FROM THE CLUB & MEMBERSHIP FROM DIRECTOR OF OPERATIONS

As 2021 approaches I want to truly thank everyone for the support you have shown for the Club and the staff throughout these unprecedented times. It has been great to see our members, staff, as well as vendors, all doing their part to keep our community safe and open for your enjoyment. January is a wonderful time to reflect on the past year while also setting the wheels in motion for an exciting New Year at Grande Dunes. This past year we welcomed the return of long-time Executive Chef, Mike Marques, back in September. There is no doubt that he and, Director of Food and Beverage, Mike Hill, will successfully direct improvements in all aspects of the Food and Beverage Operation not only at the Members Club but the Ocean Club and Anchor Café as well. Speaking of the Anchor Café, I think it is safe to say that we were all disappointed that the Anchor was never opened this past season. With the many restrictions due to COVID and the limitations with the number of patrons, we felt like it was best to remain closed for 2020. However, we have begun preparations for 2021 including updated menus and minor changes to seating and have set our sights on reopening the Anchor on March 6, 2021. With the assistance of Golf Course Architect, Craig Schreiner, Golf Course Superintendent, Ryan Gamble, and his staff, renovated the golf course in 2020. The renovation project was a multi-phased endeavor. During this time, improvements were made to the foundations of all course bunkers. The course also received all-new sand and drainage enhancements to reduce flooding and water retention in high-traffic areas. The second phase focused on the greens. The course transitioned from bentgrass to ultradwarf bermudagrass, a popular hybrid species. With the new ultradwarf, we will now take advantage of the entire year. We feel like, outside of one major aeration per year, we can use the golf course with the best conditions at any time. Our Annual Tournament Schedule and Social Events calendar will be available in early January. As we ring in the New Year I would like to take a moment to welcome all of our newest members to the club. We couldn’t be happier to see so much interest in Grande Dunes. It is refreshing to see so many new faces around the club. Thank you to our members for your help sponsoring these new members. This could not have been done without you. If you aware of any others that may be interested in membership please feel free to let me know. With the changes to the golf course and the addition of many new members, member golf rounds are up over 40% from the previous year for the months of September- December. This boom in demand will dictate some necessary changes to our daily tee sheets so that we may better service the needs of our golfing membership. We will keep you updated as we begin implementing these new changes in 2021. As we look ahead to 2021 I am excited to see the continued improvements made by our staff. Grande Dunes is bringing positive momentum going into the New Year. As always, I welcome your feedback to ensure our recent success continues long into the future. Respectfully,

Brian Vest, Director of Operations I Brian.Vest@GrandeDunes.com

A NOTE FROM YOUR MEMBERSHIP DIRECTOR It has been an extremely busy holiday season at Grande Dunes. With the membership drive we have had an ever-increasing interest from prospective members and new member families joining the club at an impressive rate within Grande Dunes and beyond. With so much going on, we would like to share with you some important membership updates. But first, I would like to extend my thanks to all for supporting your club. Your referrals and word of mouth have been great. We are so grateful for all of the new members and their families who have joined the club. For the year 2020 we have added approximately 80 new Golfing members and 35 new Social/Sport members. It is extremely exciting to hear from so many as to what brought them to Grande Dunes and what convinced them to join. I have heard many times as to how these new members were drawn in by the warm welcoming membership, staff, friends, and family. Again, I thank you for your referrals. Part of what makes Grande Dunes so special are the friendships, new and old, and memories made through unforgettable experiences at our club. Maybe it is making that impossible birdie on the 18th hole or, perhaps, it is the laughter shared over a casual evening in the Clubhouse. From gatherings with friends and family to large social events that bring everyone together, the Grande Dunes experience is one we all cherish. Help your family and friends share in the joy and camaraderie of the membership experience at Grande Dunes. Due to the success to of our current membership drive we are extending it through the end of January. Pamela Evans, Membership Director I pevans@grandedunes.com

MC FOOD & BEVERAGES HAPPENINGS A Message from Mike It is hard to believe that we are already knocking on the door of 2021. 2020 has been a whirlwind full of constant reaction to the world around us. With this experience it has reminded us that we need to be forever proactive as opposed to reactive to put together fun and safe social activities. With this in mind, we are looking forward to planning and executing memorable events that our members will love. I want to thank all of the members for making me feel so welcome at Grande Dunes. Transitioning from the public sector to the club has been so enlightening, and I could not have done it without the support of not only the staff, but the active members that we have that are so connected to the club and each other.

I am excited to announce that starting January 8th, 2021, we will be adding Friday dinner service to our members. We will also be bringing in musicians on Friday evenings to add to the ambiance of our dining room. 2021 is filled with Golf and Social events that I have no doubt will be successful. GOLF NEWS

2020 Recap As we turn the page and hope to start fresh heading into 2021. We wanted to recap on a year that was far from normal. As the pandemic reared its ugly head at the early part of 2020, we embarked on several projects that have defined our golf course and changed its landscape for the future. Our bunker renovation project was completed earlier this year, and it has altered the way we look at any amount of rain in the forecast. From what used to be unplayable after trace amounts of rain, turned into tour quality bunkers. We cleared out the existing sand, base layers, and drainage, then reconstructed every bunker with new chamber drainage, sublayer, and fresh sand. This has created a playing surface that will only get better as the years go on. Then, the pandemic hit, causing us to re-evaluate all aspects of our lives. We no longer were able to do many of the things we love, including the golf course and club house being closed for a period of time. With a scheduled greens renovation project looming in the wing and uncertainty at every corner, it seemed as if our greens would be neglected for one more summer. Yet, our owners felt that we could rise like a phoenix from the ashes of the pandemic with a golf course that was better than it was. And so, we closed the Members Club for ninety plus days after Memorial Day to undertake an all-embracing greens renovation project. The hot summer sun along with millions of gallons of water get us to where we are today, with a golf course we feel like is the best it has been in a decade. Thank you to Ryan and his team for the long hours and tender care to their newly minted TifEagle Bermuda greens! As we do every year, we wanted to highlight some of our members.

TEE IT UP GOLF NEWS 2021 New Year’s Resolution: Our 2021 New Year’s Resolution is all about our golf club. We are not asking for much, but it will require each of us to do our part in making sure the Grande Dunes Members Club is pristine every day of the year. Golf cart traffic is high on our list of things we want to improve on going into next year. We would like to ask all of our members and staff to be considerate of the golf course when using a golf cart or walking cart when playing golf. Be sure to keep all cart traffic at least thirty yards away from all putting greens. Contrary to belief, it does not speed up play to park closer, in most cases, you actually slow down play by parking in an area that does not allow for quick exit the next teeing ground. Instead, try to park your cart in the direction of where the next hole is played from. This ultimately allows for the next group to play the hole once you exit the green. Fix our divots and ball marks. Every time a golf club strikes the turf and dirt is exposed, take a second to fill it in with the sand that is provided on your cart. This allows for even growth of the grass and incomparable playing conditions. Plus, it will be much easier to hit a shot that is on a bed of sand and not sitting in a hole in the ground. Our greens complex is significantly different now. The golf ball does not stop where it lands like it did on the old bent grass greens. That being said, give yourself a minute when you arrive to a putting green to fix your ball mark plus one more additional mark. It will only help make our greens extraordinary day in and day out. In most cases, your ball mark will be twenty to thirty feet short of where it came to rest. Lastly, get out and play! We have a brand-new course and would love to see everyone play golf and be around our brilliant practice area. Join us! Join us in our men’s and ladies golf groups. They play on Wednesday, Friday, and Saturday mornings. Join us in our monthly golf tournaments. Playing outside your comfort zones may seem intimidating, but it should not be. Our golfer’s skill levels are diverse and range from beginners to seasoned tournament players. There is a game for everyone! If you have interest and would like more information reach out to us and ask how our professional staff can help you.

FROM THE GREEN Winter is here and I’m sure you’ve seen some differences in playing surfaces. The biggest difference between Bentgrass and Ultradwarf Bermudagrass greens is winter dormancy. Although Bentgrass greens never go dormant here in the transition zone they certainly are managed differently throughout the heat of the summer. With Bentgrass we were constantly on guard for disease pressure that increased heat and humidity would bring throughout the summer months. As you well know we would spend a tremendous amount of time battling wilt between late May and early October. Unfortunately, with Bentgrass in Coastal South Carolina we were at the mercy of Mother Nature during this time. We could make perfect decisions at every turn and still lose grass, root loss was inevitable every summer, just a part of it. Changes in height of cut were made throughout the summer to give the plant more leaf tissue for transpiration, essentially more space for the plant to sweat and cool itself. Bentgrass is a great putting surface, but much, much better during the shoulder seasons here in Myrtle Beach. Conversion was a necessary decision for us as our greens were extremely contaminated with 419 Bermudagrass. Another issue that extremely hot/humid weather creates. Bermudagrasses far out perform cool season turfgrasses in this region and once the door is opened Bermudagrass will gladly take over and this was certainly the case here. Making conversion inevitable. Believe it or not we recaptured approximately 60,000 square feet of original greens space during our renovation, that’s more than an acre and does not include the contamination that was within the Bentgrass, hard to believe. TifEagle Ultradwarf Bermudagrass was a much more suitable choice for this region, however it does go dormant here. Bermudagrass loves the hot/humid conditions that we experience here, honestly the hotter the better. It does need more water than Bentgrass, but not throughout the day, typically we can preventively hand water in front of play. Because Bermudagrasses go dormant here in MB we must also adjust our height of cut for the health of the plant and ultimately its winter hardiness. Unfortunately, as we raise the HOC the greens do slow down, but as they continue to go dormant those speeds will return. With Bermudagrass greens our defenses go up as temperatures go down, really the exact opposite of Bentgrass. If temperatures dip below 25 degrees for an extended period of time we may also need to cover the green surface to protect them. We will also water the greens for a couple nights prior to these cold spells as wet soil is less likely to freeze. Our goal as the Bermudagrass goes dormant is to do everything in our power to have them come out of dormancy as well as they went in. I will do my best to keep everyone informed going forward, there are many differences between these grasses. I do believe that for our purposes TifEagle was a great choice. Good news is there is no spring aerification of Bermudagrass, that will take place the week after July 4th. Our goal will be to complete all cultural practices for Bermudagrass during that week. As always don’t hesitate to contact me with any questions or concerns. Yours Truly, Ryan Gamble Golf Course Superintendent, Grande Dunes Members Club ryan.gamble@grandedunes.com 843-903-3484

FROM THE KITCHEN COOKIES OF THE MONTH

JANUARY

FEBRUARY

Cocoa-Molasses Drop Cookies

Chocolate Dipped Coconut Macaroon Cookies

Recipe From 1985-2015, H. Robert Sharbaugh was a member of the Country Club of Asheville and had served time as a member of the board for a number of years. He was very well-known and admired by club members and staff alike. He meant a great deal to me, especially during my earlier years at the club. One memory of him that stands out to me in particular was the year that, this self-proclaimed chocoholic, gifted me a very old, yet pristine Hershey’s cookbook from 1934 that had been revised and reprinted in 1971. I think of him fondly every time I open the binding to see his name on the inside cover. Thank you for your service to our country and the many laughs throughout the years. This one is for you Mr. Sharbaugh!

Recipe This has been one of my favorite cookie recipes for as long as I can remember. As a kid my grandmother would make these for us when we would come and visit. While all of the others would devour the chocolate chip cookies, I had these all to myself. If you like coconut and chocolate, this recipe is for you! With the toasted outside, creamy inside and smooth chocolate to tie it all together, it cannot get much better.

Yield: Approximately 2-3 Dozen Cookies Ingredients: 1/3 Cup Unsalted Butter, room temperature 1/3 Cup Granulated Sugar 1/3 Cup Molasses 1 Egg 1 Cup All-Purpose Flour, sifted 1 TSP Baking Powder 3 TBSP Hershey’s Cocoa Powder or whatever you have on hand 1/2 Cup Chopped Nuts

Directions: Cream butter and sugar; add molasses and the egg. Sift together all dry ingredients and add to wet ingredients. Fold in the nuts and scoop mixture into 1 inch rounds onto a greased and lined sheet pan.Bake at 375°F for 8 to 10 minutes.

Ingredients: 16oz. Sweetened Flaked Coconut 1 Cup Sweetened Condensed Milk 1 TSP Vanilla Extract Pinch of Salt 6oz. Semisweet Chocolate Chips 2 Large Egg Whites Directions: Start by mixing the coconut, sweetened condensed milk, vanilla and salt thoroughly in a mixing bowl. Next, separate the egg whites from the yolk and beat the egg whites until they form a stiff peak. Gently fold the egg whites into the coconut mixture. Using a small scoop, scoop the mixture onto a parchment lined sheet pan spacing each about two inches apart. Place the macaroons in a 325°F preheated oven for 25 minutes, rotating as needed to prevent burning. While macaroons are baking in the oven, melt the chocolate in a double boiler or microwave, stirring frequently. When cookies have cooled completely, dip the bottoms in the melted chocolate and place them on a clean sheet of parchment paper.Enjoy!

MCCONNELL GOLF

HISTORY OF MCCONNELL GOLF'S COOKIES OF THE MONTH Several years ago, at one of our annual corporate meetings, an idea was brought to the table that we needed a Lagniappe of our own that would show our appreciation to members and their guests for dining with us. This idea quickly grew to a collaboration of our executive chefs, their staff members and other club staff submitting cookie recipes to be used in our monthly rotation. These cookies would be a bite size sweet treat for everyone who had lunch at one of our properties in the dining room. As McConnell Golf has grown we have been able to feature a club each month, in addition to recipes from our CEO John McConnell and COO Christian Anastasiadis, the Easter bunny and Santa Claus. Beyond baking and serving these delicious treats in our clubs each month, we also share the recipe in our newsletter and online blog that includes a special story or meaning behind them. Our culinary teams have embraced this idea and continue to showcase their talents with these delectable sweet treats, from our kitchens to yours.

HEART HEALTHY MONTH IN FEBRUARY Eat healthy, be heart healthy and improve your overall health! This February, McConnell Golf will be focusing on how seafood supports immune health with the Seafood Nutrition Partnership. Seafood, both fish and shellfish, provides essential nutrients to the body that keep the immune health functioning properly. Take the pledge to eat two servings of seafood each week, tag us @McConnellGolf using #SeafoodSustains and visit www.seafoodnutrition.org/eat-seafoodamerica/ for more details. Don't forget to wear red on February 5th in support of the American Heart Association...more details coming soon!

OUR CHEFS APPRECIATE YOUR SUPPORT The culinary teams at McConnell Golf would like to extend a special thanks for the support you have given them over the last 12 months. In addition to purchasing meal kits and ordering takeout options, you have helped give back to the community through meal fundraisers, wine dinners and more. Our chefs continue to work hard to provide unique offerings, while also ensuring your meals are prepared safely using quality ingredients. As we enter the New Year, remember to support the food and beverage team at your local club and take advantage of to-go packages.
