MEMBERSHIP What a year! With so many restrictions, do's and don'ts in the environment today, the golf and tennis at the club has been full speed ahead. I cannot ever say enough "Thank You Members" for sponsorships. Many of the new members this year had heard so many wonderful things about the Country Club of Asheville that they reached out to learn more and were very impressed with the McConnell Golf model and decided they would like to be a part of the great family here. Justin and Leigh McCleery joined the Resident Full Golf membership. Justin is the Sales Manager for J.B. Mutual (beer and wine distribution). Leigh is a Special Education Teacher with Buncombe County Schools. They have two sons; Owen, age 10 and Will, age 7. The McCleery’s are looking forward to enjoying all the amenities of the club and expanding their network. Other interests include biking, fishing, camping, coaching sports, attending evening classes at the YMCA. Community/charity passions: Eblen Toy Drive. Elijah and Leslie Roberts joined the Junior Golf membership. Elijah is Senior Account Executive for Oversight Systems (software sales). Leslie is Vice-President of Physician Recruitment for HCA/Mission Health. They have a 2-year-old daughter, Palmer. The Roberts are looking forward to enjoying all amenities of the club, meeting new families, and continuing to improve golf and tennis game. Other interests include live music, travel, RVing, sporting events, exploring new restaurants and hiking. Community/charity passions: MANNA Food Bank and Asheville United Way. Rick and Rachael Sparks joined the Resident Full Golf membership. Rick is the CEO of Sparks Millworks, a commercial and residential carpentry firm. Rachael is Head of Marketing for Angelini Pharma, Inc, a published author, and chairs the Board of Asheville Museum of Science. Their family includes 6-year-old daughter, Willa, and Rachael's mom, Martha Dyke. The Sparks are looking forward to golfing, sports, meeting new friends, and dining. Rick has shifted his business focus from Austin, TX to local clients. Rachael & Rick look forward to returning to golfing and Willa is learning swimming and tennis. COOKIES OF THE MONTH NOVEMBER - “BOURBON CHOCOLATE SUGAR COOKIES” Bruce McIntosh – Country Club of Asheville Ingredients:
1 ¾ Cup All-Purpose Flour ¾ Cup Dutch Process Cocoa Powder, sifted ½ TSP Baking Soda ¼ TSP Baking Powder ½ TSP Kosher Salt ½ Cup Unsalted Butter, room temperature ½ Cup (8 tablespoons) Unflavored Vegetable Shortening, room temperature 1 Cup Granulated Sugar ¾ Cup Packed Light Brown Sugar 1 Large Egg 1 Large Egg Yolk 3 TBSP Bourbon (optional, replace with 1 TBSP Vanilla Extract) 3 OZ. grated or very finely chopped dark or Semisweet Chocolate 1 Cup Raw/Turbinado Sugar 2 TSP Bourbon Directions:
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. In a bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt. Set aside. In a large mixing bowl or the bowl of a stand mixer, cream butter until no longer chunky. Add shortening and beat on medium-high speed until smooth and uniformly mixed. Add sugar and brown sugar and beat for 1 to 2 minutes until light and fluffy. Add egg and egg yolk and mix until incorporated; scrape down the sides of the bowl and the beater as necessary. Slowly mix in bourbon. Add dry ingredients in two additions, mixing on low speed until just incorporated. Mix in finely chopped chocolate. If your dough is particularly soft you can refrigerate it for 10 to 15 minutes or so to make it easier to roll. To make bourbon sugar, combine raw sugar and 2 teaspoons bourbon in a pint-sized mason jar. Screw on lid and shake the heck out of it, until sugar is evenly moistened and looks something like wet sand. Pour into a shallow bowl or dish. Scoop dough into 1 3/4-inch balls(the size of a medium cookie scoop). Roll into a smooth ball, then roll into bourbon sugar until evenly coated (the moist sugar will clump, but that’s the effect we’re going for!) Arrange on parchment lined cookie sheets leaving approximately 2 inches of space between cookies. Bake for 12 to 14 minutes or until cookies have settled into shallow domes. They will be set around the edges but still puffed in the middle (they will flatten when they cool). Let cool on pan for 10 minutes, then transfer cookies to a wire rack to cool completely. To store, spread any leftover bourbon sugar in the bottom of an airtight storage container; arrange cookies in layers on top and tightly cover. Cookies will keep at room temperature for up to 5 days.
DECEMBER - “HOLIDAY MERINGUE COOKIES” Chris Shaw - Holston Hills Country Club Chris Shaw, Chef at HHCC, looks forward to the holiday season each and every year for a lot of reasons but one of those that is close to his heart is his mother’s Meringue Cookies. Chris says each time he has one it takes him back to being a child when he would make them with his mom. He knew right away what cookie he wanted to submit for the Cookie of the Month when asked. He wanted to share with his McConnell Family the cookie that means so much to him. Ingredients:
4 Each Egg White ½ TSP Cream of Tartar Pinch of Salt 1 Cup of Granulated Sugar (Superfine) Yield: 4 dozen cookies Directions:
Preheat oven to 225 degrees. Mix Egg whites with whip attachment in mixer until frothy. Add Cream of Tartar and salt. Continue whipping until soft peaks form. While mixer is on low speed, slowly add sugar 1 Tablespoon at a time until sugar is dissolved and stiff peaks are formed. Using a star tip in a piping bag, pipe out the meringue onto a parchment paper lined baking sheet, spaced 2 inches apart. Bake for 45 min and then turn off the oven. Without opening the door let cookies stand in oven for 1 hour. Store in air tight container.

TEE IT UP HOLE IN ONE! Brady Blackburn on September 4, on hole #13.
As we work our way into winter, the days will now be shorter and the temperatures will start to drop. The golf season will wind down as the holiday season comes to a close. With the winter months here, golf becomes a bit difficult for most of us. We have to wear more layers, it’s tougher to get loose, and the golf ball doesn’t fly as far. Some helpful tips to remember as the cooler temperatures arrive: Dress in layers and avoid bulky items like heavy sweaters and jackets. Visit the Golf Shop if you need recommendations on apparel to help dress more appropriately for winter conditions. Remember to allow a good 10 minutes of stretching to help get the muscles loose and ready for physical activity. On cold, windy days, remember to take an extra club as the ball will not fly nearly as far in the winter months as it does in the summer months. I also recommend you “Tee It Forward” in the winter months to make for a more playable and enjoyable round. This means moving up a tee from where you normally play in the summer months. Give it a try! Who knows, having shorter clubs in and more birdie putts might be a lot more enjoyable! Hopefully, some of these tips will make the wintertime just a bit more enjoyable for you! Some things to remember as we transition into the colder months: Tee times begin at 9am as of November 1st and the Golf Shop will be open from 8:30am to 5pm. We typically do not know the status of frost delays until between 8am & 8:30am, once the sun has come up and the frost settles. Delays will be posted to the online tee sheet and emailed to you as quickly as we can but a good reminder, if you see frost at your house, we probably have it here too. We will use the extended forecast to better predict start times and will shift to shotgun starts on busy days to allow for the majority of play to begin in the heat of the day. The range hours will become shorter as the sun sets earlier and will always close early on Sundays to “clean-pick” the range balls. Range hours will typically be from 8:30am to 5pm. The simulator will be available to reserve on cold days in 1 hour increments. We do not set up the simulator daily if no one has reserved it so if you plan to use it, please call us in advance. As the golf season winds down, we only have a few events left on the 2020 calendar. We are currently working on the 2021 calendar and will have most of it in place by the end of the year. In our next newsletter article, we will highlight some of the major events and their dates for 2021

COURTSIDE NEWS From the entire tennis staff, we hope that everyone has a great holiday season and is ready for an exciting 2021. It has to be better than 2020. We have lots of excitement going on at the courts with all types of adult and junior clinics and lots of pickleball options so please contact me if you would like to find ways to join the fun. Please keep an eye on the club calendar as we will be adding events there often. This also makes it easy for you to sign up for the various options. There are several tennis clinics and doubles nights and pickleball drop-in days on the reservation system that you can add your name to or you can reach out to me anytime and I will help you get connected. Junior Clinics are going great and are very well attended. If you would like more information about how to get your child involved, please don’t hesitate to reach out to Tito or me. Our annual USTA JR Tournament was held at the end of October. We had a great group of CCA juniors play and they did great! All of their hard work this summer really paid off and we saw some fantastic results. Congratulations to them all. USTA Jr Tournament Results Andrew Tashie was the champion of the Boys 16s. Mitchell Merrell was the champion of the coed 10 and Under division. Evelyn Merrell was the finalist of the girls 12's . Max Schantz (Howard Greenberg's grandson) was the finalist of the Boys 14's. Oliver Manske 3rd place in the Boys 14's.

OUT OF QUARANTINE AND INTO THE HOLIDAYS! As you all know, the fitness center is officially open! We are doing our best to accommodate everyone but we do have to keep it staffed to stay in compliance with NC guidelines. This means we cannot be open during everyone's desired time slots. Please remember, you do have to have a reservation or check-in with someone before using the fitness center. You are not permitted to enter on your own without getting your temperature screened. We use the last 15 minutes of each hour to thoroughly clean and disinfect the entire facility. Now that the weather is getting colder, the group fitness classes will be moving indoors most days. If the weather is nice, it will still take place outdoors. Muscle/Cardio Pump will be in the Indoor Tennis Center and Yoga will be in the ballroom. We are aware that the ballroom can be slightly noisy at times, we apologize for that. This is what we have to work with at this time. Physical Therapy is available on a bi-weekly basis right now with Dr. Kristen Veres. If you are interested, please contact her at Kristen@conciergephysicaltherapists.com. Come bear the cold with us this January as we host the McConnell Golf’s Polar Bear Plunge - a fundraising event in which individuals raise or make a donation for the chance to plunge into their home club pool. This fun-filled event is in support of the World Wildlife Fund who helps save endangered polar bears. Form a team and bring your entire family, your co-workers, friends or classmates.
