M

aui keeps rocketing to the top in the year 2017. In fact, it keeps getting ranked as the Best Island in the U.S. by Conde Nast Traveler for 20 years and counting and it gets too many outstanding accolades from other world-wide publications to mention in this space. Yet right here on island, The Maui News was the first to create an original reader poll that asked what and who were the best of Maui to get opinions from actual residents. It was a far-sighted idea at that time and since then has been copied by many others. This year we again asked our readers to vote on favorite picks in 48 categories. For two months, ballots were accepted on paper and electronically. The tallied results will be posted at www.mauinews.com for subscribers and nonsubscribers for one year. This was no multiple choice poll, we asked people to write in the names and, wow, did we see a varied selection. The voting proved to us that Maui has quite a few “best” establishments. Whether you’ve lived here your whole life, or you just arrived, be sure to grab a copy of the Best of Maui to guide you to Maui County’s top dining spots, commercial activities, cultural programs, shopping, lodging, spas, treats and discounts — you’re sure to discover something that you didn’t know about.

Maui Food Bank responds to Molokai’s hunger problem

A

s Maui County’s primary safety net for hunger relief, the Maui Food Bank is also committed to serving our Neighbor Islands, Molokai and Lanai. Every month the Maui Food Bank ships pallets of safe and nutritious food and other essentials to our partner agencies on these islands. More than 215,000 pounds of food a year is sent to Molokai and Lanai from the food bank. This food provides necessary hunger relief to our neighbors who are food insecure and are at risk of going hungry. The Maui Food Bank also cooperates with Kumu Farms on Molokai. The food bank purchases fresh produce, including kale, lettuce and papaya from Kumu Farms and in return the farm reciprocates by donating hundreds of pounds of fruits and vegetables to help the hungry on Molokai. Food shipments to Molokai are met by more than 20 partner agencies which anxiously wait for

Food bank Agency Director Lynn Curtis and Community Relations Manager Steph Kaplan have helped distribute the food to the partner agencies, which in turn serve children, youth, seniors, individuals and families in need. “I believe it is vital for us to provide continual food supplies

and other resources for all those in Maui County who may not know where their next meal is coming from,” explained Executive Director Richard Yust. Yust further stated that it is the “mission of the Maui Food Bank to help the hungry in Maui County by collecting and distributing food through community

partnerships.” Trying to eliminate hunger in our island ohana takes the participation of the entire community. “No one agency can ever accomplish this monumental task on their own,” declared Marlene Rice, Maui Food Bank’s development director. “However, by working together we can really

make a difference. “Molokai is one of the most beautiful of the Hawaiian Islands, with the tallest sea cliffs in the world. Lurking behind all this beauty hides the reality of poverty in Molokai, which has the highest rate of unemployment in the state,” Rice continued. “It is because of the commitment of our Molokai agencies, numerous volunteers and the very generous financial support of the Maui Food Bank donors that healthy food choices and safe and nutritious food options are now being made available on Molokai. hen founders and current owners Floyd and Doris Christenson landed on Maui decades ago from an idyllic life aboard their sailboat at sea in the South Pacific, they had a dream. Forty-five years later, their dream is still very much alive and it keeps translating as one of the top restaurants in the U.S. in both TripAdvisor and OpenTable, and as a repeat winner year after year as Best Overall Restaurant, Best Seafood and Best Ambience in the Best of Maui contest in this newspaper along with an Honorable Mention and past wins for Best Service. “It’s still a love story with Floyd and Doris Christenson,” says longtime Executive Chef Perry Bateman. “Back in the day, they sailed their boat through a hurricane to Tahiti with young children onboard. Then they came here and created their dream restaurant. Even to this day, it’s still a true mom-and-pop restaurant and everyone is treated like family at Mama’s.” But this mom-and-pop boasts dozens of employees, who bake the honey-poppyseed bread brought warm to your table. They stir the amuse-bouche of tomato-ginger bisque and pound the poi that are both served complimentary to diners. Aunties and tutu sew the Tahitian fabric for the blue tablecloths. Uncles sand the chairs and do the gardening. Younger men trim palm fronds under the coconut grove and farmers bring in fragrant tropical blooms. his was the second time I filled out the Best of Maui ballot,” smiled Chelsea Barrows of Wailuku. “I didn’t even know it was a contest to win anything.” Having grown up on Maui, this graduate of Baldwin High School is the office manager for Tops Roofing. She enjoys trying new foods and hanging out at the beach during her free time. Selecting the $100 certificate for Sea House at Napili Kai Beach Resort as her winnings, Barrows is excited to try the food there. “I’ve never been there, but I’ve heard good things about it,” she said.

W

ith not even a year under its belt, Shearwater Tavern soars higher than all of the other dining establishments that opened on the Valley Isle in the past 12 months as the “Best New Restaurant on Maui.” Located in the former Stella Blues at Azeka Mauka mall in Kihei (near Fork & Salad), it’s named after the ‘Ua‘u Kani, or Hawaiian wedge-tailed shearwater bird, which frequents the nearby wetlands. Yes, Shearwater Tavern is flying high into the island’s stratosphere as a gastropub and then some, a great place to hang loose, meet friends and sip a cold brew in a casual, affordable and convenient setting. “It’s a neighborhood gathering place serving a variety of creative comfort foods and excellent craft beers,” owner DK Kodama explains about the eighth establishment in his restaurant group, which also includes the award-winning Sansei Seafood Restaurants & Sushi Bars rolling out the No. 1 Sushi on island. “Shearwater Tavern is a neighborhood restaurant serving a variety of creative comfort foods with an eclectic menu so everyone can find something they will love,” says General Manager Reed Robertson. “Our chefs source the freshest seasonal products from our local Maui farmers, ranchers and fishermen so we can serve local first, then organic and sustainable foods.” Signature items are pesto-marinated jumbo prawns with

kabocha pumpkin ravioli; beer-braised oxtail poutine (a Canadian favorite); and big and juicy Shearwater burgers. It also serves housemade pastas, Southern-fried chicken and other crowd-pleasing fare. The Shearwater burger, for instance, features Hawaii Ranchers beef topped with crispy bacon, roasted garlic aioli, caramelized onion jam and a farm-fresh sunny-side up egg with aged creamy white cheddar sauce — all for the ultimate meat indulgence. Veggies are super big here and you must try the grilled asparagus Milanese with sunny-side-up egg, parmesan cheese, white truffle oil and toasted bread crumbs; and the crispy Brussels sprouts with pickled jalapenos, konbu aioli, parmesan cheese and Granny Smith apples — unusual, but oh-so good. The beer-braised beef short rib also hits it out of the ball park with fingerling potatoes, seasonal organic vegetables, chimichurri sauce and truffle aioli. So does the truffle mac ‘n’ cheese and desserts such as key-lime panna cotta and warm apple strudel. “Chef Carl Yeh creates incredible and fun specials that keep regulars coming back to try his newest creations,” says Robertson. “And Shearwater features an ever-changing, carefully selected list of craft beers, creative signature cocktails, and a wine list selected by Oahu Master Sommelier Chuck Furuya.” Early Happy Hour runs from 5 to 6 p.m. daily with 50 percent off appetizers, veggies and flat breads and $2 off draft beers, craft cocktails and wine specials. Jayford Agbayani

H

e’s the “man of the moment.” The “king of the kitchen.” Jayford Agbayani goes the extra mile as the Most Promising Student Chef graduate of the Culinary Arts Program at the University of Hawaii Maui College. He’s even traveled to Asia and has cooked in a few restaurants. “Jayford was in my advanced cooking class in The Leis Family Class Act Restaurant at UH-MC,” says Chef Lecturer Tom Lelli. “He was an excellent student, passionate about learning his craft and always performing at a high level. He spent many hours volunteering for community events and charity fundraisers.” Graduating in the 2017 Spring Semester, Jayford earned a Culinary Arts Degree, was honored as UH-MC’s Most Outstanding Culinary Student, and he got a 2016 ‘Aipono Awards scholarship. But he’s very humble and modest, nonetheless. “I moved to Maui 10 years ago from the Philippines with my whole family,” says Jayford, 39. “Before coming back to school, I wanted to pursue my passion and didn’t expect anything. I just did what I loved. I received a few scholarships. I didn’t expect to be chosen by my peers as the Most Promising Student Chef. I am so honored and blessed because I know that this group of students has the best talent, like our chef-instructor Craig Omori said.”

Jayford Agbayani is admired by his peers, making him the Most Promising Student Chef graduate of the University of Hawaii Maui College Culinary Arts Program. While a student, “Jayford spent many extra hours outside of class striving to learn more and refine what he was learning,” explains Lelli. “He got along well with others and was an excellent team player helping wherever needed especially in the mentoring of other students. He did all this while holding down a full-time job at Taverna. I could

not be more proud of his accomplishments and how he exemplifies what it means to be a UH-MC Culinary Arts Program graduate and aspiring professional chef.” A West Maui resident, Jayford cooked at Kobe Steak House for 10 years before Taverna. “I’m currently working under the supervision of Master Chef Roger Stettler,” says Jayford. “I am always open for new things and will never stop learning. Papardelle is my favorite pasta dish. My style is more Asian and island style. So it’s a good opportunity to work with Chef Roger and learn Italian specialties.” Jayford says he’ll probably stay on the island and learn as much as he can and “maybe later buy a one-way ticket somewhere.” He loves to travel and has already been to Japan, Taiwan and Singapore. “I’m planning to travel to Europe soon and experience different cultures, learn different cuisines and meet people and their love for food. For me if you have a dream, just go for it. You never know what will happen until you try. One day, I will share my love of food through my cooking and inspire young aspiring chefs like me.” Well, Jayford, you already do inspire. known for years how good noodles can be thanks to Sam Sato’s. Current manager Kirk Toma thanks his loyal customers for this honor. “Our customers grew up with our noodles. Some, we saw as a little kid and now they’re bringing their kids or grandkids,” said Toma. From humble beginnings that his grandparents, Sam and Gladys Sato, started back in 1933 to feed the plantation camps in Sprecklesville, Toma’s Sam Sato’s has become a Maui legend. Oftentimes a first stop after returning to Maui or even as just a lunchtime fix, Sam Sato’s is still turning out its saimin, chow fun, dry mein, manju and plate lunches from the recipes created by Gladys. swims ahead of Maui’s school for annual Best Seafood crowns. For 45 years, owners Floyd and Doris Christenson have captained their expert team to offer the best locally-caught fish ever. They even subsidize deep-sea buoys for Maui fishers, so they may easily hook-up out in the deep blue. These same fishers trailer their boats right up to the loading dock, and cutters receive it, slice fillets and sashimi, and boil the bones to make aromatic soup stocks. Executive Chef Perry Bateman takes it over the top by pan-searing bottom fish; stuffing mahi with crab; cutting ono for ceviche; steaming whole opakapaka in hot peanut oil, and changing the ever-rotating menu daily, depending on what’s caught. Other prized ocean specimens are lehi, uku, onaga and kampachi. the Culinary Institute of America in Hyde Park, N.Y., became a pastry chef, returned to Maui and began making pastries and desserts for Maui’s luxury resorts and hotels. Jones began making chocolates for family and friends as gifts. In 1990 due to demand, Jones and her husband Anthony Jones started Maui Specialty Chocolates and they haven’t looked back since. Before long, the Joneses decided it was necessary to open a retail store to sell directly to the public. Maui Specialty Chocolates took another leap when it began offering fresh mochi daily. You have to get there early and eat it that day or freeze it; Jones doesn’t put any preservatives in her mochi. Once they sell out, it’s gone, but Maui Specialty Chocolates will take orders.
