Last year seemed like it went by in a blink of an eye, I feel like just yesterday we were setting up for the 4th of July Freedom Celebration. This past year we said goodbye to some neighbors that have called ONSC home for so many years, but in turn, got to say hello to a lot of new ones! It has been great to meet so many new families that have decided to call Old North State Club home. We look forward to making 2022 one of the best years yet at the lake.I know Executive Chef Isaac is hard at work coming up with new ideas to dish up and to really elevate the culinary experience at the club. Justin Mathers and the Golf Gurus will not be outdone and they are cooking up some great ideas of their own for a fun-filled golf year. We regret to inform you that Kent Whitener will be stepping down in his position at Old North State Club. His family will be relocating to Indiana at the beginning of January 2022. We wish them all the best during this transition and I would like to thank Kent for all of his hard work at Old North State. This was a tough decision for the Whitener family but they are excited about the new opportunity. Please join me in wishing Kent and his family all the best! We have begun the search for Kent’s replacement and are confident we will have someone before the Tennis season gets into full swing. Thank you in advance for your patience and understanding during this time of transition. Finally, I would like to thank all of you for your continued support for Old North State Club. The increase in activity and excitement during my relatively short time here has been tremendous. From all of us working here at Old North State, we wish you and your families all the best in this upcoming year. Cheers to another great year at the lake!

FROM THE KITCHEN A NOTE FROM YOUR EXECUTIVE CHEF Hello Everyone, I hope everyone had a Happy Holiday Season and a Happy New Year. These last few months have been great. I’m still glad to be a part of the Old North State Club Family. I really hope you all have enjoyed the food that the Culinary Team has prepared so far. I hope you are still enjoying the Fall Menu and Weekly Specials. We are planning to change to our Winter Menu in late January. We are looking forward to partnering with local farms around the area. We’ll be starting the farm 10 miles up Highway 8, Seven Sisters Farm in Denton NC. We have had the pleasure of cooking and enjoying their Fall/Winter crops so far of Collard Greens, Red Beets, Hakurei Turnips, Granny Smith Apples, Baby Gem Lettuce, Carrots, and Bok Choy. I can’t wait to see what they produce when the Spring and Summer crops come in. We’ve made a few minor changes in the products we serve as well. Changing from the Brioche Buns to the Martin’s Potato Buns has been a hit with Members.

The Culinary Team is in the planning stages of some fun and tasty culinary events for members to enjoy. We are excited about the Cooking Classes, Chef Table Dinners, and Themed Dinners. These events will give us a way to show off our talents in the most creative and delicious way. We are also able to utilize new ingredients we are interested in and techniques that are culinary trending. See you at a table by the lake, Isaac J. Spencer Executive Chef
12 WEDNESDAY PASTA NIGHT 5:00pm-8:00pm | Reservations Required Be your own chef for the night (don’t worry we still do the cooking) and build your own pasta dishes from a variety of Chef attended action stations. Kathy started Fiddlehead Cellars in 1989 and produces some terrific Sauvignon Blanc and Pinot Noir that please a broad range of palates. At Fiddlehead, Kathy produces about 5,000 cases of wine annually allowing her to take a personal interest in each grape cluster and each barrel of wine.

HEART HEALTHY MONTH IN FEBRUARY Eat healthy, be heart healthy and improve your overall health! As part of McConnell Golf's company-wide initiative during the month of February, your club's culinary team will be offering a Heart Healthy Meal Package set to Feed 2, 4, 6 or 8 people. With the purchase of each meal kit, a portion of proceeds will go directly to the American Heart Association. The meal kit will include two (2) 6-ounce filets of True North Salmon, 6 ounces of Blanched Haricot Verts, 6-ounce Blanched Red Bliss Potatoes and 1 ounce Lemon Herb Compound Butter. $38 (Serves 2) - cooking instructions and seasonings will be provided.

TEE IT UP A NOTE FROM YOUR DIRECTOR OF GOLF Happy New Year Old North State Members, 2021 has proved to be another record year here at ONSC, and we could not have done it without you all. Thank you to everyone who participated in Golf Events, brought guests out to play, supported the golf shop, or just enjoyed some casual rounds of golf. We appreciate you all. As I reflect on the year, we had many successes, some individually, and some as a Club. One individual success I would like to highlight is accomplished by our own Head Professional Adam Davey. Adam, as you all know is not from Southwest Louisiana, as Jared Hedrick tries to imply. Adam is from a small town in England and has been attempting to gain permanent residency here in the USA for over a decade. Adam has jumped through more hoops than I am sure he even remembers, but as of a few months ago all that hard work and patience paid off. Congratulations to Adam Davey on obtaining that residency. Happy to have you for good! In the year to come our Golf Staff will continue to build on our customer service and attention to detail. I feel like we have come a long way in the last two and a half years, but we are far from where we could be. We will continue to stay ahead of the apparel trends and be up-to-date on all golf-specific technology and products. We all love what we do, so we will continue to work hard to show you all that passion. I also want to thank Brian Pabst and Tara Wright, along with all the other Food and Beverage staff for putting up with the golf staff. Chris Chapman and his Agronomy Team kept the golf course in excellent condition all year. My Golf Staff, made up of Adam Davey-PGA, Jared Hedrick, and Aaron Richardson have been rock stars all year. Aaron was able to get his feet wet running the Sundowners Couples Golf, and did a great job of that. We have a great team here at the lake, and I am proud to be part of it. I'd be remiss if I didn't mention Anne Burns, our Communications Director. Over the past few years, Anne has been able to grow the ONSC Instagram following by 1000 people by publishing wonderful images and flyers using pictures you all have sent in, or information that the Club needs to be created. Anne has also created Tournament specific logos and stickers, and has played a big role in the lifestyle pieces we carry in the golf shop. She has truly been the unsung hero of both the Golf and Food and Beverage operations. We are lucky to have her. Have a Blessed 2022, Justin Mathers, PGA

A NOTE FROM YOUR COURSE SUPERINTENDENT I hope everyone enjoyed the holidays and got lots of new golf toys for 2022! Most of the leaves have fallen and all the Bermuda is dormant so for the next month or so we will focus on cutting dead trees and heavily pruning trees, shrubs, and ornamental grasses. Don’t worry we won’t forget about setting the course up for play as well. I’m sure we will have some great weather sprinkled in during the winter months for you to get out and enjoy the course. SEDGEFIELD COTTAGE AND SUITE Both within walking distance of Sedgefield's first tee, these two options are convenient to Sedgefield Country Club as well as The Cardinal by Pete Dye. The Stanley Apartment features two bedrooms with a king bed in each room, two bathrooms, a living room, dining room, coffee maker, wireless internet, and flat-screen televisions. The Sam Snead Cottage features two bedrooms each with one queen bed, one bathroom, a living room, dining room, and kitchenette with microwave, coffee maker, and refrigerator. Sedgefield is home to the PGA TOUR's Wyndham Championship, which is contested each year in August. The Sam Snead Cottage overlooks the brand new practice area that was completed just before the tournament in August of 2020.
