A MESSAGE FROM YOUR GENERAL MANAGER

Happy Fall!

As we strive to provide an exceptional experience for all our members, I want to highlight the importance of making reservations for club facilities and events. Reservations are essential in ensuring that we can offer the highest level of service and convenience to everyone.

By making reservations:

1. Efficient Resource Management: We can allocate our facilities, staff, and other resources more effectively, ensuring availability and maintaining our high standards

2 Enhanced Member Experience: With reservations, we can reduce wait times, prevent overbooking, and provide a more personalized experience, contributing to your overall enjoyment

3 Operational Excellence: Advanced planning allows us to prepare adequately for your visit, ensuring that everything is in place for a seamless and enjoyable experience.

4 Reservations for large events (July 4, Labor Day), helps to ensure we can take more reservations if we know several weeks out Food ordering and additional seating can be ordered to meet the demand if justified; however, when reservations all come in a day or two prior, we do not have the time to react to increase food orders and secure tent rentals

We kindly ask all members to make reservations for dining, golf, tennis, and other club activities whenever possible. This small step greatly aids us in maintaining the quality and exclusivity that you have come to expect from our club

A NOTE FROM YOUR FOOD & BEVERAGE MANAGER

Greetings Everyone,

It has been my pleasure to serve the members this past year Now that August is over and I have completed my first full year at Old North State, I thought it would be a good idea to give some answers to a few of the frequently asked questions. Are reservations required? While reservations are not required, they are highly recommended Reservations allow us to ensure we have ordered enough food, have adequate staffing, and can plan for the night Reservations will always take priority over walk-ins

Is there a dress code in the dining room and does it differ if sitting on terrace?

Our dress code is country club casual and no hats worn inside Collared shirts and pants are required in main dining areas. Shorts and skirts are allowed on the terrace

Do we charge a corkage fee?

Yes, a corkage fee of $15 per bottle is charged when you bring wine in. Exceptions are: if you purchased the wine from us or you have a wine locker there is no corkage fee

PUMPKIN SPICE WHITE RUSSIAN

Serves: 4

Ingredients:

1 gingersnap cookies, (crumbled)

1 tsp. honey

3/4 oz coffee liqueur

(such as Kahlúa)

3/4 oz vodka

1/4 tsp pumpkin pie spice

1 5 oz heavy cream

Step 1

Place crumbled cookies on a plate Add honey to the rims of 4 glasses

Dip in cookie crumbs to coat.

Step 2

Whisk together coffee liqueur, vodka, and pumpkin pie spice in a measuring cup Pour in to prepared glasses, dividing evenly; top with ice Divide

Hello Everyone,

I hope everyone has had a chance to come and dine at the lake and enjoy our summer selections. I know we are ready for the flavors of fall We are preparing our fall menus full of soups and stews, braised and smoked meats, local produce, and a warm dessert or two Over the last three years of being the Chef here at The Old North Start Club I think I enjoy the fall at the lake the most

We appreciate every member and guest that takes time to grab a bite to eat by the lake We are trying are best to grow as chefs and I hope it shows

Notes:

Can I make it ahead?

This recipe tastes best when cooked and eaten right away for the tenderest pork However, you can make it ahead if you like

Make the dish, then quickly cool, cover and refrigerate. Remove from the fridge 30 mins before you want to reheat it to take the chill off it, then reheat, covered, in the oven at 180c/375F for about 20-25 minutes, until piping hot throughout. You'll need to stir the sauce a couple of times during re-heating, and you may need to add in a splash of water or stock to help loosen the sauce

Alternatively, you can reheat in a pan (covered) over a medium-low heat for about 15-20 minutes, until piping hot throughout Stir a few times and add a splash of water or stock if needed

Ingredient swaps

Swap out the mushrooms for other vegetables - such as chunks of courgette or green beans.

Replace the pork shoulder steaks with pork chops or pork loin steaks

Swap out the cream for creme fraiche for a slightly tangier finish

SMOTHERED PORK

PREP TIME: 5 MINUTES

COOK TIME: 20 MINUTES

TOTAL TIME: 25 MINUTES

SERVES: 4

INGREDIENTS

3 tbsp olive oil

4 boneless pork shoulder steaks

½ tsp salt

½ tsp black pepper

1 onion peeled and thinly sliced

6 mushrooms sliced (I like chestnut mushrooms, but use your favorite)

3 cloves garlic minced

2 tbsp plain (all-purpose) flour

360 ml (1 1/2 cups) chicken stock

½ tbsp tomato puree paste for US

½ tbsp white wine vinegar

60 ml (1/4 cup) double (heavy) cream

To Serve:

2 tbsp freshly chopped parsley

INSTRUCTIONS

1. Heat 2 tbsp of the oil in a large frying pan over a medium-high heat

3 tbsp olive oil

2.Sprinkle both sides of the pork steaks with 1/4 tsp of the salt and 1/4 tsp of the pepper

4 boneless pork shoulder steaks, 1/2 tsp salt, 1/2 tsp black pepper

3 Place in the pan and fry for 6-7 minutes, turning once, until browned. Remove from the pan and place on a plate.

4 Add the remaining 1 tbsp of oil to the pan

5 Add in the sliced onion, sliced mushrooms and the remaining 1/4 tsp each of salt and pepper.

6 Fry for 5 minutes, stirring often, until the onions have softened

7 Add the garlic Fry for a further minute, whilst stirring

8.Sprinkle the flour over the onions and mushrooms and stir together to coat

9 Pour in the stock whilst stirring

10 Add in the tomato puree, white wine vinegar, and cream and stir again.

11 Add the pork steaks back to the pan and simmer for 10 minutes to thicken the sauce and heat the pork steaks through 12.Serve topped with a sprinkling of fresh parsley.

OLD NORTH STATE CLUB SOLHEIM CUP CHAMPIONS

Congratulations to Old North State Club on winning the 12th Annual McConnell Golf Solheim Cup! Entering Sunday's final round 3 points behind, they made an incredible comeback to defeat the defending champions from The Country Club at Wakefield Plantation by just 1 2 points the closest finish in the event's history This marks Old North State Club's second title, with their first win in 2016 With seven teams finishing within 4 5 points, every stroke truly mattered in this competition

MCCONNELL GOLF RYDER CUP I NOVEMBER 6-9

Sedgefield Country Club aims to defend its Ryder Cup title at this year's event, held at The Reserve Golf Club in Pawleys Island, South Carolina, from November 6th through the 9th Last year's title marked Sedgefield Country Club's first Ryder Cup victory, with The Country Club at Wakefield Plantation and the Country Club of Asheville finishing second and third, respectively

A NOTE FROM YOUR DIRECTOR OF GOLF

Dear Members,

We survived the Dog Days of Summer and our course is in excellent shape Thank you for doing your part to keep ONSC beautiful Here in the Golf Shop we are excited about cooler days ahead and football season! Stop by and chat about your favorite team, especially if it’s Michigan State or the Detroit Lions

Our Club Championships were held in early August It was a beautiful weekend, and our staff had a great time watching the competition. Thank you to all who participated, and congratulations to our winners, Kevin Sowinski and Leia Dean!

In the month of September, we host the Rhinestone Cowgirls Ladies Member-Guest Sign up in the Golf Shop and bring from 1 to 3 guests Please no boots on the course - but wear them for the Tuesday evening party!

In October we have our Fall Couples Golf Mixer on the 6th and the Challenge Cup from the 10th to 11th Check your email for forthcoming information on these events.

The fall/off season is a great time to get fitted and order some new sticks. See the flier for our scheduled Fitting Dates. Fitting Days are a great way to try out each company’s full club collection We can also schedule a private fitting for you in the Golf Shop

Please don’t hesitate to ask if there is anything we can do for you in the Golf Shop - lessons, fittings, merchandise, etc We look forward to seeing you!

A NOTE FROM YOUR COURSE SUPERINTENDENT

Fall is finally here, and it’s time to begin preparing all of our bermuda, including the greens, for dormancy. There are three key tasks that we complete in the fall that will promote optimum green up next spring (1) raise the height of all bermuda except for the rough

This allows the plant to store more carbohydrates to efficiently break dormancy next spring (2) Make a moderate application of potassium to improve disease resistance and winter hardiness (3) Apply a preventative fungicide for spring dead spot disease that appears during spring green up. If all goes well, these tasks will be done without any disruption to your round. Enjoy the great fall weather!

A NOTE FROM YOUR DIRECTOR OF SPORTS & WELLNESS

As we venture into the fall months, it is a wonderful time to be on the courts Crisp mornings and comfy afternoons allow for play all day long We are excited to continue to offer clinics and lessons for both tennis and pickleball throughout the autumn months. We also have an active calendar of events through the end of the year We hope to see new and familiar faces on our courts soon!

As our club is more of a resort destination style club, we will be hosting a few groups over the coming weeks, so be on the lookout for dates where we may share our amazing facility with other McConnell Golf members

You must reserve courts ONLINE on your member website or McConnell App This helps our staff serve you better and ensures you have a court. Online reservations take precedence over walk-ups. Please register any guests when you make your reservations. Guest fee is $10 per player If you do not register guests, you are subject to a verbal warning and then 30 day suspension if there is a second offense.

CHECK IN the Tennis Shop BEFORE taking court Our staff will kindly direct you to the proper area and make sure you have everything you need.

As summer is fading and fall is approaching, the air is a little less humid and a little more crisp The busy lake calms to a more peaceful and tranquil scene. Fall boating is probably the most enjoyable boating time of the year The days aren’t as hot, but the water is still warm enough to enjoy swimming, wake surfing and fishing gets better Also, fall gives us a great opportunity to correct any issues with trailers you may have. We have already begun doing some

trailer repairs If you need any work done on your trailers from new wood and carpet to new winch straps or wheel bearings, please contact the marina at (336)-461-4456, so we can schedule a good day for you Our hours of operation will change as we enter the fall I will list them below

Get out there and enjoy the lake during this amazing time Before you know it, winter will be here! We will also start winterizing after Labor Day. If you don’t plan to use your boat or jetski during the fall and winter months, please give us a call and we will schedule it to be winterized for the season.
