CLUB NEWS May is my favorite month of the year. To me, it kicks off both the spring and summer seasons. We start off with our Ladies Member-Guest followed by Mother's Day, Men's Member-Guest, pool opening, swim team and finish the month with the start of the Rex Hospital Open. We are grateful and optimistic that we will be having these events in somewhat normal fashion. Obviously, we will be hosting these events in a careful and safe manner by following the guidelines set forth. As I mentioned a few months ago, we have been doing a bunch of repair work to the pool. Never fun, but much needed. While doing this, we took this opportunity to revisit our food and beverage operations at the Sports Club. With this being said, we are proud to introduce and to open The Breaker Bar & Grille this summer at the Sports Club. We are renovating the space in front of the current snack bar window to include a service area that will provide a much better

ordering and service opportunity. While at the same time, our current bar will be incorporated into this service area. This affords us the ability to do lot of different things out of one location plus improve our service. By doing this, our goal is to have this area open at various times of the year when the pool is closed. We are excited that we will be hosting The Rex Hospital Open this year after it was cancelled last year because of Covid-19. Practice rounds will begin on Monday, May 31st with the final round concluding on Sunday, June 6th. A limited amount of fans will be allowed to attend. At this time, each membership will receive 2 complimentary tickets, as in the past. The build out of bleachers, sky boxes, and hospitality tents will definitely be reduced and look different. We are working with the PGA TOUR and Rex to figure out what this might look like for our member hospitality. Covid testing will be mandatory for the players and for our clubhouse staff but not for members and spectators. Be on the lookout for more details. I would like to take this opportunity to thank our WSMGA members and their spouses for helping fill divots on April 5th. We had over 30 people volunteer. Special thanks to Jim Weathers and Jay Eggenberger for leading this charge. With golf rounds way up last year and this year, this was definitely needed and much appreciated. As always, thank you for your continued support of the club. We look forward to a great year! Be well and safe! Michael Thomas, Club Manager

Rex Hospital Open Member Ticket Information - June 3rd-June 6th As in the past, each membership will receive 2 complimentary weeklong Clubhouse passes. Children 16 and under are admitted at no charge. Rex Hospital Open Member Ticket Pick up Tickets will be available to pick up beginning on Wednesday, May 26th in the Golf Shop through Wednesday, June 2nd. Beginning Thursday, June 3rd, the Member Tickets can be picked up at Will Call. Rex Hospital Open Tournament Volunteer Opportunities Whether you're a golf novice, an avid fan, a new volunteer, or have been an integral volunteer for years, Rex Healthcare is seeking volunteers for this year's Rex Hospital Open, May 31st-June 6th to assist in a variety of positions including: walking scorers, marshals, player shuttle service, hospitality service, merchandise service, pro-am service, leaderboards, and more! TOURNAMENT TIME This year the Korn Ferry Tour will visit our club June 3rd – 6th for The Rex Hospital Open. We are proud to say this year will be our 20th year hosting this event. Getting the course ready for this level of competition starts months in advance. It also takes a lot of planning, coordination and hard work across many departments to host a successful event. I thought you may find it interesting to see the daily schedule for the golf course maintenance team as we prepare the course before and after each day of competition.

At 4:45 am the maintenance staff arrives at the course for the day’s events. After a brief ten minute meeting for job assignments and special instructions everyone heads out. Since the first hour of work occurs in the dark every staff member has to be very alert and attentive in performing their jobs. The greens are double cut and the speed of each green is checked for consistency. Pro tees and approaches are cut, bunkers raked and dew removed from fairways. At 6:00 am a Rules Official and an Assistant Superintendent will meet at the 1st and 10th tee to begin set up of each nine for that day’s play. The Rules Official will set the tees and show the Assistant the pin location for the day. They also survey each hole, tee to green, to make sure that everything is in place and conditions are right before they clear the hole for play. At 7:00 am the first groups tee off while maintenance is finishing up the morning set-up on the last couple of holes with all being finished around 8:00 am. At 4:30 pm the maintenance staff returns to the facility for a meal and a brief 10 minute meeting for the afternoon job assignments. When the last group of players tee it up on holes 4 and 13 the Rules Official will give us the green light to begin work on 1 and 10. The staff maintains a one-hole buffer between them and the last group on each side as they mow out. We roll greens, blow divots off fairways, mow fairways, mow tees and step cut, water bunkers, fill divots and pick up tee markers and pins. We also check green speeds again to make sure they are staying consistent and someone monitors the moisture content of each green for firmness and turf health. When maintenance on the course is finished we then blow divots off the range tee and move putting green cups to new locations. When all is done around 9 pm the staff will head home for some rest and get ready for day two. It takes a lot of teamwork and coordination to host events like this. We are fortunate to have a very talented and professional team here at the Country Club at Wakefield Plantation. The maintenance staff takes pride in their work and in providing the best playing conditions for every tournament throughout the year. Todd Lawrence, Director of Golf Course Maintenance

May Cookie of the Month: The Cupboard Coconut Oatmeal Pecan Sorg I Rhett Sorg - The Reserve Golf Club Having first had them at a friend’s house, her mother had made them for her for years. She was not really interested in them at all, having eaten “thousands” of them. Kind of like a Lays Chip “Can’t eat just one”. So I ate all that were there. As time went on I met her mother and we talked about the cookies and how I’m not a very good baker. We went to the kitchen and “cleared the cupboard” and made the cookies. I have been a big fan ever since and make them occasionally for my kids when they come home. Haven’t had any left over’s yet! Yield: About 4 Dozen Cookies Ingredients 1 Cup Shortening 1 Cup Granulated Sugar 1 Cup Brown Sugar, firmly packed 2 Large Eggs 2 Cups AP Flour 1 Cup Uncooked Oats 1 TSP Baking Soda 1 TSP Baking Powder 1 TSP Salt 1 Cup Flaked Coconut 1 Cup Crisp Rice Cereal 1 TSP Vanilla Extract 1 Cup Pecans, chopped Instructions: Beat shortening at medium speed with electric mixer until fluffy; add sugars, beat well. Add eggs, beat until blended. Combine flour, oats, baking soda, baking powder, and salt; gradually add to sugar mixture, beating until blended. Stir in coconut, cereal, vanilla, and pecans. Drop by Tablespoonfuls onto baking sheets. Bake in batches at 350°F for 10 minutes or until lightly golden. Remove to wire cooling rack.

DINING EVENTS & INFORMATION This summer is finally creeping in and I'm excited for the sunshine! I cannot begin to tell you how wonderful it has been to see all of our members making their way back to WP! With the slow and safe increase in capacitates, we've been able to do things the right way here at Wakefield which is very important to everyone and their families. So far, we've started the year off with some great events, with even more to come through the summer months. I so enjoyed seeing everyone come and enjoy our first big buffet back on Easter Sunday. Some of our most popular events are taking place in May this year, out Ladies Member/Guest Azalea Tournament, and our Men's Tuscarora Member/Guest Tournament, which we were not able to host last year. Of course we will also be having our regularly scheduled Mother's Day Brunch on Sunday, May 9th, and we can't wait to spoil our Mom's. The annual REX Hospital Open will be taking place the first week in June this year, and I know we are all looking forward to having that back this year. We will be hosting some fun members events here at the Main Clubhouse over May and June, and Natalie has some great stuff planned down at the Sports Club to kick off our pool season. We so appreciate all of our member's patience and graciousness as we move back towards our "new normal" here at Wakefield. It has been an interesting 14 months to say the least, but we are so glad to be getting back to the swing of things with the beautiful spring and summer weather. I'm looking forward to working with any and all of your catering and event needs here at WP!

June Cookie of the Month: No Bake Cookies Robin Bilodeau - Sedgefield Country Club One of my personal favorite combinations is always chocolate and peanut butter. My mom used to make these for us when we were younger except she would joke around and call them cow patties. She likes to make these during the summer months to avoid the heat of cutting on the oven. I remember anxiously awaiting for dinner to be over so we could have a no bake cookie and robbing the fridge when there were extras! Ingredients 1/2 Cup Unsalted Butter 1 ¾ Cups Granulated Sugar 1/3 Cup Unsweetened Cocoa Powder 1/2 Cup Milk 1 TSP Vanilla Extract 2/3 Cup Creamy Peanut Butter 3 Cups Quick Oats Dash of Salt Instructions Line two baking sheets with parchment paper. In a 2.5 to 3 quart medium saucepan combine butter, sugar, cocoa, and milk.Set over medium heat, and cook, stirring frequently until it reaches a full boil (should be rolling boil/bubbling). Allow mixture to boil for 60 seconds without stirring. Remove from heat, immediately add in vanilla, peanut butter and quick oats. Stir mixture until well combined, then, using a medium (2 TBSP) cookie scoop or two spoons drop mixture onto lined baking sheets. Refrigerate until set. Store cookies in an airtight container at room temperature.

I will graduate from Wakefield high school in June and will be enrolling at UNC Charlotte for Mechanical Engineering in the fall. I began swimming for the YOTA swim team at age 10 in middle school. During this time I also began swimming for the McConnell country club swim team and have been a Tsunami ever since. Entering high school, I decided to stop swimming year-round so I would have more time to focus on school and other extracurricular activities. My passion for swimming was too hard to resist so I joined my high school swim team and have swam all 4 years and attended regionals this past season. In addition, I picked up a part-time job my sophomore year in high school as a swim instructor to teach younger kids the proper technique for all four strokes. I look forward to being the assistant coach for the Tsunami swim team this season. Go Tsunamis!
