CLUB UPDATE A NOTE FROM YOUR TRIAD REGIONAL DIRECTOR

FOOTPRINTS ON THE GREEN INITIATIVES

Greetings and happy (almost) spring! As I write this message (February 24), it is our new Executive Chef's first official day on the job. For those who may have missed my welcome email, Chef Anders Benton is a native of Greensboro, NC, and was most recently the Executive Chef at Gia: Drink. Eat. Listen. Anders keeps fresh, local, hyper-seasonality, and creating unique dining experiences at the forefront and we look forward to his creativity at Sedgefield. Please join me in welcoming Chef Anders Benton to the leadership team. By now you should be familiar with McConnell Golf's philanthropic program, Footprints on the Green. Each and every McConnell Golf property participates in various opportunities throughout the year to give back in our communities as well as nationally and even globally. Some efforts are specific to individual clubs while others are companywide. A few examples, both past and future, are mentioned on the right side of this page and you can look forward to many more as we progress throughout the year. There's one particular annual effort at Sedgefield that I'd like to take a moment to recognize. Through the leadership of Bob Bruggeworth, Ellen Boyer, Will Gregory, Scott Hamilton, and Kelli Young, the Sedgefield Angel Tree Helpers has become our signature fundraising movement. And yes, it has morphed into a movement indeed! With the generous financial support of the membership, the fundraising has grown each year reaching a record $58,000 in 2020, and nearly $160,000 since its inception in 2016! Still focused one hundred percent on kids, the Sedgefield Angel Tree Helpers program has been able to provide funds for additional needs that go well beyond purchasing gifts for the children during the holiday season. For instance, this past year, in addition to the Angel Tree gifts, the "Helpers" were able to purchase 500 coats totaling nearly $15,000 for the Give a Kid a Coat campaign. This is a direct result of the support of the membership. I am thrilled to call this our club's signature Footprints effort each year and proud that in 2021, McConnell Golf plans to adopt the Salvation Army Angel Tree program as one of our company-wide efforts. Thank you to the "Helpers" for your leadership and to the membership for opening your hearts to support this ever-important need in our community.

Sedgefield Staff supported McConnell Golf's Footprints on the Green program by donning their red on "Wear Red Day" to honor the American Heart Association and the Eat Seafood American Movement. Thank you for your purchases of our heart-healthy Ahi Tuna Salad, of which a portion of all proceeds went to the American Heart Association.

Speaking of 2021, February 1 marked Sedgefield’s ten year anniversary with McConnell Golf. During that time, members have enjoyed over $6.6 million in capital improvements to our club and our operations are now profitable. All without the assessments we experienced as a memberowned club. It has been an exciting ride and we are planning a "Ten Year Celebration" for our members later this year so stay tuned for details. A big thanks to McConnell Golf! Here's to continued future success. Your leadership team and club staff are ready for a great year ahead. MEMBERSHIP WELCOME NEW MEMBERS Mitchell & Siera Gagne The Gagnes are in the process of relocating to Greensboro and the Sedgefield community from North Augusta, GA where Mitchell is completing a residency in Medical Physics. He has accepted a role with Cone Health and will begin with them this summer. Siera is in Medical Practice Management. They are both looking forward to being a part of the club community and meeting many members. Please join us in welcoming the Gagnes to Sedgefield Country Club! Jason & Karen Gainey; son Nash (20) and daughter Grace (18) The Gainey family moved from Dallas, TX to Oak Ridge, NC in 2007 so Karen could work with her father at his McDonald’s franchise. Jason was in between jobs at the time and decided to return to his former company, Automatic Data Processing (ADP), as a Solutions Consultant. When not working or helping Karen with her McDonald’s franchise, Jason enjoys lots of golf, tennis, skiing, church, and other outdoor activities. He also enjoys following his favorite SEC sports teams, especially his alma mater, Mississippi State University, and Karen’s alma mater, Texas A&M University (Gig ’em, Aggies!). Outside of work Karen enjoys traveling, going to the barn to visit their horse Percy, bible study group, and gardening. Grace is a junior at Wesleyan Christian Academy and loves dance and horseback riding. Nash is a freshman at High Point University studying Business and Marketing and enjoys tinkering with cars and trucks, watching the stock market, esports, and skiing. The Gaineys currently reside in Summerfield and look forward to getting involved in many of the activities at Sedgefield. Sydney Harris While we are pleased to welcome Sydney as one of our newest members, having grown up at Sedgefield, she is not new at all! It is always great to see when dependents that age out of their parent's membership want to join the club on their own as well – just another testament to Sedgefield being a true family! Sydney works with her father Jeff Harris at their family business, Furnitureland South. She is a Sales Trainer and is responsible for Training New Sales and Design Consultants as well as continued education training for 150 Sales and Design Consultants. When asked what she is most looking forward to at the club, Sydney says, “I am thrilled to become a member at a place that I have called my home since I was a child. The memories and friendships that I have made at Sedgefield are incredible. I am excited to make many more! Since I have started playing golf, I have thoroughly enjoyed being able to play at Sedgefield and at Old North State. I am excited to try out all the other McConnell Golf Properties.” A 2018 graduate from the College of Charleston, she enjoys traveling back to the city every chance she gets, as well as traveling and exploring new places. She serves on many charitable committees in the area, one being a women's leadership group in her industry. Please join us in welcoming Sydney as one of our newest members.

MEMBERSHIP WELCOME NEW MEMBERS Larry & Linda Ransone The Ransones reside in Lewisville, and Larry is the son of current Cardinal Golf member Robert “Buc” Ransone. Larry works in Colfax as the CFO of LTR Utilities and is looking forward to playing lots of golf with his father at the club. Please join us in welcoming the Ransones to The Cardinal! Jeremy Rudock; sons Harrison (14) and Webb (9) The Rudocks moved to Greensboro in September of 2020 after 24 years in Winston-Salem. Jeremy is 42 years old and a graduate of Wake Forest University. He works as a project manager in software development for Yardi Systems. He has 2 boys, Harrison and Webb, who love to golf and can often be seen with him around the practice area. Join us in welcoming the Rudock Family to The Cardinal. Mike & Bethaney Shade; daughter Lucy (6) The Shade family resides in Greensboro, close to Northwest Guilford High School, and not too far away from the Cardinal. Mike is currently working remotely as an SVP with Truist Financial Corporation, and is looking forward to playing lots of golf at The Cardinal once the weather warms up! Paul & Holly Sutherland; children Casey (17), Clay (17) & Mallory (17) The Sutherlands reside in Summerfield and are looking forward to playing lots of Golf at The Cardinal! “We are a blended family with five kids. One is a sophomore at UNCC, one has joined the Marines, and three are juniors at NGHS,” Paul says regarding their family." Holly is a tennis member of the Cardinal, and after a ten-year hiatus from golf, she is making 2021 the year she returns to the game. He continues, “We look forward to spending quality family time playing & practicing at the Cardinal this year. The game is brand new to our daughters, so they may need some encouragement (and lessons)!” Please join us in welcoming the Sutherlands to the club!

A NOTE FROM YOUR TRIAD MEMBERSHIP DIRECTOR Fourteen months ago I penned an article for this same newsletter with a message respectfully closing out the last decade and starting the 2020s with a bang, with a mention of the return of the ‘Roaring 20s' – little did we know what the next 14 months had in store for everyone all over the world. While domestic and global markets experienced horrendous downturns initially, much like the spirit of the American people, the markets fought back and have returned even stronger than they were prior to the onset of the pandemic. Through all of these tumultuous times, the club has been proud to remain as open and operational as possible for the members and their guests. I see not only Sedgefield and Cardinal, but all clubs throughout McConnell Golf serving as a beacon of calm and stability amongst an ever changing landscape. The comfort and camaraderie provided by a private club is a testament to the members, and we are thankful to everyone for their continued support these past 12 months and beyond. Moving into spring, it seems positive news regarding the virus is trending in the right direction. Vaccine rollouts are continuing to rise as the number of new positive cases fall; a great indicator that there is light at the end of the tunnel. One great lesson from all of this that we can take both personally and professionally is what we perceive as “the new normal,” and how new ideas and new ways of doing things may actually be better than what we were doing before, it just took a global pandemic for us to realize it! For example, with travel practically halted and public places shut down, our members spent more time with their families at the club. While many families have experienced heartbreak and tragedy, hopefully many will be able to look back on this past year and appreciate the time that restrictions have allowed us to spend with our families and these fond memories turn into a “new normal” – the best place to continue experiencing these unforgettable moments with family and friends? The club of course! Although the club experienced normal attrition over the past twelve months, we are a net positive 25 members over this time last year. Most of those new members are referrals from you, as it is hard to keep an experience such as membership at the club a secret! We truly appreciate your continued support and look forward to seeing you around the club!

CLUBHOUSE NEWS A NOTE FROM YOUR FOOD & BEVERAGE DIRECTOR Greetings! The hope of bright sunshine for a few days in a row is finally upon us. The happy moment when you first notice pink blossoms in the trees has arrived! Sitting outside at the Café, instead of gazing longingly from the inside and taking a walk without shivering… I have officially let go of any hopes for snow. Bring on the spring and bring on the fresh, new beginnings. While change is not always easy, the beginning of the year presents the best opportunity to make both small and big changes in your life. Whether it be dining at the club more often, taking advantage of Chef's butcher shop items, booking a golf or a tennis lesson with the pros, or trying out a new bottle of wine, there is no better time than the present to stop putting things off and enjoy the moment. Be sure to check out the calendar and take full advantage of the delectable dinners and fun events ahead!

A NOTE FROM YOUR DIRECTOR OF CATERING Springing forward is something that we do every year. To some, it means a little less sleep, to others, it means the dawning of green grass, warmer weather, and long sunny days. We can all say 2020 was a unique year, but as we move into spring, we are moving into a time of growth, renewal, and rejuvenation. I'm very excited to be working with our new Executive Chef Anders Benton who will bring a new, creative and unique approach to our private events. I am excited for the knowledge and insight he will bring to the club. Over the coming months, we will be working together to revise our catering menus and provide you with some new and innovative offerings for your next special occasion. In the meantime, there are plenty of opportunities to take advantage of Chef's culinary talents. Bridal showers, family celebrations, birthday gatherings, you name it, we can host them. No need to venture far, our team here at Sedgefield is ready to create an unforgettable experience for you, your family, friends, and coworkers. BLUEBERRY GIN SOUR

Ingredients:

Ingredients: 1 oz Aperol 1 oz Dry Vermouth

1 oz Gin Orange twist

1.75 oz Tanqueray .5oz Egg White .5oz Simple Syrup

1oz Lemon Juice Blueberries to muddle 1 Dash of Bitters

Directions:

Directions:

Add all ingredients together in a shaker, add ice and shake. Strain into a martini glass and serve straight up garnished with a twist.

Put 10-14 blueberries in shaker and muddle. Add all ingredients to shaker and dry shake (no ice) for 15 seconds. Add ice and shake more. Pour into rocks glass over ice and serve. Lemon wedge for garnish.

KIDS AND FAMILY A NOTE FROM YOUR MEMBER ACTIVITIES DIRECTOR It is finally getting warmer and the sun is starting to shine a little longer! And you know what that means? It is almost spring! I am very excited about all of the fun activities coming up at Sedgefield. Be sure to join us for our Family Fun Nights on March 6 and April 24, and on Friday nights for Kids Club! As we move into spring that means summer is not far behind! We have many summer activities planned that we can't wait to share with you. Be sure to check out our Kids Summer Guide for information on camps, swim team, and other events! I am excited to spring forward into 2021 with you!

WOMEN’S ACC CHAMPIONSHIP I APRIL 14-18 The Atlantic Coast Conference announced that the ACC Women's Golf Championship will be held at Sedgefield Country Club!

Congratulations to our top four members who commented or participated the most in our January Facebook Fitness Challenge! Each of our winners received free personal training sessions at their home clubs. We continued the challenge in February with “Love Yourself Month”. From meditation tips and tools to wellness relaxation techniques, along with some occasional fitness challenges, February was all about a better you! Keep an eye out for the March Challenge on the McConnell Golf Facebook Fitness Page and let us help you continue your fitness journey!

A NOTE FROM YOUR CARDINAL SUPERINTENDENT

I think we are all probably in agreement that some sunshine and warmer weather is something that we are all very much looking forward to in the coming weeks ahead. Overall, it has been cold, damp, and cloudy to start the year 2021. Last year we were an average of 6 degrees warmer in January and February provided us with some 70 degree days causing trees and plants to begin to bloom. As the days continue to get longer, the sun angle gets higher and the temperatures continue to warm, things will begin to wake up from their winter nap otherwise called dormancy, and begin to green up.

We have had a great winter of working on course improvement projects so I wanted to start this letter with a quick recap of what your agronomy team has accomplished this winter.

What can you expect during this transition period from winter dormancy to the spring greening up process? With the rough, we will be scalping off all the old leaf blades from last season to open up the canopy and allow the warmer air temperatures to reach the soil. This will create a lot of old grass-clipping debris that we will be blowing into piles and picking up as we go. We will start this process just before the rough starts to really green-up. Next will be the fairways, approaches, and tees. We will begin scalping these areas down once we feel there is enough new growth to support this process. It will consist of mowing well below normal in multiple directions to reset the turf canopy and remove all old-growth and start the season fresh. Last but most important is the greens. This process is more gradual and requires patience. Once we feel the cold weather is behind us and the turf really starts actively growing, we will begin mowing the greens at a safe height of cut. We will be watching how the plants respond and lowering that height gradually to eventually achieve a tight surface that provides a good ball roll. The keyword in this process is PATIENCE. There will be a time in this process that the greens are not at our normal standards. This is to be expected. We can’t push the gas pedal full throttle just yet like we can during the warmer months of June through August. If we get too aggressive too soon, it could have adverse effects and weaken the plants. We will be doing all we can and what we feel comfortable doing during this transition period to provide the best possible surfaces at that time. This will include the introduction of light topdressings, verti-grooming, and often times double mowing. The time frame we typically start these processes begins in mid to late March with mowing the greens first, then with starting to mow tees and fairways around the first or second week in April, then lastly it will be scalping down the rough typically in mid to late April. This winter we have been working on cleaning up a lot of trees around the course and removing the unsightly sucker growth, and low hanging, or dead limbs. We have also performed several small drainage projects and hope that the weather will cooperate to allow us to perform more before things get too busy. We also resolved the drainage issue in the bunker left of hole eight green, as it had become compromised with tree roots where it dumps out into the creek and was no longer functioning properly.

The tree line behind #8 green was pushed back about 20 feet which has added about two more hours of the morning sun on the back of the green. We have removed about 30 dead trees around the course and have many more to remove. The front left greenside bunker on #5 has been removed and sodded and will be maintained as a short cut area that will tie into the approach. All cart bridges around the course have a fresh coat of paint. Several new mulch beds have been added underneath trees where turf is unable to grow. As you can tell, we have been busy and made some nice headway on improving your course. There are still a few things that we hope to accomplish before the grass really starts growing and we begin spending most of our time mowing. First, we will be repairing all of the bare spots on holes 14 and 15. Some of these areas we can regrade and sod but some will need drainage installed to get water off of the surface. Second, I hope to be able to add some drainage in the approach on hole 6 just short of the green on the right side. March 1 and 2 the course will be closed for our first Greens Aerification of the year. Core aerification is a very important practice in the spring on our bentgrass greens. This aerification is what will set us up to have the most successful summer possible by removing organic matter, helping to drive deep roots, and allowing us to get fresh sand in the greens. The weather in March can still be unpredictable and if we end up having a cold March this aerification can take longer to heal over the holes than the other aerifications throughout the year. We will do our very best to get the greens back in great shape as quickly as possible. The course will also be closed June 1 through 4 for greens, tees, and fairway aerification. I hope you have enjoyed seeing the improvements that have been made to the course this winter. I know we are all looking forward to having warm weather with no frost delays and seeing green grass again. As always, I hope to see you on the course this spring. Ross Jernigan

We have also been working on fixing some erosion problems in the creeks by stacking stone and transplanting the tall fescue around them to make it look like it’s been that way for a long time. We have also started the process of spreading pine needles in all the beds around the course and hope to have this completed by the end of March and looking good as we enter the start of the golfing season. Prize Fund Weekends are some of the most popular events we host throughout the year. Prize Fund Weekends consist of seven different individual formats played on pre-determined weekends April through October. The field is separated into two divisions: Regular Men's Division (white tees with gross & net divisions) and Senior Men's Division (blue tees with a net division). Participating members are billed $70 in March and must notify the golf shop staff on the day of play to participate. Winners are announced on the following Tuesday.

APRIL GOLF EVENTS

As we begin fitting players for new equipment, especially drivers, I wanted to explain what a fitter is looking for to help you optimize your new equipment. Using a launch monitor is the standard by which we fit players today, that is due to the devices providing the fitter with all kinds of data that allows them to give you the best equipment for your game. Below is a bit of insight into some of the basic information about fitting and why it is important to know.

3 SATURDAY

1. Spin Rate – This number represents the amount of spin the golf/club/shaft exerts on the golf ball. In the case of the driver, if the spin rate is too high the ball will “balloon” and drop out of the sky causing the player to lose distance. If the spin rate for the driver is too low, the ball will not stay in the air long enough to produce the desired distance you’re looking for. As a general rule of thumb, we are looking for spin rates between 2000 and 3000 rpm with the driver. When looking at spin rates for irons, the general rule of thumb is 1000 rpm multiplied by the number of the iron head (7 iron = 7000 rpm). More spin with your shorter irons will flight the ball higher and create more spin to stop the ball on the green.

2. Launch Angle – This number represents the angle at which the ball leaves the clubface. Launch angle is affected by two factors: static loft of the club and how the player delivers to the club to the back of the ball. If your launch angle is too low, the ball will not get very high off the ground. Conversely, if the launch angle is too high then the ball will tend to go higher and not travel as far. Generally, speaking fitters are looking for clubs to help the golfer produce between 10 and 15 degrees of launch. The spin rate and launch angle have an inverse relationship with each other. If a player launches it low, they would need more spin to keep the ball in the air. The opposite is true for a player who launches the ball on the higher end. They would need less spin to keep the ball from “ballooning” and falling out of the sky too early. 3. Clubhead Speed – This number represents how fast the club is traveling through impact. The faster a club is traveling the stiffer a shaft the player may need. This isn’t always the case but it is a good rule of thumb. Clubhead speed gives the fitter a starting point in determining the shaft flex to start with. The general rule of thumb is, 85-95 mph would be Regular Flex, 95-105 mph Stiff Flex, 105+ Extra Stiff. As I said these are just generalized numbers.

4. Ball Speed – Ball speed is measured as the ball leaves the clubface. Faster ball speeds tend to lead to longer distances. This isn’t always the case but it’s generally true. Club manufacturers have been saying for years now that their driver is faster than their competitors. When manufacturers say faster, they are talking about creating more ball speed. The general rule is for every 1 mph increase in ball speed the player usually sees around 2-3 yards in distance gains. Both clubhead speed and ball speed are greatly influenced by the shaft the player is using. If the shaft is too stiff the player will usually see ball speeds decrease resulting in short distances.

THE RELATIONSHIP BETWEEN SLEEP AND FITNESS

I know we all are eagerly awaiting spring, warmer weather, and outdoor activities. Whether your activity of choice is golf, tennis, walking, or running, one thing all of these activities have in common is the need for good footwear. Our fitness, tennis, and golf professionals can assist you in selecting the proper footwear for your activity needs.

When it comes to working out, what you do in the gym is important, but what you do outside the gym — what you eat, what you drink, and especially how you sleep, is just as crucial. In fact, you must sleep in order for exercise to actually work. We exercise for a purpose: for cardiovascular health, to increase lean muscle mass, to improve endurance, and more. All of these 'goals' require sleep.

We will resume group outdoor fitness classes beginning Monday, March 1. Due to COVID restrictions, group classes will continue outdoors on the pool patio. Reservations will be required. Finally, mark your calendars and plan to join us as we welcome Spring 2021 with a 5K! The Spring 5K and Breakfast will be held Saturday, March 20th! Sleep gives your body time to recover, conserve energy, and repair and build up the muscles worked during exercise. When we get enough quality sleep, the body produces growth hormone. When we are older, it helps us build lean muscle and helps our body repair after a hard workout. According to W. Christopher Winter, MD, “Growth hormone is essential for athletic recovery." Can exercise help you sleep? Absolutely. And if you’ve never experienced that immediate sleep-inducing exhaustion one might here are some tips for getting great sleep and improving your sleep cycles:

MEMBER SPOTLIGHT: ELLEN YU Ellen Yu is in 7th grade at Guilford eLearning University Prep. A fun fact about Ellen is that she "can be a good cook." Outside of playing golf, she enjoys spending time with her family. Ellen has many role models in her life, but she looks up to her mom and dad the most because they inspire her. Another one of her role models is Brooke Henderson, who is a professional golfer. Ellen says that she is a role model in many ways for young female athletes. Her favorite food is Korean BBQ because it is DELICIOUS! Ellen has hit many major milestones in her athletic career, being first place in the US Kids World Golf tournament for 13-year-olds and competing at Augusta National for Drive, Chip, and Putt in 2019. Ellen plans to play golf to the best of her ability and to see where God leads her. Ellen stays in shape during the off-season by personal training in our fitness center.

MARCH COOKIE OF THE MONTH CRUNCHY CHEWY CHOCOLATE CHIP COOKIES By James R. Patterson III, Porters Neck Country Club

Ever thought about your favorite things to eat and then thought, “What if I combined some of them into one?” Cereal, chocolate chips, marshmallows, milk, and butter, see the theme here? Well the folks at Momofuku Milk Bar in NYC made this dream come true for me. Here is our rendition of their famous “Cornflake Chocolate Chip Marshmallow Cookie.”

Ingredients: 8oz. Unsalted Butter, at room temperature 1 ¼ Cups Granulated Sugar 2/3 Cup Light Brown Sugar 1 Egg 1/2 TSP Vanilla Extract 1 ½ Cups All-Purpose Flour

1/2 TSP Baking Powder 1/2 TSP Baking Soda 1 ½ TSP Kosher Salt 3 Cups Cornflake Crunch (below) 2/3 Cup Mini Chocolate Chips 1 ¼ Cups Mini Marshmallows

Directions: Using a paddle on your stand mixer, combine the butter and sugars in the bowl and cream together on medium-high for two to three minutes. Scrape down the sides of the bowl, add the egg and vanilla, and beat for an additional seven to eight minutes. Reduce the mixer speed to low and add the flour, baking powder, baking soda, and salt. Mix until the dough comes together, no longer than one minute (do not walk away from the machine during this step, or you will risk over-mixing the dough). Scrape down the sides of the bowl with a spatula. Still on low speed, paddle in the Cornflake Crunch and mini chocolate chips just until they’re incorporated, no more than 30 to 45 seconds. Paddle in the mini marshmallows just until incorporated. Scoop and roll 1 ½ oz. dough balls and place onto a parchment-lined sheet pan. Pat the tops of the cookie dough domes flat. Wrap the sheet pan tightly in plastic wrap and refrigerate for at least two hours, or up to one week. Do not bake your cookies from room temperature as they will not hold their shape. Heat the oven to 350°F. Arrange the chilled dough a minimum of three inches apart on parchment-lined sheet pans. Bake for 14 minutes. The cookies will puff, crackle, and spread. At the 12-minute mark, the cookies should be browned on the edges and just beginning to brown toward the center. If they still seem pale and doughy on the surface, leave them in the oven for an additional minute or so. Cool the cookies completely on the sheet pans before transferring to a plate or to an airtight container for storage. At room temperature, the cookies will keep fresh for five days; in the freezer, they will keep for one month.

CORNFLAKE CRUNCH Yield: About 4 Cups Ingredients: 6 Ounces of Corn Flakes 1/2 Cup of Milk Powder 3 TBSP Granulated Sugar

1 TSP Kosher Salt 9 TBSP Unsalted Butter, melted

Directions: Heat the oven to 275°F. Pour the cornflakes into a medium bowl and crush them with your hands to one-quarter of their original size. Add the milk powder, sugar, and salt and toss to mix. Add the butter and toss to coat. As you toss, the butter will act as glue, binding the dry ingredients to the cereal and creating small clusters. Spread the clusters on a parchment-or-Silpat-lined sheet pan and bake for 20 minutes, at which point they should look toasted, smell buttery, and crunch gently when cooled slightly. Cool the cornflake crunch completely before storing or using it in a recipe. Stored in an airtight container at room temperature, the crunch will keep fresh for one week; in the fridge or freezer, it will keep for one month.

APRIL COOKIE OF THE MONTH KENTUCKY DERBY PIE COOKIES By James Archer, Raleigh Country Club

Growing up in Kentucky, the first Saturday in May was always one to remember. Rather than the traditional Derby Pie, this cookie was always around during my childhood. So enjoy a Mint Julep, a Hot Brown, and a Kentucky Derby Pie Cookie while you cheer on your favorite horse! Riders Up! Yield: 4 Dozen Cookies Ingredients: 1 Cup Softened Butter 1/4 Cup Sugar 1/4 Cup Turbinado Sugar 1 ½ Cups Packed Brown Sugar 2 Eggs 1/2 Cup Kentucky Bourbon3 ½ Cups Flour 1 ½ TSP Baking Soda 1 TSP Salt plus extra for Finishing 16 oz. Bittersweet Chocolate, rough chopped 1 ½ Cups Walnut Pieces

Directions: Preheat Oven to 350°F. Line a baking sheet pan with parchment paper. Cream butter and sugar together. Scrape down bowl. Add bourbon and eggs and mix until combined. Sift together flour, salt, and baking soda. Add to wet mixture, in stages, scraping down the bowl between additions. Add walnuts & chocolate to incorporate. Let the dough cool to allow butter to set back up. Scoop heaping tablespoon onto a lined sheet pan. Bake 10 to 12 minutes or until almost set. Sprinkle with the desired amount of salt and let cool.
