Killington Distillery has the Perfect Formula for Success

Co-owners Caroline Wise and Jack Wise blend customer feedback and creativity to make quality spirits

This is a pretty exciting time for Killington Distillery co-owner Caroline Wise. Not only is her spirits, restaurant and hotel business taking off, she was also just a week away from welcoming her first child, a baby girl, in early November.

She and her dad, Jack Wise, who is her business partner and co-owns the distillery, are very proud of everything they have achieved within the Killington Ski Resort village in a very short time. They purchased the business in 2019 and opened in August 2020.

Killington is like a second home to them. “We absolutely love being in Vermont. We have a home there and a house down here,” said Caroline.

Caroline said she and her partner, Sydney Atkins, were expecting their first child on Nov. 10. They haven’t decided on any names yet. “We are going to wait until we meet her.” Caroline and Sydney have been married for two years.

Together with Head Distiller Ryan Bremser of New York State, this father and daughter-led team have created an impressive line of spirits that rival any of the products made by the fellow Vermont craft distilleries.

Chief among them are: the Maple Cask Bourbon, which is blended with locally harvested maple syrup and barreled; their VTQuila Blanco, an agave spirit made with 100 percent blue agave nectar; their Woodland Gin, which has notes of spruce tips, citrus and juniper; and their limited

4241 Blended Whiskey Series.

When their patrons sample this limited series in particular, Jack said they are usually blown away because they experience something they really could not anticipate.

The whiskey series is different each time, Jack explained. They just released blend number 6 which is comprised of two sourced 3.5-year-old bourbon whiskeys, a sourced 3.5-year-old rye whiskey and a 5-month-old American single malt distilled in house. They produce anywhere from 250 to 300 bottles for each series and it is only available at the distillery.

“There are a number of aging barrels and some are starting to yield good flavors,” Jack said.

product is something that is the most honest reaction you get.”

Usually, their body language and that sensation of surprise before they experience the wow factor happens before the smiles appear on their faces, Jack said. At that moment, their patrons realize they have discovered something very special, indeed.

Caroline also enjoys seeing couples or a group friends delight in sampling a tasting plate in the Still of the Mountain restaurant adjacent to the distillery. Initially they may say they are not big fans of bourbon, but after they sample Killington Distillery’s Maple Cask Bourbon they love it.

Caroline explained that all three of their businesses: the Killington Distillery, The Mountain Inn, which has 49 rooms, and the Still of the Mountain restaurant, work in tandem to provide their guests with the best hospitality when they are through skiing or mountain biking and golfing in the summer and fall. Jack pointed out another thing that makes their distillery unique.

“Within New England, we are the first to operate a hotel and distillery,” he said.

Caroline enjoyed a successful eightyear career as an events and experience manager with a high-tech firm that catered

to the hospitality industry. Jack has been in the real estate development business for more than 20 years and developed many hotel projects in New England.

They spent many weekends skiing at Killington from the time Caroline was a little girl. She said that she and her father always wanted to go into business together. Three years ago, they saw the property, which was a hotel and closed restaurant. Neither one of them had much experience in the distillery industry, but shared a keen interest in the craft.

“I have a longstanding interest in it that developed over the years and we were looking for the right fit and this was the right fit working with Caroline,” Jack said.

“Killington has always been great experience for us,” Caroline added. “It wasn’t a huge pivot for me.”

Jack and Caroline spent about 80 percent of their weeks working at the distillery so they can be as involved in the day-to-day operation as possible.

Regardless of the season, Jack and Caroline say they have a good complement of patrons who come to the distillery to sample their spirits.

with great brand exposure. While the winter ski season is the busiest time of year with summer running a close second, spring and fall are busier on the mountain than in the past.

“Vermont is becoming known as a fourseason community,” Jack said. He believes the growing popularity of mountain biking has a great deal to do with that. “It has been building year after year for the past 10 years.”

Caroline said Killington has one of the best downhill bike parks in the East Coast.

At the Killington Distillery, Caroline said hotel guests can enjoy a full Vermont experience that is accompanied by their spirits, restaurant fare and hospitality.

Caroline said many of their guests will head out and enjoy outdoor activities like skiing in the winter or golf and hiking the rest of the year. When they return to The Mountain Inn, they can enjoy great food and spirits at the Still of the Mountain restaurant. They can learn more about the distillery at the bar. Their guests can also take their favorite cocktails to the outdoor pool that is heated at a comfortable 100 degrees during the height of ski season. “In the winter it is a really nice experience especially with a great cocktail,” she added.

Caroline said that three of their spirits: the Maple Cask Bourbon, Woodland Gin and their Vodka; are currently sold in

Vermont agency stores.

Caroline said they want to make sure that every time one of the patrons or hotel guests experiences their spirits, they will make a positive impression. “Every time you get a bottle either at our distillery or at an Airbnb or at home, you have the ability to relax and enjoy a cocktail made with that spirit and create an experience.”

Jack believes achieving that goal is the end result of the extensive distilling process that he and Ryan undertake. Like their fellow Vermont craft distillers, Jack said they never stop thinking about how they create a new blended whiskey or

how they can improve their products. This dedication to their craft and putting a premium on quality over quantity makes all the difference.

“We are working on a blue agave Vodka right now,” Jack said.

Jack recalled that after they purchased the property in 2019, they conducted extensive renovations to build the distillery. “We took the whole western end of the building off and rebuilt it as the distillery production area,” Jack said.

He said he and Ryan added new stills and selected custom distillery equipment to create the types of spirits - original whiskey, bourbon, tequila and blended whiskeys - they offer. They also made sure they had ample room to store enough barrels to age their spirits properly. “We had to go through a major process to allow the stills and fermenters in there,” Jack said.

With an eye toward the future, Jack said they hope to expand their distillery operations. “Our hope is to expand the distillery in Killington with a separate

location to produce more single malts and bourbon at that location and do the gins, vodkas and clearer spirits at their current facility,” Jack said.

When asked what it will take for Killington Distillery to enjoy continued success in Vermont’s craft distillery market, Jack summed it up this way:

“The product, the experience when people come in and taste it and blending the three is really exciting. To keep it moving, it’s always changing just like Killington is always changing. By changing and growing with environment, it will work well.”

Caroline said they will continue to solicit their customers’ input as much as possible to help guide their business. “Listening to our customers and knowing what they want to drink and what they enjoy” is always a key ingredient to making the perfect spirits.

Now that the holidays are behind us, winter fun in Vermont is just beginning! The Green Mountain State has so much to offer for everyone from skiers and snowmobilers to those who just want to get outdoors and chase away the winter blahs.

Here are some fun things to do this winter and some great winter cocktails to warm you up when you come off the trail or slopes, to make any Vermont winter getaway even more enjoyable.

Fat Biking in the Snow

Thanks to fat bikes, mountain-biking enthusiasts no longer have to put away their two-wheelers come fall. Kingdom Trails in East Burke offers 31-plus miles of snowmobile groomed trails to make for a great deal of fat biking through the Vermont woods. Hot cider and bourbon is a great choice to warm up after conquering these Northeast Kingdom trail networks.

Hot Spiced Cider with Maple Bourbon

This spirit combines the tasty ingredients of cider, nutmeg, cloves and cinnamon, heating them up with maple bourbon whiskey.

2 cups apple cider

¼ teaspoon whole cloves

1/8 teaspoon ground nutmeg

1 cinnamon stick

2½ ounces Maple Bourbon Whiskey

Add everything but the bourbon to a saucepan and let it come to a boil. Simmer uncovered for 10 minutes.

Strain the cider through a sieve to remove the spices.

Add the bourbon and stir.

Glow Tubing Anyone?

Snowtubing is a must for those who want to experience the thrill of coasting down a snow-covered hill. But how cool would that be if you could do it at night and tube past a dazzling array of LED lights? At Smugglers’ Notch, glow tubing is offered at Sir Henry Hill. After making several runs, a hot spirit is certainly in order back at the lodge.

Maple Rum Irish Coffee

A Maple Rum Irish Coffee that uses Vermont maple rum instead of traditional Irish Whiskey to go with a tablespoon of maple syrup is sweet, toasty and provides some caffeine, so you can enjoy more of your winter evening.

1 cup hot coffee

1½ ounces Maple Rum

1 tbsp. maple syrup

Heavy cream, slightly whipped Brew your favorite coffee, the bolder the better.

Add rum, coffee and syrup to a cup. Top with about an inch of whipped cream.

Outdoor Swimming and Hot Tubs Galore!

Many of Vermont’s hotels and inns sport outdoor heated pools and hot tubs that allow their guests to go for a swim or enjoy a relaxing moment as they enjoy winter in Vermont beneath clear, starlit skies. Only the frigid Vermont air can interrupt this warm oasis after a soak. A maple hot toddy will counteract any sudden chill you may experience.

< Maple Hot Toddy 1 cup boiling water 4 whole cloves 1 slice of lemon 2 teaspoons maple syrup 2 ounces maple bourbon ¼ ounce lemon juice

Prepare a lemon twist by sticking 4 cloves into it.

Pour one fresh cup of boiling water into a cup.

Add maple syrup and stir to dissolve.

Add the lemon twist and stir.

Add the lemon juice and bourbon, stir once more.

Dog Sledding Is for Everyone

4 ounces fresh-squeezed grapefruit juice

2 ounces gin

1 tsp. birch syrup (you can replace with simple syrup)

Pink Himalayan or sea salt for rim

Cut a wedge from your grapefruit and run it along the edge of a martini glass. Dip glass in sea salt. Fill a cocktail shaker halfway with ice and add grapefruit juice, gin and birch syrup. Shake well. Strain into prepared martini glass.

Let’s Go on an Old-Fashioned Sleigh Ride

Few things bring people closer to a traditional Vermont winter experience than going on a sleigh ride through the woods. At Adams Family Farms, they have been taking families and couples for sleigh rides with their team of Belgian

Vermont Sleigh Ride Cocktail

7 cups whole milk

½ cup maple syrup

1 whole clove

1 cinnamon stick

1 bay leaf

1 pinch nutmeg

1 pinch ground ginger

6 ounces rye whiskey

Maple syrup and raw sugar, for garnish

In a pot, heat the milk, maple syrup, clove, cinnamon stick, bay leaf, nutmeg, ginger and rye until steamy but not boiling.

Pour into mugs, garnish with maple syrup and raw sugar, and serve warm.

Vermont’s Largest Ice Skating Rink

Ice skating is a great option for those who love to glide on man-made rinks. But, if you want to be immersed in the beauty of Vermont, try skating on Lake Morey in Fairlee. The 4.3-mile loop is one of the longest skate trails in the United States and yields panoramic views of winter. There is only one après ice skating cocktail for hearty skaters.

Hot Chocolate with Peppermint Schnapps >

1 cup of milk

2 scoops organic hot chocolate

1½ ounces peppermint schnapps

Add milk and cocoa powder to a saucepan and heat until just under a boil. Pour cocoa into your favorite mug or Hydro Flask and add the schnapps.

Always drink in moderation.

Bourbon Cider

Ingredients:

1 part Maker's Mark Bourbon

1–3 tablespoons sugar, to taste

2 dashes Angostura Bitters

3 parts dry hard cider

Garnish: Cherry and orange peel

In a champagne glass, stir together the sugar and the bitters until the sugar dissolves. Add Maker's Mark. Top with cold cider. Garnish with a cherry and an orange peel.

1800 Café Cristalino

Ingredients:

1½ ounces 1800 Cristalino Tequila

1 ounce espresso or bold cold brew coffee

1 ounce coffee liquor

1 teaspoon vanilla syrup

Garnish: Coffee beans and orange twist

Add all ingredients in a shaker. Shake with ice, strain and garnish with three coffee beans and an orange twist.

Snowfall Spritz

Ingredients:

1 ounce Grainger’s Deluxe Organic Vodka

1 ounce St. Elder Natural Elderflower Liqueur

1 ounce pomegranate juice

4 ounces sparkling wine

Combine all ingredients and serve over ice in a wine glass.

Kraken Hazelnut Coffee

Ingredients:

2 ounces Kraken Black Spiced Rum 94 proof

8 ounces hot coffee

1 ounce hazelnut liquor

Garnish: Whipped Cream

Add all ingredients and stir. Garnish with whipped cream.

Bushmills on the Rocks

Ingredients:

1 ounce Bushmills Original Whiskey 3 ounces ice cubes

Espresso Martini

Ingredients:

2 ounces Tito’s Handmade Vodka

1 ounce coffee liqueur

1 ounce espresso

½ ounce simple syrup

½ ounce creamer, optional

Garnish: 3 espresso beans

Add all ingredients to a shaker with ice. Shake and strain into a martini glass. Garnish with espresso beans.

Fireball Mule Rummosa

Ingredients:

1 part Fireball Whisky

2 parts ginger beer

Splash of pineapple juice

Splash of fresh lime juice

Combine all ingredients over ice in a copper mug and enjoy.

Ingredients:

1 ounce St. Johnsbury Dunc’s Elderflower Rum ½ ounce cranberry juice

3 ounces Prosecco

Garnish: Cranberries and lemon peel

Mix ingredients together in a wine glass. Garnish with cranberries and lemon peel.

Maple Old -Fashioned

Ingredients:

2 ounces WhistlePig PiggyBack 100% Rye Whiskey

¼ ounce WhistlePig Barrel Aged Maple Syrup

3-5 dashes of your favorite bitters

Garnish: Fresh orange peel

Combine all ingredients in a rocks glass over ice, and garnish with a fresh orange peel.

Hendrick’s Cranberry Fizz

Ingredients:

1 part Hendrick’s Gin

2 parts cranberry juice

1 part sparkling wine

Garnish: Cucumber slices, mint sprig and cranberries

Combine all ingredients in a highball glass filled with cubed ice and lightly stir. Garnish with cucumber slices, mint sprig and cranberries.

Maple Old -Fashioned

Ingredients:

2 parts Knob Creek Smoked Maple Bourbon 2–3 dashes of bitters

Small pinch of raw sugar Splash of club soda

Garnish: Orange slice and cherry

In a rocks glass, muddle the sugar and bitters. Add ice to the glass and pour bourbon over it. Top with a splash of club soda, then garnish with the cherry and orange slice.

Hot & Stormy 14

Ingredients:

2 dashes Fee Brothers Aztec Chocolate Bitters

¾ ounce Woods Cider Mill Boiled Cider

½ ounce Fresh Squeezed Lemon Juice

2 ounces No. 14 Bourbon

1½ ounces hot water or hot black tea

Garnish: Orange peel and a cinnamon stick

Heat your water or black tea to a nice simmer. Add cider, lemon juice, and No. 14 Bourbon. Swirl until ingredients blend. Serve in a preheated snifter with orange peel and a cinnamon stick.
