ew Zealand Cup and Show Week is one month away so the countdown is on to put together a few perfect outfits and prepare for a fun-filled week of fashion, racing, socialising and entertainment. In our special Cup & Show Week section (pages 51-83) we know you will find plenty of inspiration, style and beauty tips to have you looking and feeling your best for the biggest week on Canterbury's calendar. Of course at any special event there is etiquette to be followed and a day at the races is the most formal sporting event you'll ever attend. To check on the do's and don'ts from the most reliable of places I went straight to that most British of institutions – Debrett's. When it comes to extravagant hats Debrett's warns that it is “notoriously difficult to socially kiss while wearing a wide-brimmed hat. There is a knack to tilting the head at a suitable angle, but two ladies who are both wearing wide-brimmed hats should avoid such a greeting”. Debrett's also has advice for the winners and losers. If you win “Don't gloat. Don't get over-excited. Other people (especially if they haven't been lucky) will find your antics wearisome”. And if you lose? “Don't sulk or give way to petulance or moodiness. Accept your loss with equanimity and move on.” As far as knowledge goes Debrett's states: “Backing one or two horse to place will, in the long run, not offer you the same returns as betting on three or four horses to win. Avoid the outsiders – those 100/1 odds may seem attractive but there's a reason why your horse isn't fancied. Do remember, however, that if the going is heavy, form generally means nothing – an outsider can be worth a punt.” And, here are a few less formal tips from Melbourne's Herald Sun that will ensure you have a great time and make the most of this fabulous week… Do approach a day at the races like a long-distance event, because you'll be there for the long haul. Drink alcohol sparingly and always with food, then top up on water. A bottle of water is your most flattering accessory. Do go easy on the fake tan. Not only does tandoori look hideous, it's inconsiderate to those wearing white who, on contact with you, look as though they've rolled in the mud. Don't wear your nightclub frock. Do consider your heel options – you'll be on your feet for a long time. Do take just one canapé at a time. Girls, don't drink from a bottle, not even a piccolo. Don't crash parties or argue with door people. Don't nip into the men's loo. Do keep it classy. Do mingle – many people meet their partners at the races. Do plan your escape – public transport can be a nightmare. Don't jump the taxi queue. And finally, do have a wonderful week, enjoy the fashion, friendship and festivity!

Four years in the making…

I

n 2011, we won. We celebrated. We drank. Moa Brewing Co. was inspired. Adrenaline pumping, head brewer David Nicholls had wild dreams of creating a one-of-a-kind celebratory beer and was willing to wait four more years to unveil it to the world. In 2011, the rugby beer was brewed. He settled on a bold, dark stout aptly called Four More Years to be launched in line with the 2015 Rugby World Cup. It struck him that England is half way around the world and frustratingly 12 hours behind, so the brew would need an added kick to keep Kiwis awake in the wee hours of the morning. An infusion of coffee beans was the answer, adding a subtle caffeine hit and making the beer perfect for those getting up early (or staying up late). The brew has now been ageing in French oak barrels for four years, a timely nod to the French team who bowed to New Zealand in the 2011 final. Style: French oak aged and Guatemala coffee infused imperial stout. Availability: Limited run of only 444 bottles, each uniquely numbered. Available now at selected craft beer retailers.

The very first Trelise Cooper fashion show staged in Wanaka has been declared a huge success, with the event raising approximately $41,500 for Wanaka's planned hospice. Theatre of Fashion, a spectacular live performance combining Trelise Cooper installations with a catwalk show, was held at the Glendhu Station Woolshed in front of more than 600 people in total. New Zealand fashion identity Dame Trelise Cooper was present at both the matinee and evening shows. Showcasing the stories behind the Trelise Cooper Summer 15/16 collection in amongst a 1950s-inspired space decorated with fresh and paper flowers, Theatre of Fashion featured “a daydream of angelic filigrees, weightless lace and broderie anglaise”, Dame Trelise explains. “The collection is equally regal and rebellious, inspired by my recent visit to the Palace of Versailles.”

MEL PARSONS

ith a distinct voice that is described as “haunting and beautiful” 2015 Silver Scroll finalist and Fly My Pretties star Mel Parsons is embarking on a five date tour of some of New Zealand's most iconic theatres including the wonderful Isaac Theatre Royal in Christchurch on 5 November. One of NZ's renowned songwriting stars, Mel's newly released third album 'Drylands' is receiving highly acclaimed reviews. Mel is based in Christchurch; however with a love of touring tends to spend more time with a hotel as home. She has toured the US twice, Australia, UK, Ireland and Germany. She is a twotime NZ Music Award (VNZMA) finalist for Folk Album of the Year. Having grown up on a farm at Cape Foulwind on the West Coast, Mel is an adventurer who has travelled all over the world. I caught up with Mel to discover a little more…

How old were you when you discovered your love of singing/music? I have loved music ever since I can remember. Even when I was very small I remember sitting beside the stereo listening to songs over and over. I started playing the piano when I was five, and then picked up the guitar as a young teenager. The singing came later - I was a bit shy to begin with, but once I worked out that I could sing there was no turning back! Who has inspired you in your musical career? Early on some great music teachers; and in more recent years many friends and colleagues. I have always been inspired by other people's music - and along with lots of new music, I often revisit classic writers like Paul Simon, Tracey Chapman, Lennon/McCartney and Bob Dylan. What is the inspiration behind your latest album 'Drylands'? I have spent a lot of time on the road in recent years, and inevitably we draw inspiration from our experiences. As a result there are quite a few travelling themes on the new album. What do you enjoy most about the creative process? The feeling you get when you know you've hit a vein in the songwriting

process. It's a real buzz when you're working on new material and you wake up in the middle of the night with a melody going around and around in your head, this is a good sign you might be on to something. And the recording process? I don't relish the recording process as much as some people think - possibly because it is a stressful period of time which is generally costing a small fortune every hour, so in the studio I tend to be completely focussed on the task. I do enjoy having the band in there, and watching them work their magic - I am fortunate to work with some very talented musicians. Probably my favourite part of being in the studio is the mixing process - when it all comes together at the end, and you realise you might have created something that listeners are going to enjoy. You have toured extensively for several years now; what do you love about touring and live performance? By a mile my favourite part of being an artist is performing live - it's a very special thing to do and even when I'm exhausted I still absolutely thrive on it. I think the most special part of performing is the connection you have with the audience - they feed off you and vice versa, so there is a lot of energy flying around the room! It's a

unique and addictive experience, and it always feels like a real privilege regardless of whether you're playing to 50 people or 5,000. There is also the adrenaline factor of being on stage and singing - it never gets old. You are based out of Christchurch at present; do you still have ties to the West Coast? Yes I'm back in the South! I have lived all over the show, but being back in Canterbury means that I do get over to the Coast every so often. My Mum and Dad are still there, so I certainly still have strong ties to the place. I grew up on a farm at Cape Foulwind, just out of Westport - it's a beautiful, rugged area, and I love getting back there. What has the feedback on your third album 'Drylands' been like? I have been so thrilled with the reaction to 'Drylands' - critically it has been well received, but most importantly for me, audiences seem to be enjoying it, and I have had lots of nice feedback. What other creative endeavours do you enjoy? Being a musician often means a lot of time indoors - whether playing shows, travelling, or working on the administration side of things - so when I'm not working, I try to get outside… henceforth I'm going to call skiing my creative endeavour!

If you could go back and tell your teenage self something what would it be? Worry less, get stuck into whatever you want to do, and do it now! I remember when I finished university in my 20s and feeling like I had all the time in the world. On the other hand I think part of the beauty of being a teenager is you have no idea how busy things are going to be in the future, and how quickly time flies - so I think that not knowing is quite a golden time in your life. What is your favourite drink? In summer a nice chilled Allan Scott Pinot Gris or, when it's cooler, a heavy Aussie red in front of the fire.

What were you doing the last time the thought went through your mind, 'I shouldn't be doing this'? Sitting on a runway in Saskatoon, Saskatchewan in the early hours of a Canadian winter morning, in a snowstorm, -30deg. I was watching the planes being de-iced before takeoff and desperately hoping that they could get it all off. Ironically I'm not a great flyer at the best of times, but at this point I was thinking I'd quite like to be having a sunbathe at Sumner Beach or something a little less stressful… What is one thing that Metropol readers would be surprised to know about you? I once played in Anna Harrison's (nee Scarlett) netball team… ok, so we were in primary school, but I'll claim it. What one book would you recommend everyone read? The Penguin History of New Zealand by Michael King. What do you love to do on a Sunday afternoon? Get out for a run or a walk, catch up with family, visit my 92 year old Grandmother, read, cook - pretty much anything to keep away from my computer… What's next on the wish list? Find someone to help me edit my wish list… it never seems to get any shorter.

Starlight Festival

T

he Aoraki Mackenzie Starlight Festival is bringing a range of arts and cultural activities to the Canterbury region, including international exhibitions, displays and documentaries. The festival, a celebration of dark skies, astronomy, and the global success of Tekapo's International Dark Sky Reserve, runs from 9 to 11 October in Twizel. The event is in its second year and was previously held in Tekapo in 2013. In 2017, it will be held in Mt Cook village, at the request of the community. Starlight Reserve board member Hon Margaret Austin says the aim of the Starlight Festival is to not only create awareness of the stars and dark sky, but excitement about astronomy and science. “Science and art naturally overlap, and we are exploring and celebrating those connections. As well as helping to boost important historical records, all entrants go into the draw to win either a tablet or a Kobo eReader. “Everyday photos of people's families, friends, places and events may seem ordinary enough when taken. But in time, these images form an amazing

visual record of the changing face of Christchurch, helping us all understand where we've come from as a city,” says Christchurch City Libraries Content Manager Anne Anderson. French Fest celebrates Akaroa anniversary

R

evellers at this year's French Fest will share in anniversary celebrations marking 175 years of organised European settlement in Akaroa. The biennial fete returns to picturesque Akaroa from Friday 9 October - Sunday 11 October celebrating the unique culture and heritage of the French settlement. The festival is the largest Christchurch City Council event to be run on Banks Peninsula with more than 8000 people descending on Akaroa in 2013 for a weekend of Gallic culture, heritage, cuisine and entertainment. Deputy Mayor Vicki Buck says this year's festival marks a special milestone in Akaroa's history. "The festival is always a great reason for families to visit the French heart of New Zealand to share in a weekend of food, fun and festivities. However this year's French Fest is extra special as it will celebrate Akaroa's 175th anniversary of European settlement, showcasing the

area's Maori and French heritage. FLAG DEBATE

Metropol started a flag debate of its own recently. In the last issue, in the interests of creativity, a flag was added to the article about Alliance Française de Christchurch. While the colours were correct we were left red faced when it was pointed out that the French flag consists of three vertical bands of blue, white and red, and it is the Netherlands flag that is a horizontal tricolour of red, white and blue. Needless to say this was an error solely made by Metropol and nothing to do with the passionate and professional Alliance Française. A fine education, tailored to boys Medbury School oers a boys' only education for Years 1 to 8, where the focus is on the 'whole boy'. edbury has adapted the NZ curriculum to meet the learning needs of boys. Construction of a new 21st century classroom block at Medbury is now well underway. Peter Kay, Headmaster, believes that new open-plan teaching blocks, accommodating up to seventy children being built in some schools, do enable creativity, collaboration and the development of independence. Mr Kay states that at Medbury it is their intention to maximise the use of the new modern learning environment. The Eggleston Family… A portrait of real living The friendly faces of dairy cows made their way into the Eggleston family portrait because it was important that their portrait embodied everything that they really are. There are gumboots, Swanndris, paddocks and cows, and the smiling faces of Lynn and Craig, and their daughters Aimee, Georgie, Abbie and Jodie.

heir dairy farm in Greenpark is the place where the family have always worked together - Aimee and Georgie work full time, and Abbie and Jodie both help out with part-time work while studying. With Aimee about to head off overseas for a few months the time was perfect to capture a moment when they were all still together. The Eggleston's first heard of Beverley Studios at a recent field day. When Lynn told Peter and Marg what she wanted, “a real life portrait with gumboots and all on their dairy farm”, and all within a short time frame, they made

Catching up with Mark over a coffee after another successful meeting at Addington Raceway where they had a total of four horses over two races. Race one they finished first and second and the next race they finished first and fourth, both of the winners won with ease over their competitors. With results like this you can see why the All Stars Racing stable is in an unrivalled league of its own. Unlike results, it is usually difficult to gage the personality of someone who modestly accepts the attention that comes from his victories. After the final sip of my coffee I was confident that I could describe the man who was sitting across from me, as he represents

everything his stable stands for. He is a well-rounded gentleman, eloquent and humble. I highly recommend him to anyone wanting to get into the exciting world of the harness racing industry. This is the stable where you will get 'the true bang for your buck' so to speak. I can assure you that you will be well informed on a regular and professional level at the same time as making a new friend in Mark. All his owners become friends and I can see why, as Mark is a really likeable guy. To be an owner with the All Stars team would feel like being part of something great. Mark believes, “no man is an island and to create something great you need great people around you.” Natalie his training partner complements him perfectly, they make a power couple. Everyone in the All Stars team has an important role and is treated like family. Stable foreman Duane Marfissi has also had a big impact on the

To keep it simple, “Success breeds success.” Purdon's own family has a deep rich red bloodline, Mark's father Roy Purdon, a New Zealand Harness racing hall of famer, has had over 2000 winners at the track and Mark's older brother Barry, whom Mark looked up to growing up, has been a very successful trainer/driver also, and now Mark's son Nathan is following in his forefather's footsteps. This New Zealand Cup Week you could not go wrong putting a dollar or two on any of the All Stars Team Purdon/Rasmussen. Another two large restaurants have recently opened. Casa Publica, a South American bar and restaurant, and upstairs, half way down the same street, Twenty Seven Steps.

Although New Regent Street may still appear to be relatively quiet, due to accessibility problems, its future certainly looks bright, according to the chairman of the street's business association.

H

e is Ross Oxnam, the owner of two adjoining businesses, Kiwi Originals and Go Kiwi Gifts and Souvenirs, who is so confident in the street's future that next month he is planning to open another shop, the Wool Store, which will sell luxury possum and merino knitwear. “We wouldn't be doing this if the signs weren't right. Another two large restaurants have recently opened and customer support for them has been good. Larger businesses like this bring a lot of confidence and, of course, muchneeded foot traffic,” says Ross. They are the Casa Publica, a South American bar and restaurant on the Armagh Street corner that was formerly taken up by the Flying Burrito Brothers; and upstairs, half way down the same side of the street, Twenty Seven Steps. “All is going very well. I believe this street will grow at the same pace as the city. The opening of the Isaac Theatre Royal was very positive for the restaurants, and theatre matinees are also good for the cafes,” says Ross. “The businesses here are mainly hospitality and retail. Some have moved to other locations in recent years in search of stronger foot traffic, but it annoys me when people's negative rumours about the street go around. Casa Publica stuff and we are all well aware of the environment we are working in. Unfortunately, once rumours start they tend to persist. “To me, however, the signs are very promising. People staying at the nearby Rendezvous Hotel and Novotel come here a lot, and during the school holidays, families from Australia and New Zealand come here. With souvenirs being our business, we double our trade for two weeks. “The trams are also very important, bringing life to the street. There's now 10 minutes between trams that do a full loop

around the city, with many people getting off here. Direct flights from China later this year will also make a big difference.” A walk around the colourful street reveals a surprising variety of businesses. Starting on the left-hand side from Gloucester Street, we pass by The Caffeine Laboratory, Youngs Jewellers, Rowena Watson Design Jewellery, Beadz Unlimited, TimeZoneOne, Nspyre Red Boutique Hair Lounge, Trudy's Groovy Eyewear, the soon-to-open Wool Store, Sushi Sachi 21 (which offers hot miso soup for $2), Coffee Lovers (with glutenfree and organic options), The Last Word Whisky and Cocktail Lounge, and The Auricle Wine and Sound Bar. Returning on the other side from Armagh Street, we find the Casa Publica Bar and Restaurant on the corner, Expression Tattoo and Gallery, Polished Diamonds, The Institution Craft Beer and Cocktail Bar, Kiwi Originals, Go Kiwi Gifts and Souvenirs, Twenty Seven Steps, Align (offices connecting people, places, planning and design), Mrs Higgins OvenFresh Cookies, Shop Eight coffee and wine, G&A Creative Agency, and Moko Café. Coffee Lovers is to expand next door and open a restaurant, The Last Word will also expand and a Thai restaurant is coming. Most of the street's available tenancies are now taken up and this adds to the atmosphere,” says Ross.

NEW RECORD for

Canterbury Medical Research Foundation

The Canterbury Medical Research Foundation has announced the recipients of its 2015 Major Grants round, supporting Cantabrian researchers across a broad range of medical research.

en projects have been awarded more than $730,000 in total for the year, setting a new record for the Foundation. “We've set ourselves a fairly ambitious goal of funding 2 million in research by 2020,” says Kate Russell, Chief Executive of the Foundation. “So many people don't realise the great work going on here in our own city. Work that has continued to be published and gets great results, all the time the rebuild has been happening around us.” The Foundation supports emerging researchers from the Universities of Canterbury and Otago, undertaking studies into various medical conditions. Amongst this year's projects are a study to confirm the vitamin C requirements of those with severe

Help to keep World Champion silver medallist and two-time Olympian, Lauren Boyle is lending her support to a campaign to keep New Zealand's school pools open. Ms Boyle – who recently became the only New Zealand swimmer to have won five world championship medals - has joined Water Safety New Zealand as an ambassador, in a bid to help stop the flood of school pools closing.

round 156 school pools have closed in the past six years and a further 130 nationwide are at risk of being shut down permanently. Water Safety New Zealand CEO Matt Claridge says having Lauren's support is an exciting opportunity to raise further awareness of the issue, and inspire young New Zealanders about the importance of learning water safety and swim skills.

“School pools are a hugely valuable resource for providing children – and the wider community – with convenient access to the water to learn essential survival skills. We are thrilled to have Lauren on board as a water safety ambassador focussing on this issue.” Lauren Boyle says she's excited about the opportunity to be involved in a project that she is passionate about. “A pool at school should be seen as a 'classroom' in terms of what it can contribute to a child's future – the essential life skills of learning to swim, keeping safe in the water and also physical dexterity.” Lauren is currently racing and training all over the world working towards the ultimate goal of Rio 2016 Olympics.

DEBBIE HAWKER What does a celebrant do? We make your day official! Celebrants can work with all customs, traditions, religions and cultural beliefs when required. Each celebrant has his or her own unique style and their role is to guide and support while creating a ceremony for their couples. A celebrant takes an active role during your ceremony and officiates over the legal aspects. What are the legal requirements of a marriage ceremony in New Zealand? Ÿ The formal identification of the couple named on the Marriage Licence. Ÿ The full names of the couple, as they appear on the licence, must be used at some point in the ceremony to clearly identify them. Ÿ The ceremony must be solemnised at the place described on the licence and by an approved celebrant and before at least two other witnesses. Ÿ During a marriage ceremony, the couple must exchange marriage vows. That is each person must say the words, “I AB, take you CD, to be my legal wife/husband/partner” (or words to similar effect). Ÿ The “Copy of Particulars” (registration papers) must be signed by the couple, the celebrant and their two witnesses immediately 'after' the ceremony, and it is the celebrant's responsibility to give a copy to the couple and return the other copy to the issuing Registrar within 10 calendar days. Who arranges the marriage licence? Your celebrant is responsible for informing you on how to apply but it is the couple's responsibility to complete and submit the application for the marriage licence.

LAUREN KILKELLY How long will the ceremony be? It depends on what the couple want included in their ceremony. On average most ceremonies would be 20-30 minutes long. How long does it take to write the ceremony? This is determined by the celebrant's individual practice. Personally, we (Debbie, Tania and Lauren) write each ceremony unique and tailored to the couple that is marrying. Writing the ceremony is just one component. Time is spent gathering information, researching and drafting. If you choose a celebrant that cuts and pastes then that will be no time at all! How much is your fee? Celebrant fees vary – they match distinctive styles and practices. My friend is not a celebrant but wants to marry us. Can she do this as a one-off? No. To officiate your celebrant must be registered by the Registrar of NZ Births, Deaths and Marriages. There is no provision to be appointed to perform 'one off' weddings or civil unions. Can you help us write our vows? Absolutely! Your celebrant should be competent in doing this as well as offering traditional examples when requested. What other rituals can we incorporate into our ceremony? There are many… Sand ceremony, unity candle ceremony, memory candle ceremony, wine box ceremony, hand fastening ceremony, ring ceremony, family commitment ceremony, blended family ceremony… the list goes on!

TANIA JOHNSON-SCOTT Would you recommend a rehearsal? Absolutely! If this is something you would like to do then we would happily attend and go through your ceremony including the entrance of the bridal party (not all celebrants do, sometimes they arrange the venue co-ordinator to do this). If your venue is not an option we would recommend holding it at home or a public garden/park. It is recommended to do this at a similar time to your ceremony so that you can check sun/shadows etc. What are the first things we should book when arranging a wedding? Most importantly, your celebrant – without one, you cannot get married! Popular dates are booked well in advance so get in quick to avoid disappointment. Following that we would recommend you arrange your venue, photographer, videographer, caterer, hair and makeup artist and a good band or DJ. What would you suggest we have in our go to/emergency kit for the big day? We would recommend over and above snacks and water the following: plasters, white chalk (to help cover any unexpected dark stains on wedding dress), panadol, touch up make up, wet wipes, tissues, hairclips, safety pins, rescue remedy, sun block, mirror, feminine products, perfume, deodorant, mints, hand cream, shawl, flat shoes and your celebrant's business card! Dressing well for the races To get near the podium for 'best dressed' you need to put some thought and planning into your outfit. A well put together outfit with a few quirks will always win over something that doesn't have any cohesion or obvious thought. Now is the time to start thinking about your starting point. Colouring Take your colouring into consideration. Again, choose an outfit in your best colours – rarely does an all-black ensemble win best dressed anywhere, or flatter much on race day. Degree adds heat to fashion design qualifications Fashion is not just clothes. It's what defines each generation. Take race day fashion. Twenty years ago, a jacket and skirt with matching accessories, was considered smart for women. Now the fashion is more eyecatching than the horses, with showstopping frocks, sky-scraper heels, big head-gear and other personal expressions of outrageousness. Study of these trends will be incorporated in a new fashion degree as part of CPIT's Bachelor of Design, which starts next year, pending New Zealand's Qualification Authority (NZQA) approval. CPIT fashion programme leader Niki Chrisp says degree-level study will build on the already high level of technical skill that the institute is renowned for in the graduates it prepares for the industry. “It arms students with fashion knowledge and gives them a chance to branch out as creative designers. This will also make them more competitive for employment overseas.”

CPIT's annual Pitch fashion show, to be held next month for final year diploma students, is an example of how budding designers gain exposure in the industry. It will feature garments that will be equally at home at Cup Day or on the fashion runway. Special occasion clothes are the forte of many CPIT fashion students, including Melissa Franklin. Examples of her intricate and immaculate tailoring were selected for display at the recent Ballantynes Fashion Week '15. The iconic Canterbury department store's event acted as a preCup Day warm up to get people thinking about their race-going outfits. "This is definitely my lane. These are the sorts of clothes I want to be designing and I didn't want to leave the course without thinking I'd pushed the boundaries,” Melissa says. Spring is here! Indulge in this healthy substitute to a winter's blueberry pie. Made with wholewheat flour, olive oil, lemon and yoghurt this is a treat without the guilt…

Blueberry Lemon Yoghurt Cake Prep time: 15 Minutes / Cook Time: 50 mins / Serves 12 Ingredients: 1 1/2 C white whole wheat flour plus more for dusting 2 teaspoons baking powder 1/2 tsp fine grain sea salt 2 medium lemons, to be zested and juiced 1 C sugar 1/2 C plain whole-milk (full fat) yoghurt or Greek yoghurt 3 extra-large eggs 1/2 tsp pure vanilla extract 1/2 C extra-virgin olive oil 1 C New Zealand frozen blueberries (do not defrost!) 2 tsp honey Instructions: 1. Preheat the oven to 180C. Generously butter and flour an 8 1/2 by 2 1/2 inch loaf pan. 2. Whisk together the flour, baking powder, and salt. 3. Pour the sugar into a separate mixing bowl. Grate all the zest from the lemons. Rub the zest into the sugar until the sugar is yellow and fragrant. Add the yoghurt, eggs and vanilla to the sugar mixture. Whisk well, until combined. 4. When the mixture is well blended, gently whisk in the dry ingredients, just until incorporated. Switch to a spatula and fold in the oil, making sure it's all incorporated. In a separate bowl, toss the frozen New Zealand blueberries with about one teaspoon flour. Gently fold the blueberries into the batter.

5. Pour the batter into the prepared loaf pan and smooth the top. Bake the cake for 50 to 55 minutes, or until the top is golden and the sides just start to pull away from the sides of the pan. A toothpick inserted into the centre should come out clean. 6. Let the cake cool in the pan for 30 minutes. Meanwhile, warm 2 tablespoons lemon juice and two teaspoons honey just long enough for you to whisk the honey into the juice. You can do this in your smallest saucepan over medium-low heat. Using a pastry brush, brush the lemon-honey glaze on top of the warm cake. Repeat until you have no more liquid left. 7. Run a knife between the cake and the sides of the pan to loosen. Unmould the cake by placing a large plate or cutting board upside down over the loaf pan and carefully turning it over. Turn the cake back onto a flat surface to cool completely. Dumpling masters create a craze There's a dumpling craze hitting the city, thanks to the Pot Sticker Dumpling Bar in The Colombo and, opening at the end of the month, the flagship outlet on Poplar Lane.

T

his pot sticker story began in Auckland, when Sam Hooper and Sally Willis met and developed an obsession with dumplings. “We ate our way down Dominion Road,” says Sam. “We took them home frozen for late night snacks, and even started making our own.” With backgrounds in property management and marketing (both of which were to come in handy) but no hospitality experience at all, when they were offered a foodie site in The Colombo, these dumpling aficionados sensed a business opportunity. “We thought maybe it was too radical but we backed ourselves to provide a good product.” Their research began and they discovered there's a lot more to this popular Asian snack food than meets the eye. In Chinese cuisine there are five kinds of dumpling wrappers, and

dumpling styles and flavours vary greatly throughout that vast country. “They use meat and fresh herbs in the north, seafood in the south,” Sam explains. After a couple of months of serious research, eating their way around Shanghai, with weekends spent dashing over to dumpling bars in Sydney and Melbourne, they came up with an idea they believed would work. And with the help of Chinese dumpling chefs who contributed their own regional recipes, they have developed unique juicy dumplings tailored to Kiwi palates. “We knew what we wanted. Normal Chinese dumplings are too rich and fatty. We use more meat, with spring onions and ginger juice and lots of coriander and no added animal fats,” says Sam. Starting with the wrapper dough, made to their own unique recipe, the dumplings are handmade fresh every day using quality

products, local and free range where possible. Sam shops at the Chinese vegetable markets three times a week, buying seasonal herbs and vegetables. “Each day the chefs chop and mix the fillings by hand before swathing them in wrappers and steaming them in authentic Chinese bamboo steamers.” The result: a small select menu with a frequently changing choice of dumplings with quirky names like Porkie Coriander, Cluckin Good Chick and Coriander, and Beefroot (Beef and Beetroot) served steamed or pan-fried, with your choice of dipping sauce. And, thanks to a glass wall to the kitchen, you can watch – Shanghai style – while the dumpling masters weave their culinary magic, cooking to order. “We wanted an authentic look in the kitchen and it keeps us honest,” Sam laughs.

Pot Stickers on Poplar is joining the new foodie party in regenerating the heart of the city. To maintain its traditional street food cred, the new restaurant is all red brick and roughhewn timber, with booth seating. The kitchen is on full display and the dumplings will be served in takeaway containers, but the menu will be slightly more sophisticated, with special dishes like xiao long bao, a traditional Shanghai soup dumpling, full time vegtarian

options and their famous dessert wontons will be back up for grabs. Ordering will be simple and fun. You will be able to grab a Yum Char dim sum type order form from the pads hanging above the tables and tick your choice, hand it to your wait staff, then sit and salivate with a drink. he ochre colour of the restaurant's walls is reminiscent of the sandstone of Jaisalmer's fort. The ornately carved and thatched frontage to the bar shows the refined skills of Rajasthan craftsmen, while the bight saris lining the walls reflect Rajasthan's celebration of colour. Indian Ocean has for some time been a popular place for a delicious Indian dining experience. Its new owner Birendra Chettri however, has a vision to elevate the very good into the sublime. “I want Indian Ocean to be the best Indian restaurant in the city,” says Birendra, “and I am gradually introducing refinements to our food and beverage offerings and ensuing that our service and knowledge of dishes is second to none. Another link to Berlin is through the famous Currywurst, a steamed then fried pork sausage seasoned with curry ketchup and curry powder developed in Berlin in the '60s. A Currywurst Museum now resides in the city and after hearing about the opening of Christchurch's own Café Berlin, the museum has approached the women, asking to add the café to their map. HOME IS WHERE THE HEART IS A survey of 400 Kiwi singles has revealed the ways in which your home may be helping (or harming) your love life.

I

n a surprising revelation, 68 per cent of the 400 New Zealanders polled in the survey revealed that they would consider breaking up with someone if their house wasn't up to muster. Additionally, 38 per cent of Kiwis would find themselves attracted to someone simply because of their stylish home. How you style your house is important. But where should you focus your energy if you want to really impress? These are the top five things that make a house an attractive home, as chosen by Kiwi singles: 1. A clean bathroom: 72 per cent of Kiwis would rather date someone too neat rather than too messy and, of all the rooms in house, the bathroom is most important. 40 per cent of Kiwis scrub the loo before a date! 2. A big kitchen: 38 per cent of NZ singles would find themselves extra attracted to someone whose home included a big, wellequipped kitchen. 3. A pet: It would seem Kiwis really like animals. 33 per cent of those surveyed admitted that someone can boost their attraction factor by revealing that they own a pet. 4. Art and photos: Another decorating do is to fill your home with personal, creative touches. 30 per cent of those in the survey would find themselves enamoured by a home full of family photos and well-chosen art. 5. Lots of books: In a previous EliteSingles survey, 90 per cent of Kiwis said that they identify as avid readers. Perhaps this is why 25 per cent of New Zealanders are attracted to those who have books everywhere! Of course, where there's good there's also bad, and the survey also uncovered the biggest home decor don'ts: Women's biggest decor don't: An empty apartment, especially one with just a futon. Men's biggest decor don't: Stuffed animals and motivational notes.

The original building was built in the 1870s and is now used for a number of businesses including Twine, a second hand furniture business and Louis Who?, a fashion recycling boutique. Twine owner Sandy Williams sees her business as an alternative to online shopping, “people love to come in, pick up the china and feel the wood of the cabinets.” Lisa Willetts of Louis Who? loves colour and finding discarded quality clothing pieces. She set up a year ago and now concentrates on good designer labels: Trelise Cooper, Sass and Bide and Karen Walker, to name a few, and brings designer couture without the designer price tag. This year she has been involved in setting up a new business taking people on interior and fashion tours, with two trips under her belt already.

pring has finally arrived albeit about 10 days late. We are still behind on rainfall and the risk of frosts is still with us so we need to approach the season with some caution and patience. October is one of the very busy times in the garden as much of what we do now determines the success we will have this growing season. Don't attempt to plant all your vegetable garden now however as you'll end up with too much produce at one time! Hold off planting warm loving plants until late spring or early summer, when the weather is much more settled. This applies as much to the vegetable garden as it does to the flower garden.

FLOWER GARDEN 1. Keep the water and feed up on spring bulbs. 2. Prune all flowering trees and shrubs after flowering to promote growth for next season. 3. Watch for aphids and fungus disease on roses and other plants and treat as needed. 4. Hostas are coming into growth so slug control is needed to stop holes in the leaves. 5. Bedding plants may be planted now to add colour around the garden. 6. Perennial plants are moving into rapid growth so put in support stakes before they are needed. 7. Plant dahlias and chrysanthemums now. 8. Warmer loving plants like begonias may be planted later in the month but it may be better to wait until next month.

LAWNS 1. Fertilise now just before rain or water in. 2. Mow every week but not too low while the grass is growing fast. 3. Spray for weeds 2/3 days after mowing. Do not compost the clippings or use as a mulch. 4. Low spots in the lawn can be top dressed and over sown while rapid growth is expected. 5. BMW 125i: smooth & powerful The BMW 1 Series has always been a fantastic little car. Okay, so the rst generation was a bit crook looking, but facelifts (or Life Cycle Impulses in BMW-speak) and an all-new second generation car have taken care of the worst visual o ences.

B

ut if you want a small ve-door hatch with fantastic RWD handling characteristics, then the 1 Series was a no-brainer, regardless of looks. Now, however, the 1 Series is a handsome little beast. It still packs those utterly addictive RWD dynamics, but possibly not for much longer With the advent of the FWD 2 Series Active Tourer, the writing may well be on the wall for RWD Small BMWs, so getting in now may well be a good idea. Of course, the full-fat M135i is always the best place to start looking, but while that has the power, it also has the price tag to match. Look a tiny bit further down the range, however, and you will discover the slightly unassuming BMW 125i for a whopping $21,000 less than the M-i ed car. While it lacks the M135i's angry 240kW turbo inline six-cylinder engine, it does pack the impressive 2.0-litre turbo four seen in the 320i and 328i. It pumps out 160kW in 1 Series guise and that is enough to make the 125i very swift indeed

Outside Likes: The little 1 Series has matured into a good looking little thing, far from the rst-gem cars somewhat challenging looks. Nicely aggressive front adds menace. More aggressive tweaks to the rear work nicely as well. Dislikes: Nothing, except, perhaps, for the newly-extended taillights, which just look oddly generic strange, given how many small hatches shamelessly knocked o the rear of the 1 Series when it came out.

Inside Likes: Fantastic seats (part of the $5,000 optional M Sports package) are a highlight, along with the M Sports interior trim. Nice high-quality feel to interior. Brilliant slightly-retro steering wheel. Dislikes: Without the M Sports package, it would be a bit bland.

On the road Likes: Delightfully agile and chuckable. 160kW engine is just perfectly suited to the 125i, remaining light and sharp at the front end, while delivering more than enough grunt to the rear. Utterly fabulous handling in no way compromises the firm, but well resolved and comfortable ride. Dislikes: There really isn't much we can think of… Verdict Is the 125i the perfect 1 Series? While, on the face of it, the M135i offers more of everything in that wonderful way the Germans have of doing, it also asks way more. Money, that is. You pay a lot more for it. For what? Searing acceleration, for sure, but it is easy to argue the case for the 125i's purity of handling and sweet constant power delivery, as opposed to the M135i's unsubtle sledgehammer smash. Under the bonnet Likes: The grunt 160kW version of BMW's excellent 2.0-litre 4-cylinder engine is perfectly suited to the 1 Series. Smooth and powerful, yet still remarkably economical. 8speed auto is incredibly fast and smooth as well. Dislikes: Eight gears really is too much in manual mode – it is way too easy to lose track of what gear you are in.
