DINING EVENTS A LETTER FROM CHEF PATRICK Spring has Sprung and everything is starting to open up a little bit more and more. From the Flowers to Businesses and Events. Last year we didn’t get to host our Annual Spring Social, which is personally my favorite event of the year. While some aspects of the event may be slightly different, with the staff served stations for food, we still expect to have a great evening. The Social is the Friday of Memorial Day Weekend, which is May 28, 2021. The Spring Social is an adult only event. Mother’s Day Brunch is on May 9th and with reservations from 11:00 am – 2:00 pm. We then will be closing the F&B operations as we get ready for the Visit Knoxville Open which takes place on May 10th -16th, 2021. The May Burger of the Month, will be a Petro Burger. Grilled Brasstown Beef Burger topped with Club Made Chili, Corn Chips, Cheddar Cheese on a Brioche Bun. The June Burger of the Month, will be a Margarita BLT Burger. Grilled Brasstown Beef Burger Fresh Basil Pesto, Applewood Smoked Bacon, Fresh Mozzarella, lettuce and Tomato on a Brioche Bun. Also starting in May, the Burger of the Month will be available as a Chicken Sandwich of the Month.

The Chef’s Recipe I have provided for May and June has been asked for by a number of members already, so I figured I would share with everyone. The Holston Hills Blue Cheese Dressing. It is the staple of our Wedge Salad and the best dip for our Smoked Chicken Wings.

MONTHLY HAPPENINGS FRIDAY NIGHT LIVE MUSIC: Thrift Store Cowboys FRIDAY, MAY 7 I 6:30pm-8:30pm *during dinner service Before the club is totally consumed by the Knoxville Open Korn Ferry Tournament come sit back and enjoy the sounds of the Thrift Store Cowboys during dinner service. Weather permitting they will be on the outside patio. The Lubbock based quintet, which recently relocated to Knoxville, Tennessee includes Fluitt, Colt Miller, Clint Miller, Kris Killingsworth, Cory Ames and Amanda Shires on fiddle and vocals, have been touring together for over a decade after meeting at the musical South Plains College. They are neither of the typical Texas-based types of bands - a countryrock melange or strictly indie rock. As Buddy Magazine points out, "Thrift Store Cowboys' feel is more, for a lack of better description, gypsy desert music - the free sound of spacey, heat-induced delirium...a sure, confident sound backed by thoughtful vision." Schumacher produced their 2006 release Lay Low While Crawling or Creeping, of which Austin Sound said, "the album is to country music what Jim Jarmusch's film Deadman was to the western."

TENNIS & PICKLEBALL COACHES NOTES & TIPS With hot weather on the way it’s important to stay hydrated on the tennis and pickleball courts. During breaks and changeovers it’s important to consume water or a sports drink to stay hydrated. During this time it’s important to drink even if you aren’t thirsty. Once you are thirsty on the court you are already dehydrated! If your match or practice is under an hour then water is the preferred drink. If practices or matches are over an hour then you will need a sports drink to begin to replenish lost electrolytes. I personally prefer the powder mix if I am over an hour into a practice or a match due to sweetness control and most powders contain no high fructose corn syrup.

HHCC CLAY COURTS & PICKLEBALL COURTS Come and check out the newly refurbished clay courts at Holston Hills. New clay material and lines were added to improve the playability of the courts. Two clay court pickleball courts were also added for member use. To book a time for the clay courts contact the tennis office or book online in the Holston Hills member portal.

CARDIO TENNIS TUESDAYS I 8:30-9:30am THURSDAYS 9:00-10:00am SATURDAYS I 10:00-11:00am $15 Super popular! Heart pumping cardio for players of all ability levels in a fun but challenging class. Players will hit lots of balls in a facepaced music themed environment.
