I hope everyone had a wonderful holiday season filled with lots of family and friends It certainly was a busy December with Breakfast with Santa, Brunch with Santa, two Polar Expresses along with several member company holiday parties. Your support of the club, the club’s events and the staff has been amazing. Nothing was more evident than the generosity shown by our members for their support of the employee holiday fund Truly a pretty special way to say thank you to each and every staff member for all their efforts over the past year. So awesome and very much appreciated We were blown away by the members support of the Angel Tree Program One of the highlights of our year was putting together all the presents and delivering them to the Salvation Army All in all, sixty children received presents. Pretty special!

Happy New Year Wakefield Plantation! My family and I enjoyed a wonderful Christmas holiday this year making fun new memories and enjoying each other’s company. Another Christmas has come and gone, and I am grateful to see a new year! A new year means new opportunities to connect, celebrate, and enjoy everything that The Country Club at Wakefield Plantation has to offer! We are looking forward to a fantastic line up of club events for January and February to start off the new year, so mark your calendars and join us here at the club. Tommy will be featuring some great wines tastings that will take place on January 9th and February 6th, so be on the lookout for more info and signups We are continuing with our “Tavern After Dark” series with another fun night of karaoke and dancing with DJ Sorbel on February 1st. Ingredients:
14ouncessweetenedcondensedmilk
14ouncesshreddedcoconut
3tablespoonsofall-purposeflour
1teaspoonalmondextract
Directions:
Mix all ingredients together. Scoop out cookies and bake at 325 for about 12-14 minutes, till golden brown. Once cooled, drizzle the cookieswithmelteddarkchocolate,letthechocolateset,thenserve.
FEBRUARY COOKIE OF THE MONTH I GLUTEN-FREE CHOCOLATE CHIP COOKIES I KENRIC HUNT, EXECUTIVE CHEF AT BROOK VALLEY COUNTRY CLUB
“You would never guess that these chocolate chip cookies are gluten free They’re soft and chewy on the inside, crispy on the outside, and loaded with chocolate chips!” - Kenric Hunt
*Total Time: 40 minutes + 2 hours chilling
Ingredients:
1/2 cup (110g) unsalted butter, melted
1/2 cup (110g) dark brown sugar, packed
1/2 cup (100g) granulated sugar
1 teaspoon vanilla bean paste (or 2 tsp vanilla extract)
1 large egg + 1 egg yolk
1 cup + 1 tablespoon (150g) gluten-free all-purpose flour with xanthan gum (I recommend this one)
1/2 cup (60g) oat flour* SEE NOTES
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (80g) bittersweet chocolate, chopped
1 cup (160g) semisweet chocolate chips + a handful more for sprinkling
Flaky sea salt for sprinkling
Directions:
Whisk together the flour, oat flour, baking soda, and salt and set aside Cream together the melted butter and sugars until it turns into a paste-like consistency (mix on medium-high speed with the paddle attachment for 3-5 minutes) Mix in the vanilla and eggs until smooth Scrape down the bowl and mix again Mix in the dry ingredients Once combined, fold in the chocolate Use a large cookie scoop and scoop the cookie dough side by side on a small tray lined with wax paper You should have 15-16 cookies Dot the tops with a few more chocolate chips and place in the fridge for at least 2 hours. Once chilled, bake at 375°F on a large baking sheet lined with parchment paper (do not use a Silpat). Bake 5-6 cookies at a time for 10-12 minutes. They should be lightly golden around the edges and puffed/doughy in the center. Right when you take them out of the oven, quickly push in the sides of the cookies using the inside curve of a fork (see picture in post). They’ll spread quite a bit, so pushing in the sides to form perfectly round cookies gives you wrinkly and crispy edges Sprinkle the tops with a little flaky sea salt and transfer to a cooling rack Allow them to cool for about 15 minutes, then dig in! Yields 15-16 cookies
NOTES: Oat flour is preferred, but almond flour can also be used Add an additional tablespoon of the all-purpose glutenfree flour when using almond flour

Slow-Paced Yoga (with Greg): Let’s get together and enjoy a morning yoga session outdoors. This class will be a way of awakening your mind, breath, and body Allowing your mind to focus, your body to stretch, and your breath to flow Stretch, flex, and strengthen gently. All levels are encouraged to attend. This session will be comprised of sequencing simplistic poses that allow members to enjoy somemuch-neededtimeontheiryogamat Pleasebringamatandwaterbottle
Go with the Flow Yoga (with Heather) : A faster-paced yoga practice that moves with a bit more rhythm and the asanas paired with the breath Modifications are taught and encouraged Please bring a mat and preferably a block and strap
De-Manic Monday (with Heather): Restorative yoga is the practice of the long-held asanas and about slowing down to rest, reset, and rejuvenate the body and mind A time to observe the breath and connect the mind and body Suitable for beginners and practitioners of all levels. Please bring a mat and preferably a block and strap.
Fitter Faster (with Heather): This class is held outdoors using equipment and body weight to challenge your entire body This total body workout is a great way to condition for other sports, increase stamina and endurance, stop cellular aging, build muscle strength, and promote weight loss. We will incorporate intervals and Tabata training. Fast paced and fun but you can work at your own pace.
YOGALATIES (with Heather): Yogalaties is a type of exercise inspired by yoga and Pilates, as its name suggests It is said to harness the physical and mental benefits of both practices. It will incorporate yoga postures, gentle movement sequences, breath work, core work, and supportive guided relaxation for increased awareness All levels welcomed
Mind over Matter (with Heather): Mind over Matter focuses on awakening witness consciousness - the ability to see ourselves clearly. First, by deepening the relationship to the physical body through keen sensitivity of the subtle signals it conveys We will practice breathing techniques to move the energy called prana (life force) and incorporate asanas that promote healing
Chair Yoga (with Greg) : This class has been designed to assist people who are not fluid in getting up and down from a yoga mat The chair provides stability and safety Often such classes are dismissed as “easy” or only for people that have limited mobility options; however, individuals often enjoy a deeper stretch with the aid of the chair. Even with the aid of a chair, participants are still able to enjoy plenty hip openers, lower body stretches, and shoulder/back stretches. Balance poses are also part of the class. The chair aids individuals in keeping good form while providing a safety aid

2024YEARINREVIEW
What an interesting year! What started as a typical weather/golf year turned into one that will most likely be remembered for two things: the weather and the rough We experience our typical cold spells and warm spells early in the year, and then came the drought in April and May, soon followed by what seemed like never-ending summer rain in June, July, and August (we had a hurricane too!). The excessive rainfall never allowed us to get the rough back to its normal condition, but all of us are hoping for a much different weather pattern in 2025 that allows for an ideal summer of golf We were treated to a great fall with bright sunshine and limited rainfall, but then we got one of the coldest Decembers we have experienced in years. Let’s hope Mother Nature repays us with one of her best weather years in 2025

MEMORABLE MOMENTS IN 2024
If you have ever made a Hole-In-One, we are willing to bet you remember the hole you made it on, the club you hit, the weather that day, and just about every other detail about that memorable moment. In 2024, we had 12 different members record a hole in one at Wakefield with Mo Delgado recording two of them with 60 days of each other We even had one made on a Par 4! Yes, Courtney McKim holed her tee shot on the uphill par 4 17th hole during the first round of the Ladies Member-Member What a remarkable feat and worthy of being called the ‘shot of the year’! Congratulations to everyone that recorded a Hole-In-One in 2024 and for those of you still struggling to make your first Hole-In-One keep grinding! You never know where your next shot is going to end up.

MCCONNELL GOLF TO HOST BACK-TO-BACK KORN FERRY TOUR EVENTS AGAIN IN 2025
McConnell Golf properties will once again host Korn Ferry Tour events in consecutive weeks when the Visit Knoxville Open and UNC Health Championship showcase the game’s rising stars.
