Did you know there are an estimated 7 77 million species of animals on the planet? So much to explore from the jungles to the sea, and what better way to do that than with your friends from RCC? We will have fun facts and trivia about different animals, make our own animal masks and maybe even have a surprise visit from some special species this week! Please RSVP by Friday, June 16.

Lego® comes to life when you turn your creations into radiocontrolled masterpieces... Making it move is the name of the game! You will get to engineer everything from machines to animals with Lego® Brick and Technic® elements, then incorporate infrared sensors to convert your creation to remote control operation In addition to learning the basic principles of the many ingenious devices that are part of our everyday lives, you will also learn how to magnify or diminish force to move objects at different speeds and in different directions. Set your remote to "fun!" Games and crafts will also be a part of the camper's daily experience. At the end of the session, everyone will take home a custom mini figure! RSVP by Friday, July 21.

Join the team at RCC for a week of exploration about food! Each day, the campers will be making a dish themed around a different country and learn the in's and out's of cooking! We will meet the talented Food & Beverage Team and even explore the main kitchen! Grab your chef hat and get ready to make some food! Please RSVP by Wednesday, August 2

We will be sending you a reminder with the camp agenda, what to bring, the camp menu and other important information a week before each camp We ask that you register your child at least a week before each camp To register your child, please visit RCC's private site. We encourage guests to attend with members so the campers have a better experience with friends.

Campers may also attend on certain days only for a TBD rate There is a 10% sibling discount for members only Each day will be filled with indoor and outdoor activities, swimming, crafts, lunch, snacks and much more!

Any child between the ages of 5 and 18 is encouraged to participate. $185 for first swimming participant $155 per additional swimmer Enrollment charges will be billed directly to your member account Your swim team dues include the following: four swim meets and a championship meet, award for swimmer, one week of Junior Bootcamp, team picture, banquet for swimmer and a team tee-shirt

YOUNGEST SWIMMERS: JOIN OUR MINI RAYS SQUAD

For swimmers ages 4 and up, join the team as a Mini Ray. This offering will be held Mondays and Wednesdays from 5:00-5:30pm to help build up strength and familiarity with strokes and team competitions $120 per child, includes shirt. Please visit RCC's private website for more information

This is a highly valued role within the club. You will be a source of inspiration for swimmers, encouraging and motivating them to be the best they can be Acting as a representative for swimmers, you will be a central point of contact and a vital link for swimmers within the club. COOKIES OF THE MONTH

This cookie was one of our family's favorites. Grandma would always serve these cookies after dinner. Crispy on the outside with cinnamon and sugar and a warm fluffy center

Ingredients:

¼ cup Shortening 1⅓ cups All-Purpose Flour, sifted

¼ cup Salted Butter, softened ¼ TSP Cinnamon

¾ cup Granulated Sugar

1 egg

1 TSP Cream of Tartar

½ TSP Baking Soda

½ TSP Pure Vanilla Extract ⅛ TSP Sea Salt

CinnamonSugarCoating:

2 TBSP Granulated Sugar 1½ TSP Cinnamon

Directions:

Preheat oven to 375°F

In a small bowl, mix together 2 tablespoons sugar and 1½ teaspoon cinnamon Set aside

Sift flour into medium bowl Add cinnamon, cream of tartar, baking soda, & salt and stir to combine. Set aside.

Cream together butter, shortening and sugar in the bowl of a standing mixer fitted with the paddle attachment (or with a hand mixer) Add egg and vanilla and beat again until smooth Add dry ingredients and stir until combined

Use a 2 tablespoon cookie scoop to measure dough, then roll into balls

Roll each dough ball in the cinnamon sugar mixture until it’s evenly coated. Place cookies on baking sheet, either ungreased or lined with parchment paper. Bake in the preheated oven for 8-10 minutes until puffed and mostly set, but still soft

Remove from oven and transfer to a wire cooling rack to cool

JUNE: MAMA DIP'S CONGO SQUARES

Throughout my culinary career two chefs that I’ve always admired and looked up to are Mildred “Mama Dip” Council, Founder of Mama Dip’s Kitchen in Chapel Hill and Walter Royal, Executive Chef at the Angus Barn in Raleigh I love sharing their recipes with members at Old North State Club. There is no coincidence that if you come to the lake for Steakhouse Night that you will notice Chef Royal’s Chocolate Chess Pie is also on the menu Mama Dip’s Southern Desserts have been featured on dessert menus and member events here at ONSC. Chef Council’s Congo Square Recipe is the new the newest addition to the Cookie and Dessert Bar Menu I hope you enjoy

Ingredients:

6 oz Butter, melted

2¼ cups Brown Sugar

3 eggs, beaten

2¾ cups All-Purpose Flour

Directions:

2½ TSP Baking Soda

½ TSP Salt

1 cup Chocolate Chips

1 cup Pecans, toasted

Preheat oven to 325°F Butter and flour a half hotel pan

Mix melted butter and brown sugar until smooth Add beaten eggs to butter and sugar mixture.

In a separate bowl mix all-purpose flour, salt, and baking powder together and add into bowl of wet ingredients

When the ingredients are blended together fold in chocolate and toasted pecans

Pour into prepared half hotel pan

Place in preheated oven and bake for 30 minutes

Let cool and cut into 2 dozen bars.

If you would like to swim laps, please stop by the main office at RCC and sign a waiver.

Please note: The pool will be closed Monday, May 29 through Sunday, June 4 for swimmers. The pool will also be closing for swimmers on Tuesday, June 6 and Tuesday, June 20 at 5:00pm for home swim meets.
