With All Your Heart The heart is the connecting point, the meeting place between any two persons. The kind of deep soul intimacy we crave with God and with others can be experienced only from the heart. I know a man who took his daughter to dinner; she was surprised, delighted. For years she had been hoping he would pursue her. When they had been seated, he pulled out his Day Timer and began to review the goals he had set for her that year. “I wanted to burst into tears and run out of the restaurant,” she said. We don’t want to be someone’s project; we want to be the desire of their heart. Gerald May laments, “By worshiping efficiency, the human race has achieved the highest level of efficiency in history, but how much have we grown in love?” We’ve done the same to our relationship with God. Christians have spent their whole lives mastering all sorts of principles, done their duty, carried on the programs of their church . . . and never known God intimately, heart to heart. The point is not an efficient life of activity—the point is intimacy with God. “You will find me,” God says, “when you seek me with all your heart” (Jer. 29:13). As Oswald Chambers said, “So that is what faith is—God perceived by the heart.”

What more can be said, what greater case could be made than this: to find God, you must look with all your heart. To remain present to God, you must remain present to your heart. To hear his voice, you must listen with your heart. To love him, you must love with all your heart. You cannot be the person God meant you to be, and you cannot live the life he meant you to live, unless you live from the heart. Sourced from: Ransomed Heart Ministries

When fall finally hits home, it’s so long bikini and hello pumpkin spiced lattes! There’s also a switch from bright and light makeup trends to warmer, deeper colors. Here is a sampling of this year’s up-and-coming makeup trends and tips.

Sun-kissed Skin

Pucker Up

Let’s Get Hairy

Darker foundations and warmer shades of blush give the appearance of a fresh tan from the beach. The key here is to blend your makeup well enough to make your face look natural. That’s right; 365 days of a South Beach glow and without the UV rays! Using a damp beauty blender after you’ve applied your foundation will give the finishing touch to this all natural look. Tip: Keep the sponge damp. That way it won’t absorb any of the makeup you just applied to your face.

Dark lipstick is always a fad in the fall and winter months, but this year, try layering a black lipstick with a bright red or berry. Blend it in with your finger, and you will have a dark, stained wine look. Muah!

People tend to run straight for the curling iron and hair straightener. This fall, why not stick to a more natural look? Shape your hair to work for you by cutting it in ways that will bring out your natural beauty. If you have fine or thin hair, try a short bob with some layers for that recently blow-dried look. Can you say posh? For thicker hair, we recommend long layers with tapered bangs and a middle part. Bangs will grow nicely with the layers, and a middle part elongates your face.

Orange You Glad You Wore Eye Shadow? Believe it or not, orange is really flattering on the eyes! Blending it with pinks and reds will give you that “sunset” look. Make sure to stay with colors that go well with your skin tone. If you’re lighter skinned, stick with lighter shades of orange. If your skin is darker, you can play with darker tones, such as a burnt orange.

IN THE NUDE Nude colored nails or even bare nails are becoming more popular. This fall, we thought we’d spice it up a bit with a matte top coat. Try shades of taupe, tan or cream.

The New Retirement...

IS NOT RETIRING

W

hen our parents retired it was a celebratory event, a grand exit from the workplace towards a life of leisure, pursuing hobbies and travel. However, retirement is not what it used to be because the Baby Boomers (aged 51 to 69 years) have re-invented the rules. As a member of the largest demographic (estimated to be 76 million), when faced with the uncertainty of their financial nest egg and their fears that Social Security benefits may not be adequate, the Baby Boomers created a new retirement plan, to not retire. In a 2017 survey of employers by the Transamerica Center for Retirement Studies (TCRS) showed that 66 percent of Baby Boomer workers either plan to work past age 65 or not retire at all. This is not surprising as the TCRS 2016 survey revealed that 77 percent of older employees were concerned that Social Security may not be available when it is their time to retire. For many, the new face of retirement involves seeking flexible work arrangements, shifting from full-time to part-time or working in a role that is less demanding and most are optimistic about the future. HOW WE GOT HERE After the market collapse crushed many retirement accounts at a time when most Baby Boomers were approaching retirement age, many abandoned the stock market. That has been a huge blow to their retirement nest eggs as their savings accounts have only earned a fraction of the return needed to build sufficient retirement wealth. According to the Employee Benefit Research Institute’s survey on retirement confidence, nearly 50 percent of respondents had less than $25,000 in savings or investments. Retirement fears have replaced the idyllic vision for this next stage of life as 3 out of 10 surveyed said they are stressed about whether they saved enough for retirement. Another concern for retirees is that they may outlive their money. And with the Social Security Administration’s predic-

tion that 25 percent of all 65-year-olds expect to live to age 90, this concern is valid. With rising health care costs and other living expenses on the increase, debt in retirement is on the increase. According to the New York Fed Consumer Credit Panel, the debt in retirement has increased by 59 percent for all borrowers between 50 and 80 years old in the past decade. THE SOLUTION Continuing to work not only provides retirees with much needed income and benefits, it also offers an opportunity to active and involved. Over the past 30 years, the trend toward continuing to work has increased dramatically. In 1985, the number of people aged 65-plus that working full or part-time was at 11 percent as opposed to 19 percent in 2015. The good news is that as the labor market

before

tightens due to falling unemployment rates and a smaller skilled workforce, the demand for talent is expected to increase creating more opportunities for older workers According to the TCRS survey, there are three actions that should increase the employment potential for older workers: remaining healthy, continuing to perform well at your current job and keeping your job skills and contacts up to date. Not only have the Baby Boomers redefined retirement, they are blazing a trail for future generations to follow. Unlike their parents’ generation, they are proving that the idea of work and

retirement is not an all or nothing proposition. Although most respondents in TCRS survey said they decided to continue working in retirement for the extra income or benefits, 29 percent said they will continue to work for their own enjoyment.

eople are living longer than ever before. Longer life spans, however, present unique problems in terms of decreased mobility, decreased capacity and increased medical expenses. The care of aging parents frequently falls to their children, and often, one child takes on a greater role in caring for the dependent parent. Sometimes, as a means of compensating or recognizing the child who takes on these responsibilities (often at the expense of a career or family), the parent rewards that child with a larger share of his estate. Sometimes, the parent’s wishes are made known beforehand, but when a parent’s intention to favor one child over the others is discovered only after the parent’s death, the other children often feel slighted. Was that the parent’s intention, or was something amiss? People have a right to change their minds – and their Wills. They also have a right to name whomever they choose as a legatee or beneficiary, even if that person is not related.

But what can you do if you suspect foul play, or that a decedent’s Will does not truly reflect his intentions? Louisiana law provides specific reasons for which a Will can be set aside:

Year-Round Tips to Keep Your Aging Skin Looking Natural Pg. 12

LIFESTYLES

Over time our skin ages and it is inevitable that the lines around our eyes or lips will become more visible. Although there are countless skin products that will help hide the wrinkles, sun spots or large pores, according to the American Academy of Dermatology (AAD), the best prevention of aging skin is protecting your skin from the sun.

UNDERSTANDING YOUR SKIN

Your skin is composed of three layers: the epidermis (outermost layer), the dermis (middle layer) and the subcutis (basement layer). Because the dermis contains collagen, elastin, and other fibers that support the skin’s structure, when this layer is damaged by Ultra Violet Radiation (UVR), your skin loses its smooth and youthful appearance. Sunlight is made up of two types of harmful rays, ultraviolet A (UVA) and ultraviolet B (UVB). The short UVB rays are the main culprit behind sunburn whereas the longer UVA rays are responsible for skin damage, referred to as photoaging. When the UVA rays penetrate deeply into the dermis layer of skin, your collagen fibers become damaged. Once damaged, your skin increases its production of abnormal elastin and enzymes (metalloproteinases) so that it will heal. While working hard to rebuild the damaged collagen, these enzymes often malfunction and degrade the collagen, resulting in incorrectly rebuilt skin. Over time, when this process is repeated due to daily UVA exposure, the incorrectly rebuilt skin will form wrinkles.

#1

Apply Sunscreen Daily: Applying a sunscreen with an SPF of at least 15 daily to areas that are vulnerable to photoaging will not only help prevent aging skin, it may also reverse some of its effects. For optimal sun protection, choose a broad- spectrum sunscreen that defends against UVA and UVB rays.

#2

#8

Exfoliate Daily: Exfoliation promotes healthy cell turnover and rejuvenates a dull complexion. Use a gentle exfoliator twice a week for smooth, radiant skin.

#3

#9

Apply moisturizer every day: As we age, our skin becomes drier, so make sure you use a facial moisturizer, body moisturizer, and lip balm. Moisturizers trap water in our skin and help to give our skin a more youthful appearance.

#10

Wash Your Face 2x Daily: According to the AAD, you should wash your face in the morning and evening with warm water and a mild cleanser rather than bath soap. Forgetting to wash your face will prevent your skin’s natural renewal process and cause your skin to age prematurely.

#4

#5

Apply Eye Cream Correctly: Everyone can benefit from using an eye cream because the first signs of aging on the face often appear in this area. Remember to always apply eye cream with your ring finger to avoid tugging and pulling on this delicate area of skin. Lotion Your Neck, Chest and Hands: Repeated sun exposure to these areas result in what is commonly referred to as age spots or liver spots (a small bit of pigmentation caused by sun exposure). By applying sunscreen every day and exfoliating these areas regularly, you can avoid signs of sun damage and aging. Eat healthy foods: Make sure you eat plenty of fruits and vegetables, lean proteins, and healthy fats that are packed with skin-loving antioxidants. A healthy diet promotes healthy skin.

#6 #7

Avoid Sugar: Sugar molecules break down collagen and elastin proteins in the skin through a process called glycation. Repeated exposure to UV rays accelerates glycation causing the degradation of collagen, the forming of age spots, fine lines and wrinkles, skin sagging and an overall uneven skin tone.

Stop smoking: Tobacco smoke contains toxins that lead to a dull and dry complexion, loss of skin’s firmness, premature lines and wrinkles, and leathery skin. Get enough sleep: Make sure you get enough sleep to give your body time to refresh and renew itself. Sleeping in certain positions may also lead to sleep lines, which can turn into deepset wrinkles over time. Finally, do not forget to schedule your annual checkup with your dermatologist. Yearly exams will help detect skin cancer and other concerns in the early stages.

RECOVERING YOUR SKIN’S GLOW

After the ravages of summer sun, your skin will need a bit of extra help to recover its glow. After all the sun, chlorine and salt water your skin has been exposed to, take the time this Fall to exfoliate and moisturize. Exfoliation will help to remove the residue from all those layers of sunscreen whereas vitamin C and retinol can repair some of the sun’s harmful effects. Just remember, a critical component of all skin care is lubrication because dry skin will age your skin and increase the damage of sun exposure.

Coffee, Tea and Laid-Back Family Fun article by Becky Rolland · photographs by Bach Imagery, LLC John "Spud" McConnell and Maureen “Mo” Brennan have made a living for over 20 years by utilizing their dynamic personalities and ability to connect with people. Having worked in the entertainment industry as stand-up comics, actors and radio show hosts, they are now brewing up some family fun with The Big Teasy, the first and only coffee and tea festival in the Gulf South Region. Scheduled for October 22, 2017, from 11 a.m. to 8 p.m., The Big Teasy caffeine festival will be utilizing the Jefferson Performance Art Center’s indoor and outdoor space to offer something for everyone. Festival goers can stroll around in the crisp, fall weather sampling hot or cold tea or coffee while viewing artwork, jewelry and crafts and listening to the music of Tim Laughlin Jazz Trio, The Last Straws and members of the New Orleans Jazz Club. We wanted to make it easy to pick and choose what events you want to attend, whether it’s to kick back or dance. In the meantime, while you are deciding, you can enjoy a cup of coffee or tea and a great conversation.” After a stroll through JPAC’s oak-filled grounds, you can go inside to further the celebrate what Spud and Mo refer to as New Orleans’ 300 year coffee and tea love affair. There will be two seatings of High Tea at 3:00 p.m. and 4:30 p.m., (including delicate pastry items), and upstairs on the balcony will be the Gentleman’s Corner, (where ladies and gents can indulge in a hand rolled cigar and premium whiskey tastings).

They play jazz and ragtime music from the 1890 to 1930’s and it’s going to be a blast!” Spud said. “We wanted to create a fun-filled day for the whole family and it is for a great cause as well,” Mo added, “a portion of our proceeds will go to CASA [Court Appointed Special Advocates] Jefferson. He spent several years on the road doing standup while living in New York and Los Angeles, until he met writer/producer/actor Maureen “Mo” Brennan in 1993 while sharing a limousine ride from New Orleans to the Gulf Coast. Within the year they were married and have since teamed up on various creative pursuits. McConnell has played a number of colorful characters in off-Broadway plays, including Governor Huey P. Long in The Kingfish, and Ignatius J. Reilly in A Confederacy of Dunces. His friendship with actor, John Goodman began when Goodman asked to meet with McConnell in anticipation of the TNT movie, Kingfish. Goodman who was then starring in the television series, Roseanne, brought McConnell’s photo and resume back to Los Angeles and that led to McConnell’s part in the series in a dozen episodes over a 3 year period. Since then McConnell has starred in over 60 films ranging from obscure independent films to major cinematic release movies such as O Brother, Where Art Thou?, Django Unchained, 12 Years a Slave, and Interview with the Vampire. Other than Roseanne, he has appeared in the HBO series, Treme, and had recurring roles on the FX series The Riches, WGN’s Underground, and on Sundance Channel’s Hap and Leonard series. Perhaps best known for his 11 year run as the host of the WWL talk radio, The Spud Show, Spud has been a voice that New Orleanians have come to know, love and trust. His current endeavors include, a weekly television show on WLAE-TV, aptly called The Spudcast. Produced by his wife, Maureen “Mo”

Brennan, The Spudcast covers the New Orleans scene, specifically focusing on local musicians, artists and performers and, of course, food. “We have a segment called Off the Eaten Path, where Mo and I talk about our food adventures to little neighborhood places and mom and pop restaurants that we love and not a lot of people know about,” McConnell said. Besides producing The Spudcast and the couple’s new joint endeavor, The Big Teasy caffeine festival, Brennan has worked in theatre, television and radio and has a long list of acting credits (including Logan, Déjà vu, NCIS: New Orleans, and American Horror Story, among others). Fondly reminiscing on when she first began her love affair with entertainment, she told a story of how at the age of 4 she got lost at a shopping mall in New Orleans, and wandered into a bar. “My mom was looking all over for me and found me sitting on the top the bar, drinking Shirley Temples and singing for everyone”, she said. “Spud and I have entertained people for over a decade and like us, our children have shown have an interest in show biz. We are definitely in it for the long run and enjoying every minute.”

Want to be Vibrant and Flexible?

Try Yoga Isn’t it time to see how Yoga can help your 55+ plus body feel great? According to archaeologists, yoga has been around and for more than five thousand years. Having already earned its reputation as a stress-relieving practice, many are unaware of the other health benefits that Yoga offers. Yoga is especially good for older men and women because as we age, our bodies tend to hunch and compress. The breathing exercises in Yoga will help you strengthen and help you expand your lungs while the poses increase your joint flexibility and sense of vitality. Here are some key benefits of Yoga:

1. EXERCISE WITHOUT THE STRAIN Exercise is a cru-

cial, however a high-intensity cardio or strength training may be too much for your aging body. The alternative, Yoga, offers an excellent low-impact option that makes exercising easier. Yoga, unlike regular strength training, utilizes the weight of your own body in many of the of the postures. And because are not adding any additional weight, you are less likely to get injured.

2. YOGA WILL HELP TO INCREASE YOUR FLEXIBILITY

As we age, our range of motion becomes limited and this often leads to an increase in falls and a decrease in daily activities. A primary benefit of yoga is spinal flexibility. Especially when aging, it is important to keep your spine pliable and your circulation moving. Through developing a yoga routine, you will exercise parts of your body that may not be exercised in any other programs. The gentle stretching of yoga poses will help you to develop a greater flexibility and a better range of motion.

“The body is as young as the spine is flexible.” – Ancient yogic saying

3. YOGA MAKES YOUR BONES HEALTHIER Whether

you are looking to relieve pain from an existing bone condition or fracture or prevent osteoporosis, yoga can help. In a study published in Topics in Geriatric Rehabilitation, the prevention and slowing of osteoporosis was directly attributed to a daily yoga practice. The participants, who were at risk for osteoporosis, were asked to do a 12-minute yoga practice daily over a 10-year period. Those who completed the study showed significant bone density improvements in their spines and femur. 4. YOGA KEEPS YOUR MIND SHARP It may sound simple, but when your body functions better, you are going to feel better. A daily or weekly yoga practice will reduce your stress level and help you feel centered and energized. Most yoga practitioners say that a regular yoga practice leads to having an overall good feeling.

If you are trying Yoga out for the first time, find an individual teacher to work with you, especially one that can customize a routine for you. Don’t be intimidated with some of the more challenging postures, you can always opt for a seated position or meditation. The important thing is to get started, get your body moving and start enjoying your new-found flexibility.

Getting Started Here are 3 basic exercises to get you started. See for yourself how easy healthy can be!

LEARNING TO BREATHE (UJJAYI)

No matter what your age, learning how to take slower, longer breaths not only oxygenates your blood, it also helps to soothe your anxious, distracted mind. When we learn how to breathe it brings our bodies back into balance, including our circulatory, respiratory, and digestive systems. It will also bring your mind back to the present moment. To breathe, yoga style, follow these steps:

• Inhale and exhale gently and deeply while directing the inhalation and exhalation across the back of your throat creating a soft “hhhhaaa” sound.

• Sit with your spine straight and your legs relaxed.

• Repeat this exercise 5 minutes.

POSE LIKE A MOUNTAIN (TADASANA)

Because aging and our sedentary lifestyles have caused a sagging in our shoulders and a curve to our backs, this pose helps to align your body. The basic steps for the mountain pose are: •S tand with your feet hip-distance apart and your hands down at your sides. •R ock gently back and forth, fanning out your toes, to make sure your weight is evenly distributed along both feet and then plant them firmly on the floor.

• Raise your head to look straight ahead, and then lengthen your back and neck towards the sky, thinking of a string attached to your head pulling upwards. Keep your chest raised up and out, but not puffed or rigid. •T ake 10 to 20 breaths in this position. Relax.

CRESCENT POSE (ANJANEYASANA)

This pose is great for stretching the legs, groin, and hip flexors, this lunge pose also strengthens the thighs, butt, lower belly, and other core muscles. Here are the basic steps: •S tand with your feet together, toes forward. •B end forward at the hips until you touch the ground— feel free to bend your knees if you need to. •B racing your arms and upper body on the floor with your fingertips, step your right foot back into a lunge, leg straight out, and bend your left knee so that your left calf is at a 90-degree

angle with your left thigh. Your weight should be distributed between your firmly planted left foot and the ball of your right foot. •F rom the lunge, inhale and raise your arms straight above your head while looking forward and keeping your head straight. Exhale slowly. •R epeat breaths and hold pose for up to 1 minute.

Make this pose easier: Start by standing arms-length from a wall with your feet together. Step the left foot back into a lunge and keep the left heel lifted. Place both hands on the wall in front of you. Bend the right knee deeply (maybe 90 degrees, maybe not). If you’re feeling balanced and strong, explore lifting yours arms up alongside your ears.

Book Club Corner Liz Maddox:

This is the feel-good novel of the year! A Man Called Ove by Fredrik Backman is a clever tale of an angry old man who believes that the world is filled with stupid people, that rules and procedures are important, and that he is always right! The only person Ove has ever loved was his wife Sonja, and she has just passed away. We the audience are introduced to Ove on the day he wants to commit suicide. But circumstances continue to get in his way!

This month's selection: A Man Called Ove by Fredrik Backman

Between the Wines rating:

FIVE OUT OF FIVE STEMS

I have a little confession: I’ve got a soft spot for grumpy old men. My dad who died a few years ago at 95, was the poster child of a curmudgeon. The best way to deal with my dad was with lots of patience and laughter. “People said Ove saw the world in black and white.” That pretty much sums him up. The only color in his life was his wife, and when she died, all the color went with her. But on the very day, Ove’s decided he’s going to end his life, things hilariously don’t go his way. Parvaneh and Patrick, his new Iranian neighbors, strangers, and even mangy cats continue to interrupt his plan. They don’t seem to understand Ove’s boundaries, constantly barging in and demanding his attention.

Barbara:

Next month's selection: The Girls at the Kingfisher Club by Genevieve Valentine

Through his quirky but intriguing writing style, the author delves into the human psyche and invites us in. It’s not a dark place but a familiar neighborhood. Lesson learned from his story: the next time I see that I’m going to cross paths with an old curmudgeon, rather than walk across the street to avoid him, I’ll engage him. I’ll try to learn his story and empathize, try to root out the base of his disgruntlement. Who knows what good things can happen!

LIFESTYLES

It took me a while to warm up to this novel as I didn’t like Ove very much at the start. As the story progresses, you begin to see his pain and enjoy his quirky and gruff nature. I’m glad I pushed forward as it truly turned out to be a wonderful story of love and loss.

Ultimately, this is a book about love, and acceptance, and tolerance, and everything that is good in people. I laughed; I cried, and I passed this book around to all my family and friends. A Man Called Ove is a Swedish book set in Sweden, and there actually is a Swedish movie made in 2015 based on this novel. But if Hollywood is listening, somebody buy the rights and start producing a big glitzy Hollywood film…. and cast Richard Dreyfuss as Ove. Our Between the Wines Book Club ladies loved this novel, partly because a few of us had fathers like Ove, and all of us have known an Ove. I’m betting that you know one too.

Cathy:

Grace can be found in the most unlikely places. For Ove, a depressed, ill-tempered widower who is set on killing himself, it comes in the form of a pregnant Iranian woman and her family who move next door and interrupt his orderly existence. A heartwarming tale that will take you from tears to laughter as Ove, kicking and screaming, decides to live again. I absolutely loved this book! My only criticism is that Ove seemed more like an octogenarian than a 59-year-old.

Marlene:

The takeaway from this novel is to never judge people by where they live, how they dress, the food they eat, the car they drive, the color of their skin…because looks are deceiving. I loved how this moral is presented in the novel.

Focus on Sleep Troubles

Are You Having Trouble Sleeping? As you have aged, you may have noticed that you have developed problems sleeping. You may have thought, “Having trouble sleeping is just a part of getting older.” This is False.

Some health changes are a normal part of growing older, but difficulty sleeping may be a sign that you have a serious health problem, including: depression, insomnia, restless leg syndrome, an obstructive sleep apnea, or a sleep disorder.

COMMON PROBLEM AREAS

ples include beta blockers and overthe-counter pain medications.

Don’t use alcohol to help yourself sleep. It might help you fall asleep, but it makes it more likely you will wake up during the night or have nightmares.

ALCOHOL:

They can leave you feeling tired the next day. Also, they may cause you to take more naps during the day, which makes it harder for you to sleep at night.

SLEEPING PILLS:

Many medications may affect your ability to fall and stay asleep or your sleep quality. Exam-

MEDICATION:

WHAT CAN I DO TO IMPROVE MY SLEEPING HABITS? Sometimes people can’t fall asleep because they didn’t get enough activity during the day. Work some active time into your routine. Make sure to ask your healthcare provider before beginning an exercise program. BE MORE ACTIVE:

Short naps during the day may be a good addition

to nighttime sleep. Do not nap for longer than 1 hour or in the late afternoon, or you may have problems sleeping at night. Don’t force yourself to stay in bed until the time you think you should get up. Get out of bed when you wake, and don’t get back into bed until you are ready to sleep for the night. If you continue to experience problems after trying these solutions, please talk with your healthcare provider.

a t a t t i r F s ' m To by Tom Caruso

Ingredients: 6 eggs 2 large bunches of spinach 1 medium size sweet onion roasted peppers 3 spoonful of artichoke hearts 1 tbs. of minced garlic 1 large piece italian sausage or ½ cup crumbled bacon or ½ cup diced ham 1 cup heavy cream ¼ cup shredded cheddar cheese 1 medium size tomato extra virgin olive oil You can substitute virtually any vegetable you want and I frequently do a meatless frittata. One variation I like is to slice zucchini very thin and place on top like the tomatoes. Sliced green peppers are also very good.

Pg. 30

LIFESTYLES

Directions: 1. To prepare, pour just enough olive oil to cover bottom of large frying pan. Chop onion. Clean and slice mushrooms. Slice artichoke hearts. Wash spinach. Slice meat into bite-sized pieces. Crack eggs into large bowl. 2. Heat stove to medium heat, begin to heat the oil. In about two minutes, place the spinach in the pan. Heat until wilted. Remove and place in food processor or chop to small bits. 3. Add onion and sausage to the pan and cook covered until onion is translucent. Add mushrooms, cooked spinach, minced garlic, and artichoke hearts. Uncover and cook until the liquid from the vegetables evaporates. Cook for about 5 minutes, stirring occasionally. 4. Combine the heavy cream and eggs. Whisk until blended. Add this mixture evenly to the pan and cook until egg starts to bubble. Add cheese and let it slightly sink into the mixture, (you may push gently into the mixture with a spatula). Add tomato slices and push slightly into the mixture. Occasionally run a rubber spatula around the sides of the skillet to separate egg from skillet. Cook 3-4 more minutes, or until the mixture is getting firm. 5. In the oven, place the oven rack 5 inches from the the broiler elements. Set to broil. Wrap the handle of the pan with aluminum foil if it is not metal. Place the pan in the oven and let it cook until mixture is firm and brown on top. 6. Slice and Serve. Buon Appetito!
