CLUB UPDATE AND NEW MEMBERSHIP A NOTE FROM YOUR CLUB MANAGER Happy almost Spring Old North State! I hope everyone has made it through the winter months and is ready to get into the spring swing of things. Staff in all departments got a head start this year on some big spring cleaning projects and we are ready for an exciting season. The golf season is just a few short weeks away from teeing it up and we will kick off wedding season a little earlier this year as our first wedding is in March. 2021 is shaping up to be another great year on the lake. Be sure to follow us on social media and keep an eye out for weekly emails so you can be sure you are up to date on everything happening at your club. While we seem to have some positive movements with COVID restrictions we are not out of the woods yet. We will continue to provide the best experience possible while making sure we provide a safe environment. We kindly ask you to follow the rules and regulations in place when visiting the club as we adhere to CDC, state, and local guidelines. Do it for your friends, your fellow members, and for all the staff that comes here each day to serve you.

As we approach a full year of restrictions let us not become complacent, but let us continue to follow best practices in the hopes of reaching a level of normalcy. Thank you in advance for your continued cooperation and support in this matter. All the best, Brian Pabst

WELCOME NEW MEMBERS Ken & Amy Schoonhagen; daughters Allison (27), Erin (25) & Emily (21) While new to the Old North State Club, the Schoonhagens are not new to the Badin Lake area, as they have vacationed here from Greensboro for 20 years! They have recently sold their home in Greensboro and moved full-time to a life of relaxation on the lake! Ken is in the insurance profession, and Amy is described by Ken as a “Home Executive”, aka stay-at-home-mom! They were referred to the club by member Marc Stevens, and also know many other members, including the LeGrones and the Petitfils. Please join us in welcoming the Schoonhagen family as one of our newest members of the Old North State Club! Michael & Tina Rizzi; daughters Ashton (22) & Morgan (20) Please join us in welcoming the Rizzi family to the Old North State Club! Residents of Clemmons, NC where Mike is a lawyer in the area, the Rizzis have recently purchased a vacation home in the neighborhood, where he is looking for a friendly place to play golf. Referred to the club by members Doug and Sydney Muir, when not playing golf or working, Mike enjoys boating and sports. We are glad to have the Rizzi family join us at the club! Cameron & Erin Spencer; daughter Emma (1) Cameron is a former US Army Officer and CIA Officer. He is currently finishing up an assignment in the Army Reserves. He is also the Founder and President of Industrial Base Solutions Inc. Erin is a Financial Advisor with Ketner Financial Group and Equitable. They live in Salisbury on High Rock Lake with their one-year-old daughter Emma. Please join us in welcoming the Spencer family as one of our newest members of the Old North State Club! Blake & Nancy Kiger; daughter Reagan (26) and son Davis (23) Blake and Nancy met at the University of Georgia and are avid Bulldogs fans! Blake grew up in Savannah and has always enjoyed golf and being out on the water. He currently owns a construction consulting firm, Simon-Meyer Charlotte, and also serves as a Cabarrus County Commissioner. Nancy is from the Atlanta area and is a school-based physical therapist working with disabled children. They have two children, Reagan and Davis. Reagan is married to Matt Barfield and lives in Columbia, SC. She is a clinical pharmacist and faculty member at the University of South Carolina College of Pharmacy and Matt is currently in Medical school. Davis graduated from High Point University where he was on the golf team. He is now a consultant with Accenture and dating Jenna Smith who is also in the family photo. They all love being together at the lake as much as possible and going out in the boat! Keith & Kelly Textor; daughter Brennan (26), and sons Chase (23), & Ethan (20) Please join us in welcoming the Textor family to membership within the Old North State Club! The Textors reside on Badin Lake and were referred to the club by their friends and current members John & Laurie Lamb. Keith works in Professional Services and Software and travels globally. When not traveling, the Textors are looking forward to socialization and relaxation at the club. They are also interested in boating, water sports, and hiking. Welcome to the club!

Here we are at the end of another football season and Tom Brady has another championship (I’m rolling my eyes while I’m typing this). I guess some things never change! But our menu, however, does! I hope you’ve enjoyed some of the winter changes and features we have offered. We are putting a major focus on frequent menu changes this year as well as weekly specials. So keep an eye out for the weekly happenings. As winter is coming to an end and we can move on from root vegetables, I’m really looking forward to the warmer weather and more colorful spring options. It helps open up our offerings; we can do more grill-outs at the turn and outdoor events like lawn parties, which will also allow for social distancing. Speaking of Covid-19 restrictions, we are planning to approach it as an opportunity.

WOMEN’S ACC CHAMPIONSHIP I APRIL 14-18 The Atlantic Coast Conference announced that the ACC Women's Golf Championship will be held at Sedgefield Country Club!

Congratulations to our top four members who commented or participated the most in our January Facebook Fitness Challenge! Each of our winners received free personal training sessions at their home clubs. We continued the challenge in February with “Love Yourself Month”. From meditation tips and tools to wellness relaxation techniques, along with some occasional fitness challenges, February was all about a better you! TEE IT UP A NOTE FROM YOUR DIRECTOR OF GOLF

A NOTE FROM YOUR COURSE SUPERINTENDENT

Hello ONSC Golfers!

THREE PUTT! I can only think of one other two-word phrase that may send more chills through the spine of a golfer and that's Green Aerification! Unfortunately, it's a crucial piece of the puzzle for promoting turf health. It's been almost six months since our last greens aerification and we need to maximize root development this spring. Our first aerification/deep air injection this year will be March 1-3 and the second will be May 3-4. According to the USGA, our sand-based greens should contain 45-65% solids, 20-30% macropores, and 15-25% micropores. Aerification followed by sand topdressing is still the best tool for maintaining these ratios.

I hope everyone is doing well and ready for a great year here at Old North State Club. We start to kick off the season this month with an Opening Day scheduled for both our Men and Ladies. Men’s Opening Day is March 20 and the WGA Ladies Opening Day is slated for March 24. We also will start our Fitting Days this month and they will carry on into April. The Masters will hopefully return to its full glory April 8 through April 11 and we plan to host a great rendition of their Par 3 Contest on Wednesday, April 7 on the back-9! Please keep a look-out for more information. Charlotte Women’s District Golf Association (CWDGA) will pay us a visit on April 8, as these are some of the best women amateur players in our area.

The macropore space promotes the movement of water, nutrients, and air through the grassroots. It is up to the macropores to capture, hold, and supply the water and nutrient mix to the roots as they travel through the macropore space that is created by aerification. Something to think about next time you walk onto an aerified green.

If allowed we will host a One-Day Member-Guest with Tee-times starting at 8:00am on Friday, April 23. April at the Lake is a beautiful time to show off this property. Find a guest or three and bring them out for a great day of golf!

Hopefully, it will come sooner than later, for spring gives some of the best boating of the year! Now yes, the water is still quite chilly. So, taking a swim probably won’t be your first choice. But not to worry, as spring gives some of the best scenery of the year. All along the shoreline, the wildflowers are blooming and the trees are becoming flush with color. I implore anyone and everyone to take a ride out to the national forest and watch the wildlife. Usually, you can get some great photos! But don’t put the cart in front of the horse. To get out there and take advantage of all the beauty of our lake, you need to make sure your boat is ready to go! And as luck would have it, I know just the place to have all your boating needs taken care of. Give us a call at the marina and set up your DE-winterization. Now is the time to get the fluids changed, bearings and hubs checked, and get it detailed back to perfect! Need a new battery? We've got you covered with our top-of-the-line Interstate Batteries. MARCH COOKIE OF THE MONTH CRUNCHY CHEWY CHOCOLATE CHIP COOKIES By James R. Patterson III, Porters Neck Country Club

Ever thought about your favorite things to eat and then thought, “What if I combined some of them into one?” Cereal, chocolate chips, marshmallows, milk, and butter, see the theme here? Well the folks at Momofuku Milk Bar in NYC made this dream come true for me. Here is our rendition of their famous “Cornflake Chocolate Chip Marshmallow Cookie.”

Ingredients: 8oz. Unsalted Butter, at room temperature 1 ¼ Cups Granulated Sugar 2/3 Cup Light Brown Sugar 1 Egg 1/2 TSP Vanilla Extract 1 ½ Cups All-Purpose Flour

1/2 TSP Baking Powder 1/2 TSP Baking Soda 1 ½ TSP Kosher Salt 3 Cups Cornflake Crunch (below) 2/3 Cup Mini Chocolate Chips 1 ¼ Cups Mini Marshmallows

Directions: Using a paddle on your stand mixer, combine the butter and sugars in the bowl and cream together on medium-high for two to three minutes. Scrape down the sides of the bowl, add the egg and vanilla, and beat for an additional seven to eight minutes. Reduce the mixer speed to low and add the flour, baking powder, baking soda, and salt. Mix until the dough comes together, no longer than one minute (do not walk away from the machine during this step, or you will risk over-mixing the dough). Scrape down the sides of the bowl with a spatula. Still on low speed, paddle in the Cornflake Crunch and mini chocolate chips just until they’re incorporated, no more than 30 to 45 seconds. Paddle in the mini marshmallows just until incorporated. Scoop and roll 1 ½ oz. dough balls and place onto a parchment-lined sheet pan. Pat the tops of the cookie dough domes flat. Wrap the sheet pan tightly in plastic wrap and refrigerate for at least two hours, or up to one week. Do not bake your cookies from room temperature as they will not hold their shape. Heat the oven to 350°F. Arrange the chilled dough a minimum of three inches apart on parchment-lined sheet pans. Bake for 14 minutes. The cookies will puff, crackle, and spread. At the 12-minute mark, the cookies should be browned on the edges and just beginning to brown toward the center. If they still seem pale and doughy on the surface, leave them in the oven for an additional minute or so. Cool the cookies completely on the sheet pans before transferring to a plate or to an airtight container for storage. At room temperature, the cookies will keep fresh for five days; in the freezer, they will keep for one month.

CORNFLAKE CRUNCH Yield: About 4 Cups Ingredients: 6 Ounces of Corn Flakes 1/2 Cup of Milk Powder 3 TBSP Granulated Sugar

1 TSP Kosher Salt 9 TBSP Unsalted Butter, melted

Directions: Heat the oven to 275°F.Pour the cornflakes into a medium bowl and crush them with your hands to one-quarter of their original size. Add the milk powder, sugar, and salt and toss to mix. Add the butter and toss to coat. As you toss, the butter will act as glue, binding the dry ingredients to the cereal and creating small clusters. Spread the clusters on a parchment-or-Silpat-lined sheet pan and bake for 20 minutes, at which point they should look toasted, smell buttery, and crunch gently when cooled slightly. Cool the cornflake crunch completely before storing or using it in a recipe. Stored in an airtight container at room temperature, the crunch will keep fresh for one week; in the fridge or freezer, it will keep for one month.

APRIL COOKIE OF THE MONTH KENTUCKY DERBY PIE COOKIES By James Archer, Raleigh Country Club

Growing up in Kentucky, the first Saturday in May was always one to remember. Rather than the traditional Derby Pie, this cookie was always around during my childhood. Yield: 4 Dozen Cookies Ingredients: 1 Cup Softened Butter 1/4 Cup Sugar 1/4 Cup Turbinado Sugar 1 ½ Cups Packed Brown Sugar 2 Eggs 1/2 Cup Kentucky Bourbon 3 ½ Cups Flour 1 ½ TSP Baking Soda 1 TSP Salt plus extra for Finishing 16 oz. Bittersweet Chocolate, rough chopped 1 ½ Cups Walnut Pieces

Directions: Preheat Oven to 350°F. Line a baking sheet pan with parchment paper. Cream butter and sugar together. Scrape down bowl. Add bourbon and eggs and mix until combined. Sift together flour, salt, and baking soda. Add to wet mixture, in stages, scraping down the bowl between additions. Add walnuts & chocolate to incorporate. Let the dough cool to allow butter to set back up. Scoop heaping Tablespoon onto a lined sheet pan. Bake 10 to 12 minutes or until almost set. Sprinkle with the desired amount of salt and let cool.

Sedgefield is home to the PGA TOUR's Wyndham Championship, which is contested each year in August.
