Renowned Chef Clayton Chapman Shines in New “Defining the Edge” Campaign (cont from page 1) Omaha culinary phenom Clayton Chapman, co-owner and executive chef of The Grey Plume in Midtown Crossing, cuts an impressive figure in a new online campaign for WÜSTHOF, a globally-recognized manufacturer of professional-grade knives. In its “Defining the Edge” campaign, WÜSTHOF dubs Chapman “The Artisan,” showcases the nationally-renowned chef in an almost five minute video and explores his source of inspiration, advice for aspiring chefs, required reading and WÜSTHOF blade of choice. One of nine chefs featured, Chapman’s section also includes a video demonstration on how to make goat cheese pasta. You can check out his complete “Defining the Edge” profile at http://www.wusthofedge.com/. Chapman’s The Grey Plume, which sits opposite Marcus Midtown Cinema, features a modern but comfortable eating environment; a fresh, constantlychanging, seasonally-driven menu; and a variety of house-made items including bread, butter, soft cheeses, and house-roasted coffee. It earned national distinction as the greenest, most sustainable restaurant in the United States, according to The Green Restaurant Association. “I think a truly great chef is simply a great leader. A great leader has the ability to inspire those around them, is driven, leads by the right example, is empathetic, disciplined and consistent,” Chapman told WÜSTHOF. A graduate of Omaha’s Westside High School and the Illinois Institute of Art (with an associate’s degree in applied scienceculinary arts), his considerable talents have earned him national recognition. He was among the semifinalists for a prestigious James Beard Foundation Award for the past 4 years in the categories “Rising Star Chef of the Year”(2011) and “Best Chef: Midwest”(2012, 2013, 2014). At age 21, he earned the distinction of becoming the youngest executive chef in the history of Omaha’s upscale V. Mertz.
