GOLF UPDATES
Dear Members,
We have endured enough cold days and nights to start looking ahead to warmer weather and some of our first events. Spring apparel is also starting to roll in from Johnnie-O, FootJoy and Antigua. Be on the lookout for new displays in the shop from those companies, as well as Harlestons which will be debuting in the golf shop in May
March will be kickstarted with a couple fitting days with Titleist and Mizuno This is a great opportunity to make sure you swing into the 2024 golf season with just the right equipment for your golf game! Callaway and TaylorMade will also be joining us in April
We are also pleased to announce a brand-new Ladies Golf Association at the club. With over 25 members already, we are excited to see our ladies golf participation grow throughout the year and make this association a huge hit Opening day will be Saturday, March 16th!
Our Men’s Golf Association also gets kicked off at the end of March These Thursday evening 9-Hole competitions are considered “can’t miss” events! Chef has a series of mouthwatering burger specials ready to serve this season. We also have the Annual Scott Groot Match play commencing at the end of April.
Lastly, you will notice our driving range has received an upgrade and now features brand new range baskets and wet towels to enhance your practice facility experience Our staff will be monitoring the range more often to ensure baskets remain stocked, in their proper position and towels remain in place at all stations.
We are looking forward to seeing more of you out on the golf course as the weather improves and we get our events underway!

Winter is almost over, and spring is right around the corner. We are seeing warmer daytime temperatures, but we are still having cooler nights. The grass on our greens is starting to break dormancy, but most of the rest of the turf throughout the course barely even has a tint of green, if at all.
Now is a great time to apply a pre-emergent herbicide to your yard We have been spraying the golf course for the last several weeks What we apply now will help keep summer weeds like goose grass and crab grass from emerging from seed We also add a little herbicide to the tank, which helps control that nasty poa annua, or annual bluegrass Despite our best efforts with pre-emergent herbicides in the fall, it seems like poa manages to break through in a few places At least we have the means to remove it while the Bermuda grass is dormant
I have been asked several times over the years if it is acceptable to spray Round Up on dormant Zoysia or dormant Centipede. The answer is NO! The only turfgrass plant that tolerates a non-selective herbicide like Round Up or Finale is Bermuda grass. Almost any other variety of turf will not go completely dormant. Specifically, Centipede and Zoysia are very susceptible to the effects of non-selective herbicides, even when they appear dormant
As soon as the greens are growing again, we will begin our sand topdressing program We don’t start verticutting until the turf is vigorously growing If we start too early, we could damage the green and create more challenges than benefits We have already started to lower the height of cut on the greens The goal this year is to meet the spring growing season with firm, fast greens Please keep in mind, we will do everything in our power to stay ahead of Mother Nature, but in those first couple of 80°F days we are likely to see a flush of growth We’ll get them back fast and firm in no time.
The way the greens are looking today, it does not appear as though we have lost any turf over the winter. All of the greens are looking good for the end of February and the first part of March We have been diligent about monitoring soil moisture throughout the winter, and that has made a big difference The mild winter we have had has also been a gift
We should have a great spring golf season! Get out and enjoy the warm days we are seeing The golf course is getting better every day, and you need to get out and take advantage of your membership! Hope to see you on the course soon

MARCH COOKIE OF THE MONTH: LEMON COOKIE RECIPE
BY TODD JACKSON, EXECUTIVECHEF AT WAKEFIELD COUNTRY CLUB
My daughter isn’t a fan of rich chocolate desserts, but she loves anything lemon, and these cookies are one of her favorites, which means I can usually enlist her help in the kitchen when I make them
Ingredients:
12 1/2 oz unsalted butter
10 1/2 oz 10x sugar
12 oz of egg yolks
2 tbsp grated lemon zest
1 1/2 lbs of all-purpose flour
Instructions

Place the butter and the sugar in an electric mixer. Using the paddle attachment on medium speed, cream together until light and smooth.
Add the egg yolks slowly on low speed, fully incorporating and scraping down the sides of the bowl after each egg. Blend in lemon zest.
Add the flour, mixing just enough to incorporate.
3. Using a plain tip, pipe out cookies from a pastry bag onto parchment-lined sheet pans.

Bake in a 400-degree over until lightly brown, 8 to 10 minutes.

Let the cookies cool, dust with powdered sugar, and serve.
Yields 5 dozen cookies.
APRIL COOKIE OF THE MONTH: BUTTER PECAN SANDIES COOKIE RECIPE
BY BRUCE MCINTOSH, EXECUTIVE CHEF AT CC OF ASHEVILLEButter Pecan is a flavor that reminds me of my earlier years. This recipe has been a great find for me; now, I get to share it with all of you!
Ingredients
1 1/3 c pecan halves
2/3 c light brown sugar, packed
2/3 c granulated sugar
8 tbsp unsalted butter
1/2 c vegetable shortening
1/2 tsp table salt
1 tsp baking soda
Instructions
2 tsp pure vanilla extract
3/4 tsp butter-rum flavoring
1 tsp cider vinegar or white vinegar
1 large egg
2 c King Arthur Gluten-Free Measure for Measure flour
1 1/3 c butterscotch chips
1/3 cup granulated sugar, mixed with 1 to 1/4 tsp salt, for topping
Preheat the oven to 375-degrees. Lightly grease (or line with parchment) two baking sheets.
1. Place the pecans in a single layer in a pan and bake until they’ve darkened a bit and smell toasty About 8 - 9 minutes Set them aside to cool, chop coarsely
2 In a large bowl, combine the sugars, butter, shortening, salt, baking soda, vanilla, flavoring, and vinegar Beat this until smooth and creamy
3 Beat in the egg until smooth Scrape the bottom and sides of the bowl with a spatula to make sure everything is thoroughly combined

4 Mix in the flour, then the chips and toasted nuts

6. Mix the 1/3 cup sugar and salt for the coating and put it in a bowl Use a spoon (or a tbsp cookie scoop) to scoop 1 1/2" balls of dough into the sugar/salt mixture, rolling to coat. Then transfer to the prepared baking sheets, leaving 2" between them on all sides; they’ll spread out quite a bit. Or, use a tsp cookie scoop to scoop out 1 1/4" balls of dough

If you’re going to refrigerate the dough, cover the bowl, and refrigerate for about 4 - 5 hours; or overnight. Cookie dough refrigerated for 3 1/2 - 4 hours will spread moderately; chilled overnight, it will spread much less
Bake the cookies for 11 - 13 minutes - 11 minutes for smaller cookies, 13 for larger ones Their edges will be chestnut brown and their tops a lighter golden brown (For dough that has been refrigerated, add 30 seconds to 1 minute for those baking times ) Remove from oven and col on pan until set

Store cookies, well wrapped, at room termperature for several days; freeze for longer storage
