Named after the first free settler in Castle Hill, Baron Verincourt de Clambe who received a grant of 200 acres in 1802, The Baron is the brainchild of three friends – Mike Ico, Ricki Row and Matt Stone. All twenty-something and in full time roles that were not providing enough fun, the boys were tired of travelling for a decent coffee. Born and bred in Castle Hill the boys decided that rather than set up shop amongst the thick of the inner city, they would give their own suburb the sort of venue worthy of visits by others like them. Although not a million miles away, getting produce and staff was challenging in the early days. Committed to providing the best, Mike was driving to and from Darlinghurst collecting bread for the first six months of operation. When looking to hire a chef, it was Mike’s tattoo artist that gave the introduction – it certainly is who you know. Thorough market research of cafés and bars in Sydney, Melbourne and as far as Japan, provided the inspiration needed for this project. The Baron was designed on a shoe-string, but you would never know. It is a delightful space with a super cool industrial feel, but without any sense of pretence or intimidation. Fresh, quality ingredients are used to produce simple but fun dishes that are certainly popular with the locals. And the coffee, Single Origin, is served up with a vengeance. whoisthebaron.com
