MEMBERSHIP As we are enter into November, I still can't believe how fast this year has gone by. And Christmas is right at around the corner! YIKES! Over the past two months, we have welcomed 15 new families to the Holston Hills Country Club family. Out of those families, 8 of them are Young Executive Golf members. Which has become our fastest growing membership this year. It's exciting to see all the new faces around the clubhouse, on the Tennis courts, in the Fitness Center and out on the Golf Course. Please make sure you are reading the HHCC Weekly Happenings email that goes out every Tuesday afternoon. It's a great way to stay connected to the club. We have tons of things planned for you all throughout November and December. We hope you (& your family) will be able to join us! As always we are here to serve you (& your family), please don't hesitate to call, text or email us if you have any questions and/or feedback. DINING EVENTS A LETTER FROM CHEF PATRICK Autumn is here and the leaves are falling. It's truly my favorite time of the year. We’re excited for the return of our Thanksgiving Day Brunch. It is my favorite Holiday to cook for, plan on joining us and let me do all the cooking for you and your family. Once again we will be having our Annual Holiday Cocktail Party on Friday, December 3rd. With Bucky’s Bikes Charity event on Sunday, December 5th. Another on of my favorite events to cook for is our Holiday Brunch. Which will be on Sunday, December 19th.

(Continue) METHOD OF PREPARATION For topping combine the Flour, Brown Sugar, Butter, Salt and Cinnamon until moist and the mixture clumps together. Gently Stir in the Pecans. Spread the Mixture over the Top of the Mashed Sweet potato blend. Spread evenly. Bake for 30 min until golden brown on top. Serve hot and ENJOY!

This editions recipe is something that I never had growing up, but soon learned to enjoy once I moved to the south. It is Sweet Potato Casserole. Here is a recipe that is not only simple, but very tasty. ~Patrick Budniewski, Executive Chef

THANKSGIVING DAY BUFFET THURSDAY, NOVEMBER 25 I 11:30am-2:00pm $29.95++ Adults I $12.95++ Children

SWEET POTATO CASSEROLE RECIPE INGREDIENTS 4 TBSP Unsalted Butter 1/4 CUP (packed) Light Brown Sugar 1/2 CUP 2% Milk 1/2TSP Fresh Ground Black Pepper

3-4 LG Sweet Potatoes 2 whole Eggs 1 TSP Vanilla Extract 3 TBSP Kosher Salt

INGREDIENTS FOR TOPPING 1/2 CUP All Purpose Flour 1/2 CUP (packed) Light Brown Sugar 4 TBSP Unsalted Butter melted

3/4 CUP chopped Pecans 1/4 TSP Kosher Salt Pinch Cinnamon

METHOD OF PREPARATION Peel and cube the Sweet Potatoes. Add them to a large pot of water and bring to boil over medium high heat. Lower heat to simmer and continue to cook for 15-20 minutes until potatoes are tender. Drain the Sweet Potatoes and slightly cool. Mash sweet potatoes and set aside. Mix together the Butter, Milk, Brown Sugar, Salt, Pepper, and eggs with the Mashed Sweet Potatoes. Pour into a greased 9x13 baking pan, Pre Heat the oven to 350 degrees

FOOTPRINTS ON THE GREEN: BUCKY'S BIKE SUNDAY, DECEMBER 5th I (drop off) 11:00am-7:00pm It's that time again for our annual Bucky’s Bikes fundraiser for the Mission of Hope. Holston Hills Country Club will be accepting new bicycles as donations, as well as monetary donations to purchase bicycles. Bucky Jones, a former Holston Hills Country Club employee, believed that every child should have a Christmas present. For years he would donate a bike to Mission of Hope, in your name for your gift from him each year. Family and Friends wanted to keep up the tradition. Last year we received over 270 bikes to donate to Mission of Hope and Bucky’s Bikes is the largest donation source of bikes. Help us reach our goal this year of 300 bikes!

HHCC NEW YEARS EVE WINE PAIRING DINNER FRIDAY, DECEMBER 31st I 7:00-9:30pm $59.95++ Join us for a fantastic evening featuring a Four Course Wine Pairing Dinner. This event was a huge success last year, make reservations now. Keep an eye out in our HHCC Weekly Happenings for more information on menu and wine selections.

KIDS CLUB

MESSAGE FROM OUR ACTIVITIES DIRECTOR... As I am wrapping up my first month here, I couldn’t be happier with what I have seen. We have had great turnouts for the KNO’s and for our Fall Break Mini Camp. I have so many fun things planned for the kids, family, and adult over the next couple of months , I hope you all love them as much as I do. I also wanted to say a quick thank you to all of the members for making me feel welcome as I start this new journey here at Holston Hills Country Club. I hope that I can continue to provide events that make us the talk of the town!

KNO : ELF FRIDAY, DECEMBER 10th I 6:00pm-9:00pm Ages: 3-10 (bathroom independent) $15 (early bird) I $20 (after December 5th) Your kids will get to take a journey through the seven levels of the candy cane forest, the sea of swirly twirly gumdrops, and wind up in the Lincoln Tunnel. Let’s hope they like spaghetti and syrup (syrup is part of the four main food groups)! *Dinner and snack (& lots of candy) included!

Aliens FRIDAY, NOVEMBER 12th I 6:00-9:00pm Ages: 3-10 (bathroom independent) $15 (early bird) I $20 (after November 7th) Let your kids choose between cowboys and aliens as we discover who is the ultimate winner. With different games and activities, by the end of the night only the best in the galaxy will be left standing. *Dinner and snack included!

KIDS CLUB: WINTER BREAK CAMP TUESDAY, DECEMBER 28th - THURSDAY, DECEMBER 30th I 9:00am 3:00pm Ages: 3-10 (bathroom independent) $100 (includes lunch) I extended care $10 (3:00-5:00pm) Time for the ICE AGE! During camp your kids will get to build igloos and learn how to survive in the ice cold. With plenty of fun things to do, this camp is sure to be one of their favorite parts of winter break.

KNO: HARVEST NIGHT FRIDAY, NOVEMBER 26th I 6:00-9:00pm Ages: 3-10 (bathroom independent) $15 (Early Bird) I $20 (After November 21st) The best way to close out the harvest season is with one last festival. Send your kids down to our last Kids’ Night Out of the Fall for fun games and activities that fully capture fall in all of its glory! *Dinner & snack included!

EMPLOYEE HOLIDAY FUND The past 20 months have been challenging in so many ways. On behalf of the McConnell Golf family and Holston Hills Country Club, we would like to extend a big “Thank You” to all for your continued support. As in year’s past, we are asking you to join the holiday spirit and contribute to our Employee Holiday Fund. Contributing to the fund is a thoughtful way to show your appreciation to our heroes – our awesome staff who have truly excelled during these unprecedented times! This includes our staff members from the front of the house to the back of the house, and all those helping hands who work behind-the-scenes. Thank you. While contributing to the fund is voluntary, adjustments to the fund received by November 30, 2021 will be reflected on your December statement. The contribution will then be distributed among all Holston Hills Country Club employees throughout all departments.

SAVE THE DATE FOR THE POLAR BEAR PLUNGE We’re freezin’ for a reason! Come bear the cold with us this January as

we host the McConnell Golf Polar Bear Plunge - a fundraising event in which individuals raise or make a donation for the chance to plunge into their home club's pool. This fun-filled event is in support of the World Wildlife Fund which helps save endangered polar bears. Form a team and bring your entire family, your co-workers, friends or classmates. All guests are welcome! Keep an eye out for your club's date for the plunge!

She is studying Biological Oceanography and Psychology. Her father is Army First Sergeant Brian Z. Porter (Served for 26.5 years, Retired in 2013).

Adam Gonzalez from Fayetteville, NC 3rd Year Scholarship Recipient Junior at NC State University Adam is studying Business Marketing and plans on working in the marketing field. He received the "Servant's Heart" Scholarship in high school. His father is Army Sergeant First Class Elias "Eli" L. Gonzalez (Served for 20 years, Retired in 2003).

Laney is studying Interior Design. She is involved in the "Be the Match" Club, whose mission is to help cure cancer and raise awareness about bone marrow donations. Her father is Navy Chief Petty Officer Daniel P. McCullough (Served for 12.5 years, Retired in 2006).

SEDGEFIELD COUNTRY CLUB'S HIGHER EDUCATION RECIPIENT Will J. Johnson from Jacksonville, NC 3rd Year Scholarship Recipient Sophomore at NC A&T University Will is studying Kinesiology with plans to become a Physical Therapist. He describes himself as wise, determined and nurturing. His father is Marine Corps Chief Warrant Officer 3 Willie C. Johnson (Served for 21 years, Retired in 2013).

As part of McConnell Golf's Footprints on the Green program, we were able to contribute over $300,000 with 1,526 total gifts to Folds of Honor! The money raised will impact even more families in the months and years to come. McConnell Golf and the Folds of Honor Foundation greatly appreciate the generosity of our members. WINTER GOLF FITNESS Train both sides for strength and flexibility: In golf we are either right-handed or left-handed, but we use the entire body to swing the golf club. This winter, I’m challenging myself to train more of my left side (as a right-handed golfer), and I believe players in our membership could benefit from doing the same. I will be using the speed stick training program, as well as many of the functional fitness pieces of equipment we have in our fitness center at HHCC. You might even see me playing left-handed around the West range! If you are interested in gaining both strength and flexibility over this winter season, please reach out to me and I would be thrilled to assist you in achieving your goals!

MESSAGE FROM OUR FITNESS DIRECTOR... The Pre-holiday Challenge is on! Twenty HHCC members competing and having fun to see who can make the most progress towards to health and fitness goals before the holidays making it very competitive and exciting. With the weather getting cooler and the days are getting shorter, there is no better time to get a jump start on your fitness journey! The contest has officially begun but there still is a few spots for personal training If anybody is interested in not doing the challenge, feel free to contact me anytime to set up your free initial assessment. Thanksgiving and Christmas are approaching, which means really good food that might not be the best for you, but remember that one non healthy meal will not destroy your progress and same with one healthy meal will not give you tons of progress.

HHCC TURKEY TROT THRUSDAY, NOVEMBER 25th I 7:30-9:00am Free Are you looking for some family friendly FUN to kick off your Thanksgiving? Come out for the HHCC Turkey Trot on the back nine. There will be hidden turkeys that can be found and turned in for prizes. We will also have medals for the top three distances that are logged! A hot coco bar and donuts will be waiting for you at the end! Please register so we know who to expect. We will start right outside the golf shop at 7:30am! The only answer is slow & steady, and to work at it little by little each day. Some of you may already have 1/4 or 3/4 but are missing the last piece to your healthy life style puzzle and that’s okay. Remembering that perfection isn’t easy and having all 4 parts locked down doesn’t happen often, so when you get it down you will know right away. At the end of the day, as long you are happy and working to be your best self each day that’s all you can do, you can go to sleep knowing you tried your best and you’ll get up tomorrow and get to try again! TENNIS & PICKLEBALL MESSAGE FROM OUR TENNIS DIRECTOR... Hello Holston Hills Membership! It has been a great first summer and fall for me, I absolutely loving it here! Remember I am going to be open ALL winter long! Once the weather starts getting much colder I will alter the clinic schedule. Huge thank you to everyone who has come out to play and take lessons! You all are the reason I love what I do! I'm excited to be taking a group of our members to participate in an interclub match at Cherokee Country Club at the beginning on November. GO VOLS! I had the opportunity to play doubles with some of the Tennessee Women’s Tennis Team! Had a blast playing with them and I hope to have them out here more for some events and exhibition matches in the upcoming year!
