JUNIOR GOLF
OPERATION 36
2021 JUNIOR PROGRAM HIGHLIGHTS JUNIOR INTERCLUB Mondays, June-August Ages: 10-18
Brook Valley looks forward to once again participating in the Eastern NC Junior Golf League in 2021. Brook Valley advanced and won the league finals in both 2018 and 2019, and in 2020 did not lose a match all season! (Teams did not participate in the league finals due to Covid concerns last year). We hope to have a more "normal" season for our juniors in 2021 and we look forward to continuing our success of the last three seasons! Matches most likely will be "one on one" against other area clubs to keep events a little bit smaller, this was very well received in 2020 and allowed for a competitive, fun, and safe environment for our juniors. Details and dates for this year's matches are still in the planning stages, look for more information to be sent out soon. SUMMER FUN KIDS CAMPS Summer Fun Kids Camp #1 l June 22-25 or Camp #2 | August 10-13 Tuesday-Friday l 8:30am-4:00pm Fee: $150 per camper
Brook Valley will host two Summer Fun Kids Camps this summer. Juniors will participate in daily activities involved around Golf, Activities, Swimming, and Arts & Crafts. Summer Camps offer a great opportunity to participate in a wide variety of activities at the club, all under the guidance of the club’s staff. A daily schedule of activities will be created to be fun and educational in an environment where relationships can be made that will last a lifetime. Contact Membership Director Ashley Odom or the Golf Shop staff for full details of our Summer Fun Kids Camps. *All Member Classifications eligible.

TEE IT UP & TURF TALK GREETINGS BVCC MEMBERS If there ever was a “rainy season” here in eastern North Carolina, this must be it. We have had rain day after rain day. Overall, I feel the course is taking it pretty good and we have managed to avoid too much turf damage. While the wet conditions make for a mess on the course, the greens however do benefit somewhat from the root zone staying moist, especially when temperatures drop below freezing. Hopefully, Mother Nature will give us some sunshine and bring on spring weather sooner than usual this year. We are working on a few projects around the course, as some of you have seen. The chipping green bunker has undergone a complete redo. Gravel from the drainage in the bunker floor had begun contaminating the sand. We removed all the sand and installed a liner/barrier to prevent the gravel from mixing with the sand. Then we filled the bunker with all new sand. We ordered enough sand to add some to the front greenside bunker on number seven and the fairway bunkers on number nine. Another project underway is the area left of the cartpath between four green and the bathroom at five tee. As you are aware, this area had erosion and an old pipe exposed that offered an unpleasant appearance. We added new pipe and installed a smaller catch basin in this area and are currently in the process of back filling the entire area to a more appropriate grade and elevation. This area will be completed soon and then re-sodded in the spring. Also, as promised, the work on the large drain between four and six will commence soon. The old drainpipe leaving the drain is constructed of corrugated metal, and overtime, has rusted away causing sinkholes and erosion. This pipe will be replaced and a new drain system will be installed. We are excited to begin a new year and take on new challenges, hopefully we will get back to normalcy and be able to enjoy the club as intended. Thank you for all your support. And as always, feel free to contact me with any questions or concerns regarding you course. Owen Legg Brook Valley Superintendant

COOKIE OF THE MONTH MARCH COOKIE Crunchy Chewy Chocolate Chip Cookies James R. Patterson III – Sedgefield Country CLub Ever thought about your favorite things to eat and then thought “What if I combined some of these?” Cereal, Chocolate Chips, Marshmallows, Milk, Butter, see the theme here? Well the folks at Momofuku Milk Bar in NYC made this dream come true for me… here is our rendition of their Famous “Cornflake Chocolate Chip Marshmallow Cookie”. Ingredients: 8oz. Unsalted Butter, at room temperature 2/3 Cup Light Brown Sugar 1/2 TSP Vanilla Extract 1/2 TSP Baking Powder 1 ½ TSP Kosher Salt 2/3 Cup Mini Chocolate Chips
1 ¼ Cups Granulated Sugar 1 Egg 1 ½ Cups All Purpose Flour 1/2 TSP Baking Soda 3 Cups Cornflake Crunch (below) 1¼ Cups Mini Marshmallows
1. Using a Paddle on your Stand Mixer, combine the butter and sugars in the bowl and cream together on medium-high for 2 to 3 minutes. Scrape down the sides of the bowl, add the egg and vanilla, and beat for an additional 7 to 8 minutes. 2. Reduce the mixer speed to low and add the flour, baking powder, baking soda, and salt. Mix just until the dough comes together, no longer than 1 minute. (Do not walk away from the machine during this step, or you will risk over-mixing the dough.) Scrape down the sides of the bowl with a spatula. 3. Still on low speed, paddle in the cornflake crunch and mini chocolate chips just until they’re incorporated, no more than 30 to 45 seconds. Paddle in the mini marshmallows just until incorporated. 4. Scoop and roll 1 ½ oz. dough balls and place onto a parchment-lined sheet pan. Pat the tops of the cookie dough domes flat. Wrap the sheet pan tightly in plastic wrap and refrigerate for at least 2 hours, or up to 1 week. Do not bake your cookies from room temperature—they will not hold their shape. 5. Heat the oven to 350°F. 6. Arrange the chilled dough a minimum of 3 inches apart on parchment lined sheet pans. Bake for 14 minutes. The cookies will puff, crackle, and spread. At the 12-minute mark, the cookies should be browned on the edges and just beginning to brown toward the center. If they still seem pale and doughy on the surface, leave them in the oven for an additional minute or so. 7. Cool the cookies completely on the sheet pans before transferring to a plate or to an airtight container for storage. At room temperature, the cookies will keep fresh for 5 days; in the freezer, they will keep for 1 month.
Cornflake Crunch Yield: About 4 Cups
Ingredients: 6 Ounces of Corn Flakes 1/2 Cup of Milk Powder 3 TBSP Granulated Sugar 1 TSP Kosher Salt 9 TBSP Unsalted Butter, melted Directions: 1. Heat the oven to 275°F. 2. Pour the cornflakes in a medium bowl and crush them with your hands to one-quarter of their original size. Add the milk powder, sugar, and salt and toss to mix. Add the butter and toss to coat. As you toss, the butter will act as glue, binding the dry ingredients to the cereal and creating small clusters. 3. Spread the clusters on a parchment-or-Silpat-lined sheet pan and bake for 20 minutes, at which point they should look toasted, smell buttery, and crunch gently when cooled slightly and chewed. 4. Cool the cornflake crunch completely before storing or using in a recipe. Stored in an airtight container at room temperature, the crunch will keep fresh for 1 week; in the fridge or freezer it will keep for 1 month.
APRIL COOKIE Kentucky Derby Pie Cookies James Archer – Raleigh Country Club Growing up in Kentucky, the first Saturday in May was always one to remember. Rather than the traditional Derby Pie, this cookie was always around during my childhood. So enjoy a Mint Julep, a Hot Brown, and a Kentucky Derby Pie Cookie while you cheer on your favorite horse! Riders Up! Yield: 4 Dozen Cookies
Ingredients 1 Cup Softened Butter 1/4 Cup Sugar 1/4 Cup Turbinado Sugar 1 ½ Cups Packed Brown Sugar 2 each Eggs 1/2 Cup Kentucky Bourbon 3 ½ Cups Flour 1 ½ TSP Baking Soda 1 TSP Salt plus extra for Finishing 16 oz. Bittersweet Chocolate, rough chopped 1 ½ Cups Walnut Pieces
THE VALLEY VOICE
Directions:
1. Preheat Oven to 350°F. Line a baking sheet pan with parchment paper. 2. Cream butter and sugar together. Scrape down bowl. Add bourbon and eggs and mix until combined. 3. Sift together flour, salt, and baking soda. Add to wet mixture, in stages, scraping down bowl between additions. 4. Add walnuts & chocolate to incorporate. Let dough cool to allow butter to set back up. 5. Scoop heaping Tablespoon onto lined sheet pan. 6. Bake 10 to 12 minutes or until almost set. 7. Sprinkle with desired amount of salt and let cool.
