Home is our sanctuary

T

his year should be called ‘The Year of the Home’. The year we cleaned up, cleared out, rearranged, painted, paved, planted and redecorated. The year our home became our office, gym, restaurant, school, day care, cinema and art studio. The year we bunkered down at home to help prevent the spread of COVID-19. For many of us it was the year we learned something new or fixed something old, like Lisa Kerr who is featured on our front page. Over the past few months, while at home under Victorian COVID-19 restrictions, Lisa has been revamping old furniture – one piece at a time. Lisa shares what she has learned on pages 34 and 35. Other homeowners spent their lockdown in the garden, like Kialla’s Lea Watts. With her garden still a work in progress, the self-professed ‘greenie’ has turned an empty block of land covered in noxious Paterson’s curse into a colourful, rejuvenated garden that will inspire any gardener. PHOTOGRAPHS Large photographs are popular in many homes at the moment. Close-ups of flowers and plants are especially on trend.

MAKE A STATEMENT With big walls the norm in many homes these days, people can make a statement with large artworks to fill that space. A single piece of artwork that is as big as two metres high by two metres wide really stands out in a room. “It’s dramatic. There are some walls you can’t have an insignificant piece of artwork on,” Paula said. “You have to have a proportionate sized piece (for the space).” It also gives you a mood for the room, with owners able to pull colours out of the art to influence the colours of other elements of the room, including the colour of couches, dining chairs or even the colour of linen in a bedroom.

ABSTRACT A piece of art with bright, bold colours really draws interest as people enter the room. It creates a focal point. Bold colours also bring a great attitude to a room. And with abstracts, everyone can find a piece they like.

Redecorating is A COVID trend

W

ith so many people spending more time at home in recent months because of COVID–19, it has become the perfect time for redecorating. According to Walls and Windows owner Paula Dohrman, improving homes because of coronavirus was “literally a trend” at the moment. And with travel looking to be restricted for a while yet, Paula said people were putting more time into their own homes than ever before. “Everyone is saying let’s not mope, let’s have a real crack (at changing things at home),” she said. “Everyone is cleaning up and doing prettiness. “They are saying let’s try and elevate ourselves as much as we can.” Picking up a paintbrush and painting bedrooms, staining outside decking and even changing window coverings were high on people’s to-do lists as they found themselves spending more time at home. “They are not going away on holidays, so with this time they are making their homes beautiful,” Paula said. According to Paula, putting a new coat of paint on the walls in a different colour was the cheapest way of renovating. “It’s a really good way to freshen things up,” she said. If people did not want to attempt such a big job in their homes, even doing little things such as adding cushions, fake flowers or real plants to their home could change things up, Paula said. “Even a cushion is making people feel better,” she said. “And greenery makes them feel good.”

HOMEBUILDER KEEPS CONSTRUCTION INDUSTRY ALIVE

O

n June 4, the Federal Government announced a time-limited scheme that gives eligible owner-occupiers a $25,000 grant to build a new home or to substantially renovate an existing home. The measure is aimed at supporting jobs in residential construction amid the economic fallout from the COVID-19 pandemic. It is not limited to first-home buyers, nor is there a limit to how many people can get HomeBuilder; however, applications need to be made between now and the end of the year. For more information, visit: treasury. gov.au/coronavirus/homebuilder To be eligible for the HomeBuilder grant you must: • Be an Australian citizen. • Be a person, not a company or trust. • Be aged 18 years or older. • Earn less than $125,000 a year for singles or $200,000 a year for couples based on 2018-19 or later tax returns. • Enter into a building contract between June 4 and December 31, 2020 to either: • Build a new home, where property value (house and land) does not exceed $750,000; or • Substantially renovate your existing home, where the contract is between $150,000 and $750,000, and where the existing property value does not exceed $1.5 million. Construction must begin within six months of the contract date.

hen the Federal Government announced its HomeBuilder grant for owner-occupiers, it created a housing boom in Greater Shepparton and all around Australia. Vacant blocks in Shepparton and surrounding areas were snapped up quickly. Our Home caught up with Tatura’s Beth Seccull, 20, who seized the opportunity when the funding was announced and is about to become a homeowner. A

t just 20 years old and having worked since leaving secondary school, Tatura’s Beth Seccull was in the market to buy her first home. But when she read about the Federal Government’s HomeBuilder grant in the paper, suddenly building her own home became the more attractive option. Beth, who has worked in childcare at Tatura Children’s Centre for the past four years, was looking to buy a house in Tatura close to where she works. “I put a few offers in for houses in Tatura that weren’t accepted, then I read in the paper that they brought out the HomeBuilder grant to boost the economy, and that’s what made my decision to build,” she said. With the new HomeBuilder grant, which provides $25,000 to help build a new home, plus the $20,000 First Home Owners Grant, Beth had an extra $45,000 in her pocket, not to mention waived stamp duty for properties valued up to $600,000. But the next step wasn’t as simple as she thought. “I wanted to build in Tat, but there were no blocks available,” she said.

Since the HomeBuilder grant was announced, vacant blocks of land in Greater Shepparton have been snapped up in a flash, creating a highly competitive market where many have missed out, according to Sessions Builders. For Beth, who is taking on the whole project by herself, it meant seizing an opportunity to buy land in Kialla instead. “I put my name on a piece of already titled land in the developed area of Sanctuary Dve.” She is building a “three-bedroom, one lounge room basic first home”. With the plans already with the drafts people, Beth hoped the build would start in a month, finishing up in April or May next year. “I probably wouldn’t have done it if I hadn’t had the grant because I wouldn’t have had the money,” she said. “Plus for resale value, new houses sell better.” Beth said Tim Sessions from Sessions Builders had been amazing in helping her find the block, with support from her bank manager and family as well.

S

ince the HomeBuilder grant was announced in June, there has been an “explosion” of land getting snatched up across Greater Shepparton by prospective home builders looking to take advantage of a once-in-a-lifetime opportunity. While almost all agree it’s good for the economy, the buying frenzy has resulted in a serious shortage of blocks to build on, hitting younger people looking to build their first home the hardest. And with the December 31 HomeBuilder deadline looming ever closer, many people looking to buy land and homes will miss out on having $25,000 extra in their pockets. Development Edge director Peter Mintern said people in Greater Shepparton had their fingers on the pulse the moment HomeBuilder was announced. “We saw an explosion of people grabbing up land,” Mr Mintern said. “The take-up rate has been extremely high in Shepparton, partly because $25,000 is significant in comparison to the affordable blocks of land here. “The grant has been an incentive to get into the market, so I think it’s really tipped the scale.” While Mr Mintern stressed it was a great incentive, bringing much-needed money into the economy, he said the market hadn’t sustained the supply. “For example, we’ve got titled blocks available next to St Luke’s (Catholic Primary School), but we’re running out of lots there fast,” he said. Sessions Builders director and site supervisor Clayton Sessions said a majority of its available land was snapped up quickly after the announcement. “You’re up 25 grand, so people were grabbing up blocks to beat others,” Mr Sessions said. “It was only about two or three weeks in that people started realising they’d missed out.” But there’s still good news for those looking to use HomeBuilder. Sessions Builders sales manager Rocco Iaria believes there will be “a lot” of titled land ready to be built on before Christmas, with additional blocks becoming available in January and February next year. “There’s still time before the deadline, but we’re hoping the federal budget will extend this grant so people don’t miss out,” he said. “People have become increasingly more frustrated they can’t get a house and land package because of the lack of titled land. “I had three young couples recently desperately trying to find land, but there’s nothing titled within their price range.” Mr Iaria said people who were already established in the housing market, including those in their 60s, had been quick to buy the land and make use of the grant. “They’re lucky because they’re established — those looking to get into the market now will struggle,” he said. Mr Iaria said if you were borderline just able to get into the housing market, but there was no land, you should instead consider waiting and saving money instead. “There’ll be plenty of options soon,” he said.

t was pure luck Shepparton’s Nathan Kyriakou called Sessions Builders when he did, because he managed to get his hands on the last piece of suitable land they had. If it wasn’t for this serendipitous timing, Nathan wouldn’t have been able to take advantage of the HomeBuilder grant fulfilling his dream of building a house — something he’s been saving for the past four years. At the young age of 21, Nathan works as a production manager in his family’s pallet business, K&S Pallets. “I’ve been saving since I was 17 to build my first house, but since the $25,000 HomeBuilder came into the picture, it was pretty much a no-brainer,” he said. “I probably wouldn’t have started the build now without that.” When Nathan heard about the grant, he quickly called Rocco Iaria from Sessions Builders. “Luckily I rang Rocco when I did, because this was the last block of land available, otherwise I would’ve had to wait until next time,” he said. “They couldn’t have made it more easy for me, they’ve been phenomenal.” In addition to the $25,000 HomeBuilder grant, Nathan will be making use of the $20,000 First Home Owner Grant. And because he has already saved up a 20 per cent deposit, there will be no stamp duty or mortgage lender’s insurance fee. Nathan is building his four — bedroom brick house in North Shepparton as an investment rental property. “Hopefully the rental will provide the $20,000 deposit for my dream home in Shepparton eventually,” he said. Nathan is hoping to get the concrete slab poured before Christmas, when the builders go on break, but said the banks were “flat out” with people buying properties, so it was taking a while to get the necessary approvals. Rocco said there would still be titled land available before the December 31 HomeBuilder deadline, but many people would miss out due to shortages of titled land within their price range or desired area.

W

hen Lea Watts devotes her spare time to working in her garden it would be fair to say she might sometimes experience a sense of déjà vu. That’s because the evolving Kialla garden has been a work in progress for this self-professed “greenie”, not once, but twice. Lea built her elevated-style home in 2002 and nurtured her garden from a bare block of land that was originally covered in noxious Paterson’s curse as tall as she was. Fast forward to 2010, and the home was surrounded by established trees and gardens, and myriad native birds, small reptiles and insects had also taken up residence. But it wasn’t to last. A move to the Northern Territory, which lasted seven years, and leaving renters in her home,

saw Lea return in 2017 to a garden that more resembled the desert she had seen on her travels. “I had to start the garden again, but there were a few trees that had established themselves and managed to survive, so at least I had something to start with,” Lea said. A stately gum tree, olive trees, a few citrus and bottlebrush were still growing in the backyard and a native frangipani and silver birch trees in the front yard became the foundation of the rejuvenated garden. Now there are garden beds dedicated to different plants, a rose garden here, irises there and cacti and succulents in another well-mulched section. Pathways of decorative rock and stepping stone pavers have a twofold effect — they create an inviting walkway to meander around and

enjoy the garden as well as suppress the ever-present weeds. “I don’t use spray at all, I pull all weeds by hand, so the paths make the garden less labour intensive for me,” Lea said. Battling the heavy clay soils has been an ongoing challenge but with the addition of compost Lea is slowly seeing the garden return to life. “Once the sun hits this clay soil it turns to concrete, I usually garden with a crowbar in the summer,” Lea said. “I’m just working to get some height into the garden with the natives, so I can create pockets of shade to protect the exotic and more delicate plants.” Blending the two gives Lea the best of both worlds. “I know the value of natives for the wildlife, but many exotics flower for a short time, so you look forward to them, they’re like a little gift,” Lea said.

While her garden was never designed to be “neat and prim”, it was planned to be water-wise and productive. “The way I see it, you have this big block of land, so you should do something productive with it,” Lea said. Vegetables, herbs and fruit trees are flourishing, but it’s not just for her own benefit where Lea sees the value in productivity. “I have rocks in the garden out the front and I have little lizards coming into the garden again now, and when I cut things down, I leave little bits and pieces for the animals and insects,” Lea said. “They all help to make the soil healthy. We all live in the one world, from the little critters to the big critters.”

Water Saving Tips We may have experienced more rainfall this year, but that’s no reason to become complacent about prudent water use. Goulburn Valley Water manager planning and climate resilience Regan Flanagan offers the following tips to make every drop of water you use in the garden this spring count. • Change the frequency settings on automatic sprinklers in line with rainfall and if there’s rain forecast, turn them off entirely. • Water lawns or gardens before 10 am or after 6 pm to reduce evaporation, and remember longer and less frequent waterings will encourage more drought-tolerant root systems. • The application of a good, chunky mulch on garden beds can significantly reduce evaporation. • Create planting zones of plants with similar water needs to ensure you’re only watering plants that need it. • If you’re looking to refresh your garden, choose drought-tolerant plants and flowering options suited to the Goulburn Valley climate such as the desert rose, native fuchsia, blue hibiscus or the many varieties of bottlebrush. • Check taps and fittings for leaks, one dripping tap can waste about 10,000 litres a year. his year’s Sustainable House Day — which usually allows guests to visit chosen homes and see first-hand the use of solar power, home batteries, off-grid living, innovative building materials and design—was instead streamed across Australia via Zoom due to COVID-19 restrictions. Lisa Booth, who along with her husband, Stephen, built the home they affectionally call “Beaver House” four years ago, said it was a dream to take part in the event despite the strange circumstances. “It was really great because people weren’t geographically bound this year,” she said. “There’s been a lot of feedback from people saying what an incredible opportunity it was to drop in and out of homes all over Australia. “And all of the technology worked great on the day, so that was a win.” Lisa and Stephen’s eco-friendly dream home is passively designed and

T

roy Firebrace was heading down the safe academic avenue, with physiotherapy as the game plan. But it didn’t take him long to realise the work he was doing simply didn’t work for him. Amazingly, it would take a tip from his maths teacher to make him realise his future was a blank canvas and he was responsible for his own destiny. Something the young Yorta Yorta painter already knew deep down; he just needed a little push in the right direction to unlock his real passion. Art. “My maths teacher said you’re best to do something you enjoy doing,

and I enjoyed art, so that was an easy subject to choose for Year 12,” Troy said. “I stuck with that as a foundation, which ended up getting me across the line.” It would do more than that, it would also give the aspiring artist the confidence to take traditional indigenous art and add his own 21st-century interpretation — with healthy splashes of vibrant colour. Yes, it was a big step away from the earthen colours that comprise the traditional palette, but his respect of his heritage always figures in the designs and stories of his works.

To the extent the brush has evolved into an extension of himself, allowing his creativity to flow effortlessly across his canvases as he captures the stories of his people. In the brilliant colours he uses to highlight his own stories. “One thing about Aboriginal art that had always struck me was the fact there are a lot of earthy tones — but not a lot of bright colours,” he said. “I liked the aspect of Aboriginal art, but I wanted to see it better reflect the times and my own style — that was when I started exploring the avenues of using vibrant colours instead of the traditional ones.”

Describing his work as contemporary Aboriginal art, Troy has identified his progression as reaching a freer plane, distanced from conformity. “My art is getting more and more into using abstract characteristics — I’m not using a lot of figures like I did originally,” he said. “I am experimenting more with shapes and representations of trees and branches, using form in a way that references sound and movement.” Troy’s connection to the country around him plays a big part in his work; in that context he retains that sense of artistic tradition.


“A lot of my concepts stem from the country,” he said. “A symbol of where I grew up in Shepparton and around the Murray is the red gum tree. “The tree roots come off the high bank into the water; they twist and turn and there is never really a straight path. You can’t really predict where it goes — it does its own thing. “Another example, it is not just looking at the way the river is shaped, but also listening to how it sounds, how it moves around your body when you’re swimming, and the strength of the current. “Regardless of whether it is a town or a city, we live in a very urbanised world — where that concrete today lies is where gum trees used to be. “My message is to experience the country in a way that is not generic. Not just looking and feeling but also ‘being’ a part of it.” But while that underpins Troy’s art, it doesn’t limit or define him — there are real people that influence Troy. People who have achieved great things near and far, who break stereotypes of their own and whose motifs align with Troy’s beliefs and stylistic standpoints.

“When I was at uni I really took to Jackson Pollock and how he conveyed his emotions through his brushwork,” he said. “I really love the concept of expressing who you are and how you feel during a period of time onto a canvas. “That is a big thing with me and my artwork; not only expressing who I am as an individual, but also expressing my identity as an Aboriginal man.” As well as taking inspiration from the abstract expressionist Pollock, Troy has also been enamoured with street artist Banksy — because of his mysterious origins and noble motives. However, it is the work of compatriots making waves on our own doorstep that stokes Troy’s deepest fires. “What inspires me the most is the indigenous art scene in Shepparton,” he said. “Tammy Atkinson, Eric Brown, Dylan Charles; these young and emerging artists are all inspirational to me because it shows our art is still alive and well in any generation. “Seeing them just makes me want to work harder to help inspire the next

generation. They are bringing new flavours that I have never seen before, which is amazing.” Trusting the process and being able to witness his message have a ripple effect across the community is an opportunity he has taken — and will keep pursuing. “I see every single one of my artworks in the studio, and then they are gone, into people’s homes.

urrounded by farmland and with captivating views to the Dookie hills, the owners of this lifestyle property have expanded their living space with their interpretation of a rustic farm house. Andrew Lyle and Tim Young started planning the doublestorey extension several years ago and the result is a striking architectural construction of red bricks, corrugated galvanised steel and Corten, a weathering steel that will age naturally to a burnt orange tone. Shepparton’s Glenn Dempsey Builders brought the couple’s vision to life by blending the new structure with the original single-level pine log cabin. “We discussed the design for a while, we wanted to create more space and get the most out of the existing house,” Andrew said. The sloping site added to the complexity of the build; if the extension followed the same roofline, it would have created an underfloor space that was virtually unusable, due to the low ceiling height. “How to make it work was one of the biggest challenges,” Andrew said. Thinking outside the square, the design brief evolved to a doublestorey wing with space for a practical four-car garage and office downstairs and expansive lounge area, master bedroom suite with an ensuite and walk-in robe upstairs. Six internal steps, crafted from polished spotted gum, link the old with the new, and the clean lines of the sleek flooring, raked ceiling and square set cornice on the upper level contribute elements of style to the space. A faux-stone feature wall and fireplace anchors the lounge area and coupled with the rich leather Chesterfield furniture and aviation-themed ceiling fans and quirky light fittings, adds warmth and texture. “I couldn’t really describe our design style, we just like what we like,” Andrew said. A mix of boldly patterned light fittings, wall art and ceramics collected on the couple’s overseas trips inject colour and add character, but the heroes of the room are the panoramic views. Andrew said it was important to maintain a connection with the land, and the use of large fixed pane windows underscored the commitment to experiencing nature Story continued on page 31.

From inside, the expanses of glass give the illusion of being in an adult version of a treehouse, with views across the tree tops and front row seats to starlit nights, or when the storm clouds roll in. Envisage Furniture in Shepparton was commissioned to create the customtimber bed and upholstered chair in the master bedroom, but in keeping with their own eclectic style Andrew and Tim have repurposed outdoor concrete stools for bedside tables. A semi-industrial feel in the ensuite is achieved with a freestanding terrazzo bath, stone vanity basins, travertine wall tiles and single-globe and metal light fittings.

The outdoor finishes are slightly unconventional and Andrew said they were all chosen to fit with the plan to make the home low maintenance and to help it blend in with the natural surroundings. Corten steel under the eaves and on the gables, along with the galvanised cladding, eliminates the need for regular painting. “And we love the character and life of the gal as it ages,” Andrew said. Forgoing traditional timber decking in favour of galvanised steel slats has created an outdoor space—complete with a concrete and aged-metal dining setting and chiminea—that will stand the test of time and offers views to the evolving gardens below.

A rustic entertaining area also has majestic views over farmland, and the concrete and metal outdoor setting blends with the materials used on the exterior of the home.

hepparton’s Lisa Kerr has a knack for revamping old furniture. From chairs, dining and coffee tables to baby change tables and fences, Lisa is saving one haggard piece of furniture at a time. And thanks to COVID-19 giving her more time to do what she loves, she has become an accidental expert. “I wouldn’t recommend it, but I started with a full kitchen,” Lisa said with a laugh. “I bought this kitchen that was being pulled out of a home that was being demoed. “I painted it all white and it took for ever, it was super tedious and super time consuming. “I was working on it in the shed in the middle of freezing cold nights in winter, but once I started, I saw the progress and it got easier from there.” Lisa said she was always looking for people selling furniture. “I often see people reselling furniture which has been half sanded

back because life has got in the way or other projects have popped up,” Lisa said. “I have been really lucky my dad is really handy, and I have some mates who have given me tips and tricks. “I revamped a desk from the 1920s and it’s just amazing to see these historic pieces given a new life.” Trawling through magazines and online websites inspired Lisa to transform the furniture with a provincial and Hamptons style look. “I am quite organised, and I think you have to be,” Lisa said. “I created an inspiration board and my ideas really stem from that.” Not only is Lisa enjoying the personal satisfaction that comes with the projects, but also the financial rewards. “The amount of money that can be saved if you know what you are doing and put the time and energy into it is crazy,” Lisa said. “People should give it a go because I’m sure they will be surprised about what can be achieved.”

LISA’S TOP TIPS FOR REVAMPING FURNITURE Source quality furniture “There’s a lot of stuff for sale but make sure it is durable or you have the skills to fix it, if for example it needs to be levelled or clamped,” Lisa said. Prepare From sanding to undercoats, Lisa said this step would determine the look of the final project. “You need to sand it back properly, whether that’s by hand or with power tools, and buy quality products for your undercoats,” Lisa said. Know the style you aim to create “Buy all your supplies at the start of the project, as this will help you with your final vision,” Lisa said. “I’ve known people who have had to sand furniture back four or five times because they realised they didn’t like a particular colour or wanted to change their style. “It will also save you a whole lot of money too.” Set a budget “If you don’t set a budget for yourself you may spend more money than you would have buying a new piece of furniture,” Lisa said.

ur Home sat down with Sally Mosely from Billabong Garden Complex to see what people should be doing in their gardens. She also gives tips on ways to add colour to your garden.

How to keep plants flowering At this time of year, there is still plenty people can do in their gardens, whether that be planting new plants, or pruning and fertilising ones that are already there.

African daisy

For those wanting to add a bit of flower colour to their gardens, they can still plant lavender, gardenias and African daisies (also known as osteospermum), Sally said. These plants flower throughout spring and summer and into autumn. However, she warned that after each flush of flowers the plants needed to be trimmed back to keep them healthy. “This will enable them to flower in summertime,” Sally said.

Gardeners should also deadhead flowers after they have died. “When flowering, the plant puts all its energy into the flower, if you don’t take them (the dead flowers) off, it can make the plant unhealthy,” Sally said. She said people should also fertilise these plants with a liquid fertiliser appropriate to the plants after each flowering. While it was important for lavender to be pruned after each flowering,

plants should not be pruned back further than one third of their size. Annual flowers such as petunias, marigolds, vincas and impatiens can also bring pops of colour to gardens at this time of year, according to Sally.

Low maintenance options For those people who don’t have a lot of time to spend in their garden, succulents are a good option to bring colour to gardens, Sally said. While some bring colour through flowers, others give gardens colour through their foliage. “They don’t need a lot of water, fertiliser or care, but they give you a wow factor,” Sally said. Other hardy bushes such as nandinas and heuchera varieties, can also add colour to gardens year-round with their bright foliage, while also remaining low-maintenance. “All year they give you pops of colour through the garden,” Sally said.

With lots more people taking to their gardens during COVID-19 lockdowns, Sally said now was the time for people to ensure they continued to give their gardens some love. This year saw an upsurge in the number of people planting vegetables.

“No-one’s been able to go on that big holiday, so they want to make their home space inviting,” Sally said. “Everyone is growing their own produce. A lot of people have never done that before.” With vegetable gardens now established, Sally said now was the time to keep those gardens up. “They need to look at their spring and summer produce,” she said. When vegetables are producing, gardeners should be applying liquid fertiliser fortnightly throughout the season. Plants such as tomatoes and rhubarb are among those vegetables that are heavy feeders and need to be fertilised regularly. “Once you’ve had vegetables in there, they deplete the soil of goodness,” Sally said.

LEMONS Seasonal conditions have been perfect for lemons this year, with many home gardeners reporting a bumper crop. Friends, family and neighbours have been the recipients of bags of bountiful produce, and keen cooks have been whipping up batches of lemon slice and lemon curd to stockpile for future use. But just how do you keep your lemon tree in prime fruit-bearing shape, and what are some of the other options for utilising an excessive amount of fruit?

Our Home offers readers some tips, tricks and ideas to make the most of this versatile citrus variety.

TIPS FOR USE • The acidic nature of lemons makes them the perfect degreaser. Sprinkle kitchen benchtops with bicarb soda and rub with cut lemon, wipe over with a clean cloth to remove residue. Always spot test first. • Descale the inside of your kettle by adding sliced lemon to the kettle. Fill with water, boil, leave sitting for 30 minutes and reboil. Discard water and lemon and rinse with clean water. • Juice excess lemons and freeze in ice cube trays. Store in a container in the freezer so you have a year-round supply to add a refreshing twist to cool drinks. • Sanitise your chopping boards by sprinkling with salt and rubbing with a cut lemon, squeezing to extract juice as you go.

TIP: Don't waste the excess whites, use them to make meringues, or a pavlova.

TREE CARE • Lemon trees will perform best when planted in full sun, with some protection from strong wind, so carefully consider placement when planting. • Water frequently during long dry spells. • A controlled-release fertiliser, especially formulated for citrus, should be applied throughout the year to promote healthy growth, flowering and fruiting. • Mulch well to retain moisture and protect the shallow root system from extremes of temperature. • Prune lightly to maintain size and shape and to encourage airflow within the canopy. • Collect and dispose of fallen fruit to discourage fruit fly. • Consider companion planting beeattracting plants, such as alyssum, cosmos, daisies and salvia to encourage pollination.

H

e who mans the grill holds the key to others’ happiness — quite the responsibility indeed. A big part of becoming a supreme force with the spatula is keeping up to date with the innovations in the wild and wonderful world of barbecuing and beyond. Our Home chatted to Jason Bathman from Barbeques Galore Shepparton about some of the latest grilling trends to keep on your radar.

RUBBING THE RIGHT WAY For seasoned barbecue buffs, hunting down ways to stimulate the tastebuds is a never-ending search. Jason said getting experimental with a range of rubs was a great way to take meat from mediocre to melt-inyour-mouth. “To enhance your barbecue recipes there are a huge range of rubs and sauces,” he said. “The rubs are particularly important to use in the art of low and slow cooking. “Some names of the rubs attract a laugh from our customers, such as ‘Rub some Butt’, ‘Holy Cow’, ‘Hard Core Carnivore’ and more.”

APP-SOLUTELY BRILLIANT Technology is everywhere, and the realm of barbecuing is far from exempt. Advancements in automation have made for increasingly stressfree preparation when taking to the tongs—a crucial factor whenever the stomach begins a-rumbling. “With the incorporation of wi-fi into our low and slow barbecue/smokers, you are able to cook the perfect mouth-watering slow-cooked meats,” Jason said. “The built in wi-fi function pairs up with an app on your phone so you can have full control of your smoker remotely. No more caveman cooking.

“You no longer have to watch the barbecue/smoker to maintain the fire and temperature levels for long stretches of time, sometimes up to 10 hours. “You can create juicy succulent pulled lamb or pork whilst watching your children play their weekend sport.”

METHOD

It’s undeniable the US sits on the throne when it comes to manning the grill. The uber-patriotic, star-spangled folk sure know to handle the heat, and taking a page out of their recipe book often pays off when searching for ideas to invigorate meat and more. According to Jason, all burgeoning home chefs should be on the lookout for events that promote the avant-garde style of smoking popularised by the US. “The low and slow barbecue/smoker range has grown in Australia and is still trending strongly thanks to a strong American influence, and various smoking trade shows that usually feature during the summer months. “One to look up is ‘Meat Stock’.”

1. Butterflied lamb leg: Pre-heat barbecue (hood down) to high heat. Remove lamb from the fridge 20 minutes before cooking. Place oil in a bowl, add rosemary brush. Brush oil over lamb and season. 2. Reduce barbecue to medium. Place lamb on hot grill plate, skin side down. Cook for 15 to 20 minutes on each side, hood down or until an internal doneness of 58°C. Drizzle with lemon juice. Transfer lamb to a chopping board, cover loosely with foil and rest for 15 minutes. 3. Roasted cauliflower: Preheat barbecue (hood down) high heat. Combine oil, garlic, paprika, cumin and coriander in a bowl. Blanch cauliflower for 7 minutes, remove, and cool for 10 minutes. Place cauliflower on a baking tray head up. Baste with spice mixture and season. Place in the barbecue (hood down), roast for 1 to 1 ½ hours, basting throughout. Remove from barbecue, grate parmesan over cauliflower and serve with lemon wedges. 4. Roasted lemon and tomato salad Place all ingredients except oil and vinegar in a large bowl. Combine oil and vinegar in a jug, season with salt and pepper. Add dressing to bowl and toss gently. 5. Tahini dressing: combine all ingredients in a bowl, set to the side. 6. Slice the lamb across the grain, serve with chargrilled lemon, cauliflower, tahini yoghurt and roasted lemon and tomato salad.

WHAT WORKS BEST? Economy over efficiency is a debate that shouldn’t extend to the kitchen. Supercharging a steak is best achieved by grilling over charcoal or wood; however, Jason said Barbeques Galore’s economic alternatives also worked a charm. “For true depth of flavour and controlled cooking for these barbecues/ smokers, predominantly use charcoal or wood pellets. “The Traeger pellet grills, Kamado Joe and Masterbuilt gravity-fed charcoal grills make outdoor cooking a breeze for time-poor families. “However, there are some great electric and gas smokers on the market also.”
