CLUB UPDATE

IMPROVEMENTS AT YOUR CLUB

We are very proud to say that all our projects have been completed, and the Club has a fresh new look! Thank you to all the members for the support and patience through this process. We also want to say a big thank you to our staff for their continued hard work and dedication to making ONSC the best it can be.

We installed new carpeting in the Dining Room, Lobby Bar, Uwharrie Room, Men's Lounge, and locker rooms. The exterior of the clubhouse was painted, as well as the hallways and Fitness Room. Plus, we built two bocce courts for your enjoyment! The courts are officially open! We hope all ages are able to enjoy this new amenity in the upcoming beautiful weather. We are excited to share these updates with you, and hope this makes your Club experience even better!

MAMA DIP'S CONGO SQUARES

This cookie was one of our family's favorites Grandma would always serve these cookies after dinner, crispy on the outside with cinnamon, sugar and a warm fluffy center

Throughout my culinary career, two chef's that I've always admired and looked up to are Mildred "Mama Dip" Council, Founder of Mama Dip's Kitchen in Chapel Hill and Walter Royal, Executive Chef at Angus Barn in Raleigh. I love sharing their recipies with members at Old North State Club. There is no coincidence that if you come to the lake for Steakhouse Night, you will notice Chef Royal's chocolate chess pie is also on the menu Mama Dip's southern desserts have been featured on dessert menus and member events here at ONSC as well Chef Council's Congo Square Recipe is the newest addition to the cookie and dessert bar menu I hope you enjoy!

FROM THE KITCHEN

A NOTE FROM YOUR EXECUTIVE CHEF

Hello Everyone,

I hope everyone has been enjoying something delicious from our comfort winter menu. I’m hoping that the Spring Menu has started off with some tasty dishes. In May we have a few great events planned and ready for membership. We are having a Summer Concert Series, Pool Opening Celebration, and Cocktail Hour. In June we have planned a Pink Party, Summer Concert with Steak Night on the Lawn, and Glow Party

We appreciate every member and guest that has a bite to eat by the lake We are trying are best to grow as chefs and I hope it shows.

See you at a table by the lake,

Lemony Asparagus Risotto

Ingredients

1 bunch asparagus

1 large leek (or white onion, diced)

4 tablespoons olive oil, divided

4 garlic cloves, rough chopped

1 cup arborio rice

1/4 cup white wine, optional- or skip it

3 1/2– 4 cups hot veggie broth (or use hot water with 2 teaspoons veggie bouillion)

1/2 cup basil leaves (or sub part Parsley)

1 lemon, zest and some juice to taste

1/2 teaspoon salt, more to taste

1/4 teaspoon pepper

garnish: lemon zest, basil ribbons, pecorino cheese, optional toasted pinenuts (or other nuts or seeds), chili flakes (Urfa biber is nice) Leek oil (optional)or a drizzle of olive oil.

Procedure

Read the directions all the way through so you get a general idea of things here

Bring a small pot of water to boil on the stove to blanch asparagus.

Prep the asparagus: Cut the fibrous ends off the asparagus and discard (You can tell where this is by breaking an end off with your fingers, usually about an inch from bottom- and using this as a guide, cut the rest to match Toss all the fibrous ends ) Cut the pretty tips off (about 1 1/2 inches) and set them aside Cut the “middles” into 1-inch pieces. Take 1 1/2 cups of the “middles” and set aside (to blanch and blend into a creamy asparagus sauce) which we will stir into the risotto at the end to give it it’s beautiful vibrant color and creamy texture Add any remaining “middles” to the tips and keep these set aside So you’ll have two piles of asparagus, 1 1/2 cups of the “middles” and one with the tips and leftover middles

BLANCH AND BLEND: In the small pot of boiling water, blanch the 1 1/2 cups of asparagus “middles” (without the tips), until tender and vibrant, about 5 minutes depending on size. Drain, but reserve 1 cup of the cooking liquid Blend the blanched asparagus with the 1 cup cooking liquid, 2 tablespoons oil and the basil leaves until silky smooth, either in a blender or using an immersion blender Set this aside to add to the risotto at the end

Start Risotto: Thinly slice leeks into half-moons, and rinsing away any dirt, strain. (Rinsing will also help soften them.) Heat 2 tablespoons olive oil in a pot or dutch oven over medium heat Add leeks and saute until softened, 5-6 minutes Add garlic, cook 2 minutes, until fragrant

Add arborio rice and stir to coat, one minute. Deglaze with white wine (if using) and cook the wine off. Add 1 cup hot veggie broth, scraping up any browned bits, bring to a gentle simmer, over medlow heat stirring occasionally, letting the rice absorb the all the broth

Continue adding the hot broth 1 cup at a time, letting the rice absorb it slowly, each time, stirring often. ***At the same time that you add the last cup of broth, add the pile of asparagus with the tips, letting them cook in the risotto 3 minutes or so. At this point, rice should be creamy yet slightly al dente

Combine: Stir in blended asparagus-basil “sauce”, add the salt, pepper, a squeeze of lemon juice and taste Adjust salt, pepper and lemon to taste. (Pecorino will add more depth and flavor here.) Heat gently over low heat letting it thicken a bit if you like, but taking care not to cook too long here, or you’ll lose the vibrant color.

Divide among bowls, garnish with pecorino cheese, lemon zest and chili flakes or a drizzle of the optional leek oil

Top with a piece of roasted fish, sauteed shrimp, grilled chicken or sauteed mushrooms if you like.

ONSC Members,

The renovation is moving along quite nicely. Kris Spence and his team have almost finished resizing all the greens and filling them with the new sand-mix. There have been multiple bunkers finished over the last month 13, 14, and 15 I know it can be tough to watch the trees come down…but in order to open up the ball park to allow air-flow and sunlight to grow grass…they must fall.

The range has been steady. We have added bottled water, and when nottoowindy atent Wearestillgivinglessonsandclubfittings Swing onoverandhitsomeballs

A NOTE FROM YOUR DIRECTOR OF GOLF OLD NORTH STATE OF MIND PAGE 12

A NOTE FROM YOUR COURSE SUPERINTENDENT

The course renovation is well under way! We recently received almost 2” of rain and the few bunkers that have been completed (new drainage, capillary concrete, sod and new sand) didn’t wash at all. You don’t know how much my crew will appreciate that, pushing sand with rakes gets old real fast. Speaking of my crew, we have been busy with sod projects that will enhance the look and play of the outer course corridors.

Lastly, the greens portion of the Reno is going great and we are on track for sprigging Tif Eagle mid June The range is open so you can keep your swing dialed in until September, can’t wait!

See you on the course!
