MANAGER'S MESSAGE

DEAR PROVIDENCE MEMBERS, I can’t recall a time when we were this excited for a new year, we made it through 2020! Clearly, this past year was so challenging in many ways, however, I think it’s really important we remain optimistic and look forward to the future. Great things have been happening, yet the focus around the world often seems to lean on the negative. Well, at Providence Country Club we create our own happiness! As part of the McConnell Golf family, we have all bonded together and worked tirelessly to maintain protocols and guidelines to help us provide a “Safe Haven” for all of our Members. Companywide, we created plans and activities needed throughout this pandemic, in order to maintain our staff and provide for memberships throughout 3 states. The team here at Providence has been nothing short of amazing. We have received such wonderful praise and compliments for the team effort we’ve provided on a daily basis! Our genuine hospitality and creativity has kept us so busy with our active membership, it is shocking and we are breaking all records in our sports and recreation areas. As we enter 2021, I am going to steal a phrase I’ve heard for our mantra moving forward…an Attitude of Gratitude! The Team at PCC is especially grateful for our Members and for all the support you have shared throughout these challenging times! We look forward to an exciting new season! As actions will always speak louder than words, we and have put together a Hospitality and Entertainment survey to show you we’re listening! Your feedback will help us determine the most desired events and activities for this coming 2021 season. So please take this opportunity to share your interests. ASSISTANCE GM MESSAGE & EVENTS HAPPY NEW YEAR As we move into this New Year humbled from our experience this prior year and with more respect for our fellow neighbor I want to thank all of our Members for your support in 2020 and for rolling with all the punches that came our way. I am happy to have made it through 2020 and am excited for new beginnings this year! It was a trying year for everyone big and small and I am proud of the progress we were able to make around the property here at PCC given the circumstances. I am happy to announce that we will be bringing back some of our previous monthly and weekly events that we have been able to host in years past; Wine-Down-Wednesday’s, Family Night Stationed and Served Buffet on Thursday’s, Member Birthday Night on Thursday’s, $5 Friday’s, and our famous Champagne Brunch the last Sunday of the month. Our new Executive Chef, John Crawford, has brought some much needed excitement and consistency back to our program. The New A la Carte Menu revision has been very well received and I am excited for you all to see some of our upcoming Curbside To-Go options as well. Your Food & Beverage Department is looking forward to surprising and impressing you this New Year as we continue to adjust to our parameters that are ever evolving. We have some new and exciting events for adults only and events for the whole family to enjoy. We hope to make a lot of new traditions for our New Members that we have added to our family this past year and continue traditions for our more experienced Members. MEMBERSHIP WHAT JUST HAPPENED?: This time last year we were all filled with the optimism of what 2020 might have in store for us, boy that was not what I was expecting! Nonetheless, here we are at the start of a new year with a very different set of resolutions, hopes and dreams than ever before. During a year that has seemed anything but normal, I’ve been so appreciative to be able to come to the club and feel just that, ‘normal’. Engaging with our membership, welcoming prospective and new members and working alongside a tireless team that has provided a safe haven throughout this crazy storm we all continue to endure. Thank you for helping me feel ‘normal’ and for your continued support of the club. SHORT GAME FACILITY The short game facility is a great place to practice during the winter months, especially now that we’ve over-seeded the fairway. Grab your wedges and spend at least half of your devoted practice time to your wedge game. As the main range tee can be fairly busy at times, the short game facility remains a peaceful place to practice. Imagination around our green complexes can greatly assist in lowering your scores. Hitting higher lofted chips/pitches, followed by lower flighted shots can greatly improve your scoring from 75 yards and in. I highly suggest hitting shots from the same yardage while working on flighting the ball at different heights. Stop by the Golf Shop and ask us drills to do in order to work on flighting the golf ball while at the short game facility.

GREENS AND GROUNDS PCC GOLF COURSE With 2020 behind us, I’m excited to look forward to what 2021 has in store for us here at Providence. With some big ticket items crossed off the list over the past two months, we can hit the reset button and prepare for the New Year. We were able to apply our big pre-emergence/post-emergence herbicide spray back in November. This set us up for a clean golf course through the fall, winter, and into spring. We were also able to finally tidy up the course and get all the leaves cleaned up. Having these things behind us has allowed us to concentrate on other things to get ready for the 2021 growing season. One of the things we try to do every off-season is bunker work. This process involves getting into every bunker to check sand depths and redistribute the sand properly throughout the bunker. We also re-establish any edges that have been covered with sand, as well as tamp the entire bunker for better firmness after moving the sand around.

Winter time also presents a good opportunity to do some tree work that we may not have time to complete during the rush of the growing season. Trees that we are dead, present a hazard, or trees that compromise turf health are things we look for during the growing season so we know what to address during the winter months. There are also a few things to look forward to this year. The biggest for us being that we will be leasing a new equipment package. Having new mowers and carts is always exciting, but it will also enable us to do our job more efficiently. For example, we will be able to keep the rough mowed and under control with the addition of a new rough mower. I’m sure you all like the sound of that! Several years ago, at one of our annual corporate meetings, an idea was brought to the table that we needed a Lagniappe of our own that would show our appreciation to members and their guests for dining with us. This idea quickly grew to a collaboration of our executive chefs, their staff members and other club staff submitting cookie recipes to be used in our monthly rotation. These cookies would be a bite size sweet treat for everyone who had lunch at one of our properties in the dining room. As McConnell Golf has grown we have been able to feature a club each month, in addition to recipes from our CEO John McConnell and COO Christian Anastasiadis, the Easter bunny and Santa Claus. Beyond baking and serving these delicious treats in our clubs each month, we also share the recipe in our newsletter and online blog that includes a special story or meaning behind them. Our culinary teams have embraced this idea and continue to showcase their talents with these delectable sweet treats, from our kitchens to yours.

FROM THE BASELINE Happy New Year!! It is hard to believe that 2020 has come and gone, even though I am sure to some of you it felt like it went on forever!! While last year was such a different year, and there were many tournaments and events that we were not able to do, it was still one of the best years we have seen at the tennis courts. Our overall play and court usage was way up, along with clinics and lessons. I am glad that you all felt comfortable coming out to the club to enjoy some time on the courts and I know that for many of you it was a nice break from reality. We are looking to continue this success in 2021 and are excited about what this year has in store! Highlights from 2020: Ladies’ Member/Guest that raised close to $12,000 and over 1,000 lbs of food for Loaves and Fishes 1 Junior USTA Tournament with over 100 participants. Second annual Wimbledon event on the grass court‌this is becoming one of the most anticipated events! Pickleball is starting to take off at PCC with many new offerings. Plus many other events, exhibitions, socials that we were able to still hold. We also welcomed our new pro, Jessica Perez, from California, who has come in and been a great fit and addition to our team here at PCC. Thank you all for your support. FITNESS CLASSES For January and February our fitness classes will be held in the ballroom and around the property, if space is available. To capture the optimal heat of the sun, times may vary. Stay tuned for our fitness class calendar with all of our awesome offerings. We will still offer great classes outdoors like Yoga, RIPPED, HIIT (high intensity Interval training). But now is time to try something new like outdoor cycling and senior circuit. Cycle with Kym outside to great music and intense intervals. Senior circuit will be offered mid-January during our closed hours for those with limitations that occur with aging.

JANUARY COOKIE OF THE MONTH: MOLASSES DROP COOKIES Bruce McIntosh - Country Club of Asheville From 1985-2015, H. Robert Sharbaugh was a Member of the Country Club of Asheville and had served time as a Member of the Board for a number of years. He was very well-known and admired by Club Members and staff alike. He meant a great deal to me, especially during my earlier years at the Club. One memory of him that stands out to me in particular was the year that, this self-proclaimed chocoholic, gifted me a very old, yet pristine Hershey’s cookbook from 1934 that had been revised and reprinted in 1971. I think of him fondly every time I open the binding to see his name on the inside cover. Thank you for your service to our country and the many laughs throughout the years. This one is for you Mr. Sharbaugh! INGREDIENTS 1/3 Cup Unsalted Butter, room temperature 1/3 Cup Granulated Sugar 1/3 Cup Molasses 1 Egg 1 Cup All-Purpose Flour, sifted 1 TSP Baking Powder 3 TBSP Hershey’s Cocoa Powder, or whatever you have on hand 1/2 Cup Chopped Nuts

DIRECTIONS Cream butter and sugar; add molasses and the egg. Sift together all dry ingredients and add to wet ingredients. Fold in the nuts and scoop mixture into 1 inch rounds onto a greased and lined sheet pan. Bake at 375°F for 8 to 10 minutes. Yield: Approximately 2-3 Dozen Cookies

FEBRUARY COOKIE OF THE MONTH: CHOCOLATE DIPPED COCONUT MACAROON John Crawford - Providence Country Club This has been one of my favorite cookie recipes for as long as I can remember. As a kid my grandmother would make these for us when we would come and visit and while all of the others would devour the chocolate chip cookies, I had these all to myself. If you like coconut and chocolate this recipe is for you! With the toasted outside, creamy inside and smooth chocolate to tie it all together, it cannot get much better. INGREDIENTS 16oz. Sweetened Flaked Coconut 1 Cup Sweetened Condensed Milk 1 TSP Vanilla Extract Pinch of Salt 6oz. Semisweet Chocolate Chips 2 Large Egg Whites DIRECTIONS Start by mixing the coconut, sweetened condensed milk, vanilla and salt thoroughly in a mixing bowl. Next separate the egg whites from the yolk and beat the egg whites until they form a stiff peak. Gently fold the egg whites into the coconut mixture. Using a small scoop, scoop the mixture onto a parchment lined sheet pan spacing each about 2 inches apart. Place the macaroons in a 325°F preheated oven for 25 minutes, rotating as needed to prevent burning. While macaroons are baking in the oven, melt the chocolate in a double boiler or microwave, stirring frequently. When cookies have cooled completely, dip the bottoms in the melted chocolate and place them on a clean sheet of parchment paper. Enjoy!
