MEMBERSHIP Happy New Year! Cheers to a happy and healthy 2021! Looking back over 2020, we welcomed 70+ new families into the Holston Hills Country Club family. WOW...our club has seen growth and opportunities in many ways this year! DINING EVENTS A LETTER FROM CHEF PATRICK Wow, what a year it has been. We have faced a global pandemic that is still ongoing and while we have been sent our fair share of curveballs here at Holston Hills we have pulled through. I want to thank you, our members, on behalf of the entire Food and Beverage department for your continuous support in 2020 and I know it’ll continue into 2021.
While soup is simmering, roast the corn under broiler for 3-5 min until starting to turn golden brown, stirring occasionally. After roasted, set aside to cool. Add cream, Salt and pepper. Carefully puree soup in batches in a blender until smooth. Once fully pureed, return to pot and add roasted corn. Garnish with minced red onion and cilantro if desired.
While some things are still uncertain, we are still planning our events, even if we have had to alter them a bit. We are still hosting our February Valentines Wine Dinner on Saturday February 13th. This event is limited seating and will sell out so please sign up as soon as possible. Be on the lookout for the menu to release around middle of January. This month’s recipe is a twist on a classic. A Chorizo Tomato Soup. The weather is getting a bit chilly and what is better than warming up with a grilled cheese and a spicy tomato soup. ~Patrick Budniewski, Executive Chef
HHCC ADULT NIGHT OUT BEER PAIRING DINNER SATURDAY, JANUARY 23 I 6:00-9:00pm $39.95++
CHORIZO TOMATO SOUP RECIPE INGREDIENTS 2 LBS Tomatoes (cored) 2 OZ Chorizo 1 Porblano Pepper 1/2 Medium Size Yellow Onion (diced) 1/4 TSP Oregano (dried) 1/2 TBSP Garlic (minced) 1 1/2 CUP Chicken Stock/Broth 1 CUP Heavy Cream 1 TBSP Kosher Salt 2 TSP White Pepper 1 CUP Corn (frozen or fresh cut off the cob) METHOD OF PREPARATION On a Charcoal Grill or under broiler char the tomatoes on all sides. Be careful not to burn them completely. Once charred, remove from broiler or grill and cool. Heat a medium sauce pot on medium heat and add ½ TBSP Canola oil. Sauté the chorizo until cooked thoroughly. Add Poblano, Onion, Oregano and cook for 2 minutes, then add garlic and continue to cook until onions are translucent. Add unpeeled charred tomatoes and chicken broth/stock and bring to simmer. Continue simmering for 1015 minutes.

Welcome to 2021! Last year had many ups and downs but we had some fun times together. BINGO made a comeback at HHCC! We had awesome kids camps including the awesome CAMP INVENTION! Our tennis program is growing and we starting gaining some traction with Pickleball! We had our first Amazing Race which was a big success and so much fun! 2020 saw Jim Disney and Chris Dibble take the Polar Plunge, Ms. Stefanie dressed as a pirate, and it saw our amazing membership support us through a pandemic. We are so thankful for each one of you!

Several years ago, at one of our annual corporate meetings, an idea was brought to the table that we needed a Lagniappe of our own that would show our appreciation to members and their guests for dining with us. This idea quickly grew to a collaboration of our executive chefs, their staff members and other club staff submitting cookie recipes to be used in our monthly rotation. These cookies would be a bite size sweet treat for everyone who had lunch at one of our properties in the dining room. As McConnell Golf has grown we have been able to feature a club each month, in addition to recipes from our CEO John McConnell and COO Christian Anastasiadis, the Easter bunny and Santa Claus. Beyond baking and serving these delicious treats in our clubs each month, we also share the recipe in our newsletter and online blog that includes a special story or meaning behind them. Our culinary teams have embraced this idea and continue to showcase their talents with these delectable sweet treats, from our kitchens to yours.

TEE IT UP 2020! What an unbelievable year! Dear Members, First off we want to pass along all of our thoughts and prayers to everyone. All of us have been affected by the Covid pandemic in one way or another. Everyone’s lives were altered. Whether it was personal or professional every one of us had to make adjustments to our lives that we never would have thought possible. We still live in a world of unknown as more and more conflictive information surfaces about the virus. We hope and pray that each of you have been able to navigate the changes and find a positive outcome to unforeseen circumstances and that all of your families have remained safe through this unprecedented time. One thing that has been a real blessing through all of this has been the resurgence of golf and tennis. Deemed essential activities, both golf and tennis have thrived all across the country and Holston Hills has been no different. At the time of this writing we have played 4,000 plus rounds of golf more than in 2019. Our tennis courts have been full and our Ladies Tennis team has been kicking tail and taking names on the local interclub circuit. Golf and Tennis have become extremely popular again as so many people have turned to safe outdoor activities to occupy their free time. Our membership levels have grown to heights we have not seen since the mid-late 1990’s. We currently have 472 total members. We started 2020 with 437. Activities for members and services provided have excelled under McConnell Golf since we came on board at the start of 2016. The energy level surrounding the club is electric. So many new faces and families and still being able to see members that have been here for many years is very fulfilling. Thank you to all the members for supporting the club and staff the way you always do. Our teams love coming to work everyday and seeing each of you enjoy being here makes all the extra tasks required by Covid regulations worth the time and effort. Our teams have been amazing this year as they have taken on the added practices required. We have sanitized until we are blue in the face, but no one complains. They just get the job done , smile and say hello as they go throughout their day. We cannot thank our teams enough for all their efforts this past year. Speaking of our team, 2020 also brought the retirement of our two longest standing employees: Jeff Wilson and Michael Breeden. Jeff, worked tirelessly on the Grounds Crew from May,1985 until March, 2020. Michael, worked in House Keeping and Club Maintenance from October, 1987 until the end of 2020. We are deeply indebted to the efforts and longevity of these two outstanding team members. Their dedication to their work and to Holston Hills is greatly appreciated and we will miss them both dearly. Thank you Jeff and Michael for you have done for Holston Hills Country Club. We would also like to recognize our Golf Champions for 2020: · Melissa Walsh won her 7th straight Ladies Club Championship · Ginny Leete won the Ladies Senior Championship · Lauren Davis won the Girl’s Junior Championship · Tanner Davis won his 2nd straight Men’s Club Championship · Todd Burgan won the Men’s Senior Championship · Carson Kammann won the Boy’s Junior Championship · Holston Hills captured its first ever McConnell Golf Ryder Cup We are excited to host the Korn Ferry Tour VisitKnoxville Open, May 9-16, 2021 as it was canceled in 2020. We will definitely need as much help and support as possible as the date creeps closer and closer. Please let us know if you would like to volunteer. We are also excited to host the TN Women’s State Amateur Championship, June 29-July 1, 2021. The best female amateur golfers in the state will come play our historic course to add their name to the long list of great Champions. These 2 exciting golf tournaments will be alongside another year full of exciting and fun events for members of all ages. Please review the calendar for camps, tournaments, tennis events, couples golf, and many other social activities that have become very popular at the club. In closing, we would like to copy the same paragraph as last year’s letter. We again want to thank all of you as members for your support and appreciation of Holston Hills Country Club. The ole girl turns 94 this year and as we stated last year, she seems to have found the fountain of youth. Thank you for doing your part in energizing this great club. COURSE UPDATE As I look back over the past year I am glad to see 2020 behind us, and a new year on the horizon. The Grounds Staff has done an amazing job this year with the fewest number of people we have ever had working. Everyone really stepped up and overall I do not feel course conditions really suffered in this odd year. As a lot of businesses were forced to closed and more and more people found themselves working from home, we were fortunate that the golf course remained open. Staffing was a major challenge this year due to Universities being closed and students not being on campus. Even full time staffing was challenging with some not wanting to work around other during the pandemic, and with people constantly out following the CDC guidelines. This uncertainty was the main reason I would say this past year was the most difficult year I have ever been a Superintendent. There were not many days off and you really had to be ready to accomplish a lot of different task each day. Looking back at our goals for the 2020 season I am happy with our results, but honesty I am just happy we were all able to maintain the course at our normal level on a daily basis.
2020 Season Goals Reviewed 1. Reduced height on grass bunker faces: We were able to accomplish this by mowing the bunker faces earlier in the season and removing a lot of thatch that was built up over the years. Then in the spring and summer we then were able to mow the faces at a lower height. 2. Tighter cut of grass in the aprons around the putting surfaces with less grain: We made progress on this goal by changing how aggressive the mowers were setup. We still want to improve this area next summer thru verticutting. 3. Firmer tighter cut teeing surfaces: We also made progress on this goal thru mower setup, and we were able to verticut the tees later in the summer once our equipment was delivered. 4. Greens irrigation heads leveling project: We were able to raise and level the majority of the greens heads this past year, which not only improved the performance of the heads, but also the look around the greens. 5. Continued Clubhouse Grounds improvements: The areas around the Clubhouse are the first impression we make on those who come to Holston Hills and we continued to work on improving the overall appearance of the Club. 6. Continue to promote firm putting surfaces: This was the first year we were able to incorporate the Dryject twice in the same season, plus we continued to increase the amount of sand applied over the year. ~ Ryan Blair, Certified Golf Course Superintendent

TIPS TO A HEALTHY LIFESTYLE 1. Look up recipes. Take the opportunity to try new things. 2. Keep a positive attitude about meals. Healthy lifestyle should be positive. Say “I can have…” rather than “I cannot have…” 3. Incorporate at least 4 food groups in meals and 2 food groups in snacks. 4. Drink plenty of water. 5. Make meals enjoyable. Invite friends and family over to try out new recipes. 6. Plan your meals ahead of time. Try to reuse ingredients you already have or will use in multiple recipes to help cut the costs. 7. Stop eating when you feel full. Before building your second plate of food, give yourself 10 minutes and ask yourself, ‘are you really hungry?’ 8. Make your plate colorful by including a variety of fruits and vegetables. Take advantage of in-season produce. 9. Cut back on unhealthy foods (such as: fried foods, high sodium foods, and high sugary foods). 10. Incorporate at least 30 minutes of physical activity daily. Activity does not have to be completed in one setting.

WELCOME to 2021 - finally! Let’s kick off this year with a wellness challenge we can all do! Starting January 1st we will be posting on the McConnell Fitness Facebook page a daily challenge that you and your family can partake in! This could be anything from drinking 8 glasses of water a day to how many push-up’s you can do. We will have options to like a post, comment or answer a poll question and we are going to keep track of the responses. If you comment, post or like the posts the most we will be entering you in a drawing from your home club for a chance to get some free personal training sessions! Now is the time to kick of 2021 on a good note and start living that healthier lifestyle! Join the fun and keep an eye out daily for these wellness challenges!
