The sun is shining here in Raleigh NC, and it is HOT, HOT, HOT! The summer season here at Wakefield has started with a bang and we hope to keep the fun going all summer long! We know most of you head out on vacation during the months of July and August, but for those of you who will be around the club, we will have some fun events for you to take part in. We love hosting live music nights down at the sports club poolside, so be sure and come check those out on Friday June 21st, and Friday August 25th. ThefirstpieIevermadewasakeylimepie Irememberfollowingthe recipeonthebackofthekeylimejuicebottle.IthinkIatemoreofthe meringue than what actually ended up on the pie Ever since that moment, I’ve had a love for that sweet and tart flavor. Please enjoy thislittlesampleofthatdeliciouscombination
Ingredients:
11/2CupsAll-PurposeFlour
1/2CupCornstarch
1CupButter,softened
1CupPowderedSugar,plusmorefordusting
2TBSPKeyLimeJuice
3TBSPKeyLimeZest
Directions:
Whisk together the flour and cornstarch. Set aside. Beat butter and powderedsugartogetheruntillightandfluffy Beatinkeylimejuice andzest.Mixinflourmixturejustuntilcombined.Refrigeratedough for at least 1 hour Preheat oven to 350°F Line cookie sheets with parchment paper or spray with cooking spray. Scoop out cookie dough (about 1½ tablespoons) and form into a ball Place on preparedcookiesheetandbakefor17-19minutesorjustuntiltops begin to turn golden. Remove and promptly sift lots of powdered sugaroverthetopofthecookies Letthecookiescoolcompletelyon thecookiesheetsbeforemoving.Storeinanairtightcontainerforup to1week
Even though I’m a cookie monster at home, I placed a call to a loved one to find out their favorite cookie. I’ve exhausted what I have in my recipe box of family treats, so make enough for me and your family, and I’ll stop by for a sample!
Ingredients:
3/4 Cup Butter, softened
3/4 Cup White Sugar
3/4 Cup Light Brown Sugar, packed
2 Large Eggs
1 TSP Vanilla Extract
1 1/4 Cups All-Purpose Flour
1 TSP Baking Soda
3/4 TSP Ground Cinnamon
1/2 TSP Salt
2 3/4 Cups Rolled Oats
1 Cup Pecans, toasted
1 Cup Raisins
Directions:
Preheat the oven to 375°F Line two cookie sheets with parchment paper or silicone liners. Beat butter, white sugar, and brown sugar in a large bowl until smooth and creamy Beat in eggs and vanilla until fluffy Stir together flour, baking soda, cinnamon, and salt Gradually beat into the butter mixture Stir in oats, toasted pecans and raisins Drop teaspoonfuls of batter onto the prepared cookie sheets. Bake in the preheated oven until golden brown, 8 to 10 minutes, switching racks halfway through Remove from the oven and let sit on the cookie sheets for 1-2 minutes before transferring cookies to a wire rack to cool completely

The Summer season is full swing at the sports club Over the next several months the courts will be jam packed with summercamps,tournaments,eventsandsocialsforeveryoneinthefamilytoenjoy.
Around the tennis courts, the summer season will kick off with the Mixed Doubles Club ChampionshipsThis tournament is one of the most popular events of the year as players from all levels compete for the coveted Club Champion parking spots This year players will compete in divisions ranging from 50-80+, with the finals being played on Sunday July 2nd New this year our club will be hosting an adult USTA doubles tournament the weekend of August 18-20th. We are fully expecting a Wakefield team to defend our home courts and come out on top as Champions. This will be a fun tournament that will allow our members to compete in a state wide event from the comfort of home. Lastly on Friday August 11th, Wakefield will once again showcase some of the finest players in the areaastheRaleighProLeaguetakesthecourtsfortheirregularseasonfinale.Wehopethatyouwilljoinusforoneof themostentertainingnightsthatthesportsclubhastooffer.
Let’s keep the ball rolling with pickleball! This program and its offerings continue to grow and gain popularity around the club.Our in house pickleball league kicks off on July 11th with over 70players registered to play. I guess the first thing I should do is introduce myself. I’m Rocky Brooks, your new Director of Golf I’ve been fortunate to meet many of you over the last 3 weeks and would like to thank you for such a warm welcome to Wakefield I spent the bulk of my career as the Director of Golf at Sedgefield Country Club in Greensboro, where I had the opportunity to host some of you during your travels to various McConnell Golfproperties MywifeDebbieandIhavea
26-year-old son, Dylan, who like me is an avid Carolina Hurricanes fan (Debbie won’t go to a game. She says it’s too cold! ��). I went to high school and college in nearby Wilson, NC, but moved to the Greensboro area soon after starting my career as a golf professional. After 37 years as a golf professional, I still love the game as much as I ever have and truly love seeing people enjoy golf and the camaraderie that comes with it. The game of golf has provided so much enjoyment to me and my family and we sincerely hope we can bring as much gratification to you and your family.
