1 package cream cheese (full fat) 1/4 cup heavy whipping cream 21/2 tablespoons sour cream (full fat) 3 tablespoons sugar 1/4 cup dark rum FOR THE COFFEE LAYER:

1/2 cup strong coffee 1/2 teaspoon vanilla extract 2 tablespoons sugar

Whip together the cream cheese, whipping cream and sour cream in a medium bowl until well combined. Blend in the 3 tablespoons sugar and vanilla extract. Mix coffee, vanilla and 2 tablespoons sugar in a small bowl. Place small pieces of lady fingers in the bottom of each champagne flute. Drizzle 2 teaspoons of the coffee mixture on top of the lady fingers. Layer in the cream mixture. Add in more lady fingers, coffee mixture, then cream in order ending with the cream at the top of your champagne glass. Sift cocoa powder onto the top of the cream to finish. Serve immediately or refrigerate until ready to use.

Coconut Macaroons Courtesy New England Culinery Institute 1 cup egg whites 2½ cups sugar 2 tablespoons honey 2 tablespoons coconut liqueur 2 teaspoons vanilla extract 15 ounces shredded sweet coconut 1¼ cup all-purpose flour ½ teaspoon salt

Whisk egg whites, sugar, honey, coconut liqueur and vanilla together in a bowl. Put bowl over pan of simmering water, whisk occasionally to heat mixture until warm to touch. Remove from heat, whisk in coconut, flour and salt. Refrigerate until firm. Mold dough into 1-inch balls. Bake in 325 degree oven on parchment-lined cookie sheet until golden brown. Let cool then remove from pan. Drizzle with melted chocolate, if desired.

Whip together eggs, vanilla, coffee liqueur and sugar until very light in volume. Combine flour, baking powder, cinnamon and salt. Fold dry mixture into egg mixture. Stir in nuts and chocolate – mixture may be sticky. Place dough on parchment lined pan, cover with plastic and chill one hour (to ease handling). Form dough into three logs, flouring hands and work surface as needed. Lay logs lengthwise on parchment lined pan. Bake at 325 degrees until logs are firm to the touch/light in color. Cool one to two hours. Use serrated knife to cut log into ½ inch thick slices. Lay slices ½ inch apart on parchment lined pan. Bake in 300 degree oven, 8 to 10 minutes, until light golden brown. Cool and enjoy. Keeps two weeks in a sealed container. Always drink in moderation.

R

ecommending the appropriate wine or spirit to a customer can be a challenging part of running a Vermont liquor agency store. It may be even more so if you don’t happen to sample any of the product. Yet that’s the challenge liquor manager Rhonda Hess faces when she arrives at the Tops Friendly Market in Hardwick each day. Hess doesn’t drink, but you’d be hard pressed to find someone more knowledgeable about wine and spirits in the Northeast Kingdom. “I didn’t know a lot about it when I started,” Hess says. “Now I learn things every day. I’m always learning new things.” How? By leaning on the expertise of the clientele. “I really like learning new things and meeting new people,” she says. “I ask the regulars. Some come in and hang around – they tell you about their day and about what’s going on. They’ll come in and we’ll talk about it, or I’ll look up information and read about it.” It’s a skill Store Manager Doug Judd finds indispensable. Judd has been working in the

grocery business for 27 years, and he’s overseen Hess since the store began selling spirits 2 ½ years ago. She manages the store-withina-store – a portion of the 10,000-square -oot grocery – with the help of five part-timers. “Rhonda’s best skill is her reaction to customers’ needs,” he says. “She can answer any questions that come up and she’s done a great job learning about alcohol for someone who doesn’t drink, which I think is phenomenal. She stays up on new items and does a great job setting up tastings.” Customers often gather at the store to sample the latest offerings from Vermont distillers – most recently Smugglers’ Notch Distillery and Caledonia Spirits, which featured its Barr Hill Gin. (“It’s really good,” Judd says.) When she’s away from the store, Hess enjoys spending time with her two children, 8 and 11, and baking. Pressed for her specialty, the 34-year-old hesitates. But Judd is quick to offer an answer: “Cupcakes,” he says. Regulars at the store range from Hardwick

locals to seasonal visitors. Hardwick is about 45 minutes from Jay Peak and 40 minutes from Stowe – “right in the middle,” Judd describes. And right in the middle of the beauty of the Green Mountain State, which suits outdoorsman Judd just fine. The Caledonia County town of a little more than 3,000 puts the 46-year-old where he prefers to be. “I like to do anything outdoors,” he says. “Especially any kind of deer hunting.” When he’s not exploring the area in his free time or spending time with his wife, Heather, or his 14-year-old niece, he’s minding the store. And, at times, finishing Hess’s sentences. “We work well together because we have the right people in the right place,” he says. “Rhonda makes my job easy. I don’t have to keep a close eye and oversee it all the time. If she has a question, she comes to me and we figure it out. And being a new (liquor sales) facility, we’re still learning.” Which is why Hess, a self-described student of spirits, is a value to Hardwick.

“I asked him what he wanted,” Kenyon says. “He told me, ‘I don’t know – whatever you think.’” That’s when the creative, multitalented mixologist went to work. “It’s this little gin concoction I dubbed ‘The Pig Pen,’” Kenyon says. “Because after he had a few of them he just looked like a bunch of squiggly lines like the Charlie Brown character. Now, any time someone asks me to surprise them or that it’s my choice, it’s my go-to.” As for comparing a customer to a cartoon character – it’s a natural for Kenyon, a writer and an artist whose book, “How to Scare a Monster”, is now available at major retailers. A lover of the macabre and satirical, he’d often engage customers with tales of his literary pursuits, and now cites his chosen profession as part of the reason you can see his name on bookstore shelves. According to this multitalented bartender, one pursuit feeds the other. Leonard Kenyon

here’s a pretty popular song that paints a vivid picture of a tavern populated with colorful bartenders and guests who are wouldbe actors, politicians, musicians and novelists. One of those characters could’ve come straight from behind the bar at Bennington Station. Leonard Kenyon – by day an author and illustrator – spends his evenings behind the stick at the southwestern Vermont restaurant, a historical spot that started its life as a railroad station in 1897. “First of all, the food is really, really great,” Kenyon says of Bennington Station. “Chef Robert Andrew really takes it seriously. He cares

about every plate. It’s actually really sweet to see how much he loves what he’s doing. And the setting – come on – it’s really special.” The exterior is rough finished blue marble, quarried and hand cut in West Rutland, giving it the appearance of granite. The town’s newspaper at the time hailed the building as “the handsomest and most artistic in the state.” It’s in this historic spot, where top-notch fare has replaced rail fare, where Kenyon can often be found, pouring drinks, filling orders and solving problems – like what to serve an indecisive guest. While tending bar one night, a customer came in, sat down and presented him with what he calls “every bartender’s nightmare.”

“It was happenstance, really. I was working in a restaurant in the kitchen and the bartender couldn’t make it one day. There was an event for the Rotary Club, so I got behind the bar. I was nervous because I had never done it before – I didn’t even know how to make a martini. I was open and honest with them, I made a joke out of it, and I told them I had no idea what I was doing. They bossed me around, taught me how to make martinis and Gibsons and gimlets and Old Fashioneds – old fashioned, standard cocktails, and it was so much fun. I used humor as a weapon and a tool that day and I never left. I had so much fun. Of course you learn a bunch along the way, but in a way, those guys were my mentors.”

Share a behind the bar secret. “For me, success stems from the relationships you have with people. I think that was beginning of my success – that first day at that

Rotary Club event, being able to do that with the folks and being able to eat crow and be humble and make jokes about how I didn’t know what I was doing. That’s what works for me. That’s my personal secret. You have to be able to read the folks. “You have to show humility and treat people the way you’d want to be treated. It’s an acting gig. Knowing how to make a good cocktail is important, but in a way it’s about sleight of hand. You have to know how to read them: some want conversation, some want solitude, some want a shrink and some want a standup comedian. You’ve got to know how to sympathize and be empathetic.”

What’s your favorite part of working behind the bar? “I’m from North Bennington but I’ve lived in Oakland and Brooklyn, I’ve played music and done a lot of different things, and quite often the beauty of working in a restaurant or bar is you find that it’s folks’ moonlighting job. You find so many creative people – actors, writers, artists, musicians. It’s an amazing way to earn the same amount of money in a couple evenings that some people earn in a 40-hourweek at job they’re miserable in. It allows me to have the time to pursue my dreams of being an artist and illustrator. I wouldn’t have a book coming out if it wasn’t for the bar.”

nyone who is planning a gathering knows, there’s a lot that goes into planning a successful party – whether it’s a few cocktails over dinner with friends or a full evening of dining and entertainment with a dedicated mixologist. Parties can take a lot of preparation, but the bottom line is this: Don’t let the planning turn an enjoyable occasion into a stressful event. There are ways to prepare that will leave you free to enjoy your guests – and to ensure they head home safely. Here are some suggestions to keep in mind.

Know How Much to Buy Here’s how to determine how much beer, wine or spirits to purchase: • Determine the number of guests that will be attending. Take that number and multiply it by the number of hours the party will last. This determines the number of servings. For example, a party of 20 people lasting three hours would require about 60 servings.

If you expect fewer than 20 guests, you may be able to act as host and spend time with visitors. With more than 25 guests, however, it may be time to think about hiring or designating a dedicated bartender – someone who can meet guests’ needs while watching out for the safety of everyone in attendance.

Know when it’s time to roll up your sleeves and when to rely on convenience. • Consider pre-mixed cocktails. Prepare them ahead of time in a pitcher, ready to serve, and

you’ll save time at the bar. Be sure to have plenty of ice on-hand to chill drinks. • A ‘do it yourself’ bar can give your guests a chance to get creative. Set out the necessary elements ahead of time: glasses, ice, a selection of mixers and an assortment of spirits.

Be a Responsible Host Part of your responsibility as a host is not only entertaining guests, but ensuring they have a safe night. • Know who’s driving. Make sure designated drivers have plenty of non-alcoholic drinks. Encourage guests to carpool with a designated driver and have a list of taxis available or assist guests with a car sharing app like Uber or Lyft. If someone doesn’t have a way home, offer to let them stay the night. • Serve more than finger food. Offer your guests food such as cheese, nuts and meat, which slow the alcohol’s absorption rate. • Offer plenty of non-alcoholic options. Serve alternative beverages such as virgin cocktails, juice, soda and water. • Obey the law. Check I.D. on anyone you don’t know at your gathering. Never serve alcohol to anyone who’s under 21 or already intoxicated. • Designate a bartender. Choose someone who can mix drinks with proper proportions and keep an eye on guests. Know the signs of impairment, which can include a lack of coordination, aggressive behavior, being talkative or indifferent, and exhibiting slurred or incoherent speech. • Wind things down. Jim Beam Bourbon Milk Punch

2 ounces Jim Beam Original 2 ounces whole milk 1 ounce half-and-half 1 teaspoon superfine sugar 1/4 teaspoon vanilla extract 1/4 teaspoon grated nutmeg 1 Cinnamon stick (optional)

In a shaker half-filled with ice cubes, combine the bourbon, milk, half-and-half, sugar, and vanilla extract. Shake well. Strain into a highball glass and garnish with the nutmeg and cinnamon stick.

Pinnacle Whipped Hot Cocoa

2 ounces Pinnacle Whipped Vodka 5 ounces hot chocolate Mix ingredients and serve in a mug. Garnish with whipped cream and chocolate shavings.

Crushed Purple Rain 6 blackberries 11/2 ounces vodka 1 ounce blue curacao 1 ounce cranberry juice 1 ounce pineapple juice Crushed ice Fresh lime juice

Muddle three or four blackberries in a drink shaker. Fill shaker half way with crushed ice. Add vodka, blue curacao, cranberry juice and pineapple juice. Shake well until mixed. Rémy Martin® Side Car 11/2 ounces Rémy Martin® V.S.O.P Cognac 1 ounce Cointreau® 1/2 ounce fresh lemon Juice

Combine all ingredients in an ice-filled shaker. Shake and strain. Garnish with twist of lemon. Serve in martini glass and sugar rim if desired.
