Barbecue, Boils and Bison

I

t was a colossal lobster, accompanied by a baked potato, a cold local drink and a slice of blueberry pie. And it was under $20. No, this isn’t an advertisement from the 1980s or sentimental ruminations as a child, but a meal I had in Maine 12 years ago this summer. I still couldn’t believe it. Oh, I’d heard the tales from my wife and brother-in-law who hail from that state about how inexpensive lobster was, how it was sold in McDonald’s and how everyone loved a lobster roll, but, still to actually be savoring one at that price while overlooking the Atlantic Ocean? Hard to believe. Maine is just one of many regions — and, yes, within that state, sub regions — where the food is as unique as the people who live there. I’ve been fortunate enough to travel to many states — most before I was 20 due to my very indulging grandparents (or as we fondly call them MeMaw and PopPop) on my mother’s side. Along the way then, and with later road trips with my friends and father, I was fortunate enough to sample a bit of local flavor here and there along the way. Here are four things I’ve learned: 1. BBQ MY WAY: I still prefer North Carolina barbecue. Georgia and Alabama have good ‘cue and some of the finest I’ve ever had has come courtesy of friends who live here, but, my favorite is from North Carolina. I am sure that part of the reason is the vinegar-based sauce which gives it a tang. I haven’t been overly impressed with Kansas City-style or Memphis style barbecue. No offense, just waiting for the magic moment for the dish to live up to the hype. I do enjoy beefbased Texas barbecue. Of course, South Carolina barbecue is an eye-opener to the weird world of culinary customs. As a young man, I lived in the Palmetto state for a forgetful few years and I will never forget the first time my family ordered South Carolina barbecue, which is defined by its mustard based sauce. We opened the box of take out and a collective silence descended across the room as we all stared in shock at this yellow concoction. I might have had it once or twice since at events where it was the main course — no reason to be rude — but otherwise, I run the other way.

2. CRAW FISH BOIL: My friend George and his wife, Kaye, hold a craw fish boil just about every spring. It is a delightful event where George uses a recipe handed down from his wife’s family — longtime New Orleans natives — and boils craw fish, corn, potatoes, onions, sausage, mushrooms and other secret ingredients in a huge cauldron for an hour or so. During that time, one can fellowship, sip on a libation or enjoy a snack. After the boil is finished, it is ceremoniously dumped onto a long table covered in newspapers. All the guests gather around and dig in eating with their hands. I do not only appreciate the unique and delectable experience, but the fact that the act decimates any real or perceived snobbery. As I remarked, it is hard to put up airs when you’re eating with your hands. Just make sure if you ever attend a craw fish boil not to confuse it with the South Carolina born Low Country Boil (which is very good). 3. BET ON THE BISON: I have developed a taste for bison. The only issue is the price. But, I do splurge for special occasions. Cooking the protein-laden beef at home can always be a bit dicey though. Several years ago, I made a batch of bison burgers to commemorate Georgia playing Colorado. The bison burgers looked prime and smelled great. I lay a solid piece of cheese on them, grilled them for another minute and then was ready to eat. The problem was they weren’t cooked. I had not taken the time to read the instructions on bison grilling versus traditional beef burgers. In other words, leave the cooking of regional cuisine to the pros. 4. DON’T CALL IT A SANDWICH: Okay, my knowledge of northeast fare is not very strong. I am not proudly ignorant or bereft of traveling experience (I spent a week studying at Columbia University in NYC as a teenager and have visited Washington D.C. three times), I just can’t seem to get a handle on it. For examples, the sandwich. Which is also called a hoagie, grinder, hero, submarine and various other names. I do know that I’ve never met a sandwich I didn’t like, though. There is something enticing about traveling in the summer and stopping to sample the local cuisine wherever you go. I especially find the podcast ‘Gravy’ by the Southern Foodways Alliance a wonderful introduction to this region’s food and cultural history. But, if you can’t get out west or up north, you can always satisfy your taste buds without leaving Cobb.

Magazine photographer celebrates work featured in Northside Hospital

Local photographs by longtime Cobb Life contributor Jennifer Carter are now on display at the new Northside Hospital Cherokee in a collection titled, “Cherokee, A Place I Love.” Located throughout the facility, the photos were commissioned to reflect the favorite Cherokee places of many Northside employees. “I am so honored to have been included in this project with so many talented artists from Cherokee County,” said Carter. “My one hope is that my photographs will somehow bring a sense of comfort and joy to both Northside employees and patients when they might need it most.” The hospital opened May 6. Carter’s photography was featured alongside other artists including Kristina Laurendi Havens, Cat Tesla, The Buenos Couple and Elly Hobgood.

Cobb Life director to read at event Magazine Director Mark Wallace Maguire will read from his novel, “Alexandria Rising” at A Novel Idea on July 19 from 7 to 9 p.m. at The Snug GastroPub in Canton. A Novel Idea is a literary event organized by author Marsha Cornelius and features various writers from across the region. In addition to the reading, the event features prizes, entertainment and a chance to sup on the pub’s great food and beverages. Prior authors who have read at the event include Bret Witter who co-authored “The Monuments Men,” which the movie was based on, and celebrated Georgia author Ann Hite. “Alexandria Rising” is an action-adventure novel that has earned multiple 5 Star Reviews and is available on Amazon.com and select stores.

Marietta family makes turning trash into treasure their business “Junk” is a relative term. So is “trash.” But junk and trash are bread and butter items for Chris and Yvonne Johnson of Marietta, who run a fixer-upper renovation and remodeling business that has spawned a new television pilot, “Reclaimed Reno.” Chris, 38, and his wife Yvonne, 37, are owners of Reclaimed Karma, a family-owned home business that does home renovations plus home improvements that include refurbished old furniture they’ve brought up to mint condition. Sometimes the wood they use to make new tabletops, walls or even floors is older than they are, and often comes from deteriorating buildings. Oftentimes, people call them to get rid of old wall boards or ceiling beams, sometimes for free. They are also called upon to renovate loved pieces of furniture, giving homes a brand new look. Sometimes, the two roam the countryside, looking for old structures that might contain materials they can use.

In such cases owners even give them what they need if they’ll just promise to haul it off. People like old stuff, as long as it doesn’t look and feel, well, old. Which explains the popularity of TV programs that feature pawn shop owners with booming businesses and relic hunters searching far and wide for old toys and tools and bikes and guns. What the Johnsons do is unique. “What we do is not cookie-cutter,” he said. “It’s individually-based.” Check them out at reclaimedkarma.com. “We get our materials from architectural salvage yards, demo sales, friends, family and good old fashioned hunting,” Yvonne said. “Chris has a very good eye for finding stuff hidden in some of the craziest places. You’d be surprised what people consider trash right in their backyards. This is often a mutually-beneficial relationship. Many times, people just want their stuff gone and we are more than willing to take it,” she said. “We are Craigslist crazies, salvage yard

savvy, garage sale groupies and estate sale enthusiasts,” she added. “We spend our days teaching others how to do what we do while turning their houses into homes. Where do we get materials? Anywhere from old barns, old homes, people will call us who have some amazing vintage, historical and salvaged items, no longer have a use for them, but they have history and want that history to live on in another person’s home. Of course, we are also always on the hunt. You never know when we may knock on your door to ask you about the old building on your property.” “We will renovate your home, redesign it, also furnish and redecorate,” Chris said. “We get stuff from everywhere. We are hunters for some things that need to be salvaged. We sometimes knock on doors. We might ask, ‘Do you need that old rustic shed from the ’30s?’ If not, we’ll call some of our partners to move it to their warehouse after bartering for some of the materials. We get leads.”

We debuted our first issue in November 2005. It was 52 pages. It featured

Cobb native and Third Day frontman Mac Powell and his family as the centerpiece. Over the last 99 issues, we’ve survived a Recession and had three different U.S. presidents. More importantly, we have thrived. We began as a six times a year publication with an average of 52 pages and now are a nine times a year publication with an average of 76 pages (And that doesn’t even count our other glossy products such as our Brides magazine, Factbook or special sections). We’re just a bit excited and you can see why. As Cobb has grown, so have we. As Cobb has changed, so have we. If you will kindly indulge us, we’re going to take a few pages and take a look back. 12

Food Network’s competition series returns for a 13th season, with culinary icons Giada De Laurentis and Bobby Flay looking to discover the next promising food television star. An extra essential for Atlanta viewers is the addition of local chefs David Rose and Rusty Hamlin, who compete on the show. Rose is a recognized biker, cigar aficionado, clothing designer and a culinary partner with the Big Green Egg Grill. He graduated from Le Cordon Bleu College Atlanta and began his career as a chef at the Four Season Hotel in downtown Atlanta. He is the creator of T.L.C. Experience: Tapas, Libations and Cigars — a cigar and tapas experience with top-shelf libations and premium cigars, which he hosts in Atlanta and other cities around the country. David: My thought process for auditioning for the “Food Network Star” was to just be myself! Being myself is what has gotten me this far in my career. It is what is organic and authentic to me, and I believe that viewers radiate towards this. Rusty: Honestly, I was nervous, but also really excited to begin a new chapter in my life and career. Was there a learning curve going from just being a chef, to now have to worry about cameras? David: The learning curve wasn’t too severe. I am a recurring judge on another culinary show and I film pretty regularly with sponsors. I have an innate awareness of the camera and camera angles. Knowing how and where to look is something I am pretty comfortable with and I feel at ease in front of the camera. During the heat of the competition, I got into my zone because the kitchen is where I am the most creative. Sometimes, I forgot the camera was there. It was very fun to cook on camera, and show America what David “Big Swole” Rose, The Biker Chef, was cooking! Rusty: On this level and platform … Yes, definitely. However, being on tour with Zac Brown Band for the past seven years, and being able to feed hundreds of thousands of hungry fans while cameras are rolling has given me a great taste for what it’s like to be in front of the camera. If given the opportunity, what would be your ideal Food Network show? David: My ideal show would essentially be about my life as “The Biker Chef.” Riding my motorcycle all over the country, visiting restaurants, bars, pubs, and everywhere in between. Visiting and cooking with other chefs and various cooks, highlighting award winning and unique cuisine, getting behind the bar shaking up craft cocktails with the mixologist, and enjoying a high quality cigar to complete the dining experience. Rusty: I have always wanted to host an early evening chef and food driven cook/talk show that incorporates guest chefs, cooking skits and demos, an “Ed McMahon” sous chef, a live participating audience, my huge comedic personality and rotating musicians I have befriended along the way. This would be so much fun, entertaining and educational. How do you feel about your family and friends being able to see you on TV in the competition? David: I’m extremely excited to have my family and friends watch me in competition on TV! I have a huge Jamaican family, and we are all very close. My family and friends know me better than anybody else does, and they know how hard I have worked to get to this point in my career. They know my sense of humor, my style of cooking, and my skill set, so they will definitely be rooting for me. My reason for going on the show was to make them extra proud of me. I think I have accomplished that! Rusty: You know, it’s always difficult to watch yourself on the screen, but I made a promise from the beginning to be myself and I have achieved that. When people see the show, they will know that’s the Rusty they love.

Father and son duo, Steve and Hunter Cook, are at the helm of this traditional sweet shop. Located two doors down from The Strand, Sarah Jean’s Ice Cream is in a prime location for people visiting the square. Once inside, an overhead handmade train — created by the original owners — greets you along with a large chalk board to the right that displays the sweet selections. The homemade ice cream uses a local dairy that has been an Atlanta staple since 1955 and offers 40-plus flavors of ice cream, frozen yogurt, gelato, Italian lice and sorbets. Everything is done the old-fashioned way and includes all-natural ingredients. And you can tell by the taste — it’s creamy, smooth and full of flavor. Shout out to the butter fat content, which Steve said is the key to great tasting ice cream. The pride themselves on not being “gimmicky,” so they offer mostly what you would find in a traditional ice cream shop as it pertains to flavors. But they do try to add in a few new options every now and then, like their custom blue moon ice cream that features blue raspberry, lemon and raspberry flavors combined. Kids will rave over the bubble gum ice cream (as did I!) — it has actual pieces of bubble gum infused in the creamy concoction. If you’re looking for some decadence, try their banana split. You can customize the ice cream flavors. I tried butter pecan and rocky road in mine, and it was everything I could dream of. And for a little guilt-free dessert, their Italian ice is a nice, refreshing choice. I recommend the limon verde, mango and blue raspberry flavors (together, or separate).

It’s truly a family affair and all hands on deck at SnowVille Shavery. Many members of the Vadsariya family are at the helm of the new frozen treat concept. With a trend that began in California, Kamil and his family brought the ice cream and snow ice conception to Marietta and it has proven to be a hit. Months of preparation went into researching if the area would be receptive, and it has — partly thanks to social media. Instagram has been a big driving force in bringing customers to the shop, as we all know we eat with our eyes. And who can resist a sweet treat? Now on to the process: blocks of the ice cream/snow ice formula are made at their offsite facility. When you choose your flavor (I recommend the Taro), it’s placed in a machine that shaves it into a multitude of creamy ribbons. When it’s plated, you’ll see a large heap on your plate that you can then top off with various toppings. But the texture is so soft and creamy and good! The top flavor is Taro, a sweet potato flavor that I wouldn’t have initially thought of for ice cream, but it works! Of course chocolate and vanilla are some mainstays for those who have a hard time choosing — which is why it is often sold out. And on top of the creamy dessert, there are more than 20 toppings to choose from as well. And if you’re looking for something other than this sweet confection, there are also macarons and bubble teas available in many flavors! They’ve created an inviting space with bean bag chairs, colorful interior and a rack of games that are a hit with teens, adults and families alike.

I’ve been lowkey stalking their IG page for quite a while now, and was happy to finally pay Thai Style Ice Cream a visit. To me it was the most unique of the three shops — mostly in execution. Inspired by the ice cream making practices in Thailand, this trend has been steadily growing in the U.S. for the past couple of years. Thanks to YouTube and social media — where people can get a visual of the style of making this sweet treat. When you first walk into the brightly decorated Thai Style shop, you’re greeted by a wall full of post-it notes, which is their “comment wall” if you will. Next to that is a large board that lists some popular flavor combos, which helps take the guess work out of the choosing. Some of the flavor combos include Sweet Lime Pie (lime and graham), Mr. Green Tea (my recommendation! – green tea and strawberry), Morning Latte (condensed milk and chocolate chips) and S’mores (graham and Nutella). But if you’re adventurous then you’ll choose your flavor base (cream, green tea, coffee, Thai tea or taro), an add-in like fruit and then its poured onto a freezer plate that is about negative 15 degrees and mixed well together. Once the mixture begins to harden, it is then worked into a flat rectangle shape. With a flat scraper, short sections are then rolled and placed in a cup. From there you can add more toppings and enjoy! Unlike many ice cream shops, Thai Style selections are not overly sweet, but pack a lot of flavor and customization opportunities. Just make sure you bring patience with you, as the process takes a few minutes and the line can get pretty long during peak hours.

s the mother of two blonde girls, Jennifer Hough said the choice was easy back in 2009, when her pool builder asked her, “Saltwater or chlorine?” “One of the selling points for us was it won’t turn your hair green and our girls are blonde,” the Marietta resident said. “When choosing saltwater, I think we thought it’s less harsh on your skin and hair. It’s definitely softer and better for your skin, and it smells less.” There was a time not too long ago that residential saltwater pools were cost-prohibitive, according to Karen Shearer, owner of Aquarama Pools and Spas on Powder Springs Road, but all that changed around 10 to 15 years ago. “Back in 2008, we saw the boom in salt generators,” Shearer said. “Every customer wanted salt and we weren’t even really selling it. It’s now become very affordable.” A family-owned business that’s been in Cobb County for 50 years, Aquarama maintains more than 2,000 pools a week, many of which are saltwater pools, said Shearer’s son and co-owner, Ben Frye. “Probably 90 percent of the world’s pools are still on chlorine, but saltwater pools, people equate them to a higher-end pool and as a positive feature, or upscale feature, when it comes time to selling a home with a pool.” With the continued popularity of saltwater pools, Fyre said today it’s easy to install a saline system or convert a chlorine pool to a saltwater pool. Plus, saltwater pools are easy to maintain.

While the pool is the centerpiece, the area around it is gorgeously manicured and features such amenities as this firepit. “Saltwater pools are easy to maintain because a saltwater system converts the salt into chlorine, so it’s like having your own chlorine factory,” he said. “It’s not a cure all because you still have to balance the water, but it typically takes less maintenance because the system is always producing saline (salt).” With many of today’s pools boasting amenities such salt generators and multiple LED lights, construction costs start around $100,000. But, Frye said, they can convert an existing pool that maybe his grandfather built for around $1,600. “Chlorine is still cheapest and easiest, but saltwater is just more natural and makes the pools easier to maintain,” he said. “I would recommend salt in most every pool. The water is smoother, softer, and it’s more natural.”

A creative haven has emerged at the foothills of Kennesaw Mountain, although the structure itself has been there for nearly 127 years. The Hunt House is fast-becoming one of Cobb County’s funkiest, most organic music venues in arguably the most beautiful setting. Tucked on top of a hill at the corner of White Circle and Old 41 with the mountain looming in the distance, the old house is humbly cradled under trees and sunshine. Inside, the house’s “living room” can hold around 50 listeners as musicians from Kevn Kinney (lead singer of Drivin N’ Cryin) to bluegrass trios have already graced the small, intimate stage. Outside, a large pavilion plays host to full bands as kids run through the open field beside it and adults sip on drinks, eat good food and listen to musicians as they share their artistry. “So many people have driven by and when I tell them it’s here, they say, ‘I didn’t even know what that was!’” said Bennie “Burle” Galloway, general manager of The Hunt House. “We’re trying to alleviate confusion and let everybody know that it’s a diamond in the rough. In the middle of metropolitan mayhem, to have this as a sanctuary is absolutely absurd. It’s so under the radar and so cool.” Galloway himself is a well-known artist and songwriter, having worked with hundreds of bands, including Yonder Mountain String Band, The Wayward Suns and The Infamous Stringdusters, just to name a few. The Denver native first visited the property two years ago when owner and chef Marc Sommers gave him a tour and some tastings from his onsite catering company, Parsley’s Catering. “It was a Saturday so nobody was here, it was in the fall, it was beautiful. I just walked on the place and saw that a lot could be done with this - not just with music and food but you could build a community here and host workshops and classes, do shows, festivals, art shows, streetstyle fairs, all kinds of things and it’s right across the street from the park,” Galloway said. Although Galloway was brought on mainly for his connections and expertise in music, he is a man of many trades, having served as a butcher since the ‘70s and most recently operating a hotel and wedding venue in Lyons, Colorado, about an hour from his hometown of Denver. “Marc’s knowledge of food was right up my alley. He has his own farmers and orders up these

good, clean products. That’s what I worked with – clean products, clean programs so cowboys who were my friends could get their products sold in supermarkets and the customer could get a really good product,” Galloway said. Concert-goers can enjoy everything from grilled chicken wings to salads and homemade sausages, all priced from $5 to $11 per dish. The bars also feature beer and wine and The Hunt House has recently partnered with Kennesaw’s Burnt Hickory Brewing to serve local craft beers. When it comes to the music, though, it’s all about the connection. “Inside, you can get really close to the point where you can speak to the performers from the audience. You can actually have a conversation and they can engage with you so it’s a very personalized show. It’s all about listening to what the artist is going to do and why they’re doing it. You gotta love that as an artist because people pay to come see what you do and they’re very interested. It’s not wallpaper at that point. You’re the focus and not that conceit comes into it, but you’re working and you’re applying your skill and your trade and your art and people are there to embrace it and absorb it and it’s so easy to absorb the art that close up, in that room,” Galloway said of the indoor space. As for the outdoor space, this summer will play host to a number of weekend, full-day, family-friendly outdoor shows, with drinks starting at 2 p.m., food starting at 3 p.m. and rotating bands taking the stage from 3 p.m. to 7 p.m. “We had guys down from Denver last week then I jumped on board with them so it was something different then they left and some other guys got on then they all came back so it was a test-drive of a four-hour run. Kids were playing games and the outside is just great to enjoy, whether you’re sitting in a lawn chair or listening to the music or having something to eat with us,” Galloway said. And while Galloway said they were excited to have around 75 people at The Hunt House’s first show in February (Nick Disebastian and Jared Womack held the stage for that one), he knows that once people realize what

the house on the hill actually is, there’s no going back. “When everybody starts showing up, we’re going to say, ‘Remember when we had 75 people here and that was awesome, now there’s 300?’” Galloway said. “It’s like the calm before the storm. ... the way to my soul

f you know me, then you know that food is one of my true loves. So much so, that my former high school principal (who’s also family) nicknamed me “Hungry” years ago. And you know what? I can’t even dispute it.

My love of food doesn’t just go with the taste, it’s also in the preparation — I like to know how dishes are prepared. Which is why I’ve been a staunch supporter of Food Network and the Cooking Channel since their inception. This love goes back so far, that I remember being a little girl watching Julia Child cook on PBS. I’m sure I was the only one of my friends doing so. Travel and food go hand in hand, and discovering different regional cuisine is always a great part of any trip. I’ve been able to visit several states in the past two years and in each location, I was introduced to that region’s version of tasty paradise. Roanoke, Va. — While I do not think that red-eye gravy is native to Roanoke, it was where I first had it. And with all of the walking and exploring we were going to be doing that day, it was recommended to give me a good jolt. If you don’t know, the gravy is made with coffee and gives just a bit of extra pep needed early in the morning. Not to mention it’s delicious! But possibly one of the best and most unique meals I had was at the historic Hotel Roanoke. There they have created and perfected Peanut Soup, a creamy, sweet and savory soup they pair with spoon bread. While peanut soup might sound weird, trust me it’s not! Fredericksburg, Texas — Founded by German settlers, Fredericksburg restaurants have quite a lot of variety, but I was most excited to visit Der Lindenbaum, an authentic German eatery and eat schnitzel for the first time. The thinly pounded, breaded pork was very tasty alongside the cab-

bage. Another regional favorite in that area are the breakfast tacos from Mahaley’s Café — something they love to get newcomers to try and I’m glad I did. I recommend the potato, egg and cheese combo if you’re ever in town. Branson, Missouri — While I can’t think of anything that is exclusive to Branson, I did have some of the best steaks ever there. Level 2 Steakhouse is a beautiful fine-dining restaurant located inside the Hilton Branson Convention Center Hotel, and the steaks aren’t half bad either! If you’re looking for a bit of pizazz with your steak, then head on out to the Showboat Branson Belle. Just be prepared to also get a to-go box, you’ll need it! Yadkin Valley, N.C. — I had something very special in this region. They have created Sonker, which to me is their version of cobbler. Just don’t call it that! You can only find Sonker in Surry County and no two are alike. Being that it’s made fresh with fruit, it depends on what’s in season that determines what flavor you’ll get. But if you visit this region and don’t order this staple, then you’ll be missing out. Fox Cities, Wisconsin — I was looking forward to some Wisconsin cheese, however, I didn’t know what to expect of cheese curds. The name alone doesn’t sound appetizing. Once I bit into one though, I was pleasantly surprised. And the good thing is you can find them on just about every menu. Greenville, S.C. — Now I’ve grown up on pimento cheese. I don’t know of its origins or even who has the “best” version. But what I do know is that one thing I took away from my visit to Greenville is their love of the dish. I found it on a couple of menus and had it as a topping on a burger, which was out of this world. I’m so used to slapping some on bread and making a sandwich, but the use of it on a burger was probably the best thing I ate that weekend. No matter where you travel, food is the one thing that really brings people together and bonds you to an area. But you don’t always have to stray too far from home. On pages 38-46, we’ve highlighted a couple of national cuisines that can be found right here in Cobb. Hope you enjoy!

When I met Dr. Terrell, I had been to over 17 orthopaedic doctors. I had given up hope of ever being able to walk. I was confined to a wheel chair and weighed 290 pounds. In the last three years, Dr. Terrell gave me my life back. He lengthened my right leg over 4 inches and fixed my knee. For the first time in over 50 years, I can stand completely level on the floor. Dr. Terrell is truly a godsend.”

W

hat do you get when you mix a farm-raised Southern boy with classical French culinary training? One of Acworth’s quintessential eateries, and the one that started it all. Chef Henry Chandler came to Acworth with wife Claudia some 25 years ago after a stint in London and several years later opened the popular Henry’s Louisiana Grill. A Slice of New York style pizza

A

t Capozzi’s N.Y. Pizza Pasta & More off Roswell Road in East Cobb, they say they’ve been serving up the “best pizza south of New York” since 1997, and we say they aren’t wrong. For John “Buddy” Capozzi, growing up in New York in a tight-knit family meant his life often revolved around food. From patriarchs who owned butcher shops and farm stands to matriarchs who spent a lot of time in the kitchen cooking family meals, the Capozzi family seemingly groomed Buddy for life as a restaurateur. Although there is still some argument about what exactly constitutes a true New York style pizza, common thinking describes these large (normally 18-inch) pies as hand tossed with sprinklings of tomato sauce and mozzarella cheese before adding any desired toppings. As with New York bagels, locals say its the New York water that makes the crust so airy, but Capozzi’s has managed to replicate the fluffy goodness right here in Cobb County. Of course, it wouldn’t be New York style pizza if the slices weren’t big enough to fold in half like a taco when eating (all the better for street food we think). any restaurants have crab cakes on their menu. But it can be hard to find some worth the muster. I’ve frequented a lot of restaurants and always try the crab cakes to test them out. I’m often disappointed. Enter Fish Thyme, the brainchild of executive chef Steven Dudley and his wife Veronica. The Dudleys are no strangers to restaurants, as they also own Capers in downtown Kennesaw. Fish Thyme offers many delectable dishes that will excite your taste buds, but the jumbo lump crab cakes are what I go back for time and time again. Dudley doesn’t just use any crab meat. Oh no, only the best for his patrons. They are made with authentic Maryland crab meat and served with a spicy remoulade sauce. You know that your crab cakes are authentic when you can see the jumbo pieces of crab in just about every bite, and you will get that here. Cooking since he was a child, Dudley has always had his sight set on owning a restaurant and crafting creative dishes. Eight years after opening Capers in Kennesaw, Fish Thyme opened in Acworth and has since become a hot spot for diners, including myself. And if you’re looking for something other than crab cakes, the expansive menu is sure to have just what you crave. But, do yourself a favor and order the crab cakes, and thank me later.

a Southern girl goes West DISCOVERING THE SPIRIT OF WESTERN NEBRASKA’S GREAT PLAINS Words and Photography by Jennifer Carter

A

nervous guffaw escaped me when I heard Mike Kesselring say this, because like all good jokes, it’s deeply rooted in someone’s truth. The sun was just starting to set on his High Plains Homestead, casting soft light on that dirt road that led me to Mike’s and his wife Linda’s remote retreat near Crawford, Nebraska, tucked into the extreme northwestern part of the state. Surrounded by the wooden plank buildings that they’ve artfully scattered on the windswept prairie to recreate an old West “cowtown,” the Kesselring family’s Drifter Cookshack had just served me chicken directly from the outdoor grill, followed by their famous cinnamon pie. (If it’s not famous yet, well, it should be.) And let’s face it: Even when spoken in jest, truth always goes better with pie. Deep down, I knew what Mike had meant. That old human-condition adage “that which nourishes us can also devour us,” can apply to anyone anywhere, but rang a little truer out there in western Nebraska where wildfires and raging winds are common dinner speak. But there was something else there in that place, an even bigger truth that I didn’t even know I’d come searching for, but found there on my westward journey. At some point, out there under the vast expanse of Nebraska skies, around food cooked over an open outdoor flame, in the midst of conversations with this authentic and unapologetically hardy people, I discovered a resilience of spirit and a sense of adventure that this heartbreakingly beautiful landscape may sometimes try to rid you of, but will only succeed in making you feel even more alive. The Kesselrings’ property, flanked by the dramatically rugged Badlands and trees of Pine Ridge, is a little off the beaten path. Some people (like me) would say that’s preferable. I would tout that it’s worth the drive down a long quiet road for a home-cooked meal, a good night’s rest, and a visit with friendly proprietors. — continued on the next page

Following in Their Footsteps (and Wagon Ruts): Retracing the Paths of Our Cowboys and Pioneers I’m not egotistical enough to think I was the first of my kind. To be honest, the universality of my wanderlust plight was probably what drove me to Nebraska in the first place. I recognize that so many before me have come to a similar crossroads in life and died inside to see what lay just on the other side of that western horizon. “Go West,” I’d always heard, and so I did. Over the course of five days, I motored down solitary back roads to try to experience landscape that so much of our country’s history and western expansion is based on. Quite frankly, the western Nebraska landscape shocked me. else. Instead, I discovered rising bluffs, buttes and other geologic wonders that must have given the Oregon Trail wagoneers quite a start. Scotts Bluff National Monument, not to be missed by history buffs and outdoor enthusiasts, is a 3000-acre park located on the south side of the North Platte River. Steep bluffs loomed around my rental minivan like guardians as I approached, and I was awed that modern day drivers can still steer their cars right through Mitchell Pass between the bluff walls, the same route the early settlers took toward the Rocky Mountains. To my utter amazement, the remnants of wagon ruts still remain there, hearkening back to the days that the emigrants used Scotts Bluff as a directional guide to the west. Similarly, about a 30-minute drive from Scotts Bluff, the monolithic, limestone pillar Chimney Rock, rises from earth like a navigational beacon. In fact, way back before GPS, the pioneers used Chimney Rock’s spire as a towering landmark to ensure they were headed in the right direction. (It showed up in more settlers’ journal accounts of their wagon train journeys than any other landmark.) Sadly, Chimney Rock has lost thirty feet from its height in the last 150 years, a product of erosion and lighting strikes, so you better see it while you can. And of course, I couldn’t pass up a trek to Ogallala, a true cowboy town that was the end of the trail for cattle herds being driven westward on the Texas Trail. The town gained notoriety in the late 1800s for its seasonal, lively bunch of cowboys who came through every summer and frequented its saloons, hotels and sometimes, ahem, more tawdry establishments. (The town was made even more famous by its mention in the CBS mini-series “Lonesome Dove,” based on the novel by Larry McMurtry.) If you visit, don’t miss Boot Hill, a cemetery overlooking the town where many of these cowboys are laid to rest. I, too, eventually reached “the end of the trail.” I flew home to Georgia via the Denver airport, which is just a short car ride to many western Nebraska destinations. I’ll never forget the Nebraskans I left in my wake, however—they who happily showed me around back roads, fed me heartily and told me the stories about our country’s heritage that I’ll never read in history books. If you ever get to that crossroads, and find yourself looking west, just go. They’re still waiting there with more stories, and there’s plenty enough pie to go around.

Open the wine vault this summer and enjoy these wines on the path to vinous discovery. Here are a few favorites you may be familiar with and some that might become new wine friends. Summertime Reds Zinfandel This California star has a mysterious European lineage and has gained international fame in the Golden State, especially in Sonoma and the Sierra Foothills where gold was discovered in 1840. The red style can be made light and fruity or full-bodied, complex and age-worthy. Large vineyard acreage provides grapes for blending, as well as fruit used for the production of the sweeter style pink wine called “White Zinfandel.� Its aromatic spectrum on the nose provides the taster with a cornucopia of fruits such as black currant, boysenberry, cherry, cranberry, plum and raspberry jam. Spice components can be identified and often cocoa, nutmeg, truffle, clove and licorice is detected. Easy to enjoy chilled, it is a great choice for your summertime red wine needs. Compatible with foods such as pulled pork barbecue, grilled chicken and Mexican cuisine.

This native Italian grape reaches its heights in Tuscany and is the varietal used to produce Chianti, Italy’s most famous wine ambassador. Sangiovese offers fruit aromas which resemble black cherries, plums and raspberries with dusty mocha chocolate notes, gentle spices and herbal tones. Savory and high in acid, this dry red wine is particularly delicious with tomato-based dishes, baked pasta with parmesan cheese and grilled sausages. From the lightest style simply called Chianti, often found in attractive straw covered bottles, to more serious Chianti Classico or Chianti Riserva, these are some of my favorite go to summer reds. Merlot It is time to rediscover this classic French grape varietal. From its home in Bordeaux, it has spread its wings and is now found in California, Washington, Australia, Italy, Chile, Argentina and Spain. Used as a blending companion with Cabernet Sauvignon, it is soft textured, rich in flavor and excellent as a primary component in California. Some of the best values in the market are varietal Merlot blends. Fruit forward flavors of black and blue berries, cherries, plum and red currant with floral accents such as rose and violets. The movie, “Sideways” stuck a disastrous blow to the sales of this wine as a character in the film named Miles much maligned the varietal

and consumers shunned this proud and distinguished wine grape. Serve in wide bowled glasses and let the exotic aromas work with the air as you swirl the glass, releasing secondary aromas which often can be savory bacon or smoked meat notes, leather or tobacco with a subtle herbaceous scent. Pinot Noir The famous red wine grape of Burgundy, France was the favorite of Napoleon and today the varietal enjoys wide consumer appeal. Often light and delicate, it has a complex array of subtle aromas which evolve over time in the glass. Descriptors can include the spectrum of the red and black fruit basket, especially red cherry, cranberry, strawberry and floral bouquet of dried roses, violets and lavender. New world examples from Coastal California and New Zealand offer bright, fresh fruit scenting its cool climate origins. The grape are difficult to grow, but producers in Oregon’s Willamette Valley have unlocked the secret combining small production techniques and French oak barrel ageing, adding additional aromatic layers of earth, forest floor, mushrooms and subtle smoke overtones to the nose. I must suggest that using the proper glassware allows the drinker to appreciate the wine makers creation. Broad bowls with deeper volume in the glass gives you the ability to swirl the wine, releasing the volatile esthers which will unleash the primary aromas and evolving bouquet. Oh yes, don’t forget to drink!

[KEEPING UP WITH KATY RUTH] A taste of sunshine, hot chicken and bright people If you missed Taste of Marietta this year, you really missed out! “Taste,” as many in Cobb County call it, is notorious for bringing some unwanted and unexpected storms in past years but this year’s event brought the sunshine — and, to a degree, the heat. Around 1:30 p.m. on April 30, I took some time to unpack from a writers’ retreat I had taken with some writer friends to North Carolina, put on my walking shoes, draped a cross-body purse over my shoulder and set out to walk the Mountain to River Trail to get to the Marietta Square. Along the way, I ran into Marshall and Cindy Dye and chatted with them about a new home that went up for sale in the area. The weather was just lovely and I was happy for my friend Katie Peterson, executive director of the Marietta Visitors Bureau and Queen Bee of Taste, as the threat of rain seemed to be a thing of the past. Once I reached the Square, I chatted with Wendy Bunch and Tom Heyer, and had a laugh with Amy Reeves as she chased young Albert through the crowds at the Glover Park stage as her husband, State Rep. Bert Reeves, had his band rockin’ the crowds. Eventually, it became a who’s who of Marietta as I saw one friend after another and we each enjoyed walking

by the various restaurant booths and tasting the various foods. Manda Costoulas was even brave enough to try a deep-fried Oreo — with no complaints! I had a bite of Gunnar Ohberg’s Nashville hot chicken and we both laughed over the late onset of heat it brought to my mouth. Drink, please! Katie said the judges for Taste gathered on the second floor of the Earl Smith Strand Theatre and marveled over the diversity of food Cobb had to offer. She even said one of the judges, newly-appointed Marietta City Schools Superintendent Grant Rivera, commented that he has become so used to eating a salad at his desk that he would have to get out to many of the restaurants more often. It was a wonderful day, topped off with a wonderful after-Taste “party,” consisting of dinner at Chantico, courtesy of BY KATY RUTH CAMP the kind and always-fun Brian and Cassandra Buckalew that evening. If only I had rethought my openneck dress and cross-body purse, though – the sunburn lines Taste gave me were interesting, to say the least!

A gala with the stars WellStar Foundation Starlight Grand Slam Gala took place April 23 at the Coca-Cola Roxy Theatre, the first gala event to be held at the new theatre at SunTrust Park. The venue was gorgeous, boasting several large chandeliers and beautiful flowers placed throughout the theatre. I wore a floral, off-shoulder, long dress with a flower crown in my hair and my hair worn curly, as it is naturally. The fabulous Pat Chilton — arguably Marietta’s best-dressed woman for decades — gave me a big hug when I saw her and marveled, “Oh, Katy Ruth, you look like a beautiful sprite!” I knew that she meant I looked fairy-like, like something out of a Shakespeare play, and I’m sure he did too but Brian Buckalew joked, “I think she looks more like a Coca-Cola!” to which his wife, Cassandra, answered, “You better say a Diet Coke!” We had a big laugh and it was a wonderful night honoring WellStar’s trauma network, which is the largest provider of trauma and emergency care in the state of Georgia. The event itself raised over $800,000 for the trauma network. Yes, you read that right, $800,000. I have worked in fundraising and that number is something nonprofits can only dream of raising, so congratulations to WellStar for a fun and successful event.

It seemed as if everyone in Cobb was at the Braves Opening Day, and I have no doubts as to why. The weather was beautiful and this was the first chance many had to see SunTrust Park and The Battery. One special event after another happened and I was thrilled to be a part of it, thanks to an invitation from the gracious Mark and Rhonda Jacobson, owner of Cumberland Diamond Exchange, to sit with them. However, I did have to apologize for having to pull my laptop out during the pregame ceremonies in order to write and send my story on the tailgating scene for the following Saturday’s Marietta Daily Journal. While everyone was clapping and celebrating, my nose was stuck in a computer and my fingers were typing away! In addition, its big, black bag was not exactly a great fashion accessory for the rest of the evening but I was just happy to be there and be a part of history. Go Braves!
