Water & Whiskey:
À LA CARTE DINING
THE PERFECT BCC MANHATTAN & OLD FAHSIONED By Patrick Owens, Beverage Manager
Recently, I tasked our bartenders with creating the perfect BCC Manhattan. Most importantly, I stressed to them we only need to create this perfect cocktail once; then we will figure out how to serve it countless times with consistency. A monumental task for any bartending team. When you make a cocktail at home you pour your liquors over the ice, stir, and pour into the glass. Ice serves many functions in your cocktail. Beyond chilling the drink, the ice melts and dilutes the spirits with water. This makes the entire concoction more than just palatable. The dilution brings the balance of sugars, acids, astringents, and spirits into focus. The dilution provides a clear picture, a glimpse into the mind of the artist behind the craft.
“We can make sure every cocktail, every time, is perfectly proportioned, mixed, and diluted.” To create 200 perfect cocktails every day, we must take out the inconsistent factor of melting ice and focus on pure water. We measure in very precise milliliters the amount of houseaged Woodford Reserve bourbon, Carpano Antica Vermouth, angostura bitters, and water. By doing this we can make sure every cocktail, every time, is perfectly proportioned, mixed, and diluted. Now, when any
member asks for our BCC Manhattan, a bartender takes only 10 seconds to pour from a chilled bottled of the batched Manhattan into a bespoke glass, adorned with a large 2.25” ice cube and three Fabbri Italian amarena cherries.
“The journey of the cocktail begins strong and with bite.” And the water? We pull it from a special machine that filters out dirt and particulate before using ultraviolet light and reverse osmosis to remove bacteria and mineral solutes from the water. This water makes our cocktails as pure and clean as possible. Once we had dialed in the perfect ratio of ingredients, we decided we could not stop there-we now had to make the perfect Old Fashioned. When deciding on the bourbon we leaned on Elijah Craig 94-proof Small Batch because of its inherent touch of sweetness and warming vanilla when enjoyed over ice. To this we added housemade demerara gomme syrup (also known as Sugar in the Raw), Fabbri amarena cherry syrup, a housemade concoction of bitters constructed with toasted cacao nibs, West Indies bay leaf from
Grenada, and fresh spring figs. After two hours of deliberation, we made 15 sample recipes until we dialed in the exact ratio of each ingredient to craft the now perfect BCC Signature Old Fashioned. Both cocktails are precisely crafted to be poured over ice, so that the journey of the cocktail begins strong and with bite. It eases the imbiber into the experience. As the ice softens the beverage, it becomes sharper and more focused, with the balance of sugars, acids, astringents, and spirits coming together to create a most satisfying concoction. Five to 10 minutes into the experience, the drink has become dangerously quaffable. Simply gulpable, chuggable, and irresistible. ◆

GOLF
REASONS YOUR CHILD
SHOULD PLAY GOLF By Danny Murphy, Junior Golf Leader
At BCC we strive to bring the best instruction to our juniors in more ways than one. We want them to succeed and have fun, but at the same time learn life lessons. Golf gives us a space where we can teach them not only to be a great golfer, but also grow as young men and women in a safe environment. We cannot wait to have some fun this summer with all of the activities we have planned. â—†

GET THEM OUTDOORS
Golf gets your child to go outdoors, and away from electronics for a couple of hours. Let them enjoy nature and get them to move around while enjoying a game they can play for life. STAY FIT
Golf is a physical game that requires walking and athletic motions for a couple of hours. It keeps them active and helps to build strength in a developing junior. FAIL FABULOUSLY
We all make mistakes. It is a large part of being human. Every shot they will come across on the course will present an opportunity for them to hit a terrible shot. Let your child learn about failure and disappointment in a supportive environment. ACHIEVE SUCCESS
New golfers will face many failures when first starting out but eventually they will start to overcome those challenges with success. Golf gives us many chances to overcome disaster and develop a positive attitude.

ETIQUETTE
Children are expected to dress and act properly, respect the rules, and behave like young men and women when on the golf course. They learn how to introduce themselves to other players and behave in a proper manner. June 2020

VALUABLE FAMILY TIME
Being able to spend two to four hours on a golf course with family is precious time. That time together can lead to meaningful conversations and memories for life. COMPETITION
Friendly competition is fun, especially when playing against a close friend or family member. From putting competitions, to match play on the course, there’s a multitude of fun friendly competitions to participate in. OVERCOMING OBSTACLES
Golf is a game that loves to give us challenges. From the hazards to the lipped out putts, there will always be challenges on the course. We learn to accept the challenges golf throws at us, just like in life, and adapt so we can succeed. HONESTY & VALUES
Golf teaches everyone to be honest when keeping score and to call yourself on rules violations. Very few sports are self-refereed like golf is, but learning at a young age how important honesty and values are can be extremely beneficial in long-term development. FUN & FRIENDS
Golf is made to be played with friends and family. In the end golf is a sport and sports are meant for us to enjoy and have fun with. Friendships can last a lifetime with golf by their side.

...we are committed to preserving and protecting the American Elm trees... GREENKEEPER'S UPDATE By Tim Kennelly, CGCS, Head Greenkeeper As you know, the Club has been working diligently on the Lifestyle Facilities Master Plan and has hosted numerous focus groups and Town Hall Meetings this spring. Throughout the process, Club leadership has made it very clear that we are committed to preserving and protecting the American Elm trees between the clubhouse and adjacent putting green. In early February, Wetland Studies and Solutions, Inc. (WSSI) was hired to provide an assessment of the trees and determine their suitability through the proposed renovations and clubhouse expansions. We were recommended to WSSI by Carroll Tree Service, who has cared for our existing Elm trees for numerous years and has a working relationship with their Senior Urban Forester Chris Cowles and Certified Arborist Cene Ketcham. They have worked together on numerous tree preservation projects starting at Johns Hopkins University and recently completed a successful tree restoration project on the North Lawn at The White House. Also, Carroll Tree completed the iconic Elm tree work in Washington, DC with the completion of the Lincoln Memorial Reflecting Pool Revitalization Project. They have completed their findings and the report and recommendations have been submitted to leadership for review. Here is a summary of the Tree Inventory and GPR Root Investigation Study Report: The trees were found to be in generally good health, and roots were mapped at various depths around each tree, 10
June 2020
under the bluestone, and in the grass outside the Tap Room. Though root density varied between the trees, most were found to have good density, primarily in the upper 12 range. There was a surprising quantity of deep roots detected under the existing bluestone patio, which will likely need to be verified as we are determining the location for footers, etc. Mr. Cowles and his team are confident that with their recommendations, the preservation of these trees should be possible throughout construction and for the foreseeable future, within the limits enumerated in the GPR report. The Club is committed to the preservation of the American Elm trees at the clubhouse and regardless of how the Master Plan timeline is affected by COVID-19, there are some proactive and immediate steps that should be taken to improve the overall health and vigor of the trees. Questions have been asked, but unfortunately planting any type of ground covers in the mulch area to improve aesthetics or prevent the washing of the mulch during and after storms is not an option since additional plantings will compete for available water and nutrients of the existing elm trees. Our team will be placing stone in between the trees as step-ways from the clubhouse to the putting green areas. As always, please feel free to contact me or Cathy Wagner if you have any questions or concerns regarding this work. ◆
GROUNDS
Club leadership approved the following measures while the courses were closed: Increase Root Density with Mulch Layer Converting the area under the Elm trees to mulch from the edge of the brick walkway to a minimum of 20’ beyond the tree trunks. This mulch layer will increase root density and bolster overall tree health in preparation for construction and potential root loss. As part of the overall Elm Preservation Plan, this mulch will be kept in place for the natural life of the trees.
Install Drip Irrigation Tree and grass plants have vastly different water and irrigation requirements. Our team will install drip irrigation underneath the entire mulch panel to apply water as needed to the CRZ (Critical Root Zone).
Increase Drainage with Vertical Mulching This method utilizes our team, along with Carroll Tree, to excavate small diameter (2-3) vertical holes with an air tool in a selected pattern to fracture, de-compact, and blend the different soil types identified in the WSSI report. The holes will be backfilled with a special blend of biochar and compost to increase drainage, while improving aeration for the trees' roots to thrive.
Enrich the Soil
In addition to mulching and watering, Carroll Tree will be injecting biostmulant directly in the soil as part of our overall Stress Reduction Measures to improve tree and soil health. This formulation of beneficial micronutrients and rhizosphere bacteria work with microorganisms already present in the soil to facilitate the uptake of nutrients. These materials have been very effective for our American Elm trees that have experienced significant stress in the past. 11

RACQUETS
BACK BETTER THAN EVER! Racquets Enthusiasts, I hope everyone is well and enjoying the warm weather. It has been so special seeing all of you on the tennis and pickleball courts. We could not be more excited to welcome you home and we will continue to add new and exciting programs as our guidelines change. I want to assure everyone we are doing everything possible to make this our best season yet! We have made some updates to the facility. The fence behind courts 4-7 were replaced and new windscreens are being added. The courts themselves are playing incredible. We have a phased approach to reopening all parts of our racquets programs that we continue to work through in order to keep all of our members and staff safe while enjoying our beautiful Club. Our goal is to get everyone back to the courts safely and securely while still offering incredible programs, clinics and special events for the whole family. We have summer tennis and pickleball camps for the kids ready to start immediately once state and local guidelines allow. In the instance they are not given the green light we will be opening two hour junior clinics twice a day every
day-one way or another we will have programming available for the whole family. Finally, we have made it a priority to offer junior clinics in conjunction with all adult clinics to help with family scheduling and provide fun for the whole family! As a reminder please note the tennis and pickleball courts will be limited to every other court. Lessons and clinics are limited in size to adhere to physical distancing guidelines and have been filling quickly. I would encourage everyone to reserve your spot ahead of time for the season. There will be no play without a reservation and please always remember to fill out your health questionnaire. This is going to be a great summer that will bring us all home to the place we love. If you have any questions on any of our racquet sports including squash please reach out to me anytime. Enjoy the beautiful weather and as always we will see you on the courts! â—†
Jarrett Chirico, USPTA, PTR, PPTA, PPR Director of Racquets
Due to COVID-19, the Club is monitoring all Executive Orders from Governor Hogan and our City and County Executives. We will ensure all changes are communicated as quickly as possible and the necessary physical distancing guidelines are upheld.
