After many weeks of rising and dropping temperatures, spring finally arrived and the grass is growing, flowersareblossoming,andthetreeshavebudded

As a team, we are always working on providing the very best facilities, amenities and service to all our members and your guests The golf course is in great shape despite the varied weather over the last coupleofmonths Thetennisfacilitiesfenceprojectisalmostcompleteandlookinggreat Our competition pool had been re-plastered a few weeks ago due to many cracks in the plaster and it is lookingfantasticaswell.

We are ramping up for a fantastic summer at PCC and all departments are hiring well-qualified staff in all positions to enhance your experience whenever you choose to visit the Club As we all know, hiring has not been easy and our goal is to hire, train and retain our staff to provide more consistent service to you all. Our staff enjoys working here and they love to hear compliments when they do a great job or go the extra mile. We are always thankful for your positive comments and share them with the entire staff to show that all their hard work is appreciated I always encourage you to please spread the cheer which brightenseverybody'sday

Golf Course Update

There has been a lot going on out on the golf course recently The turf is thriving with the warm temperatures and course definition is getting moreandmoredialedinwitheverytimewemow,alongwithsomeincreasedfertilitytohelpwithplanthealthandcombattingfoottrafficandcart traffic. Inadditiontostayingontopofregularcoursemaintenance,thisisaverybusytimeofyearwithsomebigtimeeventsonthecalendarover thenextfewmonthsincludingCrownCupmid-June,andcourseaerificationweekattheendofJune,whichwillincludeDryjectthisyear

Dryject involves using specialized machines to inject kiln-dried sand into the greens using water pressure to blast the sand downward into the greenssoilprofile Doing this creates channels of sand, while disturbing the greens mix to disrupt and dilute layers, thatch, and other pollutants belowthesurface. DuringtheDryjectprocess,35tonsofsandwillbeinjectedintothegreens. EventhoughDryjectisconsideredanon-invasive process,wewillstillbumpupfertilityforafasterhealingtimeduringaerificationweek

The process for greens aerification this summer will be a lot different than it was last year. We will start the week before with extra nutrients and fertility to ramp up plant processes for speedy recovery after the aerification process is complete The plan is to pull as many small cores as we can to remove as much organic matter as we can, instead of pulling larger cores. This will make it easier on us, and speed the process of healing ten-fold. We will rely on the Dryject process to incorporate sand into the greens rather than trying to fill holes. This will also allow us to do other things,likepullcoresinfairways,insteadofthetime-consumingprocessofgettingsandintothegreens

Thatch is the layer just beneath the canopy that is made up of organic matter, stolons, and rhizomes Too much thatch can cause the greens to becomesoft,canpreventnutrientandwaterinfiltration,hindergasexchangeandrootgrowth,andpromoterootdiseaseiffungicidescan’treach the root zone. This is one of the reasons that we topdress on a regular basis. Both Dryject and aerification will benefit plant health drastically and allow us to manage things easier throughout the summer months Having them done at the same time is crucial to an easy aerification week, and easyhealingasquicklyaspossible

This cookie was one of our family’s favorites. Grandma would always serve these cookies after dinner, crispy on the outside with cinnamon and sugar andawarmfluffycenter INGREDIENTS

1Egg

1/2TSPPureVanillaExtract

11/3CupsAll-PurposeFlour,sifted

1/4TSPCinnamon

1TSPCreamofTartar

1/2TSPBakingSoda

1/8TSPSeaSalt

DIRECTIONS

Preheat oven to 375°F. In a small bowl, mix together 2 tablespoons sugar and 1½ teaspoon cinnamon. Set aside. Sift flour into a medium bowl. Add cinnamon, cream of tartar, baking soda & salt and stir to combine Set aside Cream together butter, shortening and sugar in the bowl of a standing mixer fitted with the paddle attachment (or with a hand mixer) Add egg and vanilla and beat again until smooth Add dry ingredients and stir until combined. Use a 2 tablespoon cookie scoop to measure dough, then roll into balls. Roll each dough ball in the cinnamon sugar mixtureuntilit’sevenlycoated. Throughout my culinary career two chefs that I’ve always admired and looked up to are Mildred “Mama Dip” Council, Founder of Mama Dip’s Kitchen in ChapelHillandWalterRoyal,ExecutiveChefattheAngusBarninRaleigh Ilove sharing their recipes with members at Old North State Club There is no coincidence that if you come to the lake for Steakhouse Night that you will notice Chef Royal’s Chocolate Chess Pie is also on the menu. Mama Dip’s Southern Desserts has been featured on dessert menus and member events here at ONSC Chef Council’s Congo Square Recipe is the newest addition to theCookieandDessertBarMenu.Ihopeyouenjoy.

DIRECTIONS

Preheat oven to 325°F. Butter and flour a half hotel pan. Mix melted butter and brown sugar until smooth. Add beaten eggs to butter and sugar mixture In a separate bowl mix all-purpose flour, salt, and baking powder together and add into bowl of wet ingredients When the ingredients are blended together fold in chocolate and toasted pecans Pour into prepared half hotel pan Place in preheated oven and bake for 30 minutes

Let cool and cut into 2 dozen bars.
