Redfern welcomes three inspiring Williams A fabulous new establishment on the quiet stretch of Elizabeth Street is gaining an incredible following; but who would be surprised when the talents of Glen Bowditch (The Grounds, Sonoma), Chef Tim Bryan (formerly of Aria and Chiswick) and Toby Laccarino come together. The cafe is named after three figures of the area: William Redfern, William Chippendale and their good friend William Hutchinson and with an unassuming (and easily missed) entry, the café exudes the kind of gritty charm only Redfern can do.

Three Williams is strikingly spacious with just the right pared back industrial sophistication. Designed by Surry Hills architect Anthony Gill, also responsible for Berta and Vini Restaurants, the room was once used as Great Dane’s storage space. There are bike brackets on the walls that are actually used and not just there for aesthetic appeal – but they add to that too. There is plenty of press around town about the house made flat bread ‘Narnies’ with fillings like grilled prawns and smashed avocado, iceberg and aioli or glazed beef brisket with slaw, gherkins and chipotle mayonnaise. An all-day breakfast and lunch menu makes everyone happy and the huge kids’ blackboard area means you might just get to eat your meal in peace. There is a liquor licence pending so let’s hope that’s not too far away and we can start enjoying all day dinner as well. threewilliams.com
