COOKIES OF THE MONTH

When I first moved to Knoxville in September of 2016, I was introduced to the “best cookies ever,” as some members explained to me They were from Ham & Goody’s Bakery in Knoxville I have found this recipe to be a close substitute for when you can’t make it to the Bakery. But, for me, these cookies just scream “Spring in Knoxville.”

Ingredients:

2lemons

1 cup(2sticks) unsalted butter, softened

1 cupwhite granulated sugar

1large egg

2 1/2 cupsall-purpose flour

1/4 teaspoonbaking soda

1/4 teaspoonsalt

1 teaspoonmilk (if needed)

Lemon Glaze:

6 teaspoonsof the reserved lemon juice

1 1/2 cupspowdered sugar

Directions:

Rinse lemons, dry, and roll firmly against the counter to help release juices Zest lemons, being careful not to get into the pith Reserve zest in a small bowl. Juice lemons and reserve juice in a second small bowl. Preheat oven to 350F and line 2-3 large baking sheets with parchment paper Cream butter with sugar for 1 minute until just combined, but don't beat too much air into the mixture Add egg and 2 teaspoons of the lemon juice and mix until combined In a clean bowl, stir together flour, baking soda, salt, and lemon zest Add dry ingredients to butter mixture in 4-5 additions, mixing until a few flour streaks remain If dough appears chalky or dry, mix in 1 teaspoon of milk. You want the dough to be moist but easy to work with - not too sticky. Turn dough out onto a floured work surface and roll out to 1/4-inch thickness Use a 2-inch round cookie cutter to cut cookies Place onto prepared baking sheet spaced 2 inches apart Gather up remaining dough scraps, roll out again (flour surface again if needed) and cut out more cookies Bake on center rack 9-11 minutes or until cookies are just set. Don't wait for them to get too brown, or they will taste dry. Let cool on pan 5 minutes, then transfer to cooling rack. Repeat with remaining baking sheets Let cookies cool completely

Continued....Lemon Glaze Directions:

Stir together powdered sugar and lemon juice until fully combined Pull a fork or knife through the glaze The line you make should hold its shape for about 5 seconds If it's too thin, add a little more powdered sugar If it's too thick, add a little more lemon juice Make additions in very, very small amounts, mixing well between each one, to test consistency. Use a butter knife or the back of a spoon to spread glaze onto each cookie Let sit at room temperature until glaze is set

(GLUTEN-FREE)

This is a simple, yet delicious cookie. This is one of my favorite cookies growing up as a kid My aunt would make these for me every year at Christmas time and it never seemed like Christmas until I got my cookies It is still a cherished memory to me to this day Ah, the simple pleasures of life

Ingredients:

1/4 cup butter

2 cups sugar

1/4 cup Hershey’s Cocoa

1/2 cup evaporated milk

3 cups your favorite oats (quick 1-Minute oats)

1 teaspoon vanilla

1/2 cup peanut butter

Directions:

Bring butter, sugar, cocoa, and evaporated milk to a boil for 1 minute

Remove from heat Add oats, vanilla, and peanut butter Mix well Drop by teaspoonfuls onto waxed paper Cool, then serve

Hi everyone, my name is Taylor Falk, and I am super excited to be a Co-Head Coach for Tsunami’s this season! I have been swimming since I was 10 and I cannot think of a better way to spend my summer than in the pool. I will be a 2023 graduate of ECU with plans to attend graduate school in the fall. During my time in college, I was a member and President of ECU Club Swimming, Go Pirates! During my free time I enjoy hiking and camping and have recently been learning how to rappel canyons (if you’re interested in national parks, I’m your girl!). I am looking forward to my second season with the Tsunamis!

My name is Greg Kearns, yoga instructor, at Wakefield Plantation Shortly after the training I received to become a yoga instructor, I also sought training in how to deliver Yoga to individuals dealing with past trauma. Over this time, I have enjoyed teaching of a variety of yoga classes. If the class being taught was for a large group, one on one, children, athletics, seniors, strength, flexibility, hot, or just relaxation; I was able to learn the needs of the participants, thus becoming a better instructor I enjoy bringing joy and humor to any class that I lead.

POOL RULES 2024

Use of the pool is for the exclusive use of the members, their families, guests as defined with the Rules & Regulations

Use of the pool at any time is at the swimmer’s own risk Any injuries or accidents should be reported to the attendant or lifeguard immediately

Everyone wishing to use the pool facilities must first register and present their membership card before entering the pool. Members must register their guests and are responsible for the payment of any appropriate charges as the club my determine from time to time. The guest fee is $5 per person per day. The same local guest can come six times per pool season

Children 12 years and younger must be accompanied and supervised by an adult at all times.

Children who cannot swim must be accompanied by a parent or guardian at all times

Children wearing diapers other than swim diapers are not permitted in the pool.

Swimming is only permitted during designated hours

Showers are required before entering the pool

Bottles, glass objects, drinking glasses and sharp objects are not permitted in the pool area Trash should be placed in the proper receptacles located throughout the pool area

All swimmers must wear bona fide swimming attire. Cut-off’s, dungarees and Bermuda shorts are not considered appropriate swimwear Proper non-swimwear or cover-ups are required at all times in the clubhouse.

Animals, bicycles, skateboards, and coolers are not permitted in the pool areas

Lifesaving and pool cleaning equipment should be used only for the purposes intended.

Running, and hazardous activities are not permitted in the pool areas Pushing, dunking and dangerous games are prohibited

Certain ball playing is permitted. Small soft balls and beach balls are permitted Tennis balls and footballs are not permitted The staff and lifeguards will have the discretion to monitor the ball playing based on the safety and wellbeing of our members and guests

All persons using pool furniture are required to cover the furniture with a towel when using suntan oils and lotions, as the use of these oils and lotions could stain or damage the furniture

The pool bathhouse has changing rooms with shower facilities

The club is not responsible for lost or damage personal property left in the changing rooms

Small inner tubes, noodles, water wings are permitted Large floats are never allowed poolside

The pool management staff has the authority to expel from the pool areas anyone who does not follow the pool Rules & Regulations or whose conduct is otherwise unbecoming of a member.

Admission to persons having an infectious disease or suffering from a cough, cold or cold sores, or wearing bandages, may be refused by appropriate club or pool management personnel. Persons who leave the pool area for over 30 minutes must relinquish lounges and chairs by removing all towels and personal belongings. Saving chairs for persons absent from the pool area is not allowed

No coolers or outside food and drinks are prohibited in the pool area.

22. Members are asked to stay off of the lane lines at all time

23 Smoking and vaping is not permitted

SLIDE RULES 2024

Maximum weight of rider is 300 pounds

You must be a minimum of 48” tall to ride the water slide. Eyeglasses must be securely affixed to riders with head bands

Only one rider on the waterslide at one time Single riders only

Never form chains.

Swim wear with exposed zippers, buckles, rivets or metal ornamentations are not permitted

Slide must be ridden feet first, lying on your back or in a sitting position. Sit up to go slower, lie down to go faster.

Riders must wait for attendants start signal before entering the waterslide

Keep legs, arms, and hands inside the flume at all times.

Do not dive, run, stand, kneel, rotate or stop in the slide

At the end of the slide, obey all instructions by splash pool attendant and exit quickly.

ADULT SWIM

Adults 18 and over may swim in the pool starting at 7:00am They must sign a new waiver this year at the front desk of the Sports Club during operating hours. Please note that once you leave the Sports Club to go to the pool, access back into the facility will not be available until 7:45am when the front desk staff member arrives We recommend you always swim with a friend and/or buddy as there will be no lifeguards on duty until the pool opens at 10am We will begin Adult Swim this season on Monday, May 13th

After your bunker shot, always rake out your foot prints. Use a push and pull raking motion and try to avoid pulling the sand out of the bunker. Fill your divot on tees and fairways with the sand provided This will encourage level re-growth and keep your playing surface level

Cigarettes, cigar butts and broken tees are trash. Please put them in the trash receptacles.

Avoid cart and foot traffic through areas that have been recently sodded These areas are irrigated more frequently and will cause turf damage. There’s also a great chance you could slip.
