I got, I got, I got options I think it high time to sidestep the opening line of old – ‘It’s been a year of . . .’ – and freshen up the greeting. Afterall, we’re into a new season, so stretching the legs and dusting off the coats for some winter exploration is not to be frowned upon. And, whilst we’ve got a few more ‘options’ up our sleeves to duck across the ditch or potentially relax poolside in a tropical paradise, many of us will be setting our sights on making the most of our local regional fare and fun. Yippee! Options to get involved and support abound across this issue of . June is an especially important month for Coeliac sufferers. Countrywide Kiwis are banding together for a month-long awareness campaign to show their support and ignite greater conversation about this disease, turn to page 29 to learn more. Winter is a great time to tuck into some classic flavours and remarkable sights. Turn to page 37 for our Chicken Pot Pie Soup recipe that’s destined to be a favourite with young and old. And, make a date to stroll around Lake Rotopounamu en route to Ohakune (turn to page 34 for our Ohakune Bucket List) and immerse yourself in its beauty. It’s been a great year already with IRONMAN taking place at the end of March. It was a bit different this time with no international competitors, or their support crew being able to enjoy our wonderful district, but it was a stunning day with perfect conditions. And, it was also great to see so many locals lining the streets cheering on the athletes – a warmup to when we host the IRONMAN 70.3 World Championship in December 2022. To those visitors coming to Taupō to experience the snow – welcome! Winter is always a magical time in Taupō and my breath is often taken away as I look out over the lake to the snow-covered mountains on the horizon. We’re lucky to be only a short drive to Ruapehu for some fun on the slopes, and there is nothing better than relaxing in our thermal waters. And, let’s not forget our great restaurants and bars that come alive with the people here for their winter snow fix and hearty winter meals. Of course, we’re also cautiously optimistic about the travel-bubble that is now open between New Zealand and Australia, and hope to see many of our friendly rivals from across the ditch enjoying our district at this time of year. Stay safe and warm, and I hope to see you out and about enjoying everything that our beautiful district has to offer!

Collaboration is key Kia ora koutou, There’s a lot happening in Rotorua right now and we are very much open for business. Our district is the perfect place for a winter getaway so we hope you’ll come and check us out. You can enjoy our wonderful outdoors and the many activities and attractions we have here, and winter is the best time of year to enjoy our geothermal pools and spa offerings.
In future you’ll have even more choice with a new spa/ hotel and a new version of our world-famous QE Health Wellness and Spa complex being developed – both at our city lakefront which is undergoing its own major revamp. In the face of the pandemic’s profound impact, our council decided to not retrench but to back our community, and invest in creating a positive future for our district. Work to tackle issues like our housing challenge continues in collaboration with Te Arawa, central government agencies and others. Partnerships remain key to achieving the positive outcomes we need for our community and we have adopted a long-term plan that is focused on action. In uncertain times we need bold leadership. Time to catch-up with the city’s needs Kia ora koutou, Tauranga is a great place to live, but the message we’ve been getting from people throughout the city is that our community facilities and infrastructure have not kept pace with our needs.
From my own observation, Tauranga lacks the modern facilities most New Zealand cities take for granted, and many of those that we do have are ageing. Added to that, a lack of housing stock has driven house and rental costs up to the point of unaffordability and our roads are clogged. Some of our issues are complex, but the reality is that because we didn’t start investing in solutions years ago – now we have to play catch-up. In April, the city commissioners approved a draft 2021 – 2031 long-term plan that provides for more than $4 billion of investment in community facilities and infrastructure over the next 10 years. None of that is frivolous spending and it prioritises our most urgent needs.

Unfortunately, rates increases are unavoidable, but we’re asking our business sector to pay a fairer share of the costs through an increased commercial differential rate, and developers will be asked to play their part through higher development contributions. We’re also working with regional and central government to access more infrastructure funding. If we want to live in a city we can be proud of – now and in the future – it’s time to stop ‘passing the buck’.

ctivated Carbon NZ (ACNZ) is an innovative carbonproducing company founded by five shareholders, in the heart of NZ, Taupō. In December 2016 they actioned their vision to produce the high grade activated carbon whilst staying environmentally conscious. To-date, they are the only company in New Zealand producing activated carbon from the significant – and abundant – bi-products and waste of the forestry and milling industries – all other activated carbon is imported. All product is made from organic Pinus Radiata waste sawdust. It is manufactured via a complex activation technique which essentially cleans out the cellular structure of the wood, producing high quality and highly adsorbent activated carbon. “We believe in being proactive. What is activated carbon? Activated carbon (or activated charcoal) is a fine, odourless, black granule or powder. Produced from carbon-rich, organic materials such as wood, coal, and coconut shells, it goes through an ‘activation process’ which cleans out the pores and eliminates the organic volatiles, leaving just the carbon pore structure and increasing surface area. As a result, one teaspoon of activated carbon has more surface area than a football field. Simultaneously, the pores and micro structure are then able to attract toxins and chemicals to it, hence used in areas of purification. Activated Carbon NZ supplies New Zealand industries with the highest quality wood based activated carbon, and can manufacture carbon up to 1500 square metres per gram – depending on the application required.
What are its main uses? Combat environmental pollution Activated carbon is capable of adsorbing undesirable components from gases, making it an incredibly valuable air quality control and purification product, from gas masks to industrial air filtration. Harmful pollutants which are traditionally removed using chemicals can be removed naturally using activated carbon. Water filtration One of the most common uses

of activated carbon is to filter water, and it is widely used in large scale water purification treatments. It can tackle a large number of contaminants, including chlorines and a large percentage of fluorides – improving water clarity and removing odours, toxins and other chemicals. General health Activated carbon is considered to be a natural cure for a variety of ailments, and it’s a great alternative to medications or products which contain artificial ingredients.
By filtering out undigested toxins and drugs, activated charcoal can assist kidney function, neutralise intestinal gas and is widely used to treat overdoses and poisoning. Cosmetic Because activated carbon can help draw microparticles such as dirt, dust, chemicals, toxins, and bacteria to the surface of the skin, it is often used in face masks, deodorants and in teeth whitening products.

W
hen it comes to the statement, ‘it’s not what you know, but who you know’ Kiwi muso Dan Sharp concurs – with a few small caveats. The acoustic-folk-pop aficionado delved into a full-time music career five years ago (at the ripe old age of 24) and credits being in front of the right people, good timing, and good ole fashioned hard work, to his rising success in the New Zealand music industry.
Wised up “I left my finance job in Auckland in 2016 to pursue music full time – but it took me a long time before that to fully commit. I had been told I would have to ditch the nine-to-five job to make a real go of it, so I finally made that call,” says Dan. “Being a little older, I was definitely aware of who I was and what I wanted artistically – I was never going to be the next Justin Bieber! However, not having a major record label behind me, and not having to factor in what a mainstream pop audience wants, is definitely a creative blessing.” 24
Full steam ahead What Dan hasn’t missed out on is opportunities to join hands with some of New Zealand’s top music producers, and play at some of New Zealand’s renowned festivals – such as Rhythm and Vines. In 2018 he linked with acclaimed artist/producer Thomas Oliver to produce his first debut single Lifeline which received attention here and abroad. His song Kindle and Coal landed on a major Spotify playlist – receiving 500,000 plays in under two months. Most recently, his song Way That You Used To effectively landed him a record deal on the spot.
In the zone And when it comes to actually crafting his tunes, Dan stays open to whatever the universe sends forth – no matter what the time of day or place. “Often, it’s when you’re busy doing routine things like driving, when great song ideas present themselves. It’s like your creative brain checks in! So, I’ll pull over, sing the idea into a voice memo on my phone (I’ve literally got hundreds of them stored).
“In terms of inspiration, it’s those touching moments, maybe my own experience or someone else’s, where you feel compelled to tell that story. Good storytelling is a beautiful thing and definitely the basis for the hit songs we all know.”
Seize the day And, while Dan’s story to-date has been an equal mix of talent, tenacity and perseverance, he’s focused on open-mindedness to get him through the next leg. “Before Covid turned the world upside down I had planned on heading to Europe to base myself out of Dublin. They have a great creative community over there that I really identify with as a musician,” he says. “For now, I’m really enjoying my base just outside of Tauranga – I’ve got a studio on an orchard, so I have a quiet space to let my creativity flow. I’m also touring New Zealand and grateful to spend time in many of our small towns and main centres – it’s a blessing.”

any Kiwis will know someone who suffers from Coeliac disease. Whether it’s a parent, sibling, friend, neighbour or distant relative – our Coeliac circles are close. What isn’t always closely tied is our understanding of this serious inflammatory disease and the diversity of its impact on lives. This year the theme of Coeliac New Zealand’s awareness week is ‘What’s Behind the Label’ and it aims to give greater insight into the many ways one condition can affect people of all ages and all walks of life.
Breaking down the barriers Here in New Zealand, an estimated 60 to 70,000 of the population have Coeliac disease. However, the rate may be higher because many of these people will be undiagnosed, or their condition incorrectly diagnosed as irritable bowel syndrome. Symptoms differ greatly across age ranges, ranging from persistent abdominal pain to joint pain, to neurological issues, amongst others. Because this life-long condition doesn’t pick and choose, it’s more important than ever before to break down, and destigmatise, what’s behind labels like ‘the gluten-free diet’ and ‘Coeliac disease’, and offer greater support and encouragement to those whose every day routines, relationships and

social situations suffer at its hands. Coeliac NZ is urging Kiwis to get involved in strengthening conversations by jumping onto their Coeliac NZ Facebook page and participating in local activities and events countrywide.
Get inspecting Taking a closer look at food labelling is also on the cards this awareness week. For people with Coeliac disease – and those choosing a gluten-free lifestyle – the Crossed Grain logo that features on glutenfree products represents certainty and safety. And, with an everincreasing demand for gluten-free foods, and with new products regularly hitting the marketspace, verified certification isn’t just a nice to have for Coeliac sufferers – it’s a must-have. The logo is also easy recognised – a simple sheath of wheat with a line through it – making it a quick reference point, and guaranteeing genuine gluten-free status.
Who wears the Crossed Grain logo? To meet New Zealand’s strict labelling laws, products that display the Crossed Grain logo must demonstrate they:

Beauty on the Beaten Track Lake Rotopounamu . . . what fairy tales are made of Dyani Van Basten Batenburg
T
he enchanted forest may be the whimsical creation of famous author Enid Blyton – but if there was ever a magical place to visit, it’s well and truly founded close to home. Just a short venture from Turangi – a mere 11 kilometres – you’ll find a hidden treasure of botanical beauty, wispy waters and birdsong in abundance. Lake Rotopounamu – ‘roto’ meaning lake and ‘pounamu’ meaning greenstone – is nestled into the side of Mount Pihanga, and many of us tour past it on our way to the slopes and mountain biking trails of the great National Park.
Break into song The lake itself is breath-taking – still like a mill pond on the day we gazed upon it – with a ‘Lord of the Rings’ air about. Long Beach flanks the eastern side of the lake and is perfect for eats and drinks replenishment – plus there’s a toilet! Whilst it was definitely a special moment admiring the waters, it was the birdlife that took me by surprise. Kereru, falcon and kaka all call Lake Rotopounamu
home and aren’t afraid to make themselves known! The North Island robin also thrives in this habitat thanks to the commitment and the dedication of Project Tongariro team who work to preserve this World Heritage area. Our takeaways from this lake bliss? Definitely pack a picnic, the camera and gift yourself enough time to soak in the stunning scenery that unfolds at each turn.
Keep your eyes pierced So ‘tucked away’ is this wee lake that it’s hard to know it’s even there unless you look for it. You may even be forgiven – like myself – to assume the cars parked on the side of the main road, opposite the walkway’s entrance, are pulled over for a toilet break or pitstop. In some ways it’s the anonymity of this walkway that actually gifts it more of a ‘wow’ factor when you start upon it. Legend tells the lake was forged by a landslide around 10,000 years ago. The lake itself is a mere kilometre in size and nine metres deep, is fed by four tributary streams, and it also boasts three beaches which are easily accessed as you stroll around its perimeter. Strolling is definitely the word on the lake here – no unsightly steep uphills or downhills await you – it is a gentle meander from start to finish. Hubby and I kept a steady pace – with a few stops to admire the beaches and flora and fauna along the way – and we were surprised to find ourselves back at the car within an hour and 20 minutes (sign posts indicate two hours to walk the entire loop).

Explore the Whanganui River Spanning 290 km, the Whanganui River is New Zealand’s longest navigable river – and delivers a full spectrum of activities to engage with. It’s also dairy-free, grain-free, gluten-free, and paleo-friendly. Everyone’s a winner! »2 large boneless, skinless chicken breasts cut into small bite-sized chunks » 2 tbsp olive oil » 1 onion finely diced, 1 cup » 3 carrots finely diced, 1 cup » 3 stalks celery sliced, 1 cup » 5 – 6 cloves garlic minced » 500gm agria potatoes finely diced » 2 cups chicken broth or stock »1 cup full-fat canned coconut cream or milk » 1 cup cashews* » 2 tbsp fresh thyme leaves » 1 1/2 tsp salt » 1 1/2 tsp dried sage » freshly cracked black pepper » f resh parsley leaves chopped to garnish *Nut Allergies? You can substitute cashews for 1 cup of steamed cauliflower, blended together with the coconut cream/milk. Although it may be tempting to leave the cashews – or their substitute – out completely, don’t do it! They’re important to the recipe.
How to . . .
If you don’t have a sauté function on your slow cooker, heat the olive oil in a large saucepan over medium heat. Sauté the onion, carrots, and celery until the onions are soft, then sauté the garlic for approximately one minute or until fragrant. Next, transfer the sautéed mixture to the slow cooker. Add the potatoes, chicken broth, chicken, sage and thyme. Cover and cook on high for four hours or on low for six hours. In the meantime, make the cashewcoconut cream. Add cashews to a high-speed blender and blend until fine. Add coconut cream/milk and blend until very, very smooth. When

the slow cooker time is up, and the potatoes are tender, stir in cashewcoconut cream and season with plenty of salt and pepper. This next step is the fork in the road. So, on a low heat,
warm through and add additional water/stock/coconut cream to reach desired thickness – with additional salt (garlic and herb salt is another great addition) and pepper to hit perfectly seasoned notes. This smooth style soup is destined to serve a larger crowd. To top it all off – for added comfort – pair your tasty soup with garlic bread or garlic pitas. 37

or those of us unimpressed by the current state of the property market – join the party. Fortunately, home ownership is not the only option we have when it comes to getting ahead, saving or soldiering into future retirement – but it does involve letting go of the quarter acre dream and picket fence that us Kiwis have long been seduced by. Our housing market may be one of the most unaffordable in the world, but our share market is top of its class. According to Credit Suisse’s latest Global Investment Returns Yearbook, New Zealand’s share market is the fourth-best performing on the global stage – go us! And, unlike housing – limited by supply and demand – the share market delivers greater opportunity to diversify investments across multiple countries and industries. No picket fences required. So, where to begin a share market journey? And what exactly should that journey ‘look’ like in the big scheme of things: what should the term of your investment be; how much and who to invest in; and when can I start? Think long, aim wide and consider the bigger picture, say share experts.
Go long First things first, what’s the share market’s deal as a whole? In a nutshell, share markets across the globe perform two key functions: • They allow companies to raise capital from the public to invest in ideas and assets and,

• They allow owners of companies (shareholders) to buy and sell their shares. Essentially, if you own shares in a business, you own part of that business. Instead of owning the whole company outright, you own a small percentage of that company (with some paying out six monthly/ annual dividends), and gifting (hopefully) greater returns when you sell off your share portion down the track. “The reason share markets came into being is that there were a whole lot of companies out there that wanted to get bigger, so they needed to bring on outside capital to do that,” explains Mark Lister, head of research at Craig Investment Partners. “And, then you have people with excess savings pools who are wanting to invest it in something. So, share markets facilitate that – they match up the investors with businesses.” Regardless of business type or amount of dollars to invest, traditionally a long-term mindset is what many investors possess, says Oliver Mander, CEO of NZ Shareholders Association. “Investing is all about the long-term – and by that, I mean decades. While many people get worried about even day-to-day fluctuations in value, a long-term, diversified collection of shares or funds will help people be better off in the long-run,” he says. “Over the long-term (i.e. the last 100
years), the average return on most global markets has been around 8% each year. However, that masks periods of much higher returns marred by significant downturns – like 1987.” And long-term those share market gains are much higher than that of property, adds Mark. “Just
take Auckland for example, across the last five years, share returns are almost double per annum. The NZX50 Index rose 13.2% per annum and real-estate 7.1% per annum,” he says. “Whilst we
don’t expect those leaps and bounds to continue – and I caution anyone looking to start a share portfolio not to use the growth gains across the past five-to-10 years as a blueprint, because it hasn’t been a ‘normal’ period of investing – the share market will typically gift you higher
returns on investment.” For Bay of Plenty locals, Sue and Allan Dent, who started their share market journey 40 years ago – it was never intended as a short-fire way of bringing in the bucks – and it’s paid off. “When we started, Allan was working on the oil rigs in Australia and he was getting tip offs about gold mine investment. So, we started our portfolio and have kept our initial
without actually reducing the equity of our portfolio as the others are rising – it evens itself out.” Despite having some “horrendous” losses, the Dents took it all in their stride and maintained pace. “I remember we made huge money through one gold mine and we reinvested the whole lot (close to $500,000) into another Australian company. Well, they went crook – they hadn’t been true in their reporting – we lost everything. But that wasn’t the endgame, we experienced great highs and lows – and knew we had to just keep persevering. And 40 years later here we are.”
Spread it All investments, including shares, involve risk – but with shares, comes a little more ease as compared to that of housing, says Mark. “With shares you have no running costs, no maintenance, ease of accessibility to buy them. And it’s easy to diversify them – you can spread $10 to $100,000 right across the world – which reduces risk,” he says. “That diversification means that even if one or two go really badly, the other shares in your portfolio will balance those losses out.” There is no such thing as a ‘safe’ investment. However, in theory though, the more risk attached to an investment, the higher the return should be.

“And of course, if something seems too good to be true – then it probably isn’t true,” adds Oliver. Thinking further afield means accessing all these other interesting companies that are doing great things too. “Why wouldn’t you diversify!? New Zealand could have an earthquake, a great outbreak of foot and mouth disease, the government may make some really poor decisions. Often, we have our house and business in New Zealand – many of us are massively dependent on New Zealand ‘doing well’ – so when it comes to shares,
I think it’s sensible to have some of your money offshore,” says Mark. “Historically we know that shares yield a higher return than property, but you will have to stomach all the ups and downs along the way.”
Speak up So, with diversity and long-term forecast in play, what to actually look for in a business when choosing who to invest with? Firstly, understand the business you are buying into. Its story, including what it does, how it thinks it will grow and where its challenges lie. “We look for a strong market position – businesses that are really good at what they do. Maybe they’ve got the best product, maybe the best market share, maybe they are more innovative, or have the strongest brand. We also look for a strong future growth profile, for example this might be a retirement village because we have an ageing population. Something that’s the opposite might be an oil company as we move away from fossil fuels. So, you isolate those businesses based on where you see a growing customer base or demand,” explains Mark. “Next we look for a good management team – you back the jockey as much as the horse – because the quality of that team is really important. It can be really hard assessing this aspect because it can be subjective and access to company information can be limited. But save getting in front of them, you can read public records, reviews – do some investigative journalism.” Having a ‘portfolio plan’ that gives you good diversification across a range of industries and geographies is a must, says Oliver, and the exchange-traded funds on the NZX can help with that. “Typically, a smaller new entrant has the potential to disrupt the bigger players or fall flat on its face. For most people, we don’t want our portfolio to be loaded up with established players (we want some of these because in most cases they will withstand a recession), we want

currency, like the NZ dollar, is backed by the assets and income of the country that supports it.” Watch this space, adds Mark. “There’s a lot of interest in it and it’s definitely something to watch closely to see how it plays out.” Something 21-year-old Aucklander Reuben Armstrong and his friends are already doing intently. “I started investing in crypto about four months ago, my good friend a little before me and also my older brothers and their friends last year. We see it for the short-term gains – I want to travel next year so am hoping to make a decent amount this year to make it happen,” he explains. “At this stage I’ve invested $5000 in crypto and I’d like to see that jump substantially by the end of the year. My friend, for example, has already made $20K this year and is on track to achieving $100K by the end of the year.” Does the high level of risk that crypto brings concern him? some new exciting ones in there too because they hone that long-term growth.”
Start me up Typically, share buying was touted as an older person’s game – the traditional mum and dad investors with a bit of cash behind them. However, the tables have turned, largely because the concept of dealing with sharebrokers and the stock exchange seemed inaccessible to most, and once upon a time you needed at least a few thousand to make it worthwhile. The ‘new’ investor is much more likely to be young, with an equal mix of gender, and from a cross-section of New Zealand society. “Nowadays, new platforms like Sharesies, Hatch and Kernel have helped to make investment much more accessible to everyone,” says Oliver. “That’s a great thing – it allows people to invest what they can afford and at a pace they can maintain. Just be aware these platforms are facilitators
– they won’t guide you.” And as for the rise of cryptocurrency – that’s in another investment class of its own – and its impact on the share market – if any – is unknown, say both Oliver and Mark. “Cryptocurrency is just a lot riskier than the likes of property, shares or a term deposit because it’s not backed by a ‘real’ asset,” says Oliver. “Lovers of crypto won’t like me saying that, as they say there is finite supply that underpins the value and that cash isn’t ‘real’ either. I disagree – anyone can start up a competing cryptocurrency – but a government

See the light Maximising height and light are also key interior winners in any room. As a general rule of thumb, the higher the curtain rod, the taller the window will appear. By placing your rods closer to the ceiling and opting for floor to ceiling drapes, you’ll create that illusion of height. Fortunately, nowadays it’s not hard to come by beautiful linen-look sheers for a reasonable price – think Spotlight, Briscoes, The Warehouse, Ezibuy. And, overlaying textured neutral curtains above roller blinds gifts a sense of depth and movement. As for light, second-hand stores or Trade Me are great places to pick up lampshade bargains. Both table and floor lamps make great character pieces in any room – and often you can revamp an old shade with a hot glue gun and new fabric for under $20 dollars. Funky Finger-Knit N ecklace What you’ll need . . .
Now, start again – just like you did at the beginning – and weave the length of wool over and under your fingers until you have another two sets of loops. Then, pull the bottom wool over the top wool. Continue this pattern until your form a chain.
• Wool – choose any coloured ball of wool you like • Scissors • Beads – aim for four or six medium sized coloured beads
Finally, tie off the end of your finger knit chain by knotting the ends of the wool. Leave the strand on the end long because it will be the second side of your necklace.
How to . . .
Slip a large wooden bead at each end of the necklace for added decoration – and you are done! Absolutely fabulous!
Put down the iPad and pick up the wool! Up your fashion stakes and try this quick and easy DIY project.
Start by taking the tail of the wool across the palm of your left hand (or the one you don’t usually write with.) This tail will be one side of your necklace so leave it approximately 15-to-30 cm long to adjust the length. Next step, don’t cut the wool length off the ball just yet! With the wool still attached to the ball, weave the strand over and under your fingers heading towards your pinkie. Then, once you reach your pinkie finger, repeat going back to your ring finger. Repeat this same pattern until there are two loops of wool on each one of your fingers. Next step, beginning with your ring finger, pull the bottom loop closest to your palm over the second loop, and then off your fingers.

Want to take wool to the next level? Bomb it! Yarn bombing – as it’s been labelled – is fast becoming a popular thing to do. Simply take a ball of multi-coloured wool and choose an inanimate object like a lamp, picture frame, trophy, skateboard deck. Once you have your object, trim off a length of wool, and start wrapping it tightly around the object – making the wool as form-fitting to the object as you can. When you reach the end of your length, use a little hot glue to keep it in place and then continue on with new length until your whole object is transformed into a tight-knit woollen wonder!

3-ingredient Scones! There is everything to love about these totally easy-peasy scones. And for those who aren’t fans of the humble lemon – no probs – these don’t taste lemony at all.
What you’ll need from the cupboard and fridge . . .
• 3 ¼ cups Self-raising flour • 300ml Whipped cream • 1 cup Chilled lemonade soda
Optional: sprinkles, edible glitter and other decorations How to . . . Step 1: Turn on the oven to 220°C bake/ fan-bake, and line a baking tray with baking paper. Step 2: Next, place the flour in a large bowl and make a well in the centre.

Stir in the lemonade and 1 cup of the cream. Then, using a flat-bladed knife mix until a soft, sticky dough forms. Step 3: Now, remove dough from the bowl and place onto a lightly floured surface. Knead gently until just smooth – approximately 30 seconds to a minute. Roll out using your hands or rolling pin – roughly 3 cm thick – and using a pastry cutter (or carefully using a bread knife by hand) cut out 20 scones – re-roll the dough if you need to. Place the scones on the prepared tray and brush the tops with your leftover cream. Step 4: Into the oven they go for 18-to-20 minutes – or until risen and nice and golden brown on the top (they should also sound hollow in the middle.) Step 5: Serve warm with jam and cream, honey, Nutella, golden syrup – whatever tickles your winter fancy!
