TURF TALK Low Light and Chilly Nights Cooler temperatures are upon us, and for Bermuda grass that means growth has nearly come to complete stop. Not having warm temperatures to grow grass is one thing, but the lack of sunlight is another. As the days get shorter and the nights get cooler, our grass just wants to go to sleep for the winter. We help prepare the course for winter by raising the heights of cut on fairways, tees, collars, and greens. Naturally all of these areas will play slightly differently now than in the summer. A golf ball simply won’t roll as far in taller grass as it will in shorter tighter grass. The rough is one area we don’t touch. People have asked if the rough is getting taller. The answer is always “no, it’s getting thicker”. Bermuda grass prepares itself for the cold weather by getting thick and stem like. Some of the leaf tissue may begin to turn brown and fall off after the first frost. When the plant starts to make itself hardy for the winter, a golf ball has a much harder time staying on top of the turf canopy. If you hit your ball in the rough this time of year, it can be more difficult to find, but it is not because we raised the height of cut. The good news about this time of year is the maintenance team has time for projects. Since we are not cutting grass we have time to get back to work on bunker renovation and irrigation repair. This fall and into winter we will be working on the bunkers on #13 green and fairway, and the bunkers on #18 green. If time and money allow we will continue on beyond those two complexes. Several irrigation challenges will also be addressed. If you love to look after your home lawn, now is a great time to take a soil sample. The Pitt County Cooperative Extension Office will provide you with the soil sample boxes. They also have directions for preparing and shipping the sample. The great news is, it is completely free, other than the cost of shipping. Now is a good time to sample because most soil amendments, like lime, should be applied in the fall. The test results will tell you what to do, and to some extent how to do it. It is also a great time to apply a pre-emergent herbicide for winter weeds. We have already tested the soil on the course and are getting ready to apply herbicide. It’s always a pleasure talking with members here at Brook Valley. NOVEMBER COOKIE OF THE MONTH: RUSSIAN TEA COOKIE RECIPE BY SAM TESSMAN, LINE COOK AT HOLSTON HILLS CC My mother makes these cookies every holiday season and it is just one of those things I look forward to each year. They are so tasty and are one of my absolute favorite things about the holidays. Ingredients: 2 Cups Butter, softened 1 Cup Powdered Sugar 2 TSP Vanilla 4 1/2 Cups Gold Medal™ All-Purpose Flour 1 1/2 Cups Pecans, finely chopped (Pecans may be replaced for walnuts) 1/2 TSP Salt Powdered Sugar for Tossing
Instructions 1. Mix vanilla, 1 cup of powdered sugar and butter in a large bowl until combined. Stir in flour, nuts, and salt and continue mixing until soft dough is formed. 2. Preheat oven to 400 F. Roll dough into 1/2 inch balls and place on ungreased baking pan lined with partchment paper 1 inch apart. 3. Bake for 10 minutes until cookies are set, but not browned. 4. Transfer to a wire rack to cool slightly. 5. While cookies are still slightly warm, toss in powdered sugar.

DECEMBER COOKIE OF THE MONTH: ITALIAN RICOTTA COOKIE RECIPE BY EMILY MONTIMURRO, PASTRY CHEF AT PORTERS NECK CC This is my version of the Italian wedding/holiday cookie called “Tadal” which is traditionally flavored with Anisette and has a drier, crumbly texture. My Noni always made them, to the adoration and praise of family and friends. My grandmother was a painfully humble woman who shied away from any sort of compliment. Whenever she’d receive praise for these confections, she just shook her head and mumbled that they were just “stupid cookies.” Our family now refers to them exclusively as “stupid cookies” to this day. So as a pastry chef, this is my personal interpretation of them. I make them on holidays in reverence to that modest, selfless lady who was the first chef I ever idolized. To make them more shelf-stable and palate-friendly to adults and children alike, I created a recipe where ricotta cheese keeps them soft and chewy, and flavored them with vanilla. They lend themselves to any holiday, happy occasion, or cup of coffee.
Ingredients 1 Pound Butter 3 1/2 Cups Sugar 4 Eggs 30oz Ricotta Cheese 4 TBSP Vanilla 8 Cups All-Purpose Flour 2 TSP Baking Powder 2 TSP Baking Soda Glaze Ingredients: 8 TBSP Milk 3 Cups 10x Confectioners Sugar 1 TSP Almond Extract (optional)
Instructions 1. Cream butter and sugar. Add eggs, ricotta, and vanilla. 2. In a separate bowl, combine flour, baking powder, and baking soda. 3. Add dry ingredients to the ricotta mixture until fully incorporated. 4. Chill & scoop; Bake for 12-15 minutes at 350F depending on size. 5. Allow to cool on sheets before transferring. 6. Mix glaze, making sure its not too drippy. 7. Spoon glaze over each cookie and don’t forget to add desired sprinkles or decor before it dries!
