Producing up to 26 ducks per hour, China Republic is an incredible new addition to Sydney’s Asian food scene. A three-and-a-half metre terracotta warrior stands guard at the doors of the 200-seat (1400 square metre) dining room. 80 members of staff, including 24 full time chefs work around the clock to provide a menu with 75 dishes of fresh, modern and sophisticated Chinese food. Executive Chef Mayson Yu heads up the culinary team. One of the top four chefs in his hometown of Beijing, Chef Mayson relocated his family to Australia when he accepted the role with China Republic.
