Direcins

1. Whisk flour and baking powder together. 2. In a separate bowl, beat eggs. Add in poi, melted coconut oil, sugar, and milk and stir to combine. 3. Make a well in the center of the dry ingredients and pour in your egg/poi/oil/sugar/milk mixture. Stir to combine well, but do not over mix. Set aside. 4. Heat up a greased cast iron skillet or griddle. (You can use more coconut oil here like I do, or vegetable oil or melted butter.) 5. Drop a few heaping tablespoons worth of batter onto your greased pan and cook until tiny bubbles start to form around the edges and in the center of your pancakes. Now, flip them and cook the other side until uniformly cooked inside. 6. Serve warm with maple syrup, coconut syrup, or homemade lilikoi curd. Enjoy!

The Mana of Community BY KALIA KELMENSON

As an island chain isolated in the middle of the Pacific Ocean, we can lean into this idea of mutual aid as a practice that we carry on in our daily lives. Here are some ideas to consider:

I

n the days and weeks following the wildfires of August 8, the community of Maui activated to support those impacted in a deep and meaningful way. Without waiting for government organizations to step in, citizens of our island home sprang into action as word spread through text messages, conversations, and social media about what was needed. With roads closed, ocean craft became the lifeline between a community that had lost everything and the rest of the island who wanted to help. What we experienced and participated in is an extreme example of the idea and practice of mutual aid, built on the devastation that reverberated across our island. Mutual aid is differentiated from charity by an emphasis on standing in solidarity with others. It emphasizes the empowerment of individuals to give what they can and to receive what they need. Many groups such as Pacific Birth Collective and Maui Rapid Response offered this kind of support in the weeks following the fires. Hāmākualoa Herbal Collective, where herbal remedies and support are offered freely, shared that “volunteers work in solidarity, never charity, maximizing joy while remaining resourced to sustain and build on this work.” GlobalGiving.org emphasizes that mutual aid creates networks of care and generosity to meet the immediate needs of our neighbors.

Listen. Ask your neighbors or community what they need. It’s easy to assume what people need, but in order to truly understand what someone needs, it’s vital to listen with an open heart and mind to what people say they need. Their request might be radically different than what you had in mind. Connect. Get to know your neighbors. Reach outside of your normal social circles to understand what others are going through. Offer your expertise and unique gifts in a way that benefits those who typically lack access. Recognize that systems of power and inequity are often unseen barriers that can only be overcome by bringing them to light. Prioritize well-being. You cannot stand in solidarity with others if you cannot continue standing. Maintain a sense of the bigger picture and recognize when you need to resource yourself. Ask for help when needed. The flow of giving and receiving is what allows mutual aid to be sustained. The structures that exist in our society often divide us from each other and from ourselves. Mutual aid reminds us that we can take our future into our own hands as a community and that we rise together. The Magic of Routines & Rituals BY KIEGAN BLAKE, O.T.

All children need a sense of safety and security to thrive. We can think of this as creating a ‘container’ for your child with a stable base and secure predictable outer boundaries. Your child’s job is to push against those boundaries initially, just to see where they are, and once found, they can feel safe and secure. Creating consistent and predictable daily routines is a key part of this. However, what if your family is displaced, or it is in a time of transition, where nothing seems to be predictable? The key is to use small daily rituals to create a consistent base of security for your child. The morning and bedtime rituals will be the bookends of predictability in your child’s day, even if you are in a new environment. Here are ideas for using routines to create security for your child: • Stay emotionally connected with your child, through affection and shared playful interactions and activities. This is the emotional “glue” for your child that creates a sense of safety. • Create a morning ritual that involves sweet affection to start the day with connection and then a small predictable sequence. You can strengthen the ritual with a story, song, or a stuffed animal that will make the ritual uniquely yours. • Create a bedtime ritual that involves snuggles for connection, a story, back tickles or massage to relax, and something that smells like you to give your child comfort.

• Try to maintain a routine for eating main meals. You may use a dedicated blanket to sit on or use a specific dish and cup. You may turn on a specific light, or give thanks as part of starting your ritual and put dishes/rubbish away as an ending ritual. • Create ‘quiet time’, ideally after each meal. This is the natural time your child’s body digests food and will be ready to slow down. • You can set the stage for calm rituals by choosing a quiet area, dimming the lights, and talking in a low voice. You may do big breaths together. • Create a cozy space (indoors or outdoors) where your child brings their favorite pillow and blanket. Have your child choose one or two ‘quiet activities’ such as looking at a book, playing with a quiet toy, or quiet singing. These daily rituals will be the anchors for your child to feel safe and secure even amidst uncertainty. Inspiring Healthy Eating Habits for Kids BY MARINA SCOTT, CHOICE HEALTH BAR

Choice Health Bar recently launched a kids' menu featuring nutritious and organic, plantbased options for kids. As always, the meals utilize locally sourced ingredients wherever possible and offer healthy energy in tasty recipes that kids love. Maui mom Cassie Johnson is a Registered and Licensed Dietitian who currently works with Kaiser Permanente teaching a plant-based eating class. She is also a longtime Choice customer. Cassie teamed up with Choice Health Bar to help with some tips for parents seeking healthy diet habits for the entire family. “Ensuring our children are eating healthy nutritious food is so important to help them grow healthy and strong,” states Johnson. One of her top tips? Modeling healthy eating habits for kids, ensuring our children see us eating and enjoying wonderful, fresh, whole foods each day. "As parents, it is our responsibility to choose what to serve, when, and where, but it is important to let children decide how much and whether or not they eat it. We cannot force them to eat anything and ultimately, they need to choose healthy eating for themselves." Choose Plants Over Processed Foods Focus on whole foods that are unprocessed or processed as little as possible. It can be helpful to think of the fruits or vegetables first when planning meals and allowing them to be the star of the show. Try to offer fruits and vegetables at least 5 times on most days. Eat the Rainbow Utilize a rainbow of different colors from fresh seasonal fruits and vegetables each day, as each color contains its own unique set of

phytonutrients (plant nutrients). Children can get involved by helping to monitor how many different colors are attained each day. Sourcing the Freshest Ingredients, Together Bring your kids to the farmers market, farm, or store with you and ask for their help in picking out which fruits and vegetables they would like to try. Think about the goal of eating a rainbow and have your child help to choose produce from each color group. Plan Your Plate Rhythm and routine are so important for children, and this applies to meals as well. Cassie advises setting a regular snack and meal schedule with 3 meals and 2-3 snacks per day. Water should be offered in between meals and snack times. Allowing for flexibility makes this routine more realistic of course! Alexander Academy Performing Company presents the holiday tradition, The Nutcracker. This full-length ballet features the beloved music by Peter Ilych Tchaikovsky, with artistic directors Absalon Figueroa and Amelia Nelson. Costumes by Jennifer Oberg and her Sewing Hui and Alexander Academy. Two shows Saturday, December 16th at Castle Theater. “I am incredibly excited and inspired to present our third annual production of The Nutcracker!” says co-artistic director Absalon Figueroa. “It has been exciting to restage our ballet to fit the pre-professional level of our dancers and challenge them as artists.” Executive Director Danelle Watson Keenan reflects, “The music, dancing, costuming from the Nutcracker warms my heart and is part of the charm I feel each holiday season. This year we are excited to present at the MACC and see the magic on a large stage. I am continually proud of our dancing ‘ohana.” The two-act and three scene ballet tells the tale of young Clara who befriends a Nutcracker that comes to life on Christmas Eve and wages a battle against the evil Mouse King. The Nutcracker turns into a prince and takes Clara on a journey to the Land of Snow, an enchanted forest wonderland where they are welcomed by dancing snowflakes. The prince

escorts Clara to the Land of Sweets where they are greeted by the Sugar Plum Fairy. The prince then tells her about their daring battle with the army of rats and she rewards them with a celebration of dances. Roots School Completes Renovations Roots School in Ha‘ikū recently completed its $1.3 million Growing Roots Capital Campaign. This campaign made it possible to renovate Roots’ entire school building, including four classrooms, administrative offices, restrooms and front entrance and hallways. The building was originally constructed in 1952, with no major renovations since then. The final phase of the Growing Roots campaign was completed in time for the beginning of the new 2023/2024 school year. This project was supported entirely by generous donors including the school’s angel donor, Nuestro Futuro Foundation.

Other generous donors include the Atherton Family Foundation, Samuel N. & Mary Castle Foundation, Bank of Hawaii Foundation, First Hawaiian Bank Foundation and an Anonymous donor. Roots School has been serving Maui keiki from preschool through 6th grade for 17 years.

Navigating Difficult Conversations with Your Keiki BY FATIMA M. IMARA, MD, BEHAVIORAL HEALTH, PACIFIC PERMANENTE GROUP

D

uring a time of overwhelming loss, our kids look to us for comfort and support. Whether they were directly impacted by the fires, or they are hearing about it in the community, they may be affected emotionally in different ways. It can be challenging to talk with children about the disaster while we’re still processing it ourselves. The important thing to know is that you don’t have to handle these conversations perfectly. By creating a safe and supportive environment for kids to talk and ask questions, you can give them the support they need during these situations. A lot of people wonder how much information to give keiki. The best approach is usually to follow their lead. Make sure they know that it’s OK to ask questions. Then, answer truthfully. You can keep your answers age-appropriate — older kids might want more details, while younger ones may be satisfied with a simple explanation. Avoid making up information or white lies, since this can damage trust. Be honest, even if the news is hard. Children often personalize situations and may worry about their own safety, even if they aren’t in the affected areas or the danger has passed. You should reassure them - but be realistic. While you may not have all the answers, let them know you are here and doing everything you can to take care of them and keep them safe. Acknowledge and validate their feelings and let them know it’s OK to feel scared, sad,

or upset. It is also a good idea to identify other trusted adults to whom your children may look for support. Along with the tragedy, it can empower children to highlight stories of how people are helping or supporting affected families. Talk about the many ways people are being brave, kind, and generous amid the disaster. Children may also feel empowered by contributing to their community in small ways, for example, donating toys or books to the relief effort or creating artwork for first responders. Re-establishing home routines, activities, and cultural and religious practices that can be done together as a family also helps to restore a sense of normalcy and safety. Some kids may not want to talk about the fire, and that’s OK too. Don’t pressure keiki to discuss their feelings before they’re ready. Instead, you can offer other opportunities to express themselves, such as drawing, writing stories, or playing make-believe. Finally, be gentle with yourself. Remember that children watch adults and learn from how we respond to scary and traumatic events. So take time to process your own feelings, reach out for support, and take care of your body with extra rest and healthy food while you get through this difficult time. Transforming Trauma Together BY KALIA KELMENSON

Trauma lives in our bodies. Here in Maui, whether you experienced trauma directly or indirectly, residues of that experience still echo through your nervous system and your tissues. Reaching out to a trained professional after a traumatic event is crucial, especially when the effects feel overwhelming and all-consuming. There are practices that we can bring into the daily rhythm of our lives that can begin to release some of the after-effects from our system. Try these practices with your kids. No need to explain why you are doing them unless they are curious. Bring a sense of lightness and play and you will all feel like a weight has been lifted. Soft Belly Breathing Sit comfortably, releasing your weight into the sensation of gravity. Let yourself feel fully supported by whatever is beneath you and relax a little more into that feeling. Close your eyes if that’s comfortable. Allow your belly to be soft as you slowly inhale through your nose and exhale through your mouth. Say to yourself, or out loud, “soft” as you inhale and “belly” as you exhale. Repeat for as long as your keiki will

sit still. If you are practicing alone, you might include a slow body scan and set a timer for 5–10 minutes. Shaking and Dancing Moving your body is a way to break the pattern of holding and carrying the tension. Let your knees be soft, your arms hang. Begin to shake and bounce your body. Let your head go and your jaw release. If sound wants to come, let it out. Keep going for 6-8 minutes. It can be helpful to have some rhythmic music to shake and bounce to. Then, stop the movement and notice your breath as it moves through your body. Be still for a minute or two. Play a song whose words inspire and have a fluid quality. Let yourself move freely to the music. “Dancing” is a relative term, and you can choose to use it or not, but don’t let yourself be confined by any ideas of how it “should” look. Just let your body move to the beat of the music. When the music stops, again let yourself be still and relax. You might want to invite your keiki to talk about how they feel, or you may want to journal what happened to you. These practices were developed by James Gordon, MD through his work with The Center for Mind Body Medicine. His book Transforming Trauma: The Path to Hope and Healing shares more practices, and he has many more free resources online at cmbm.org.

Making Space for Grief Holidays can bring joy and the familiarity of cherished family customs, but for those mourning the death of a loved one, holidays can become a source of stress, isolation, and sadness, particularly for children coping with grief. This year’s holidays may be made harder because of the death of a parent, a sibling, a teacher, or a tutu, or the general feeling of loss that lingers from the disaster. Many may enter the holiday season with uneasiness wondering how to celebrate this first holiday without their special someone by their side? Grief for children is normal and with support, children can adapt positively to their new feelings. Parents should keep in mind what your kid can handle. In situations of suicide or traumatic death, sharing some details and leaving out others may make sense. It takes time to adjust to grief, but if your child seems sad, depressed, or agitated over an extended period of time, it is fair to seek guidance from your doctor or a counselor on ways to help them cope. (Resources: https://nkoemaui.org/resources/) Ignoring a person’s death or being silent about it will not help the family adjust to the death. Deal with grief during the holidays head on, by planning ways to include space at the holiday table for conversation and memories about the person who died. Stories about that person, their favorite foods or activities can draw children out to know that it is safe and encouraged to include their special someone in this new way, integrating their loss into the new fabric of the family table.

Other ways to recognize the person who won’t be there this year include: working together as a family to create a space at the table to honor the person who died, creating a memory box of drawings, photos, stories and memories of the person, pulling out objects that person gave or cherished and discussing memories. All of these activities can have a beneficial impact on the whole family by encouraging healthy ways for your children to have a conversation about their person in a safe and comfortable family atmosphere. Most often we hear: “Maui families are strong and we don’t need to dwell on sad emotions or talk about our feelings to get through this.” It is undeniably true that Maui families are strong. As a community, we need to shift the dialogue to recognize that while yes, Maui families are strong; it is also strong to talk about grief, it is strong to talk about your feelings and it is strong to make space for your keiki to talk about their feelings as well. What is Torticollis? Congenital muscular torticollis (CMT) is a tightening of a muscle in the neck, called the sternocleidomastoid (SCM) muscle. The SCM muscle helps us move our head to the side bending in one direction and rotating in the opposite direction. Tightening or shortening of the muscle on one side of the neck may result in a head tilt or preference for the infant to look to one side. This can lead to plagiocephaly, or flattening of the head, due to prolonged pressure on one part of the head. The exact cause of CMT is unknown. Torticollis may be present at birth or can be acquired during the first few months of life. Possible causes include: • Breech presentation or the fetus’s position in the womb • Long body length • Lack of space in the uterus, with multiple fetuses (twins, triplets, etc.) • Vision problems • Remaining in one position for prolonged periods Symptoms of torticollis and/or plagiocephaly: • Preference to look in one direction • A consistent head tilt in one direction • Flattening of the head • Difficulty turning head in both directions • Trouble breastfeeding on one side • A small lump felt in the neck Prevention • Tummy time (at least 60 minutes throughout the day) • Limit the use of containers, such as bouncy swings/seats, jumpers, exersaucers, car seats, etc. (up to 10-15 minutes 1-2 times/day). • Vary positions that your infant is in (tummy time, side-lying, baby wearing, supported sitting)

• Modify the environment (i.e. crib location, changing table, play mat) to encourage the infant to turn their head to the nonpreferred side • Turn their head to the non-preferred side when they sleep • Alternate sides when breastfeeding • Encourage your baby to turn their head in both directions when tracking toys Treatment If you have concerns that your infant has torticollis or plagiocephaly, reach out to your pediatrician. They can refer your child to physical therapy. Early treatment (especially before 6 months of age) will often result in better and faster outcomes. The earlier the better! If torticollis is left untreated, infants can develop a range of motion limitations in their neck, physical asymmetries, asymmetrical movement patterns, motor delays, strength imbalances, balance impairments, and visual problems. Luckily, it is treatable and there are many ways we can encourage appropriate development! Finding a Place of Refuge

R

eaching back into her childhood memories, Maui mom Kayla Hoku Kahalewai Shaw can’t remember a time when her parents weren’t giving everything they had to the community. She said, “Someone would come by and ask my dad for dive gear. He’d always just give. Then that same braddah would return with fish for our cooler.” Her parents would host sports teams and school groups from other islands and they in turn would help take care of the land during their stay. The reciprocity came naturally with no asking for a return or exchange. When the fires devastated Lāhainā in August, Shaw’s extended family evacuated but stopped at Honolua Bay to gather their bearings. For five generations, the West Side was their home. After the trauma they endured, it was also important for them to stay together. They reached out to the Shaws and space was made on her parents’ land in Waiehu. 17 families arrived, totaling 60 people — 30 of them kids. Like many community-led places of refuge, the property quickly became a hub for other families in the neighborhood aiding West Side families. Beds, freezers, and porta potties were brought in. The garage transformed into a pantry full of categorized donations with a steady stream of supplies coming in daily. Every

night they hosted a family meeting to exchange ever-changing information about housing, education, resources, and aid. Shaw says, “Just a stone's throw from here is an ‘ili (smallest land division) called Polipoli that was considered a pu‘uhonua (refuge). Today the energy of that ‘āina continues to do the work for the people by serving as a safe refuge for those seeking it.” For some, accepting help—even from family— can be hard when you’re used to being the one who gives. With the outpouring of aid from across the world, accepting outside help is even more difficult. Deep trauma existed long before the fires so deciphering intentions can be tricky. When asked how do you know who to trust, Shaw’s husband ‘Ainoa says, “I look at the leaders, chiefs, and watch what they’re doing.” Kayla adds, “It’s a natural, local vetting system. It’s an auntie saying, I know them, I trust them.” A big part of the culture is families living in community, and the lifestyle is not new to them. Despite the monumental challenges ahead, Maui families will continue to do what they’ve always done—help each other with no questions asked. Kayla says, “We like to learn alongside our community and show our keiki the importance of building a network of like-minded people who support one another.”

‘Ohana GROWING UP MAUI

Growing up Maui: Change BY MAILE CREWDSON

There is an old shed at my family’s farm in Waiehu, next to the charming yet weathered plantation home that sits overlooking the taro fields, giant jabong, towering avocado, and tilting mango trees. At first glance, the dilapidated shed looks beaten down, tattered, and without much use. Stepping in through its large open entryway, I was surprised to find so much life. The split leaf philodendron and monstera, with their vibrant lumbering leaves roam and canopy the crags and cracks of the room. Light streams through the broken slots in the roof. Water trickles down those same pukas. Peace permeates the quiet space. I wonder what stories the shed would whisper of its purpose throughout the years. This wooden enclosure borders on ephemeral, a tangible way for me to grasp how life both blooms and dies, returning to the land. As this shed slowly dissolves back to nature, I find myself grieving. Much of my childhood is tied to this place, here at my grandparent’s farm, where my sisters and I would help my parents gather fruit as keiki. The sound of coconuts being husked, the smell of overripe mangoes and buttery, squishy avocados covering the driveway as the harvest rolled in - these along with the vibrant tropical flora, represented a wild landscape brimming with life. I could taste the promise of youth, which felt immortal, in each bite of warm spam musubi, sip of cold Hawaiian Sun, and dip in the frigid stream waters at the farm. Shared meals with cousins and aunties and uncles, so many holidays spent here, altogether.

But now, as I walk through these same spaces in my later 30s, I see how worn these once magical vistas have become. Weeds overtake the lo’i. My aunties and uncles work tirelessly to maintain the property, and yet we are all growing older. Cousins and aunties and uncles do not all live here on-island, as it once seemed so. Celebrations here are fewer, and further between. Change is a part of our collective story, and yet I struggle to let go of the memories that hold such a deep and steadying place in my heart. Grief mixed with joy over what once was. My desire to move forward without forgetting the past. Thoughts rush in, as I walk the trails I once ran barefoot in my youth. Mud clinging to the soles of my feet, seeping into each crack and crevice. With tender care, I slip my toes into the cool mountain stream that runs along my grandparent’s property. Then I feel it. A jolt from the cold followed by the slow, steadying peace of feeling at home. A place that has, like me, grown and changed and transformed. Photo by Toni Colombo

When something bad happens we want to help, but we may not know how. We want to offer support but may not feel qualified to have conversations with people who have experienced a loss or other trauma. Something we can do is listen. Listening is a powerful way to show support and is a skill that can be used any time in almost any situation. Active listening involves more than just hearing the words being said; it is listening in a way that demonstrates genuine care and understanding. Active listening builds trust, conveys empathy and helps the person speaking feel heard and understood. You do not need any special skills or a degree in psychology to do this, anyone can learn to be a good listener. To begin with, it’s important to give the speaker your full attention; find a quiet place where you’re less likely to be interrupted, turn off the TV, put down the cell phone and focus your attention on the speaker. Show that you're listening by making eye contact and occasionally nodding your head. Use reflections to demonstrate you are paying attention and following what the speaker is saying. Reflections are statements instead of questions, they shine a light on something important a speaker has said (i.e: “you’re sad”, “you feel like things will never get better”) Ask open-ended questions to encourage the speaker to continue. (i.e.: “Can you tell me

more about that?” or “What was that like?”) Resist the urge to interrupt or share your own experiences. Be patient; allow the speaker to go at their own pace. Avoid rushing to fill the quiet. In your own words, summarize what the speaker has told you to show them you are paying attention and processing what they are saying (i.e.: “So this is what I’m hearing…”). Do not offer opinions or advice; your role is not to fix or change how the speaker is feeling. The goal is to understand and connect with the speaker. Express empathy by putting yourself in their shoes and validating the speaker's experience or feelings (i.e.: “I can imagine why you feel that way”. “It makes sense that you are upset/ frustrated about what happened.”) Empathy is different from sympathy in that it conveys true understanding rather than just feeling bad for someone’s situation. One of the most supportive things you can do for someone in any situation is to listen. Although it may feel like you’re not actually doing much, providing a safe, non-judgemental space for someone to tell their story is an effective way to create trust and understanding and to help someone begin to heal. ‘Ohana REBUILDING

Sacred Hearts School Begins to Rebuild After a night of high and dangerous winds, Sacred Hearts School’s Principal Tonata Lolesio canceled school early the morning of August 8th. The school year started a week earlier, on August 1st. After checking in on the school, Tonato learned that a utility post had collapsed and was blocking Waine'e Street. The campus had sustained severe damage from the wind storm. A massive, oversized tree on the playground had been uprooted, and the roof of the 7th-grade class had blown off, as well as some solar panels. There was also no power throughout the west side of Maui due to power lines that had fallen from the winds. Later that morning, Tonata reached out to faculty and staff with a letter she had thoughtfully written with images of the damaged campus. The plan was to close the school temporarily for a few days as staff and volunteers with carpentry skills cleaned up and repaired the damage caused by the storm. Part of Tonata's letter read, "Sacred Hearts School has overcome many obstacles and challenges in its 160 years serving our West Maui community. We can make a difference through

our combined efforts. Thank you in advance for your support and prayers." Later that day, a massive fire consumed the town of Lāhainā, including the school. Turning those words from that letter into action, Tonata Lolesio and her staff immediately got to work to find temporary land and return children to classrooms. For now, the campus has relocated to the Sacred Hearts Mission Church. Classes re-started on Monday, August 28th, and with each day comes more progress. The community has contributed everything from a lunch program to supplies, storage, technology, and more to bring the students back together. Sacred Hearts has taken in many kids from its Religious Education Program and the public school community. Getting the school running successfully will take a lot of fundraising efforts. If you'd like to donate to the Sacred Hearts School Fire Recovery Fund, the money raised will help relocate and rebuild the school, sponsor tuition, and help with operational costs. Donations can be made on their website at www. shsmaui.org/giving, or checks can be made to the Hawaii Catholic Foundation. Curry in a Hurry for a Crowd by Maja Liotta

W

hen crisis strikes, part of the grieving process involves a call to action. Living far from the blaze, I found it so hard to believe that less than 25 miles from the safety of our jungle home in Haiku, there was a catastrophe of proportions the world had not yet seen. We woke up that day to the unbelievable news that just miles away, our beloved historic town of Lahaina was transformed into toxic rubble and ash. We all grieve and continue to do so, but our Maui community has demonstrated the true spirit of aloha through its service to one another. Creating in the kitchen was my answer to grief and since food is a love language and sustenance is a basic human need, I was so happy to create this meal for a bunch of hungry workers who were based out of Waipuna Chapel who worked tirelessly in fire relief efforts. Before you snub your nose up at the mention of curry—remember curry only means “sauce” in its country of origin—trust me, this sauce is so yummy. I have yet to meet a crowd who didn’t come back for seconds and ask for the recipe.

Ingredients

• 1 shallot • 1 thumb size piece of ginger, peeled and sliced • 4 cloves of garlic • 1 jalapeno pepper (seeds removed) • 4 tbsp yellow curry powder • 1 4 oz. jar tomato paste • 2 cans of coconut milk • 1 cup chicken broth (sub vegetable broth for vegan) • Coconut sugar (sub brown sugar) • Juice of 2 fresh limes or to taste • Fish sauce to taste (sub shoyu for vegan)

Chopped fresh cilantro and/or Thai basil 1/2 cup cashews or peanuts Any vegetable medley of your choice Jasmine rice Protein of your choice

Directions

1. Heat up 3 tbsp coconut oil in a flat bottom two-quart saucepan. 2. If you have a mini food processor— this is a great time to use it. Mince shallot, ginger, garlic, and pepper into a chunky paste. 3. Add aromatic paste to heated oil, stirring over medium-high heat until fragrant, about two minutes. 4. Sprinkle yellow curry powder over aromatics and combine, heating for another minute. 5. Add tomato paste and combine with curry and aromatic paste—heat for 1 more minute combining with the back of a spoon. 6. Pour in coconut milk and chicken broth. Combine, then add coconut sugar, fish sauce, and fresh lime juice. Adjust accordingly for flavor. 7. Serve over vegetables/ tofu/ protein and steaming hot jasmine rice and garnish with fresh cilantro/Thai basil blend and cashews.
