RUNNING COMMENTARY I grew up pretty good. We never went hungry—or rather, there was always food. Ever see that episode of Malcolm in the Middle with the leftover casserole? Yeah. My mother cooked nearly every meal we ate, taught me to cook, bake (my sister, the vegetarian, is actually the best baker out of the 4 sibs), and while it also took me a few kitchen jobs and burnt biscuits, I’m a confident cat around the range. Up until I added the “The” to my on-air personality and took on the day-to-day management of this fine publication, I was the principle preparer of meals around the Irons house. I love havin’ folks over and feedin’ ‘em. I’m happiest when the table is laid out, people are eatin’ and drinkin’, music is playin’... Put all that together and every day feels like Thanksgiving! But as I mentioned, things were not always thus. I’ve ruined more evenings than I’d care to admit. I’ve been known to get bent out of shape over small things like a broken yolk or scorched gravy. The first corned beef I tried to boil came out like a pickled brain. Rubber roast beef, charcoal steaks, cardboard chicken, fallen cakes, raw pies… I’ve done it all. These days, my wife handles a lot more of the dinner time duties. When we met, I think she had a bottle of A.1. and a Miller Lite in her fridge. It’s possible she could’ve been capable of boiling water—but I wouldn’t have bet on it. But today? She’s become a pretty decent lil cook, and there’s even a dish or two she beats me and Ma at—but don’t tell Ma, okay? So many of my happiest memories revolve around the meals that made broken days feel better and lousy road trips worth it. I remember Mrs. Marge’s buttermilk pie (I still can’t replicate it), that sausage & peppers sandwich in Savannah on St. Patrick’s day, Amanda’s first deep-dish cheesecake that I thought couldn’t be topped (she topped it), Ma’s meatloaf and scalloped potatoes, those Boston butts I smoked on my birthday four years ago, those impromptu Raysville Friday night fish fries where everybody got along… for a while any way. But the king of all meals has to be Thanksgiving. It’s my favorite meal of the year. Every year. I love the ritual, the comfort of family recipes, the early morning and the late night that comes from creating a signature meal for a large group of people from scratch. The turkey and stuffin’, mashed potatoes & gravy, green bean casserole, squash casserole, carrot casserole, oh-so-many-casseroles, pumpkin pie, pecan pie, caramel cake, rum cake, red velvet cake, oh-so-many cakes… I don’t have a point to any of this, kids. I just wanted you to know that as you read this, I’m probably elbow deep in a turkey or sittin’ by a fire with a beer in my hand waiting on said turkey. I also want you to know that I’m happy and thankful that I get to be a part of this paper, and I get to do this because you keep picking it up and reading it. Putting the 11th Hour together is a lot like making Thanksgiving dinner. There are lots of ingredients, lots of timing, a fair amount of sweat (not a few tears), and in the end, it’s the people that come together over it that make it special. So thanks, ya’ll. I love ya, and may the wishbone break yer way!
