A NOTE FROM YOUR TRIAD MEMBERSHIP DIRECTOR

This year seemed like it would never end and yet, the holiday season is upon us. This is a great time with family and friends coming together and celebrating the many blessings in life. With this in mind, the entire team at ONSC is committed to providing a safe environment for you, your families, and your guests during this great time of year.

2020 will go down as a year unlike any other in history. Quarantine, homeschool, and new terms such as ‘social distancing’ and ‘contact tracing’ are now a part of our everyday vocabulary. And who else amongst us wishes they had a little (or a lot) of Zoom stock? Let’s add in all of the other newsworthy items such as social unrest, and oh yeah, how could I forget politics? In this crazy world we live in with new challenges faced on a daily basis, there are some positive consistencies to help us get through, including the relationships we have with our friends and families. A lot of those relationships began and continue to grow and evolve at the club.

We will still welcome you into the club to enjoy a turkey dinner on Thanksgiving Day, even though the set up will be different from years past (more details inside the newsletter). While our traditional “Member Cocktail Party” will also be different, we will still host a Member Holiday Dinner Party on Saturday, December 19. We look forward to offering you a memorable Seafood Night on New Year’s Eve to help ring in the New Year (and officially welcome the end of 2020). Thank you for your continued support and understanding. We look forward to seeing each of you and your families around the lake this holiday season! Brian Pabst

As I write this, we are approaching Halloween. One of my fondest memories in my almost nine years with McConnell Golf was a random Facebook post one Halloween evening a few years back. My wife and I had just returned from walking our two young sons through the neighborhood for trick or treating. As my wife was putting the boys to bed, I pulled out my phone and began scrolling Facebook. There were dozens if not hundreds of photos of young ghouls and goblins and super heroes, posing with of all of the treats they had worked so hard for that evening. One photo struck me and really made me think. It was of newer Sedgefield members that I had signed up earlier that year, a few different families together, the kids all trick or treating together in the neighborhood. Knowing the history of these families and where they moved here from and where they lived, I knew that they did not know each other prior to joining the club. And here are their kids, on one of the ultimate kid-friendly holidays, making memories of a lifetime with new friends that they would have never met if not for the club. It is these intangibles that we cannot sell, we cannot market, nor can we put a value on. Club membership is so much more than golf, tennis, fitness, swimming and dining – it’s a culture, and more importantly it’s a family; the club family. Our Old North State Club family has grown throughout 2020 as we have remained fortunate to be one of the few entities that could remain open. Of course we have had to shift some focuses and make some tough decisions on the fly sometimes (and move a LOT of tables and chairs!), but ‘our family’ is the reason we do so. We are here for you just as you are here for us. The next time I write we will be into 2021 – let’s make the best of the what we have left of 2020 and enjoy the upcoming holiday season with friends and family. @fullswingflop Started the weekend with a walk around Old North State. Just over 7100 yards from the back tees, host to the ACC Championship. Several holes bring Badin Lake into sight, including the final 3 holes, which are as good as any closing stretch in the state. Thank you to everyone that came out for our first ever pickleball clinic in October, it was a great day! While some people were completely new to the game and others fine tuned their understanding of the rules, everyone walked away with excitement for the game‌and a refreshing beverage. It is safe to say pickleball is a hit at ONSC. With the excitement and level of play we have seen since introducing pickleball here, we are in the process of looking to convert one clay court into a hard surface. This will give ONSC 3 hard pickleball courts and 5 clay tennis courts. More announcements to come as plans progress for this project. Keep an eye on your emails!

COOKIES OF THE MONTH COOKIES OF THE MONTH NOVEMBER: BOURBON CHOCOLATE SUGAR COOKIES

DECEMBER: HOLIDAY MERINGUE COOKIES

List of Ingredients: 1 ¾ Cup All-Purpose Flour ¾ Cup Dutch Process Cocoa Powder, sifted ½ TSP Baking Soda ¼ TSP Baking Powder ½ TSP Kosher Salt ½ Cup Unsalted Butter, room temperature ½ Cup (8 TBSP) Unflavored Vegetable Shortening, room temperature 1 Cup Granulated Sugar ¾ Cup Packed Light Brown Sugar 1 Large Egg 1 Large Egg Yolk 3 TBSP Bourbon (optional, replace with 1 TBSP Vanilla Extract) 3 OZ. grated or very finely chopped dark or Semisweet Chocolate 1 Cup Raw/Turbinado Sugar 2 TSP Bourbon

Directions: Preheat oven to 350° F. Line a baking sheet with parchment paper. In a bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt. Set aside. In a large mixing bowl or the bowl of a stand mixer, cream butter until no longer chunky. Add shortening and beat on medium-high speed until smooth and uniformly mixed. Add sugar and brown sugar and beat for 1 to 2 minutes until light and fluffy. Add egg and egg yolk, and mix until incorporated; scrape down the sides of the bowl and the beater as necessary. Slowly mix in bourbon. Add dry ingredients in two additions, mixing on low speed until just incorporated. Mix in finely chopped chocolate. If your dough is particularly soft you can refrigerate it for 10 to 15 minutes or so to make it easier to roll. To make bourbon sugar, combine raw sugar and 2 teaspoons bourbon in a pint-sized mason jar. Screw on lid and shake the heck out of it, until sugar is evenly moistened and looks something like wet sand. Pour into a shallow bowl or dish. Scoop dough into 1 3/4-inch balls (the size of a medium cookie scoop). Roll into a smooth ball, then roll into bourbon sugar until evenly coated (the moist sugar will clump, but that’s the effect we’re going for!)Arrange on parchment lined cookie sheets leaving approximately 2 inches of space between cookies. Bake for 12 to 14 minutes or until cookies have settled into shallow domes. They will be set around the edges but still puffed in the middle (they will flatten when they cool). Let cool on pan for 10 minutes, then transfer cookies to a wire rack to cool completely. To store, spread any leftover bourbon sugar in the bottom of an airtight storage container; arrange cookies in layers on top and tightly cover. Cookies will keep at room temperature for up to 5 days.

Chris Shaw looks forward to the holiday season every year, for a lot of reasons. One of those reasons, that is close to his heart, is his mother’s Meringue Cookies. Shaw says each time he has one it takes him back to being a child when he would make them with his mom. He knew right away what cookie he wanted to submit for the Cookie of the Month when asked. He wanted to share the cookie that means so much to him with his McConnell Golf Family. Yield: 4 dozen cookies List of Ingredients: 4 Each Egg White ½ TSP Cream of Tartar Pinch of Salt 1 Cup of Granulated Sugar (Superfine) Directions: Preheat oven to 225° F. Mix egg whites with whip attachment in mixer until frothy. Add Cream of Tartar and salt. Continue whipping until soft peaks form. While mixer is on low speed, slowly add sugar 1 tablespoon at a time until it has dissolved and stiff peaks are formed. Using a star tip in a piping bag, pipe out the meringue onto a parchment paper lined baking sheet, spaced 2 inches apart. Bake for 45 min and then turn off the oven. Without opening the door, let cookies stand in oven for 1 hour.Store in air tight container.

TEE PARTY: Ladies Beginner Golf Clinic Series

It’s the time of year when we can focus on tree and shrub care. This includes removing fallen leaves, dead trees, and heavily pruning trees and shrubs. Typically we remove about 100 dead trees every year and it’s a time consuming job mainly because of the serious dangers associated with it. Chain saws, log booms and tree chippers are very powerful pieces of equipment that must be handled with care. Safety is priority one and I’m happy to report that over the last 20 years we have never had a serious injury. Let's keep it that way!

On the first Friday in October, fifteen ladies and two PGA golf professionals began their Tee Party on the putting green. The Tee Party Clinic series was a 5 week program designed for beginner and advanced-beginner ladies and covered a different aspect of the game each week. These included: putting, chipping and pitching, full swings, and the long game/drivers. The final week, the ladies played nine holes on the course with assistance from Justin and Adam. Justin Mathers, who loves a good acronym, broke down the elements of each stroke and fit them with key words to help beginners remember them. For example, when chipping: C is for Choose the right club; H is Hold the angle; I is Impact the little ball before the big ball (earth); P is for a Putting motion. Each clinic began with teaching and modeling of the week’s shot(s) followed by guided practice. Justin and Adam were able to walk around and give each participant individual instruction and answer any questions. “It’s amazing to see the progress these ladies make in an hour and a half” said Justin. “They are definitely motivated to learn the correct form as beginners.” The clinics also provided instruction on basic golf rules and terminology, weekly quizzes (for fun) so participants could check their knowledge, and a booklet that summarized the information covered in the clinic series. “Golf can be intimidating, especially for beginners" said Justin. "We want our beginner clinics to provide good technical instruction as well as get these ladies excited about the game."

Don’t worry we won’t forget about setting the course up for play as well. I’m sure we will have some great weather sprinkled in during the coming months for you to get out and enjoy. Chris Chapman

MARINA & NEWS FROM THE NET A NOTE FROM YOUR DOCKMASTER It seems hard to believe but winter is coming! And with that comes short daylight and freezing temperatures. If you are finished with your boat or PWC, please go ahead and contact us as soon as possible so that we can schedule your winterization and service to keep your vessel safe and operational for the next boating season. Now I know some of you like myself still want to enjoy the lake during colder weather; not to worry. Call us and use our rental boats and leave yours tucked away safe and sound. If you do happen to get out on the water, now is best time to take in the beautiful colors of the forest as it casts its reflection on a mirror-like lake surface. The striped bass will be biting soon, and if you have never caught one, I highly recommend it. They put up an exhilarating fight. If you plan on leaving your outboards in late into the year, please make sure you trim the engine down. This will prevent the prop hub from freezing and busting, an expensive repair you do not want. Starting in November we will be switching from our fall to wintertime hours. ThursdaySunday 9:00am-5:00. It is hard to believe but the holiday season is upon us! We will be doing our annual Toys for Tots drive again this year. We will have a box in the clubhouse as well as the pro shop starting this week. All toys will be picked up by December 10th. Be sure to bring an unopened toy for donation for this great charity. We thank you in advance for your help in this annual tradition at ONSC.
