Results are in for original ‘Best of Maui’

s the No. 1 Island in the World, Maui dishes up a smorgasbord of restaurants, adventure, culture and entertainment. Visitors get just a taste, and even residents may not experience all that the island has to offer. So what’s a traveler or weekend “staycationer” to do? Grab a copy of the Best of Maui, the original survey of its kind, established in 1992 and relied upon as a guide to Maui County’s top dining destinations, commercial activities, cultural programs, shopping, lodging and discounts. Ballots were accepted on paper and electronically, and the results found here will be posted at www.mauinews.com for nonsubsribers and subscribers alike for one year. Visitors and residents cast their votes for nearly 50 categories, from Best Bento, Best Seafood and Best Service to Best Air Activity, senior discount and resort. New categories this year include Best Omiyage, or food gift, along with Best Eatery on Lanai and Molokai. In addition to collecting donations for Maui Food Bank throughout the voting process, The Maui News wanted to show support for the island’s culinary education scene. So it added a special award category for Best Student Chef to honor the most promising student at Maui Culinary Academy at University of Hawaii Maui College.

MCA students voted in this category, and the winner will receive a special prize from The Maui News. Along with casting their votes, many Maui News readers from near and far elaborated on their love for the island, expressing their appreciation for its bounty. A few thoughts from readers: “Escape the world and come to Maui and experience the people who practice aloha,” said Irene Smith of Austin, Texas. “Everything is better on Maui!” says Kathy Marsh of Palo Alto, Calif. “Maui has the best restaurants for us all to enjoy. Why cook at home when you can enjoy the great eateries Maui has to offer. So many consistent restaurants: TS Restaurants, Mark Ellman restaurants, just to name a couple. Great venues also: Fleetwood’s on Front St., the rooftop and the great new Club Keller with different entertainment options,” said Laurie Lowson of Lahaina. Exclaims Warren Johnson of Illinois: “Time to get out of Chicago — move to Maui — coming soon.” “Maui has incredible chefs and restaurants — we are blessed! Congratulations to Best of Maui drawing winners Retired from public health nursing, Anne Salek of Wailuku also worked at Ruby’s Diner for 12 years until it closed. The recent widow and mother of three moved to Maui in 1983 from New Jersey and enjoys going out to eat on occasion. But she’s taking things slow since her husband passed in December. “His favorite places were Kahului Ale House, Leilani’s on the Beach and Cheeseburger in Paradise and I loved to go with him,” says Salek, who spends time doing volunteer work for St. Anthony’s Church in Wailuku. Maui County Communications Director Rod Antone filled out his ballot to support his buddy Ryan Piros’ restaurant, Bistro Manila. “They’ve got the

best Filipino food on island and maybe in the state in my opinion,” he says. “Also I just like eating, period. I live in Paia so I mainly stick to Upcountry or Central Maui. My favorites are Makawao Steak House, Hali‘imaile General Store, Marco’s, Bistro Cassanova, Saigon Cafe, Asian Star and of course, Bistro Manila. Charley’s has some great sushi now with Ivan Bersamin at the helm. You can’t go wrong anywhere in Paia really.”

Maui Food Bank works with 120 active agencies, programs t’s easy to focus on the many things that make Maui County a favorite place to live and visit, from its beautiful scenery and exciting activities to cutting-edge cuisine and great shopping. But it’s important to remember that for many, life in the islands is a struggle. Each month, 10,000 people rely on Maui Food Bank for sustenance, including the working poor, children and youths, seniors, the homeless — anyone who is at risk of going hungry. “The food bank works with 120 active agencies and programs. This includes Maui’s most remote areas, Hana, Molokai and Lanai,” said Marlene Rice, the food bank’s development director. According to the food bank, these partner agencies distribute food through pantries and by serving meals at soup kitchens, homeless drop-in centers and

I

mobile-outreach programs. Snacks are also provided for youth programs, and senior citizens receive the support they need on a regular basis. Whether through the Boys & Girls Clubs of Maui, local churches, Hospice Maui, Women Helping Women or the dozens of other agencies, Maui Food Bank’s supplies trickle throughout the entire community. “The Maui Food Bank is Maui County’s primary safety net for hunger relief,” Rice said. One of the food bank’s top programs is Aloha BackPack Buddies. The program provides elementary school children who are on the free and reduced meal program at their school with a pre-filled backpack on Fridays. The backpacks each contain six meals that the students take home for the weekend. Since the program was launched in 2012 at a single

Of course, the food bank relies on the community for support in return. The organization collects food donations from retail stores, distributors, wholesalers, restaurants, farmers and farmers markets, as well as from individuals and food drives. The donations supplement the additional items that the food bank purchases locally and from the Mainland. Community members can help through food and financial contributions, or by volunteering at the food bank. Food drives can be held in your neighborhood, and at businesses, community group events, grocery stores, schools and places of worship. Just like there are many things that make Maui magical, there are many ways to help and prove that what makes Maui truly the best, is its aloha spirit. Mama’s Fish House ama’s Fish House retains its annual regal crown as the proud matriarch of all Maui restaurants. Not only has she birthed Best Restaurant in Hawaii wins in both TripAdvisor and OpenTable, but now she’s nuturing repeat Best of Maui wins with this newspaper for the Best Restaurant Overall, Best Service and Best Seafood. And she has once again born an honorable mention for Best Ambience for her prime spot under a coconut grove in Kuau Cove. “It’s a love story with the owners Floyd and Doris Christenson,” says longtime Executive Chef Perry Bateman. “Back in the day, they sailed their boat through a South Pacific hurricane to Tahiti with their children onboard. Then they came here and created their dream restaurant. It’s a true mom and pop and everyone is treated like family at Mama’s.” Yes, Mama’s boasts the whole Maui community as its ohana from fishers to farmers to diners to all of the employees. “We care about the aunties that sew tablecloths, weave baskets and make flower arrangements and the uncles who sand the chairs and do the gardening,” adds Tami Joslin, general manager. “There are so many aunties and uncles here,” adds Bateman. “Our relationships are one of the keys of Mama’s success. Our resources are what make us who we are. I’m very appreciative and grateful for our extended ohana.” Bateman has seen the fishers’ kids buying new fishing boats and now they are the next generation hooking up from ahi to opakapaka to mahimahi. Not only does Mama’s subsidize its fishers with deep-sea FADs, or fishing aggragate devices, that help them hook up, but loading docks allow them to pull right up in back of the restaurant. “The fishermen are like family,”

says Bateman. “It adds to the whole dining experience to open a menu and see the fishers’ names from uku caught by Billy Wakefield as he bottom fished off of blue waters of Kona to opah hooked in local waters by the fishing vessel Lady Luck to onaga hooked in depths of 1,000 feet by Layne Nakagawa, steamed in fresh Hana ginger and sizzling peanut oil. “It’s so hard to get fish when the weather turns bad. “I want a TV show similar to ‘Martha Stewart’ meets ‘The Barefoot Contessa’ in Hawaii,” says Stevie-Ray Walker, a recent Maui Culinary Academy grad. “I’d also love a home in Kula with a bi-coastal view.”

he Best of Maui contest has a new category this year and it’s more than just icing on the cake. One student rose like cream to the top at University of Hawaii Maui College’s prestigious Maui Culinary Academy, voted by his peers as having the most promise. The Best Student Chef is Stevie-Ray Walker. Will he turn out to be a TV star? Or a pastry chef of one of America’s top restaurants? It all starts with a solid education and that’s just what Stevie-Ray got at the stateof-the-art MCA. Picked by peers as both tenacious and determined, he’s inching up the kitchen ladder to someday command wide respect in the industry. “I graduated in May with a culinary arts degree as well as a baking degree,” says the tall and striking pastry chef from Seattle. “I moved here three years ago because I just wanted a fresh start. I was tired of the same old bad weather and wanted some sun.” Stevie-Ray currently bakes at Spago Maui in Wailea and is rising like dough from pastry line cook to pastry production to pastry sous chef with hopes to be pastry chef next year. “Spago sent me to Vegas to work at Wolgang Puck’s CUT restaurant to learn from its pastry menu. It was so cool,” says Stevie-Ray, who was one of only four UH Maui College’s 300 graduates to get the prestigious Regents Award. “My parents were ecstatic. They flew in from Seattle. The graduation was on May 12 and I got married on May 14. It was a whirlwind. I even made my own wedding cake. It was a white-chocolate sponge cake with a strawberry and creme brulee insert.” Stevie-Ray’s ultimate goal is to someday appear on TV. “I want a TV show similar to ‘Martha Stewart’ meets ‘The Barefoot Contessa’ in

Hawaii,” he says, dreaming big. “I’d also love a home in Kula with a bi-coastal view.” In his spare time, Stevie-Ray gardens and fiddles with classic cars such as his 1983 280SL Mercedes roadster. “Food, cooking, cars, gardening and entertaining, it’s all there. I’m super stoked and super honored and proud that my peers voted me as the Best Student Chef.” “Out of all the students, Stevie-Ray is the most talented, skilled and knowledgable in what he does,” says third-year student Ciana Ruidas. “He encourages me to know that I also have it in me and to find it in myself.” “Stevie-Ray is someone that deals with problems head on and doesn’t even break a sweat about it. He is such a leader in and out of the kitchen and someone I will always look up to. I’m so proud of my little French boy!!!” says classmate Allison Poirier. “I have had the distinct pleasure of engaging with many students over the years, some who go above and beyond the course expectations and inspire me to also be better,” says MCA program coordinator and pastry chef instructor Teresa Shurilla. “Stevie-Ray Walker was one of those students. I had a chance to work with him closely in the baking and pastry classes in the two years he was here. We did chocolate sculptures and wedding cakes and a great sugar sculpture for Women Helping Women, all done at the very top performance level. “He has inspired me, his fellow students, and the newer group of up-and-coming students. You always look for that as a teacher, and when it happens, well that’s magical. Matteo Mistura ith an Italian accent as thick as his ragu, Matteo Mistura is not only this year’s Best Chef on Maui, his restaurant, Matteo’s Osteria, won as Best Italian Restaurant on the Valley Isle. Born and raised in Sarzana, in the Cinque Terre area of Liguria Italy, little Matteo grew up in the his parents’ hotel and restaurant, Laurina in Sarzana. The apartment was on the third floor, hotel rooms on the second, and the restaurant at ground level, so he had to walk through it to get outside. “I was shy, so I liked the back of the house, the kitchen. I learned to entertain. Pretend to play the dustpan like a guitar. I cut bread, polished glasses, washed dishes and peeled potatoes. I grew up in the industry,” he says. His mother, the restaurant chef, instilled passion into her son and Matteo knew cooking would be his destiny. He attended culinary school in Lerici, Italy, for five years, cooked professionally in his homeland for 15 more years and followed it with another five years abroad at the finest restaurants from Jakarta to Philadelphia to his award-winning post as the chef at Ferraro’s Ristorante and Bar at the Four Seasons Resort Maui in Wailea. Now, with experience, talent, polish and the full understanding of what it takes to be a true host, Matteo runs his namesake osteria,

or “place that serves simple food,” with his wife and business partner, Gianna, offering a selection of the finest regional dishes and wines for their island menu. Tin Roof Maui ast year, Aria’s Restaurant & Catering reigned as the newbie king. Before that, Koa’s Seafood Grill and Alan Wong’s Amasia ruled the roost and now they are both out of business, showing just how fickle the Maui restaurant world is. Now, the talk of the town is the humble Tin Roof on Dairy Road in Kahului that opened in April. Humble yes, but its chef-owner is world famous. Sheldon Simeon was first catapulted to stardom on the Bravo Channel’s “Top Chef” as a fan favorite in recent years and diners from literally all over the planet now track him down on social media. “Sheldon was one of my alltime favorites on ‘Top Chef,’ says Portland visitor Teng Xiong, who found Tin Roof right off the plane. “I’m a little star struck right now. This is one of my must trys.” “We may have to come back again,” says Portland pal Phil Parker, after Simeon graciously posed for a pic with them. Ashley Henning of Santa Barbara watched him on “Top Chef” and dined there three times fresh off the plane. Haiku resident Anna Kim comes in twice a week, at least. “A lot of the dishes are organic and full-flavored and it’s affordable, not like some other Kahului restaurants.”

While his reputation is big, Tin Roof is a small, family-owned affair open for lunch only from 10 a.m. to 2 p.m. Mondays through Saturdays. Just a handful of bar stools line a shallow eating shelf, so most people order takeout. “Phone orders are recommended but the best way to order is the Mo’ Fast Pass online at www. tinroofmaui.com,” says Simeon. “You order, pay online and after that you just come in and grab your to-go bag with your name on it.” The menu remains pretty consistent, but the ingredients may change. For instance, fish of the day ranges from furikake salmon to opelu kala, a reef fish rarely seen on menus that is stir fried. “The poke bowl is rice topped with fresh aku to spicy smoked tako,” says Simeon. “And our ban chan sides, which are pickled Korean vegetables, also change daily.” On a recent visit, Simeon pickled chayote squash vines from his backyard and he also wowed with daikon kim chee. “It’s so fun to own a small spot like this. It’s like when you go home and ask Mom, ‘what’s for dinner?’ ” says Simeon about his hands-on approach. “I want to thank the Maui community for the support. I’m most proud that we are already so integrated into the community. Auntie comes

veryone knows the Friendly Isle of Molokai is a little sleepy compared to the Big City Lights of Oahu and even Maui, but when calls went unanswered at the Paddlers Inn for several weeks, Best of Maui writers wondered what was up. As it turns out, the Best Eatery on Molokai was closed for renovation and was in escrow. “Both of us primary owners are over 70 and decided it was time to retire,” says Larry Keephe about he and partner Jerry Johnson. Also owning shares were Larry’s son Brad Keephe and Earl Gordon, who have owned the Kaunakakai hot spot for about five years. As of press time, the sale was pending and construction was heavy out in the gravel lot with a solar-panel-roofed parking garage and concrete being added to provide shade to patrons. A new establishment is targeted to open this month. Stay tuned.

For more than 40 years, owners Floyd and Doris Christenson captain their expert team to offer the best seafood available. They even subsidize deep-sea fishing buoys for local fishermen, so they have an easier time harvesting tasty pelagics such as snapper. Fishers trailer their boats right up to the north shore landmark’s loading dock, and fish gurus receive it, and slice from mahimahi to ahi for fillets, sashimi, and other bones and other parts make the rich and aromatic stocks for soups. Bottom fish are pan seared; stuffed with crab; cut into chunks for ceviche; grilled and or steamed whole with Hana ginger and sizzling peanut oil. The Schaefer International Gallery last year presented the Nani I Ka Hala: Weaving Hawai‘i and Ho Mai Ka Hala: Bring Forth the Hala exhibits that featured both historic works of hala weaving from the Bishop Museum’s collection and the work of contemporary lauhala weavers from throughout the state. On stage in April, universal themes in the story of Native Hawaiians were explored in the dance theater piece “Pohaku” presented by Christopher K. Morgan & Artists. Morgan, a choreographer who grew up dancing hula in California, combined storytelling, hula, modern dance, classical music and projection to weave his own stories with those of his ancestors. And in June, culture, fashion and art collided on a runaway in the MACC’s Yokouchi Pavilion for the MAMo at the MACC: Wearable Art Show, a part of Maoli Arts Month, or MAMo, on Oahu that featured the work of contemporary island designers whose
