CLUB NEWS As we kick off the tennis and golf seasons, let's hope March and April bring us some good spring weather. Enough of the rain and cold. We have however been able to address some much needed major repairs to both pools over these winter months. Not fun projects, but very much needed, with the pools being close to 20 years old. We are excited to announce that we have added Water's Edge Country Club in Penhook, VA to the portfolio of McConnell Golf Clubs. McConnell Golf now owns 14 Private Clubs in North Carolina, South Carolina, Tennessee and Virginia. Please mark your calendar as The Rex Hospital Open returns to The Country Club at Wakefield Plantation May 31stJune 6th. While it is sure to look a bit different, we do not not know at this time exactly what it is going to look like.

We will provide you with more details once they become available. Hopefully sooner rather than later, we will have a better handle on the Covid-19 vaccine. You can be assured that we will be putting on fun events while continuing to host them in a safe manner. As always, we thank you for your support of the club. Be well and safe! Congratulations to our 2020 ~Employee of the YearMark Saharski Please join me in congratulating Mark Saharski as our 2020 Employee of the year for The Country Club at Wakefield Plantation. No task is too small for Mark. With 10,000 more rounds and Covid- 19 in 2020, Mark and his Outside Operations Team had a tall order in front of them. His leadership and dedication to the club and to our members really stood out. His two 4:00 am stake outs to catch a couple of teenagers who were causing damage to the club demonstrates his willingness to go above and beyond. Congratulations and Thank You Mark!

MEMBERSHIP Dear Members, I hope this message finds you well and ready for the spring season. We have added a lot of great new members so far this year. I could go on forever about this but wanted to highlight two - The Gonzalez family and The Saharski family. Luis & Virginia Gonzalez are the parents of our longest tenured golf professional Erica Britt. As you would expect from Erica's personality, they are extremely nice and enjoyable people to be around. We are also excited to announce your 2020 Employee of the Year, Mark Saharski, will no longer be getting your bag and now be enjoying retirement on the other side as a member. Do not be surprised when you see Mark playing golf every day with the Wakefield Men's Golf Association. Please make sure to welcome them and all our new great members listed below. If you know of anyone who may be interested in membership, please let them know it is a great time to join as we will be increasing our Full Golf initiation fee to $18,000 beginning May 1st. EASTERN BLUEBIRD

The Country Club at Wakefield Plantation was designated as a "Certified Audubon Cooperative Sanctuary" by the Audubon Cooperative Sanctuary System in 2004. It was the 15th course in North Carolina and 520th in the world to receive this honor. As apart of our wildlife and habitat program we installed 20 bluebird nesting boxes in 2003. Out of those boxes we have averaged around 100 bluebirds raised each year. The Eastern Bluebird, Sialia Sialis, is a blue songbird that is a member of the the thrush family. The Bluebird lives in the eastern half of the United States and southern Canada, ranging from the Atlantic coast to the Rocky Mountains. This songbird has a life span of about 6 years. The male Eastern Bluebird will have bright blue feathers, an orange/red throat and breast and a white belly. The females have dull blue wings and tail, gray head and back, brown breast, white belly and white eye ring. The birds range from 4.5 to 6 inches long as an adult. The bluebirds are very beneficial to our golf course. They are a natural way to help with the insect populations and are beneficial to look at and listen to. Their diet consists mainly of spiders, worms, katydids, beetles, and they especially like grasshoppers. They prefer nesting boxes in open areas with perch sites nearby. The perch sites are very important to their feeding method and allows them to look back on their house for the protection of their young. Bluebirds lay 3-5 eggs at a time and will nest 2-3 times per year. This year we are off to a great start with 18 out of 20 boxes having nesting activity and we look forward to another successful year. Every two weeks we check the boxes during the nesting season and note what we see. At the end of the season we will update you on how many Bluebirds were raised this year. So the next time you are playing the course, take a look around and see how many of our colorful friends you can see and enjoy the beauty of nature. RED NOSE MARCH MADNESS TAILGATE PARTY Friday, March 19th I 4:00pm-9:00pm Fee: $10 for Adults; $5 for kids ages 5-12; kids under 4 free Grab your team colors and bring your school spirit for our outdoor March Madness Tailgate Party! Grab your chairs, blankets and pompoms as the game will be showing on the big inflatable screen in the clubhouse parking lot. Along with the game we will have corn hole, a basketball hoop, member charge bar, a school spirit competition and much more! In addition we are excited to have delicious food available through Pablanos Tacos and Let's Eat food trucks. This event is also dedicated to bringing awareness to the Red Nose Foundation, which is an organization that is helping to end child poverty. Show your support and come to the event with a red nose! The red nose will get you one entry fee in our raffle drawing and you will have chances to buy extra raffle tickets where that money will go directly to the Red Nose Foundation. March Cookie of the Month: Crunchy Chewy Chocolate Chip Cookies I James R. Patterson III – Sedgefield Country Club Ever thought about your favorite things to eat and then thought “What if I combined some of these?” Cereal, Chocolate Chips, Marshmallows, Milk, Butter, see the theme here? Well the folks at Momofuku Milk Bar in NYC made this dream come true for me… here is our rendition of their Famous “Cornflake Chocolate Chip Marshmallow Cookie”. Ingredients 8oz. Unsalted Butter, at room temperature 2/3 Cup Light Brown Sugar 1/2 TSP Vanilla Extract 1/2 TSP Baking Powder 1 ½ TSP Kosher Salt 2/3 Cup Mini Chocolate Chips

1 ¼ Cups Granulated Sugar 1Egg 1 ½ Cups All Purpose Flour 1/2 TSP Baking Soda 3 Cups Cornflake Crunch 1¼ Cups Mini Marshmallows

Instructions Using a Paddle on your Stand Mixer, combine the butter and sugars in the bowl and cream together on medium-high for 2 to 3 minutes. Scrape down the sides of the bowl, add the egg and vanilla, and beat for an additional 7 to 8 minutes. Reduce the mixer speed to low and add the flour, baking powder, baking soda, and salt. Mix just until the dough comes together, no longer than1 minute. (Do not walk away from the machine during this step, or you will risk over-mixing the dough.) Scrape down the sides of the bowl with a spatula. Still on low speed, paddle in the cornflake crunch and mini chocolate chips just until they’re incorporated, no more than 30 to 45 seconds. Paddle in the mini marshmallows just until incorporated. Scoop and roll 1 ½ oz. dough balls and place onto a parchment-lined sheet pan. Pat the tops of the cookie dough domes flat. Wrap the sheet pan tightly in plastic wrap and refrigerate for at least 2 hours, or up to 1 week. Do not bake your cookies from room temperature—they will not hold their shape. Heat the oven to 350°F. Arrange the chilled dough a minimum of 3 inches apart on parchment lined sheet pans. Bake for 14 minutes. The cookies will puff, crackle, and spread. At the 12-minute mark, the cookies should be browned on the edges and just beginning to brown toward the center. If they still seem pale and doughy on the surface, leave them in the oven for an additional minute or so. Cool the cookies completely on the sheet pans before transferring to a plate or to an airtight container for storage. At room temperature, the cookies will keep fresh for 5 days; in the freezer, they will keep for 1 month. Cornflake Crunch I Yield: About 4 Cups Ingredients 6 Ounces of Corn Flakes 3 TBSP Granulated Sugar 9 TBSP Unsalted Butter, melted

1/2 Cup of Milk Powder 1 TSP Kosher Salt

Instructions Heat the oven to 275°F. Pour the cornflakes in a medium bowl and crush them with your hands to one-quarter of their original size. Add the milk powder, sugar, and salt and toss to mix. Add the butter and toss to coat. As you toss, the butter will act as glue, binding the dry ingredients to the cereal and creating small clusters. Spread the clusters on a parchment-or-Silpat-lined sheet pan and bake for 20 minutes, at which point they should look toasted, smell buttery, and crunch gently when cooled slightly and chewed. Cool the cornflake crunch completely before storing or using in a recipe. Stored in an airtight container at room temperature, the crunch will keep fresh for 1 week; in the fridge or freezer it will keep for 1 month.

DINING EVENTS & INFORMATION April Showers bring May Flowers, and oh boy am I ready for some sun-shiny spring weather! Here at McConnell Golf, we always start our New Year off with the Annual Corporate meeting to recap the year prior and lay out our goals for the New Year ahead. I always look forward to looking back on our accomplishments from the prior year as well as taking the opportunity to learn and grow each year. With the beautiful weather that is hopefully upon us begins the wedding season here at Wakefield. After a year of having to put off or reschedule their weddings, the couples that we have hosting their special day with us are finally able to look forward to celebrating their big day in 2021. At the moment there are still restrictions in place of course, however, there seems to be an end in sight for all to move forward. We have some really fun member events by the always creative, Natalie Clemens, and our Food & Beverage Team for the months of March and April. We are looking forward to seeing everyone here and start enjoying fun again outside of the home! Look out for the weekly happenings e-mails each Tuesday with event information and instructions on how to sign up or make reservations. We are all so very thankful to all the Wakefield Members for sticking it out with us during the craziness in 2020! Looking forward to a wonderful 2021 with everyone. EASTER SUNDAY FAMILY DINNER TO GO PACKAGE Sunday, April 4th Let the kitchen take care of your Easter Sunday meal plans this year so you can enjoy the time around the table with the ones who matter the most. Look for a release of the menu options mid-March, orders will need to be placed by Tuesday, March 30th at 5:00pm. Packages can feed families of 4-6 comfortablly, bringing the home cooked quality with the convenience of catering. Reservations will need to be made by phone (919)348-4374. Pick ups will be scheduled on April 4th from 11am-1pm.

April Cookie of the Month: Kentucky Derby Pie Cookies James Archer I Raleigh Country Club Growing up in Kentucky, the first Saturday in May was always one to remember. Rather than the traditional Derby Pie, this cookie was always around during my childhood. So enjoy a Mint Julep, a Hot Brown, and a Kentucky Derby Pie Cookie while you cheer on your favorite horse! Riders Up! Yield: 4 Dozen Cookies Ingredients 1 Cup Softened Butter 1/4 Cup Sugar 1/4 Cup Turbinado Sugar 1 ½ Cups Packed Brown Sugar 2 each Eggs 1/2 Cup Kentucky Bourbon 3 ½ Cups Flour 1 ½ TSP Baking Soda 1 TSP Salt plus extra for Finishing 16 oz. Bittersweet Chocolate, rough chopped 1 ½ Cups Walnut Pieces Instructions Preheat Oven to 350°F. Line a baking sheet pan with parchment paper. Cream butter and sugar together. Scrape down bowl. Add bourbon and eggs and mix until combined. Sift together flour, salt, and baking soda. Add to wet mixture, in stages, scraping down bowl between additions. Add walnuts & chocolate to incorporate. Let dough cool to allow butter to set back up. Scoop heaping Tablespoon onto lined sheet pan. Bake 10 to 12 minutes or until almost set. Sprinkle with desired amount of salt and let cool.

KID & FAMILY EVENTS I am happy to say that it seem like winter has flown by this year and spring is just around the corner! With the time change and warmer weather near it is definitely my favorite time of the year! We are excited to have the camp schedule out and registration is open! From tennis, golf to themed camps there is something for everyone this summer and we can't wait to have the kids join us! Don't miss out and register early, as camps will fill up! We are also very excited to welcome David Gonzalez to the Wakefield Team as one of our new group fitness instructors and personal trainers. He is a great assets to the team and if you are looking to work on those fitness goals, David, Heather, Greg and Jeremy are here to help! Who could forget the drive by Easter last year? Well this year we are not quite back to our normal hunt but we have a great event planned! This Easter there will be time slot for you and your family to sign up for. During this 30 minute slot you will be able to ride a pony, take a picture with the Easter Bunny and enjoy a basket with candy filled eggs, along with a craft to take home. To register please e-mail Natalie and indicate how many baskets you need, how many will be in your party, if you want to add on a dye kit and if so how many and what time slot you are looking for. We are holding classes in the wall ventilated area outside of the grill area. Some of the drop panels are in place for protection and heaters have been added to stave off the worst of the cold. Dress warmly and in multiple layers. One might be surprised of how they warm up during practice. I will do my best to ensure your practice meets your individual needs. This yoga class will be comprised of poses that encompass deep stretches, twists, and balance. All levels are encouraged to attend. Directions are given to help individuals reach their edge of the strength, flexibility or mindful movement. Life can be stressful, but this class is oriented to allow people to enjoy their body, relax and release all while enjoying an occasional high. Momentum Yoga with Greg This class will concentrate on both flowing sequences and poses that are held for the benefits of breath, strength and focus. A session will start with the gentle flowing sequences to allow the body to adjust to the range of motion that the class will work toward. Sequences will be challenging for some participants, yet lower options are always available. Bring your best breath, focus and strength to the class. Allow yourself to experience the breath as you move continuously from one pose to another. Also allow yourself to focus on "self", as your busy life take a break as you regain your "center" and live in the present moment. Strengthen your upper, middle and lower body in different poses that will target all three areas. Maximize your heart health by including these foods in your healthy eating plan: Leafy Greens I Examples: Spinach, kale and collards Why: Great source of vitamin K, which helps protect your arteries and promote proper blood clotting. HEALTHY RECEIPES TO TRY From Personal Trainer ~ David Gonzalez Cauliflower Pizza Crust (265 calories a serving) Ingredients: 1 head cauliflower 56g fat free mozzarella 150g egg whites/substitute dash salt/pepper/oregano Directions: Preheat oven to 400 degrees Break cauliflower into florets and add to a blender Blend for 60 seconds until broken into small chunks Add cauliflower, cheese, egg and spices whites to a bowl Mix ingredients together by hand Lay a piece of parchment paper on a baking tray and scoop the mixture onto the center of the tray Smooth the mixture out until you've formed a thin crust Bake for 30 - 35 minutes, until browning Add 168g additional fat free cheese and desired toppings, (calories not counted above) Bake for an additional 15 minutes Skinny Key Lime Cheesecake (215 calories a serving) Ingredients: 4oz fat free cream cheese 50g vanilla Greek yogurt 1 graham cracker 2 tbsp. lemon juice 1 tbsp. vanilla extract 3 tbsp. TENNIS TIME Bring on the spring! Anyone who knows me knows that I cannot stand the cold weather, I am very excited for the time change in seasons ahead. But before we get into what is to come let's highlight some of the action from the last several months. As many of you know Pickleball has been on the rise at Wakefield throughout 2020 and has continued to gain popularity in this New Year. In January we hosted our very first ever Mixed Doubles Pickleball Club Championships with over 20 teams competing. After several hours of fun and competitive matches the Sanderoff crew were crowned champions of this inaugural tournament. As we look to keep the momentum rolling in our PB program in 2021 we will begin our first junior programs starting this spring. If you would like to get in on the action please give the tennis shop a call at 919-488-1930. It has been almost a year but USTA is about to be back in full force at Wakefield. March & April will once again see

packed courts with over 20 USTA junior and adult teams back in the competitive action. In March we will also play host to our first USTA junior tournament of the year. We have said it before but these tournaments are a great opportunity for our Wakefield juniors to test their skills against players from all over the state from the comfort of their own club. Also coming in March is our annual family spring social. This social is hosted by the pros and includes a morning of tennis play for juniors and adults and wraps up with a lunch cookout for the entire family. As we are still very cautious and aware of the state of COVID-19 in our community we are very excited to get back to a semi-normal spring schedule around the tennis facility. Tennis Tots camp will focus on the development of hand eye coordination, footwork, and the mechanics of the tennis swing. Junior Tennis Camp is a progressive five day camp that will focus on all aspects of the game of tennis. Each day of this camp will begin with stretches and fun warm up activities/games. We will progress throughout the week learning new strokes and strategies using age appropriate equipment. After reviewing rules and scoring, players will put their skills to the test with live ball practice of that day's stroke. We will finish the week with Friday Match Play Day! TEE IT UP The Professional Staff is excited to start another golf season at The Country Club at Wakefield Plantation. We have an active year planned for the membership and look forward to hosting the annual events that were cancelled last year due to Covid-19. The club calendar has been updated with golf tournaments and various golf instruction programs. The golf handbook is completed and have hard copies available in the golf shop for you to pick up on your next visit to the club.

During the past year we have seen a significant increase in the number of golf rounds. As you can imagine with the increase in rounds we have seen some negative impact on the golf course conditioning due to extra golf cart traffic. The professional staff has worked with Todd Lawrence and his team to develop a system to help with the condition of the golf course. I ask that you as a member make the proper efforts to keep our course in the best possible condition, not only for yourself but the entire membership. Golfers will now notice a white stake with a green cap beside the cart path that will indicate where you are allowed to take the golf cart off the path. Once off the path, a white stake with a red cap will be located on the edge of the fairway will indicate carts must return to the path by that point of the hole. Carts must remain on the path on all the Par 3 holes (#3, #7, #11, & #14). We appreciate your support in this initiative and your willingness to do your part in maintaining the golf course to the standards that we expect at The Country Club at Wakefield Plantation. This is our third year offering the Operation 36 instructional program at Wakefield Plantation. Operation 36 provides beginners with the most effective model and technology to learn to play golf. It is structured to help you become a skilled golfer by following a motivating roadmap to shooting Par (36) or better for 9 holes. The junior and ladies instructional programs will use Operation 36 throughout the year. The program has been a huge success and I only expect it to become bigger and better this year. OPERATIONAL 36 ELITE JUNIOR GOLF CAMP June 29th-July 2nd I July 20th-23rd Ages: 9-14 I Time: 9:00am-3:00pm Fee: $395

The FUNdamental Golf Camp is geared for juniors ages 5-9 and welcomes golfers of all levels of experience and skill! This fourday experience will help your junior improve all aspects of his or her game, including driving, irons, chipping, pitching, bunkers, rules etiquette, and an introduction to our Elite Operation 36 program. During this camp, the instructors will encourage your junior to set goals while also understanding the commitment it takes in order to see improvement. We will incorporate some fun games and popsicles. Each junior will receive a FUNdamental Golf Guide folder, a tool designed to help them track their progress through the week and a WP Junior Golf Water Bottle. If your camper would like to stay longer, we have an extended camp portion that runs from 12pm-3pm which includes lunch, swimming and activities.

The Wakefield Plantation Opeartion 36 Elite Camp is a progressive four-day experience which will focus on all aspects of your junior's game through oneon-one instruction as well as group activities, competitions and on course testing. Each junior will receive an Operation 36 Login order to track your child's progress throughout the camp. Juniors will also receive a personalized binder with an improvement plan reflecting their stated goals and level of commitment, take home activities and more. Each junior will be able to utilize JC video swings analysis, showing their progress from the beginning to the completion of camp. This program is a tremendous addition to our Wakefield and is one your child can utilize throughout the year.

WOMEN’S ACC CHAMPIONSHIP I APRIL 14-18 The Atlantic Coast Conference announced that the ACC Women's Golf Championship will be held at Sedgefield Country Club!

Congratulations to our top four members who commented or participated the most in our January Facebook Fitness Challenge! Each of our winners received free personal training sessions at their home clubs. We continued the challenge in February with “Love Yourself Month”. From meditation tips and tools to wellness relaxation techniques, along with some occasional fitness challenges, February was all about a better you!
