TREYBURN GOLF NEWS The Treyburn Professional Staff wishes you all a Happy New Year! With the 2023 golf season behind us, the golf staff has been working hard to improve the events for the upcoming year. The 2024 Golf Event Calendar will be sent out to the membership on January 10th. Please keep an eye out for this information via email and mark your calendars so you can attend! If you are looking for good competition or a fun social atmosphere, there are events for everyone! Mark Snell and his team have been hard at work in an effort to keep the course in great shape during the off-season. The green complexes are in great shape and have remained fast for our players. Currently, a large project to root prune a large number of trees has been taking place. This pruning will prevent the roots from damaging the fairways and surrounding turf. Additional tree removal is planned throughout the off-season to allow for better turf conditions. When playing the course, we ask all players to please repair their ball marks on the green complexes and fill their divots in the fairways with the sand provided on each golf cart. This goes a long way in helping Mark and his team get the course in great shape for the golf season. The off-season is the perfect opportunity to take advantage of many of the offerings our club provides. Please take a look at the following list and contact the Treyburn professional staff if you have an interest in enrolling! COOKIES OF THE MONTH COOKIE OF THE MONTH: JANUARY 2024 BY LYNN HART, PASTRY CHEF AT RALEIGH COUNTRY CLUB Gingersnap Cookie Recipe When I was 37 years old, I went back to school to get a culinary degree. This was one of the first things I baked at Trails End. More than twenty-five years later, it is still one of my favorite cookie recipes. Whenever I make them, I think of Gary Henz and the incredible opportunities I have received because of the strong foundation he laid for me.

4 1/2 cups all-purpose flour 4 teaspoons baking soda 1 teaspoon ground ginger 1 teaspoon salt 2 teaspoons ground cinnamon 2 cups granulated sugar (additional sugar will be needed for rolling) 1 1/2 cups vegetable oil 2 eggs 1/2 cup molasses

Directions: 1. Sift the flour, baking soda, ground ginger, salt, and ground cinnamon together. 2. Use a paddle blade on your mixer and mix the sugar and vegetable oil together for 1 minute. 3. Add one egg at a time followed by the molasses. Mix this together for 1 minute. 4. Fold in the sifted dry ingredients a little at a time until it is well blended. This should take about two more minutes for the proper mixing. 5. Chill the dough for at least an hour before you scoop them. 6. Roll the scooped dough in sugar and bake: Conventional oven - 350 degrees for 12 minutes, Convection oven - 325 degrees for 8-10 minutes. 3 teaspoon scoop will make 106 cookies.

COOKIE OF THE MONTH: FEBRUARY 2024 BY DYRIEK SHAW, SOUS CHEF AT TREYBURN COUNTRY CLUB Peanut Butter Heart Cookie Recipe Reese’s cups have always held a special place in my heart. It’s one of those things that when I eat them, they teleport me through many happy memories. One of which involved my grandmother giving me my first one when I was a child. Since then, they have always made me think of her. This is where my love for peanut butter and chocolate are able to come together, as I’ve created a peanut butter press cookie with a Reese’s cup melted in the center. Who doesn’t love these two ingredients together? And as she would say, “bless your heart.” 1/4 cup unsalted butter 1/4 cup vegetable shortening 1/2 cup creamy peanut butter 1 cup granulated sugar, divided 1/2 cup light brown sugar, packed 1/2 Teaspoon vanilla extract

2 large eggs 1 1/2 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 12-ounce package Reese's Peanut Butter Hearts

Directions 1. Preheat oven to 375 degrees. 2. In a mixing bowl; cream together butter, shortening, peanut butter, ½ cup granulated sugar, and brown sugar until light and fluffy, about 2 minutes. 3. Add in eggs, mixing after each addition. Mix in the vanilla. 4. In a separate bowl whisk together flour, baking soda, and salt. 5. Stir dry ingredients into the wet ingredients and mix gently to combine. Don’t over-mix. The dough will be very soft. 6. Pour remaining 1/2 cup of granulated sugar into a small bowl. Line a cookie sheet with parchment paper. 7. Scoop dough into balls and then roll in sugar. 8. Bake for 7-10 minutes, just until set. They will be pale, and look just barely set. Don’t over-bake them or they will be hard once cooled. 9. Remove from oven and allow to cool on baking sheet for 2-3 minutes, and then transfer to cooling rack. 10. Press an unwrapped Reese’s heart to the center of each warm cookie. Allow cookies to cool completely. 11. Store leftover cookies in a container at room temperature, or they freeze very well.
