The Burning Hut The only survivor of a shipwreck was stranded up on a small, uninhabited island. He prayed feverishly for God to rescue him, and every day he scanned the horizon for help, but none seemed forthcoming. Exhausted, he eventually managed to build a little hut out of driftwood to protect him from the elements, and to store his few possessions. But then one day, after scavenging for food, he arrived home to find his little hut in flames, the smoke rolling up to the sky. The worst had happened; everything was lost. He was stung with grief and anger. “God, how could you do this to me!” he cried. Early the next day, however, he was awakened by the sound of a ship that was approaching the island. It had come to rescue him. “How did you know I was here?” asked the weary man of his rescuers. “We saw your smoke signal,” they replied.

It is easy to get discouraged when things are going bad. But we shouldn’t lose heart, because God is at work in our lives, even in the midst of pain and suffering. Remember next time your little hut is burning to the ground -it just may be a smoke signal that saves you. -Author Unknown

were given naproxen before being discharged from the ER, then were divided into three groups and also given either a placebo, an oxycodone-acetaminophen combo, or cyclobenzaprine. People in all three groups said they felt similar levels of pain relief after one week.

Mardi Gras celebrations date to Medieval Europe. In New Orleans, Mardi Gras celebrations grew out of Catholicism but also wove in “French celebrations, African music, and the masquerade tradition,” says Karen Leathem, museum historian for the Louisiana State Museum in New Orleans. In New Orleans, the first written record of Mardi Gras celebrations is from 1699 with gatherings around a campfire. By the 1730s, much of our modern-day traditions had started: People wore masks in processions, with slaves carrying flambeaux or torches, Leathem said. In 1875, Fat Tuesday became an official holiday in Louisiana. In the late 19th century, the Twelfth Night Revelers krewe started the custom of hiding a bean inside a cake. The person who ended up with the bean would be crowned

king or queen of the ball. The tradition of a plastic baby in the cake started in the 1930s. Donald Entringer, president of McKenzie’s Bakeries, was asked to make king cakes for a krewe. He found some pink plastic babies in a shop in New Orleans’ French Quarter and got permission from the health department to bake them into his cakes. The person who finds the plastic baby inside is said to have secured good luck for the coming year (but is also tasked with buying next year’s cake). There are approximately half a million king cakes sold in New Orleans every year around Mardi Gras, with another 50,000 shipped out to customers in other states. Can Chocolate Be Heart Healthy?

As Valentines Day approaches and the stores fill up with a bountiful assortment of sweet chocolate treats. Have you ever wondered... Could chocolate actually be good for me? Over the past several years’ chocolate has received a lot of discussion as to whether it can help protect your cardiovascular system. One of the main reasons this could be true is the fact that the cocoa bean is packed with antioxidant plant nutrients called flavonoids. Flavonoids are found in the coca plants and they are actually known to protect the plants from toxins and repair damage to the cells in the plant. When we consume vegetables or fruits containing flavonoids, this is know as having an antioxidant power. Flavanols are a type of flavonoid that is found in cocoa and chocolate. These flavanols have been shown to lower blood pressure, improve blood flow to the brain and heart, they have also been known to naturally thin the blood, improve cognition, lower cholesterol, even protect your skin from sun damage. The antioxidant power actually helps the cells resist damage from free radicals that we can be exposed to in the environment.

GREAT NEWS RIGHT? Not so fast! Before you grab a king-sized chocolate bar, we need to examine what type of chocolate will be beneficial–not all forms of chocolate will contain high levels of the heart healthy flavonols. Chocolate or cocoa, for that matter, actually has a strong or even bitter taste–it is processed to reduce this pungent taste to make it more palatable. In doing so, the number of beneficial flavanols is reduced. Most of the commercial chocolates available in stores are highly processed and your best choice is dark chocolate. Milk chocolate is also loaded with

other fats and sugars. Look for bars with 70% cocoa or more. The higher the cocoa content of the bar, the better it is for your health. IS CHOCOLATE FATTENING? Contrary to popular belief, chocolate isn’t as bad as you may think. The fat in chocolate actually comes for cocoa butter, which is made of oleic acid (a heart healthy monounsaturated fat), steric acid and palmic acids are forms of saturated fats. Knowing that saturated fats are linked to increasing the LDL cholesterol levels it is known that stearic acids appears to have a neutral effect

in LDL and the plamitic acid does effect it minimally due to the low content in the chocolate. It is important to watch out for extra ingredients that add lots of fat and calories to the chocolate you choose: caramel, nuts, or marshmallows. Unfortunately, there is not established proof as to how much chocolate is beneficial to the cardiovascular system. Again, everything in moderation, but you no longer need to feel guilty if you enjoy a small piece of dark chocolate every once in a while. IT CAN BE NUTRITIOUS Quality dark chocolate with

70-80% cocoa can be beneficial. A 100gram bar is loaded with soluble fiber and minerals. The fiber content is around 11 grams. The minerals found in the dark chocolate are iron, magnesium, copper, manganese, potassium, phosphorus, zinc and selenium. ENJOY There is considerable evidence that cocoa can provide powerful health benefits, being especially protective against cardiovascular disease. So go ahead and enjoy a bite as a snack or after dinner, knowing that it might actually be good for you.

Chocolate Avocado Truffles Servings: 8-12 truffles Each serving is 100 kcals, 1g protein, 9g carbohydrates, 3g fiber, 7g fat INGREDIENTS ½ cup dark chocolate chips 1 small, ripe avocado, mashed ½ tsp vanilla extract ¼ tsp cinnamon 2 tsp cocoa powder 1 pinch salt Agave nectar (or sweetener of your choice) to taste. Cocoa powder, dried cherries, coconut, or chopped nuts for coating

PREPARATION .Place chocolate into microwave safe 1 bowl and microwave in 30 second increments. Stir chocolate after each increment, until melted. 2. Combine the melted chocolate, mashed avocado, vanilla, cinnamon, cocoa powder, and salt and stir together until smooth. Taste the mixture and add agave nectar (or sweetener of your choice) if desired. 3. Refrigerate the mixture for about a half hour. When cooled and hardened, scoop into 8 balls and roll until smooth.* 4. Roll each ball in chosen coating and enjoy! * Additional note: To make the truffles into shapes with molds, pour the mixture into molds before refrigerating. Then place in the refrigerator for about half of an hour to set.

Dark Chocolate Soufflé INGREDIENTS ½ cup sugar ½ cup dark brown sugar ¾ cup water 2 tbsp instant coffee granules ² ³ unsweetened cocoa ¾ ¼ tsp salt 2 oz. semisweet chocolate, chopped 2 oz. unsweetened chocolate, chopped 2 tbsp coffee-flavored liqueur 3 large egg yolks ½ ³ cup sifted cake flour (or substitution of ¼ cup regular flour) 6 large egg whites (at room temperature) ¼ tsp cream of tartar ½ ³ cup granulated sugar 1 tbsp powdered sugar ¼ cup raspberries

PREPARATION 1. Preheat oven to 300°. Use non stick cooking spray to coat the bottom of a 9-inch spring form pan. Set aside. 2. Combine ½ cup granulated sugar, ½ cup brown sugar, water, and espresso in a large saucepan; stir well and bring to a boil. Remove from heat; add cocoa, salt, and chocolates, stirring with a whisk until chocolate melts. Stir in coffee liqueur and egg yolks. Mix in the flour; cool to room temperature. Set aside. 3. Beat egg whites and cream of tartar at high speed of a mixer until foamy. Add ½³ cup granulated sugar, 1 tbsp at a time, beating until stiff peaks form. Gently fold ¼ of egg white mixture into chocolate mixture; repeat procedure with remaining egg white mixture, one-fourth at a time. Spoon into prepared pan. 4. Bake at 300° for 1 hour or until a wooden tooth-

February is American Heart Month Heart disease is responsible for one in every four deaths in the United States. Despite the efforts to educate people about this epidemic, heart disease remains the leading cause of death for both men and women. Your gender, race and even where you live can impact your heart health. In fact, African American men are at the highest risk for heart disease. Additionally, the American Journal of Preventive Medicine stated that Americans between the ages of 30 and 74 who live in the

Because high blood pressure does not often show symptoms, many people don’t even know they have it. Check your blood pressure regularly, and talk to your doctor about taking steps to control high blood pressure. It’s never too late to start working toward better heart health. Even small changes to your daily activities can benefit your health. As many people

age, they become less active. However, seniors can actually lower the risk of heart attack by doing more, not less. Maintaining or boosting your level of physical activity after age 65 can improve your heart’s electrical well-being and lower your risk of heart attack. According to a 5-year study published in the American Heart Association journal Circulation, seniors who increased their walking distance or pace had better heart rate variability (the differences in the time between heartbeats) than those who reduced how much or how fast they walked. Changes in your heart rate variability predict your risk of future heart attacks and death. The more physical activity you engage in, the lower your risk will be. If you are physically able,

The idea may have originally come from the fact that there were studies showing that human bites have a higher chance of becoming infected than most animal bites, including those caused by dogs. While contemporary scientists are not sure where this information came into contact with the public, they are all in agreement that it is simply untrue. Modern studies about infection rates in animal bites show that it is pretty even across the board as to whether or not a bite from a human or dog will become infected. Another potential source for the belief that dogs have cleaner mouths is that dogs lick their wounds when they are injured. This may have

led people to believe that dog saliva is healthy or has healing properties. While it is not true that dog saliva has any sort of antiseptic or healing qualities, the act of licking the wound does promote healing. When a dog licks an injury, its tongue removes any dead tissue from the site, speeding the healing process along. We have all seen our dogs at home or outside. Dogs use their tongues to bathe themselves as well as a replacement for toilet paper. You may be asking yourself “how can their mouths possibly be cleaner than ours?� Simple, they can't. Dogs and humans use their mouths for very different things and have differences in hygiene. This means that dogs

and humans have very different bacteria in their mouths. Comparing the bacteria present in the mouth of a human to that which thrives in the mouths of dogs is like comparing apples to oranges. Humans may have one species of microbes in our mouths that causes gingivitis and dogs may have one that is entirely different. Dogs, just like humans, can suffer from dental problems and diseases that may result in needed cleanings, surgeries or tooth removal. This would certainly not be the case if there were no bacteria present in the mouth of a dog. It should also be noted here that there are a wide variety of dog toothbrushes and toothpastes that are available at any pet supply store in your area.

While brushing your dog's teeth may not be required for his immediate health or happiness, it certainly is a good idea and good preventative maintenance to avoid your pet from having to suffer from any of the variety of mouth diseases a dog can have. Because humans and dogs have such different bacteria living in their mouths, there are very few diseases that can be transmitted from dog to human via saliva. While a licking dog may be obnoxious, you probably have little to worry about in the way of health. You are far more likely to get sick from kissing one of your two legged friends than from kissing your pet, though it still is a little gross to think about!

In the midst of floats, festivities and roars of “Throw me something, Mister!” Arthur Hardy stands alone as the undisputed, nationally recognized authority on Carnival celebrations. Incredibly, Hardy was band director at Brother Martin High School in New Orleans seeking additional income when he took a chance and plunged into publishing the Arthur Hardy’s Mardi Gras Guide in 1977. Although Hardy’s digest sized magazine was not an instant success, it ultimately transformed into an award-winning, full-sized publication delivering essential Carnival information for a complete Mardi Gras experience. With over 50 Krewes riding in Carnival in the 1970’s, the morning newspaper was the only printed source for parade information. Yet Arthur Hardy had an idea: If there is a TV Guide for television programs, why not have a Mardi Gras Guide for Carnival parades? Four decades later, Hardy’s brainchild guide remains a well established “must have” for Carnival parade-goers and has forever linked his name to Mardi Gras in Metro New Orleans. Currently Hardy’s Mardi Gras Guide has sold nearly 3 million copies as it reaches its 40th anniversary year. Inside the anniversary edition, Hardy delightfully pens an interview with himself, answering common-

ly asked questions he encountered over the years. His elaborate hardcover book, “Mardi Gras in New Orleans: An Illustrated History” is now in it fifth edition. Indeed, his local fame progressed to national status, with Hardy appearing on the NBC Today Show on six occasions, sharing bits of New Orleans and Carnival with the rest of the nation. In addition to celebrating his magazine’s 40th anniversary this year, Hardy will be marking 30 years on WYES's Steppin' Out, It's Carnival Time. He will continue to share parade previews in The New Orleans Advocate, and provide Carnival updates on WWL radio. This year Hardy will join FOX 8’s Krewe, giving comprehensive reports on the season's more exciting parades. He will act as the on-air authority on FOX 8 News during Carnival Season and will provide insight for FOX 8’s live broadcast of the 50th Anniversary Krewe of Endymion Parade. It’s no wonder he’s been called, “the eyes, the ears, and the voice of Mardi Gras in New Orleans!” Despite his relentless schedule during the 2016 Carnival Season, Hardy flashes a broad

smile, explaining he will not be working on Fat Tuesday this year. Instead, he reveals he will be riding in the Rex parade on February 9th. Hardy admits that although he has marched in Carnival parades before, he has never ridden on a float. He can hardly contain his excitement! “Because of my media commitments, I have never been able to ride in a Mardi Gras parade. To be invited to ride in the 135th annual Rex parade is as good as it gets. I will treasure every moment of it.” It comes as no surprise when looking at Arthur Hardy’s life, he is as much a part of New Orleans as red beans and rice! Born in the Crescent City in June 1946, he grew up in Mid-City and is a fifth generation New Orleanian. Although his parents did not take him to every parade, Hardy seemed to love Carnival from the very start. In fact, his earliest Mardi Gras memory is when he was five-years-old, and he fell in love with a female page in the Mid-City parade. Hardy participated in his first parade in 1958, carrying the American flag for Beauregard Junior High School, then marched in subsequent years as a member of his school’s band.

Hardy is in his own words “a product of the public school system.” Actively involved with his high school alma mater, he was a founding member of the Warren Easton High School Charter Foundation which reopened the school after Hurricane Katrina. Hardy acted as a school liaison with actress Sandra Bullock, who became a major benefactor for the school. “I will be forever grateful to Sandy for helping save my alma mater, Warren Easton Charter High School. She is our angel, and I proudly consider her a personal friend.” Hardy was inducted into the Warren Easton’s Hall of Fame in 1993; the school’s auditorium was named in his honor in 2009. Hardy received a Bachelor of Music Education from Loyola University in 1970 and has shown continued support for his college alma mater. By donating a sizable portion of his Mardi Gras memorabilia collection to Loyola University, Hardy once again conveyed his commitment to his New Orleans roots. “I realized long ago that no one owns these Mardi Gras collectibles; we are only custodians for the next generation. My college alma mater, Loyola University, had a very thin collection so I decided to donate part of my collection to their library.” In 2007 Hardy and his wife, Susan, relocated to the Northshore and now reside in Mandeville. Their comfortable home provides a perfect setting for the seasoned writer/publisher, complete with a detached studio/office. Hardy’s backyard workspace allows him to conduct business leisurely from home and continue the rewarding work he began forty years ago. One major difference is, as Hardy jovially puts it, “I can work in my pajamas if I want to!” After four decades in the publishing business, one might assume Arthur Hardy would be ready to retire, but “closing shop” is definitely not on his agenda. Valentines Day is the most romantic time of the year, and you don’t have a date. So what do you do? If you're a single senior searching for someone special, travel and hobby groups and community classes are a great place to start. But there is more… To many of us the concept of online dating can be a little unnerving, and at 50+ can be downright scary. Many older singles who weren’t raised in front of a computer are more accustomed to a traditional style of courtship. The concept of just point and click to pick your mate just seems unnatural to many. However, this is becoming more of a trend. In a recent study, 6% of people ages 50+ are searching online sites for a companion. The concept is becoming more popular each year. TV celebrities have even begun to promote it. At 71, Martha Stewart recently announced that she has joined Match.com

looking for a companion. The thought of starting over may seem impossible, but it is now becoming evermore popular among the baby boomer generation. It can be done and done right. Traditional courtship is becoming harder as we get older. The lack of interaction for retirees limits the possibilities of finding that someone special. It is harder to find events that involve congregations of people their own age. Online dating can be an option. For single seniors who want to try their luck online its simple. There are plenty of options available out there. Some of the most popular sites on the web are eHarmony, Ourtime.com, Match.com, even AARP has started a matching service as well. These sites claim that seniors are the fastest growing demographic of subscribers. If you are worried about being tech savvy, fear not, there is a friend, child or grandchild nearby that could easily help you navigate

through the sites. They can assist you with profiles, downloading pictures, and registration. Remember you have a lot of experience on your side. The older online dater has no qualms about what they want and don’t want in a relationship. This will help you with picking out the right one. Most sights allow for older adults to share similar interests, go to scheduled events without the pressures of just finding a date. Stick to the basics and of course be careful with online communication, never give out personal financial information to someone you don’t know. Safety issues still exist, when you set up your first date make sure it is in a public place with other people around. Start your search looking for friends. Don’t be scared, have fun, you never know who you may meet. Gain a friend and remember its never too late to fall in love.

Surviving an Abdominal Aortic Aneurysm, (AAA) MY OWN STORY

It started on August 15, 1998...watching television one Saturday evening. It was also four days before I was scheduled for my fourth C-section. My three girls were sound asleep that night and my soon-to-be little boy was actively moving around. I got up to stretch and move around a bit when I felt a pain like nothing else in my life hit me across the lower back. It was excruciating. I, of course, thought it was time for the baby. We put our carefully planned agenda into action and sped to the hospital as the pain worsened with each passing mile. Once there, I was hooked up to a fetal monitor and it was soon discovered I was not in labor, the baby was not in distress. I didn’t understand what was happening.

Because I was just shy of my scheduled delivery date and was already there, and because my doctor was there on call that night, I was told we could deliver. My son was born later that evening via c-section. The pain felt earlier that evening was still unexplained and since forgotten. After four days in the hospital, I was discharged. I went home with my new baby boy and felt exhilarated, exhausted and sore, like my three previous deliveries. However, this time, I knew something was different. I felt different, in a way I couldn’t explain, not even to myself. I had been through this three times before, yet this time was definitely different. While taking it easy as much as I could, I told myself and my husband I would call the doctor the next morning if I didn’t feel any better after a good night’s sleep. I woke up feeling the same way and called the doctor for an appointment. That same morning, my husband went to his office for a meeting and I called him. His secretary sensed something wasn’t right in my voice and immediately got him out of his meeting. He raced home and found me unresponsive on the floor of our bedroom. He proceeded to dial 911. The paramedics came and whisked me to the waiting ambulance. At the ER, I was still unresponsive and a CT was performed. What they found initially was internal bleeding caused by a nick in my liver, most likely due to a mistake in the delivery. I had been slowly bleeding internally for almost five days. What they also found was an Abdominal Aortic Aneurysm, (AAA) and dissection. The excruciating pain I felt earlier was due to the dissection of my aorta. It was never learned how my liver was cut, but had that not happened, my aneurysm would not have been found and would have continued to grow. I was then airlifted to a trauma center where I stayed in the ICU for about 10 days. It was determined that I was not a viable candidate for surgery at that time, being only a week postpartum. My surgeon referred to my situation as complicated due to the circumstances surrounding the AAA discovery. It was decided that I would be watched and monitored with a CT scan every six months for size and growth rate. For four and a half years, I had CT scans every six months. This was treacherous for me – knowing that an AAA was growing inside of me, knowing that it wasn’t going to go away by itself, and knowing that I could


have serious problems at any time. I would worry for the period of time approaching each CT and doctor appointment, and then breathe a sigh of relief afterwards that it was still growing slowly but hadn’t changed that much. I would then forget about it until shortly before the next appointment 4-6 months later, starting all over again! It was indeed the roller coaster effect! After worrying and waiting, knowing this time bomb was ticking inside me, my surgeon said it was time to ‘give me back to my family.’ My surgery was February 5, 2003. It was a cold, snowy morning and that ride to the hospital was as frightening as it could possibly be. All of the what-ifs were screaming in my mind. My husband kissed me good bye at the admittance area and squeezed my hand, saying everything would be fine and not to worry. I was so very afraid. He was trying to be strong for me. I knew he was afraid too. I honestly thought I was kissing him goodbye forever. I thought I would never wake up! My

babies were 13, 11, 9, and 4 years old. I had to be here to watch them grow up. I was their mom. They were my world. The surgery was successfully done via open repair, lasting 4-6 hours. I have an incisional scar that stems the length of my torso... a constant, everyday reminder still of what I went through. I lost a lot of blood during surgery and had to receive extra units to survive. Every part of me swelled up due to fluids -- temporarily becoming unrecognizable to immediate family members keeping vigil. I had tubes and wires coming out of seemingly every part of me. Again, I was in ICU for a few days and then a regular room for about a week. It was a long, slow and arduous recovery. I had allergic reactions to pain management methods, waking up some nights crying in fear from hallucinations caused by my pain meds, a fear that still haunts me to this day. My incision looked like a zipper on my abdomen. I had been given a second chance at life,

motherhood, love, and everything else most people experience. Every little thing was different now – the way I looked at myself, how I took care of my children, and my entire outlook on life actually. It was indeed profound. My family gathered, my friends and neighbors took turns bringing my family dinner, carting my kids around, cleaning my house, and dropping in on occasion to catch up. It took me a long time to get back to my old self and routine. I am so very grateful and will be forever grateful for every person’s attempt to help in any way. It’s been almost thirteen years since my surgery. I have recovered fully with a few kidney problems as a result of encroaching scar tissue. Since then, I have traveled extensively and now speak, write and promote AAA advocacy and education awareness. It has become a passion of mine to help others. I have seen my children grow, marry, and this year will become a first-time grandmother! My babies are now 26, 24, 22 and 17.

7 Steps to Better Heart Health 1. GET MOVING Daily exercise can increase your length and quality of life. It is recommended that If you get at least 30 minutes of moderate physical activity each day (like brisk walking), five times per week, you can almost guarantee yourself a healthier and more satisfying life while lowering your risks for heart disease, stroke and diabetes.

2. CHECK YOUR CHOLESTEROL When you control your cholesterol, you are giving your arteries their best chance to remain clear of blockages. Cholesterol is a waxy substance and our bodies use it to make cell membranes and some hormones, but when you have too much bad cholesterol (LDL), it combines with white blood cells and forms plaque in your veins and arteries. These blockages lead to heart disease and stroke.

3. EAT RIGHT Healthy foods can be the fuel our bodies use to make new cells and create the energy we need to thrive and fight diseases. Don’t skip out on your veggies, fruit, low-fat dairy, fiber-rich whole grains, and lean meats including fish. These foods are the basic building blocks for a healthy life.

We all take care of our home, car, kids, finances, but do we take care of our heart? Here are some ways to help you reduce your risk of cardiovascular disease.

4. MONITOR BLOOD PRESSURE High blood pressure is a major risk factor for heart disease and stroke. A blood pressure within healthy ranges will reduce the strain on your heart, arteries, and kidneys which keeps you healthier longer. High blood pressure, otherwise known as hypertension, means the blood pumping through your arteries with too much force and puts pressure on your arteries, stretching them past their healthy limit and causing microscopic tears. Your body then attempts to repair the injury being caused by developing scar tissue. Unfortunately, scar tissue can trap plaque and white blood cells which can form into blockages, blood clots, and hardened, weakened arteries.

5. LOSE WEIGHT Do you have a little extra around the waist? Well, you’re at higher risk for such health problems as high blood pressure, high blood cholesterol and diabetes. If you’re overweight or obese, you can reduce your risk for heart disease by successfully losing weight and keeping it off. Even losing as few as five or ten pounds can produce a dramatic blood pressure reduction.

6. CONTROL BLOOD SUGAR The food we eat is turned into glucose (or blood sugar) that our bodies use a fuel for energy. Insulin is a hormone produced by your body that acts like a carrier to take your food energy into your cells. Monitor your fasting blood sugar level. If it is below 100, you are in the healthy range. If not, your results could indicate diabetes or pre-diabetes. Although diabetes is treatable and you can live a healthy life with this condition, even when glucose levels are under control it greatly increases the risk of heart disease and stroke. In fact, most people with diabetes die from some form of heart or blood vessel disease.

7. QUIT SMOKING Smoking put you at a higher risk of developing cardiovascular disease. If you smoke, quitting is the best thing you can do for your health. Smoking damages your entire circulatory system, and increases your risk for coronary heart disease, hardened arteries, aneurysm and blood clots. Blood clots and hardened arteries increase your risks for heart attack, stroke and peripheral artery disease. Smoking is also known to reduce your good cholesterol (HDL) and your lung capacity, making it harder to get the physical activity you need for better health.

Chicken Tamales INGREDIENTS 12 dried corn husks Non Stick cooking spray 2 boneless skinless chicken breasts 1 large yellow onion, diced 2 red bell peppers diced 2 stalks of celery, diced 1 fresh chili pepper, finely diced 4 cloves garlic, finely diced 2 cups vegetable stock 1 Tbsp. ground black pepper 1 Tbsp. cumin seed 1 Tbsp. minced fresh oregano ½ cup plus 2 tablespoons stoneground cornmeal (masa flour)

. Makes 4 servings .

PREPARATION 1. Soak corn husks in bowl of water for one hour. 2. Heat large skillet over medium heat, spray pan with non-stick spray, and saute chicken breasts for 2 minutes per side, or until golden brown. 3. Remove chicken from pan. Add vegetables (except garlic) to the pan and saute for approximately 10 minutes until lightly brown. Add garlic and saute an additional 2 minutes. 4. Add chicken back to pan and add vegetable stock and spices. Reduce heat to simmer. Cover and cook for 20 minutes, until the chicken’s internal temperature is 165 F. Remove chicken and allow it to cool. 5. Add stone-ground cornmeal (masa) to remaining liquid and cook until liquid is completely absorbed. Set aside. 6. Pull chicken apart. Drain corn husks well, pat dry. Lay husks out flat and spread masa mixture on each. Divide pulled chicken between them. 7. Then top with vegetables. Fold and roll like a burrito. 8. Bake tamales at 375 F for about 15 minutes or steam them in a covered colander over boiling water for about 30 minutes OR if you like to grill you can wrap tamales in non-stick foil and grill them for about 5 minutes.

NOTE: Be sure to cook until a minimum internal temperature of 165 F. Unwrap to enjoy.

Skillet Cornbread INGREDIENTS 2 cans Cannellini Beans, rinsed & drained (about 15 oz.) ½ cup Pitted Large Black Olives, drained ½ cup Manzanilla Pimento Stuffed Olives, drained ½ cup Cherry or Grape Tomatoes, halved ¼ of a Red Onion, diced 1 cup Bocconcini (Bite-size balls of Fresh Mozzarella), halved ¼ lb. (about 6 slices) Genoa Salami, diced 1 Tbsp. Pesto Sauce 3 Tbsp. Balsamic Vinaigrette black pepper to taste

PREPARATION 1. Rinse and drain beans. Set aside. . 2. Drain olives and pulse in a mini food processor till finely chopped. Pour onto beans. 3. Dice onion, half tomatoes and mozzarella balls and add to bean & olive mixture. 4. Dice Salami and add with all remaining ingredients. Mix till well combined.

NOTE: Best if made several hours before serving or even the night before.
