RESERVATIONS REQUEST During this time of year, it is such a treat to come out to the Club for a wonderful evening out. In order for our staff to provide premium service and ample food preparation, we kindly ask that you call ahead for reservations no later than 3:00pm on the day you wish to dine. Please adhere to our reservation deadlines which are posted on the website and in the newsletter, so that Chef can meet product ordering deadlines. GOLF UPDATES In my first edition in “The Valley Voice,” I would like to wish everyone a Happy New Year! I would also like to thank the membership and staff for such a warm welcome to the club in early November. Travis and Austin have made my transition into the golf professional staff at Brook Valley stress free. It has been a pleasure working with those guys thus far. I have also enjoyed the challenge of meeting and remembering so many new faces over the last couple months. For the fair weather golfers who I have not had the pleasure to meet yet, I look forward to seeing you in the spring! Reflecting on our December, our Annual Candy Cane Sale was very successful. We would like to thank all of the members who came out over the holidays and supported the club during their Christmas shopping! Although we had no golf events, we did enjoy some fairly mild temperatures throughout the month, which provided some great days for golfers to take advantage of. We hope that trend continues into January! Our golf staff looks forward to the Spring season. The golf shop will be opening its doors to some new brands such as popular apparel company, Johnnie-O! Other brands will be filtering in throughout March and April as well. Our goal as a staff is to continuously improve your experience at the club when visiting us for your next round of golf. Over the next few months, you will see subtle changes that will do just that. We couldn’t be more ready for our 2024 golf season to arrive! TURF TALK Dormant Turf Means Active Projects The week leading up to Christmas brought a series of hard, frosty mornings. That is not great news for golfers who enjoy an early morning round, but it is good news for the turf. Most of the golf course turf is now dormant for the winter. I say “most” of the turf, because the greens tend to come in and out of dormancy more than we would like. That is just the nature of our Champion Bermuda greens. Champion tends to be very sunlight and temperature sensitive. It may not completely break dormancy and start to grow vigorously, but on a warm sunny winter day we have seen fresh green leaves of grass pop up on several greens. All of the turf talk is only to say we aren’t really needing to cut grass this time of year. What is important is that the maintenance crew now has time to get a few other projects done around the course. When we finish prepping the course in the morning, we quickly move on to other projects. We have completed #13 fairway and #13 greenside bunkers. The greenside bunker took a bit longer to finish as we needed to repair the drainage in that bunker, in addition to installing the bunker liner and new sand. The next couple of bunkers we plan to tackle will be the two front bunkers on #18 green. Both have drainage challenges, and the right bunker needs to be reshaped on the back side. Please bear with us as we complete this work. We don’t have nearly as much play in the winter, but we acknowledge that we are inconveniencing those of you who do brave the cooler weather. We will complete this work in as timely a fashion as possible. Another project which seems to be ongoing is digging up irrigation heads around the greens and raising them. As greens and green surrounds get top dressed with sand, year after year, the irrigation heads appear to sink. In reality, the soil is rising. It is a common challenge with historic golf courses, and the best way to rise to that challenge is to simply raise the heads. It is time-consuming and must be done by a properly trained staff member. When the head is set properly, it increases the efficiency of the irrigation system, reduces puddling, and most importantly reduces the chance of someone twisting an ankle. Thank you to all the golfers who come out and play our beautiful golf course. The entire maintenance team takes pride in giving you the best golfing experience possible every day. 2023 was a great year, and we hope 2024 brings us the same success! See you all on the course. JANUARY COOKIE OF THE MONTH: GINGERSNAP COOKIE RECIPE BY LYNN HART, PASTRY CHEF AT RALEIGH COUNTRY CLUB When I was 37 years old, I went back to school to get a culinary degree. This was one of the first things I baked at Trails End. More than twenty-five years later, it is still one of my favorite cookie recipes. Whenever I make them, I think of Gary Henz and the incredible opportunities I have received because of the strong foundation he laid for me. Ingredients: 4 1/2 cups all-purpose flour 4 teaspoons baking soda 1 teaspoon ground ginger 2 teaspoons ground cinnamon 2 cups granulated sugar (additional sugar will be needed for rolling) 1 1/2 cups vegetable oil 2 eggs 1/2 cup molasses

Instructions 1. Sift the flour, baking soda, ground ginger, salt, and ground cinnamon together. 2. Use a paddle blade on your mixer and mix the sugar and vegetable oil together for 1 minute. 3. Add one egg at a time followed by the molasses. Mix this together for 1 minute. 4. Fold in the sifted dry ingredients a little at a time until it is well blended. This should take about two more minutes for the proper mixing. 5. Chill the dough for at least an hour before you scoop them. 6. Roll the scooped dough in sugar and bake: Conventional oven - 350 degrees for 12 minutes, Convection oven - 325 degrees for 8-10 minutes. 7. 3 teaspoon scoop will make 106 cookies.

FEBRUARY COOKIE OF THE MONTH: PEANUT BUTTER HEART COOKIE RECIPE BY DYRIEK SHAW, SOUS CHEF AT TREYBURN COUNTRY CLUB Reese’s cups have always held a special place in my heart. It’s one of those things that when I eat them, they teleport me through many happy memories. One of which involved my grandmother giving me my first one when I was a child. Since then, they have always made me think of her. This is where my love for peanut butter and chocolate are able to come together, as I’ve created a peanut butter press cookie with a Reese’s cup melted in the center. Who doesn’t love these two ingredients together? And as she would say, “bless your heart.” Ingredients 1/4 cup unsalted butter 1/4 cup vegetable shortening 1/2 cup creamy peanut butter 1 cup granulated sugar, divided 1/2 cup light brown sugar, packed

1/2 teaspoon vanilla extract 2 large eggs 1 1/2 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 12-ounce package Reese’s Peanut Butter Hearts

Instructions

1. Preheat oven to 375 degrees. 2. In a mixing bowl; cream together butter, shortening, peanut butter, ½ cup granulated sugar, and brown sugar until light and fluffy, about 2 minutes. 3. Add in eggs, mixing after each addition. Mix in the vanilla. 4. In a separate bowl whisk together flour, baking soda, and salt. 5. Stir dry ingredients into the wet ingredients and mix gently to combine. Don’t over-mix. The dough will be very soft. 6. Pour remaining 1/2 cup of granulated sugar into a small bowl. Line a cookie sheet with parchment paper. 7. Scoop dough into balls and then roll in sugar. 8. Bake for 7-10 minutes, just until set. They will be pale, and look just barely set. Don’t over-bake them or they will be hard once cooled. 9. Remove from oven and allow to cool on baking sheet for 2-3 minutes, and then transfer to cooling rack. 10. Press an unwrapped Reese’s heart to the center of each warm cookie. Allow cookies to cool completely. 11. Store leftover cookies in a container at room temperature, or they freeze very well.
