MARCH: CUT OUT SUGAR COOKIES
By Rhett Sorg, Executive Chef at The Water's Edge CC
INGREDIENTS:
3 Cups All-Purpose Flour
2 TSP Baking Powder
1 Scant TSP Baking Soda
½ TSP Ground Nutmeg
½ Pound Unsalted Butter
DIRECTIONS:
2 Large Eggs
1 Cup Sugar
1/4 Cup Milk
1 TSP Vanilla Extract
Colored Sugar or Decorations (optional)
In a bowl, combine the flour, baking powder, baking soda, and nutmeg.
Cut the butter into the dry ingredients with a pastry blender until it resembles a coarse meal
In another bowl, beat the eggs. Add sugar, milk, and vanilla. Beat well to dissolve the sugar Add to the dough and mix very well until smooth
Wrap dough in film wrap and refrigerate for at least 45 minutes or overnight
Preheat oven to 375°F
Roll out dough to about 2-inch thickness and cut into shapes with a cookie cutter.
Place on a baking sheet and bake until lightly browned; 8 to 10 minutes
APRIL: PEANUT BUTTER FUDGE COOKIES

INGREDIENTS:
2 Cups All-Purpose Flour
½ Cup Dark Cocoa Powder
1 TSP Baking Soda
¼ TSP Salt
1 Cup Butter, at room temperature
½ Cup JIF Peanut Butter
DIRECTIONS:
2 Large Eggs
1 Cup Sugar
¼ Cup Milk
1 TSP Vanilla Extract Colored Sugar or Decorations (optional)
In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside
In the bowl of a stand mixer fitted with the paddle attachment, beat butter, peanut butter and sugar on medium speed until light and fluffy, about 3-4 minutes Add eggs, one at a time, scraping down the sides of the bowl as needed Add vanilla and beat until combined Reduce speed to low and add flour mixture, beat to combine. Add melted chocolate and beat until combined Fold in milk chocolate chips and peanut butter chips
Transfer the dough to a sheet of plastic wrap, wrap it up and refrigerate for 3 to 4 hours.
Preheat the oven to 350°F Line 2 cookie sheets with parchment paper
Roll a heaping tablespoon of dough into a 1½-inch ball and place it on the prepared baking sheet. Repeat with the remaining dough, spacing the balls about 2 inches apart
Bake until cookies are set in center and begin to crack, about 10 minutes
Let cookies cool on sheets for 2 minutes before transferring cookies to wire racks to cool completely

The beginning of March means two things: March Madness is about to begin in a few weeks, followed by the unofficial start of golf season when the best golfers in the world tee it up at Augusta National for The Masters! Like you, we’re looking forward to another fun year of golf at RCC and are excited about our tournament and instructional programs in 2023
To help you get off to a good start this season, we have two fitting days in March with TaylorMade (March 3) and Titleist (March 31). In addition, we are also hosting another Next Round event on March 19 for you to trade in old, used clubs for store credit This is a great opportunity or, in some cases, an excuse to clean out the garage or basement to buy the latest in technology to maximize your game
As we start the season, we are happy to announce the addition of Erica Stoner to the RCC professional team. Erica was hired this winter as our new Director of Instruction to replace Davis Bateman and will start on March 15 We are excited to have her join the team and are positive she will be a tremendous asset, especially after being named one of the Best Young Golf Instructors and Best in State by Golf Digest Please welcome Erica to RCC when you see her
