T

he other day I received a letter in the post. A letter written in beautiful calligraphy, on quality paper, delivered by a real person. It wasn’t a text, an email, a tweet, snapchat, imessage or pxt. It felt good holding it, and reading it, and enjoying learning something about the author from his handwriting. The letter made its way around the office with everyone commenting on this rare and endangered art form. Curiously about the same time an email popped, unceremoniously, into my inbox along with an avalanche of others, this one announcing the very first ‘Get NZ Writing’ initiative. Warehouse Stationery are sending free handwriting kits to every primary school in the country to encourage pupils to practice their handwriting (page 12). The ‘beautiful handwriting’ era skipped me by, but let’s hope a new generation can revive this creative skill. The letter I received, from Dennis in Rangiora, was commenting on my mention of Flash Fiction last issue. I wrote that the shortest short-story in the world was attributed to Ernest Hemingway and just six words long: “For sale: baby shoes, never worn.” However Dennis surprised me with his account of a much shorter short-story. It was created when he was at school in 1948 and asked to write about a sporting event. He decided to write about cricket and with just three words, I think you’ll agree his story should take the record: “Rain stopped play.” But, far from being applauded for his magnificent flash fiction, Dennis says the reward for his creativity was “six of the best for being too smart!” Still on the Flash Fiction theme, one of our wonderful Metropol writers, Rachel Smith, came second in the 100 word South Island Writers’ Association Flash Fiction Day competition this year. It’s wonderful to celebrate these talented wordsmiths! In this issue of Metropol you’ll find further thought provoking art with the description of Henry Hargreaves’ No Seconds exhibition (page 14); and a way to boost your own creativity on page 12. Food is also a focus this issue with news of the Cuisine Restaurant of the Year award, as well as mid-winter feasts and a recipe that will warm and satisfy your comfort cravings.

oots Restaurant in Lyttelton has won Cuisine’s Restaurant of the Year in the Cuisine NZ Good Food Awards. New Zealand’s finest restaurants competed for the award and Chef Giulio Sturla and partner and co-owner Christy Martin, are delighted that their small restaurant has been awarded this prestigious honour. Giulio was born in Chile and raised in Ecuador; he arrived in New Zealand around 2010 after graduating from cooking classes and working in major restaurants in Spain including one of the world’s best, the Mugaritz which has been ranked fourth among the world’s 50 top restaurants by London’s Restaurant Magazine. I caught up with Giulio to find out more about this amazing restaurant and his food philosophy…

Sturla What was your reaction when you won Cuisine’s 2015 NZ Restaurant of the Year? Happiness! Being proud of the team and every single soul that has been part of this project... this is not my win, this is recognition of all the people behind us. It made me very happy. Roots offers a ‘Trust the Chef’ style menu; what options do you offer diners before they enjoy this invigorating experience? We offer three degustation menus, 5 courses ($90), 8 courses ($125) and 12 ($175) courses. The menus can be paired with wines or guests can choose the beverages as they go.

What is the food philosophy behind Roots? As the seasons come and go our dishes change with the flavours and colours of our environment. Ever changing, ever growing our plates mimic the cycles of our mother nature. Everything is made from scratch and sourced as local as possible, our products are from organic suppliers, small producers, biodynamic farms and our own garden. We showcase the incredible commitment of the farmers and growers, also forage ingredients of extraordinarily high quality ourselves.

What type of things are on the menu at present? Every day can be different. Some examples from winter produce are: Jerusalem artichoke, carrot, radish, turnip, daikon, rabbit, leeks, mushrooms, kumara, cauliflower, barley, hazelnuts, walnuts, Wagyu, black foot paua, scampi, fennel, guinea fowl, parsnip, yogurt, pancetta, beetroot, black garlic, Muscovy duck, apple, cabbage, celeriac, long-line caught fish, all our garden and preserve cellar, plus foraged nature! How would you describe your cuisine style? Our kitchen is based on nature’s offering, our lifestyle and our feelings that connect to the produce we are using. We use different techniques from traditional to modern to showcase best the flavour of the ingredient on the plate. What are your favourite flavour combinations? I do not have favourite combinations, I am in search of good flavour. The best flavour can be also expressed by a single carrot picked from the garden at its peak and just eaten then and there. Your dishes are often surprising and impressively original; how do you come up with such appealing and

On a more personal note, what is your proudest achievement? I am proud to be alive. That’s an opportunity for me to do the right thing every day. If you could go back and tell your teenage self something what would it be? Life is to enjoy, not to worry about; never fear anything. adventurous tastes? Our inspiration comes from our life experiences and they are not only my dishes. Everyone is involved in the creation of our menu. Ideas, feelings, flavours, textures, seasons, experiences even dreams can become a dish at Roots. How important is wine matching for you and how to you select your wine list? We love wine, that’s why we serve wine. We only serve wines that have a connection with us, like from small wine producers, wineries that represent our philosophy, and the most important thing for us is that they taste great with the food we serve. The wine list is constantly changing. What do you love most about being a chef? That I can make happy people with what I cook.

What is your favourite drink? Pure water. What were you doing the last time the thought went through your mind, “I shouldn’t be doing this”? I think I told that to myself a long time ago and not anymore, if I have a doubt, I just stop and rethink. I learned that through experience and that is the best way to understand the good or the bad. What is one thing Metropol readers would be surprised to know about you? That I came to New Zealand with 300 euros in my pocket. What do you love to do on a Sunday afternoon? Enjoy my family. What is next on your wish list? A boat.

St Margaret’s College helps Nepal

C

hristchurch schoolgirls who were in Nepal during the devastating April earthquakes have helped raise more than $20,000 for the Nepali recovery effort. Twenty six students and four teachers from St Margaret's College were in Nepal when the 7.8 earthquake hit on April 25. Nearly two months on, the small Himalayan country is counting the losses from its worst natural disaster in recent history. Hundreds of people have attended the St Margaret's fair which raised funds and collected 120 tarpaulins to be shipped off before the monsoon season arrives. St Margaret's College, in conjunction with the Farmy Army, were supported by Mitre 10 stores, the Nepal Friendship Society, Crimewatch and the Himalayan Trust.

Walking improves creativity

S

tanford researchers have found that walking boosts creative inspiration. They examined creativity levels of people while they walked versus while they sat. A person's creative output increased by an average of 60 percent when walking. The study found that walking indoors or outdoors similarly boosted creative inspiration. The act of walking itself, and not the environment, was the main factor.

HENRY HARGREAVES’ thought-provoking exhibition

With a series of photos of food on plates, photographer Henry Hargreaves has given a new meaning to the term, Last Supper.

I

n fact, they are photographs, re-created by Henry, of the last meals eaten by 12 condemned prisoners who were executed in the United States. The photos make up his No Seconds exhibition, which can be seen at the Qb Studios, 18 Bernard Street, Addington, until Saturday, July 25. Other work by Henry on display is a series of photos of maps made up of food from the countries depicted. Raised in Christchurch, with a degree in American studies and film studies from the University of Canterbury, Henry now lives in Brooklyn. Using food as a visual medium to which people can relate, his photography attains artistic levels for which he has won many awards. American prisons have a tradition of serving condemned

men a final meal, served on the day of their execution, which they have requested for themselves, and No Seconds uses this bizarre custom as a window for a societal examination. The results are strangely affecting, often curious and provocative pictures that provide an insight into the humanity and personalities involved in this intrinsically inhumane process. “In my photography, I have always been fascinated by the mix of the mundane and the extraordinary. So while I was reading about efforts to stop the Last Meal tradition in Texas, it sparked my interest,” says Henry. “In New Zealand and, in fact, nearly everywhere else in the developed world, the death penalty is a remnant of an earlier era, So, this little bit of civility – ‘Hey, we are going to kill you but what would you like to eat?’ – jumped off the page I was reading.

Created by Henry and Caitlin Levin, the food maps on display were originally inspired by a passion for travel. “Exploring new places through the food you eat is often a portal to the cultural complexities of that place. In this series, we have taken the many iconic foods of countries and continents and turned them into physical maps,” says Henry. “While we know that tomatoes originally came from the Andes in South America, Italy has become the tomato king. These maps show how food has travelled the globe – transforming and becoming a part of the cultural identity of the place. “This project speaks to the universality of how food unites people, brings us together and starts conversation – just as we hope these beautiful maps will do too.” Although photography had always been a hobby, Henry never studied it. It was while working for four years as a highfashion model for designers like Prada, Yves Saint Laurent, Hermes, Lacoste and Jil Sander, that he decided he wanted to be the guy calling the shots behind the camera. “So I went out and bought a camera and began to play and see if I could get this thing to take nice pictures,” he says.

TRAVELLERS DITCH TRADITIONAL TOURISM Increasing numbers of Christchurch residents are opting to bypass the usual tourist must-sees of Paris and Rome to experience the rural charms of destinations such as France and Italy, according to local travel expert, House of Travel Ferrymead Owner Operator, Christine Hopkins.

p to 70 per cent of House of Travel Ferrymead s customers are opting for European trips that include experiences such as canal boating tours on rural French rivers, cooking classes in small northern Italian villages, or Michelin-star eateries in regional France, says Christine. More and more people want to have di erent and unique experiences, see things that may not be marked on the map, and try living like locals do, so they are skipping the Ei el Tower or the Colosseum. Instead they are heading to small villages in France where they can visit a local market every day for a week, or take cooking classes while staying at a villa in Tuscany. Walking holidays, cycle tours, and canal boat tours are all getting more popular with a broad range of Christchurch travellers who are opting to explore regional areas of Europe, instead of the traditional coach tours, she adds. Hopkins says while these Canal journeys are not always the quickest way to see the country - one French canal boat tour takes nearly a week to travel up a section of river you could drive in 90 minutes - they o er intrepid Kiwis a glimpse into life o the beaten track. Health facility transcends boundaries Longhurst Health rises majestically from its spot on Halswell's Caulfield Avenue; its crisp white tilt panel walls contrasting beautifully against the striking cedar features. A 2,000 square metre complex spread across two levels, Longhurst Health is the local interpretation of the integrated healthcare model – care that transcends the boundaries between primary, community, hospital and social care – a goal of health systems worldwide.

amed after the Longhurst subdivision in which the facility is located, Longhurst Health is split into 11 tenancies, all based largely around a medical theme, while the ground-floor café and playground have cemented the facility's role as a popular community hub. The physical response of Halswell Health owners to three-fold growth predictions for the area, planning for the health facility began prior to the Canterbury quakes, with the natural disasters accelerating the need for more primary healthcare services in the area fast-tracking the facility's development. “The facility was designed to sit comfortably within a suburban

environment but also to integrate with other commercial developments proposed nearby,” Christchurch architect David Childs explains. Being a post-quake development, the

building has incorporated the highest structural standards. It sits on a thick shingle raft, has thick concrete floors and walls and plenty of steel. A central lightfilled atrium forms a key architectural feature of the interior, while high-spec double glazing achieves the contemporary preference for fresh, naturally lit spaces. David Childs Ltd Architect has completed a number of local medical centres, including Riccarton Clinic in 2004 and the original After Hours clinic on Bealey Avenue. He also provided fit-out design services for the General Practice and Dental clinics within the Longhurst development, which was delivered in a

Longhurst Health is the local incarnation of the integrated healthcare model. staged handover by local construction firm Hanham & Philp Contractors from late 2014 through to early 2015. A recognised expert in commercial construction with experience in a wide range of office, educational, industrial, community and heritage work, Hanham & Philp was brought on board on the basis of an earlier P&G and margin tender process, as a negotiated contract with the client. 'Snowverload' Broken River Ski Area

for Canterbury fields Winter storms in the latter part of June brought a mighty 120cm of snow to Mt Hutt and 100cm to Porters Ski Area just before Porters opened on 20 June.

orters, just over an hour west of Christchurch, is a family-friendly ski area for all ages and stages of ability. A new chairlift this season has made its debut with the Easyrider connecting the base to the upper mountain making more of the mountain accessible to those not so confident with other lifts. Methven's Mt Hutt, 90 minutes' drive from Christchurch, is one of the largest and highest ski areas in the South Island. It has a Kids 4 Free deal where children 10 years and under get free accommodation, transport and meals in

Methven when accompanied by a paying adult, plus free lift passes every day at Mt Hutt. Wide-open spaces and amazing scenery are a couple of the drawcards for skiers heading to the fields of Canterbury this winter. Christchurch and Canterbury Tourism (CCT) and its tourism partners are encouraging Australians, North Islanders and Canterbury locals to take to the Canterbury slopes. “Our unique fields are some of the South Island's best-kept secrets,” says Rowan Worner, CCT General Manager

With its soil perfect for growing truffles, North Canterbury is at the heart of the country’s developing truffle industry, with at least 15 truffières (truffle plantations) growing top quality Perigord black, bianchetto and

HALF ROAST GINGER LEMON CHICKEN ON OLIVE BREAD SAUCE Serves 4 WINE MATCH: Selaks Reserve Chardonnay Ingredients: 2 whole Rangitikei free range chickens, size 12 4 lemons 100g ginger root, peeled 60ml extra virgin olive oil 1/2 bottle of Selaks Reserve Hawke's Bay Chardonnay Pinch of salt Pepper to season 2 tbsp pine nuts 2 tbsp flat leaf parsley, roughly chopped Method: Preheat the oven to 180°C. Slice 2 lemons in to thin rings and lay on roasting tray for the chickens to cook on. Cut the chickens in half by cutting down both sides of the backbone with a large knife, remove the backbone and discard. Remove wing tips. Place the half chickens in a bowl. Grate the

ginger, lemon zest and juice of two lemons, olive oil and Selaks Reserve Hawke's Bay Chardonnay in to the bowl of chicken. Season with salt and pepper. Ensure the chicken halves are covered in the mixture. Transfer the chicken halves to the roasting tray, skin side up and lay them on top of the sliced lemon rings. Drizzle any remaining liquid in the chicken bowl over the chicken. Place in the oven for 45 minutes or until an internal temperature of 62°C. While the chickens are cooking, on a separate tray toast the pine nuts in the oven until golden then set aside, be careful as they burn quickly. Once the chicken is cooked remove from the oven and allow to rest for 20 minutes. Transfer to a cutting board and cut each half in two. Pour the remaining cooking juices in the roasting dish in to a sauce jug.

OLIVE BREAD SAUCE Ingredients: 150g butter 2 garlic cloves, minced 1/2 cup milk powder 2 cups Simon Gault Home Cuisine chicken stock 100g sourdough bread, crust removed and cut into cubes 100g pitted olives, finely sliced Method: Melt the butter in a saucepan with the garlic and cook over a medium heat for 2-3 minutes being careful not to brown the butter. Add the milk powder and cook for 2 minutes with the garlic while stirring continuously with a wooden spoon. Add the Simon Gault Home Cuisine chicken stock, sourdough bread cubes and then bring to a simmer for 5 minutes. Remove from the heat and transfer to a blender and process until smooth. “The heart of any cafe is great coffee. Restaurants serve food, bars serve alcohol,” Bink explains. “Cafes have come back to what they were in the 1700s, when they were where artists and bohemians gathered to drink coffee.” Coffee is now treated the same way as wine, with the country of origin, area in which it is grown, and the varietal - and there are thousands of these – and even the season, all relevant to the flavour. “It’s very complex,” Bink says. At its core, creativity is the ability to listen to different needs and ideas and articulate them as a whole. Anyone can come up with an idea, but to generate the right idea at the right

FAQs for a new build How important is site selection when building? Choose sites that are best positioned for sun, make the most of the surrounding landscape and visit the site at different times of the day and weather conditions. This way you will make the most of your site. Can I build any home on any plot of land? Most subdivisions have covenants in place determining what can be built on site. HOW’S THE STANDARD OF OUR HOUSING? The standard of our housing continues to be at the forefront of debate, architect Cymon Allfrey shares his thoughts… Cymon Allfrey

I

n 2014, Dr Lance O’Sullivan was declared New Zealander of the year for bringing health programmes to the rural disadvantaged; an award which saw him present at a number of events, including an architectural conference I attended in the same year. Tailoring his offering to fit his design audience he talked about being proactive and not reliant on symptoms as his driving force behind the establishment of accessible, affordable healthcare. Having identified that cost, access and, to some extent, knowledge were barriers to people seeking medical help, he set about reaching them in a different way. Innovative in his approach through technology he was able to bring a visual presence of specialists to areas, without them having to travel to remote areas. Further to this, he discussed the direct correlation between the quality of our living environment and our health, presenting evidence and case studies that demonstrate that a warm, dry home has a distinct benefit to our physical and (arguably) mental health. As an architect the work we do is driven by how we can stimulate the senses to respond to a space in a certain way.

Through the perception of conditions and the environment we can generate a psychological response. Walking into a space or a home, it is an architect’s intention that a deliberate ‘feeling’ is produced, or you recognise you are in a special space, without necessarily being able to put your finger on exactly what generates this response. The notion and feeling of achievement we get from being house-proud is related to this. There is a sense of self-worth and positive energy that in turn is beneficial to our mental wellbeing. The social engagement of community groups to create communal gardens and beautify recreational spaces has a similar effect, often resulting in a sense of achievement and satisfaction. More often than not, as a design community we don’t get to have relevance where Dr O’Sullivan does, as most architecture is derived from people with means. However, what we as a design community should be addressing is the cost of treating health issues through the remediation and repair work of our nation’s housing stock. No matter what socio-economic group you fall into, we all deserve to be living in warm, dry, safe homes.

We all deserve to be living in warm, dry, safe homes.

When we talk about a ‘warrant of fitness’ for our homes there is a focus on the cost, and a failure to break down the long-term benefits. The cost of improvement to our homes is in many cases significantly less than the cost of care someone would need due to exposure to a poor living environment. Furthermore, if we can add to an individual’s longevity through improved living we are allowing them to contribute to the community for longer, and ultimately are reducing the pressure on other social services. I am firmly of the view that legislation to achieve a common sense outcome is admitting defeat. We should be about to achieve better living environments without government intervention. However, there are too many examples of our homes failing. We are not addressing health through improved housing. We need to readdress our thinking and get it right to ensure we are being proactive and not reactive to the problem. The art of Whether you have an empty canvas or a home full of goodies, it can be daunting work to find your interior design style.

T

he team at Sandalwood Design work with their clients from the very beginnings of a build or renovation, assisting with the initial concept and all the finer details along the way. For many clients this means returning for advice once they have a feel for their home and how they live in the space. “It is all done in steps and stages,” says owner Fiona Renton. “And it needs to be fun – we want it to be a great journey for them.” Building or renovating a home is one of the biggest investments any person will make. Seeking expert advice for interior design will mean that money is saved by getting it done right the first time and an assurance that the completed home will feel great to live in. “We find out what each client’s wants and needs are,” says Fiona, with their consultation taking into consideration the dynamics of the entire family. Sandalwood Design start with flooring and work their way up, building layers of colour, texture and shape into each room and the entire house. The process is very much a collaborative approach, with the team narrowing down the hundreds of fabric or flooring choices to a select few, and also assisting the client with sourcing products. Sandalwood Design offer a range of Design Packages, from 3 to 30 hours, which can be used for any design needs including colour consultancy, wall coverings, space planning, lighting and designing customised locally made furniture, for any space around the home. A taste of Sandalwood Design can be seen from their work at Hallmark Homes in Lincoln, which opens in the middle of July. “We’re really excited to be working with Hallmark Homes,” says Fiona, with the entire look for the show home created by their design team.
