MANAGER'S MESSAGE

Dear Providence Country Club Members, It’s an exciting time of year as we get ready to celebrate the holidays with our friends, families, and fellow members. We’re nearly ready to turn the page on 2021 with many changes around the Club, but we’re thrilled for the opportunity to embark on a new chapter in 2022. Our management team is thankful for our membership and the support you all continue to show us throughout the course of the year. We’re excited to see new team members excel in their new roles. Carmen Ganoe will do a fantastic job replacing Steve Windham as Clubhouse Manager. Carmen was born in Buffalo NY and moved to North Carolina when he was 20 years old. He’s been in the hospitality industry for 33 years, including 22 years with Bloom Brands Restaurant concepts, as well as a managing partner for three different restaurants within the brand. Carmen was “Managing Partner of the Year” 4 times with Bloom Brands. During his time with Bonefish Grill Restaurants, Carmen was the beer, wine, and liquor trainer for 16 restaurants in North and South Carolina. Before coming to Providence Country Club he spent two years with Ruth’s Chris Steakhouse where he was the General Manager of the Training Restaurant for the East Coast. It’s safe to say we’ll be in good hands with Carmen as our Clubhouse Manager. Chef John Crawford has relocated back to Raleigh Country Club but did a nice job during his time as Executive Chef here at Providence. We wish Chef John all the best. Fortunately, we have found a tremendous replacement in Chef Peter Spear. The kitchen is poised for great things as Chef Peter currently holds 30 national as well as international medals for ACF (American Culinary Federation) sanctioned competitions and has won several statewide competitions. Peter is an approved candidate for the ACF CMC program and is hoping to join the ranks of American Certified Master Chefs in which there are currently only 72 that hold this distinction in the United States. Chef is a proud father of two sons named Angelo (Aj) and Jonathan. In his free time Peter enjoys outdoor activities like hiking, kayaking, and camping. We’re very grateful to have Chef Peter join our team at Providence. I hope you all have a great last few months of 2021. The Club has enjoyed another nice year but we’re excited to continue to improve upon your experience. If there is anything we can do for you, please feel free to reach out anytime. CLUBHOUSE MANAGER'S MESSAGE & EVENTS DEAR MEMBERS, Fall is upon us and winter is right around the corner. This brings back some of your favorite events including the Men’s Wild Game Dinner, Thanksgiving Brunch, Family Bingo Night, Champagne Brunch and a host of Christmas Events! Please watch for dates and times for these fun events as they become available. With the West Pavilion Closing at the end of October we welcome you to join us in Table 16 our new Chef Peter Spear will be showcasing his amazing talents with his upcoming menu revisions. And our great team in the dining room will provide extraordinary service. As you are probably aware, as I am sure you are experiencing the same issues where you work (If you’re not lucky enough to be retired yet!) We are having a very difficult time hiring quality team members, with that in mind reservations for ala carte dining are recommended so that we can serve you better. As much as we all miss Steve Wyndham, his move to Longview Country Club has opened the door for some well-deserved promotions for our hourly team. Chase Massey has taken the position as Assistant Food and Beverage Manager and Kaitlin Niday as Assist Outlet Manager. We have also added Joe Wiggins as Food and Beverage Manager. I am very excited with the new team we have in place and our goal as always is to provide the best club experience to you our valued members. I look forward to seeing you at the club! Sincerely,

FROM THE LINKS It’s hard to believe we’re about to turn the page to 2022 as this year comes to a close. Golf remains in high demand with so many utilizing the game to escape the real world. Tournament participation was at an all-time high, Operation36 relaunched with amazing success, couples golf sold out numerous times, and Junior Golf showed nice growth. Our team is looking forward to continuing to grow the game that so many of us love. The 2022 event calendar will be complete in the next few days and we’re sure it has something for everyone. Let’s all take time to enjoy the holiday season with family, friends, and fellow members. Thank you for a fantastic 2021, let’s make 2022 the best year yet at Providence. FINDING THE CENTER Finding the center of the clubface is a problem many of us struggle with. Working on your short game and hitting chips/pitches will greatly increase your chances of finding the center of the club more often. I suggest starting with a chipping net 8-10 yards away from you. Go through your pre-shot routine and set-up to hit shots into the net. I suggest keeping more weight forward on your left foot and the ball slightly back in your stance. Take short swings with little body movement on the way back. Hit shots where you do everything you can to keep your left wrist flat at impact (for right handed players) but transfer your weight to your left foot. When hitting these shots you should strike the ball first then brush the turf. Really shouldn’t be much of a divot, if there is it should be after you impact the golf ball. Hitting short shots will greatly improve your ball striking as you move into hitting longer golf shots. Stop by the Golf Shop with any questions you may have.

GREENS AND GROUNDS

PCC GOLF COURSE UPDATE The winter time is thought to be the “off season” or the “slow” time of the year, however, that is not the case at all. During the winter, we are just as busy as any other time of year. The bermudagrass greens require special attention during the cold months, much like bentgrass greens require attention during the heat. Our greens thrive in the heat because bermudagrass is a warm-season turfgrass. Our main goal is to keep them alive through the winter. Winter survival of bermudagrass greens requires extra care, input, and attention. It starts with a raised height of cut to act as extra insulation, or a buffer from the cold. We also focus on moisture and nutrient management to get us through the cold. We are fortunate enough to be able to cover greens to maintain tolerable soil temperatures when the air temperatures drop drastically. Covering greens takes place when the temperature is 25-27 degrees Fahrenheit or lower. Lastly, fungicides are used to protect the plants from disease during their most vulnerable time period. One major piece of the puzzle for winter survival of greens is moisture. Because the greens are not actively taking up water through the roots, we have to make sure the plants stay hydrated. Desiccation will occur if the plants dry out. We have to watch humidity levels, air temperature and soil temperature, wind speeds, and also monitor the moisture in the top three inches of the greens using our moisture meters. It is important to water the greens before and after covers are used. We also continue to use wetting agents in the dormant season. These chemicals help with penetration, holding, and moving water into and throughout the subsurface of the greens. It is always important to never stop feeding the plants even though they might not be growing. If we were to have a warm spell in the middle of winter, the plants would actually wake up from dormancy and use some of the nutrients that they have stored. We do not want the nutrient supply to ever run out, so we spoon feed the plants either from foliar sprays, or granular applications so that there are always available nutrients. When the greens are dormant, the chlorophyll exits the leaves and nutrients are stored in the roots and stolons. This is why the rest of the golf course turns brown. In order for the greens to remain green throughout the winter, we use pigments to give them their color. Pigment is different than paint in that the pigment program is started while the plants are still actively growing. The plants actually take in the pigment, unlike paint which is just that, paint on top of the leaves. The pigment also helps with heat retention, much like wearing a black shirt in the middle of July. See you on the course, MARK SCOTT Golf Course Superintendent

He has a degree in Exercise Science from Winthrop University along with multiple certifications in Strength and Conditioning, Nutrition, and Corrective Exercise Prescription. During college, Nick would take on personal training clients and has lots of experience in helping clients reach their full potential. After graduating, he went on to work with world class athletes in facilities like Wingate University and EXOS Sports Performance. He works with athletes in middle and high school. He has a passion for working with this age group because of the potential to become amazing athletes. Nick also loves working with clients that are looking for general fitness and looking to get back into shape.

NOVEMBER COOKIE OF THE MONTH: MOLASSES COOKIES Kenric Hunt - Brook Valley Country Club This cookie has been one of my own favorites to buy (Famous Amos) molasses cookies. My very first job was working at Piggly Wiggly where a portion of my check went to buying cookies. Also the taste of them reminds me of time spent with my father as we would eat them often after dinner or for a snack!

INGREDIENTS 2 1/4 Cups All-Purpose Flour (spoon & leveled) 1 ½ TSP Baking Soda 2 TSP Ground Ginger 1 ¼ TSP Ground Cinnamon 1/4 TSP Ground Cloves 1/4 TSP Nutmeg 1/4 TSP Salt 3/4 Cup Unsalted Butter, softened to room temperature 1/2 Cup packed Light or Dark Brown Sugar 1/4 Cup Granulated Sugar 1/4 Cup Unsulfured or Dark Molasses 1 Large Egg, at room temperature 2 TSP Pure Vanilla Extract 1/3 Cup Granulated or Coarse Sugar, for rolling

DIRECTIONS Whisk the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt together until combined. Set aside. In a large bowl using a hand-held or stand mixer fitted with a paddle attachment, beat the butter and both sugars together on high speed until creamy and combined, about 2 minutes. Add the molasses and beat until combined. Then add the egg and vanilla extract and beat until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed. On low speed, slowly mix the dry ingredients into the wet ingredients until combined. The cookie dough will be slightly sticky. Cover dough tightly with aluminum foil or plastic wrap and chill for 1 hour and up to 2 to 3 days. Preheat oven to 350°F. Line two large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside. Remove cookie dough from the refrigerator. If the cookie dough is chilled longer than 2 hours, let it sit at room temperature for at least 30 minutes. The cookies may not spread in the oven if the dough is too cold. Roll cookie dough, 1 Tablespoon each, into balls. Roll each in granulated sugar and arrange 3 inches apart on the baking sheets. Bake for 11 to 12 minutes or until edges appear set. If the tops aren’t appearing cracked as pictured, remove the baking sheet from the oven and gently bang it on the counter 2 to 3 times. This will help the warm cookies spread out and crack on top. Return to the oven for 1 additional minute. Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Cookies will stay fresh covered at room temperature for 1 week.

DECEMBER COOKIE OF THE MONTH: SNOWBALL COOKIES Dennis Freeland – Porters Neck Country Club I look forward to the Holidays every year when my neighbor brings over a tin of treats for my family. These snowball cookies are the first ones to disappear. INGREDIENTS 1 Cup Unsalted Butter 2 TSP Vanilla Extract 1/3 Cup Sugar 2 TSP Water 2 Cups sifted All-Purpose Flour 1 ¼ TSP Salt 1 Cup Chopped Pecans 2 Cups Powdered Sugar

DIRECTIONS Preheat oven to 325°F. In a large mixing bowl, cream butter, vanilla, and sugar. Creaming the mixture until light and fluffy. Blend in water. Gradually add in and combine flour and salt, and beat until well blended. Add the pecans. Shape into 1-inch balls. Place balls at least 1 inch apart onto a non-stick cookie sheet. Bake for 15 to 18 minutes, or until firm to touch. While cookies are warm, roll in powdered sugar. Cool on racks for a few minutes. Roll cookies again in powdered sugar. Store in a sealed container up to one week.
