Winter at Old North State Club: North Carolina’s Seasonal Charm

Dear Members,

As we approach the winter season here in North Carolina, we’re reminded of the unique beauty this time of year brings to our region. While we may not have the snow-covered landscapes of the North, our mild winter weather provides the perfect balance cool enough for cozy moments, but warm enough to enjoy outdoor activities

At Old North State Club, we’re excited to offer you a range of experiences designed to help you make the most of this delightful season

Seasonal Dining & Social Events

Our culinary team has created a special fall and soon-to-be-released winter menu that reflects the flavors of the season Be sure to join us for our Thanksgiving Day Buffet or take home Thanksgiving dinner, our wine dinners and bourbon dinners where you can enjoy expertly paired wines and bourbons with farm-to-table dishes showcasing the best of local produce.

As the holidays approach, our Annual Holiday Party is the perfect opportunity to gather with friends, share in the spirit of the season, and create memories that last a lifetime. For families, we are hosting our ever-popular Brunch with Santa a fun and festive event for the young and young-at-heart!

Outdoor Activities: Mild Winters, Endless Possibilities

North Carolina’s temperate winters allow us to keep many of our outdoor amenities available. Golfers can take advantage of cool, crisp days to improve their game Chris Chapman and his team have worked tirelessly to all year to ensure the course and the greens are in great condition.

For tennis and pickleball enthusiasts, the courts are open year-round and Chris Callicutt will ensure that the courts are in great shape as always.

The Old North State Marina is still open and happy to assist with fuel needs on the warmer days when you cruise on Badin Lake. You may also schedule your vessel to be winterized to ensure optimum performance year after year

Winter Wellness

Winter is also a time to focus on well-being, and our fitness center continues to offer a variety of classes and personal training sessions to help you stay active and energized throughout the season

A NOTE FROM YOUR EXECUTIVE CHEF

Hello Everyone,

I hope everyone has had a chance to come and dine at the lake I also hope you have enjoyed our fall selections so far. The Chef’s Signatures, Dauphinoise Potato, Brussel Sprouts with Apple Bacon Compote, Black Garlic Jus, Chicken Florentine Flatbread, Fall Salad, and the Sicilian Chicken Sandwich have been popular choices with members this season The soup selection from the culinary team has been top-tier since the start of the season Below, I’ve included one of my favorite chefs recipes for a good bowl of gumbo. I hope you try to replicate the dish for a comforting dinner with family and friends The holiday season is quickly approaching here at the lake The culinary team is looking forward to helping you celebrate with family and guests either here at the clubhouse or a catered meal delivered to your home

We appreciate every member and guest that takes time to grab a bite to eat by the lake We are trying are best to grow as chefs and I hope it shows

FOR THE GUMBO:

METHOD: For the Okra:

Heat oven to 375°F Add okra to a sheet tray and toss with olive oil Bake 15 minutes. Set aside.

MY MOTHER’S GUMBO

Chicken, Zummo's Sausage, Blue Crab, Filé, and Herb Rice

INGREDIENTS:

OKRA:

1 POUNDS OKRA, CUT TO ¼-INCH SLICES

2 TABLESPOONS OLIVE OIL

GUMBO:

¾ CUPS NEUTRAL OIL

1 CUPS FLOUR

1 CUPS DICED ONION

1 CUPS DICED CELERY

1 CUPS DICED GREEN BELL PEPPER

2 CLOVES GARLIC, MINCED

2 QUARTS SHRIMP STOCK

2 QUARTS DUCK OR CHICKEN STOCK

½ QUART PURÉED TOMATOES

3 BAY LEAVES

½ TEASPOON THYME

½ TABLESPOON GROUND CAYENNE PEPPER

½ TABLESPOON ONION POWDER

¼ TABLESPOON GARLIC POWDER

½ TEASPOON PAPRIKA

2 TABLESPOONS SALT

1 TABLESPOONS BLACK PEPPER

1 POUNDS CHICKEN BREASTS AND/OR THIGHS, OVEN-ROASTED AND MEDIUM DICED

½ POUND ANDOUILLE SAUSAGE, SLICED INTO HALF MOONS

3 DASHES TABASCO HOT SAUCE

1 BLUE CRAB, CLEANED AND CUT INTO LARGE PIECES

(OR YOU CAN SUBSTITUTE 1 POUND OF CRABMEAT)

1/8 CUP GUMBO FILÉ

1 POUNDS 16/20 SHRIMP, PEELED

1 BUNCH GREEN ONION, SLICED

PARSLEY, CHOPPED

In a pot over medium flame, heat oil Add flour and cook, stirring frequently until the color reaches a dark chocolate brown, 30 minutes Add onion, celery, bell pepper, and minced garlic and sauté until soft Add stocks, tomatoes, bay leaves, thyme, spices, salt, and pepper and bring to a boil. Simmer 20 minutes, skimming off any impurities that rise to the surface. Add Okra, chicken, and sausage and simmer another 25 minutes. Adjust seasoning as needed and add Tabasco Add blue crab (if using), cook 5 minutes, then add gumbo filé, stirring quickly to prevent lumps from forming Stir in shrimp, green onion, parsley, and crabmeat (if using) Remove pot from heat and let sit 5 minutes while shrimp cooks through.

To Assemble and Serve:

In a serving bowl, add a ladle-full of Gumbo with chicken, sausage, shrimp, and crab To the center of the bowl, add a spoonful of rice Garnish with parsley, gumbo filé, and hot sauce.

Our Women’s Golf Association celebrated Closing Day today with 9-holes of golf, lunch, and Halloween fun Thank you, ladies, for your enthusiasm and participation this year!

Randy Kiser rounded out October by clenching the Senior Men’s Golf Association Match Play title Congrats to Mr Kiser on his win!

Our men’s Super Senior Interclub team advanced to the CGA Final Four to be held November 5-6, at Pinehurst #5 We hope they will add another trophy to the Golf Shop - next to our Ladies 2024 Solheim Cup.

A NOTE FROM YOUR COURSE SUPERINTENDENT

Fall is finally here and it’s time to begin preparing all of our bermuda, including the greens, for dormancy. There are three key tasks that we complete in the fall that will promote optimum green up next spring. (1) Raise the height of all bermuda except for the rough This allows the plant to store more carbohydrates to efficiently break dormancy next spring (2) Make a moderate application of potassium to improve disease resistance and winter hardiness (3) Apply a preventative fungicide for spring dead spot disease that appears during spring green up If all goes well, these tasks will be done without any disruption to your round Enjoy the great fall weather!

Please register any guests when you make your reservations. Guest fee is $10 per player If you do not register guests, you are subject to a verbal warning and then 30 day suspension if there is a second offense.

Old North State Marina hopes everyone is having a great fall. Winter is right around the corner. We are gearing up and getting ready for all your winterizing needs. If you need a boat or personal watercraft winterized this season, please call to set up an appointment. if you need to bring a boat or need the team to come out, to be done by water on your lift, the marina is only a phone call away. The phone number to the marina is 336-461-4456. The marina hours of operation from November 1st to March 31st, will be Thursday to Sunday, from 9:00am - 5:00pm If you need repair work done on your trailer or service on your boat that has not been addressed, we are happy to get it done before winterizing season fully kicks in If you have any questions, feel free to give us a call
