Home Stories By Passe Partout: Teamwork makes the dream work ! Twenty years of Passe Partout! Yet, it seems like yesterday… How unbelievable how quickly time flies when you are having fun ;-) I grew up in a warm family with 3 brothers. From a very early age, I already felt like being an entrepreneur – a feeling that grew even stronger when my brother passed away in ’83. In 1998 the dream finally became reality! Together with other shareholders, had started my own company, Passe Partout NV. From the start, I had the urge to be different from what the market offered, and day by day, year by year, we further refined Passe Partout’s collection and DNA. Today, we can safely say that we’ve challenged the status quo of the world of furniture. Passe Partout is well known in Europe, and beyond. We offer a balanced collection of comfortable sofa’s, practical coffee tables, soft and cosy rugs, dining tables and chairs - and past winter we even went so far as to introduce the Low Dining in the residential market. We even have scented candles, and I like them very much ;-) But all this couldn’t have been achieved without the excellence of our people. Our enthusiastic office team in Belgium, our top sales peoples on the road, our professional team in our production unit in Hungary, all of them one by one essential for our success. Furthermore, all of this wouldn’t be possible without the implication of all our stakeholders, both customers and suppliers, whose specialist knowledge in their field have helped us to improve every day. And of course, none of this would have been possible without the continuous and unconditional support of my family at home. All these people enjoy my utmost respect, and I’m deeply grateful for them to work every single day on our story, ‘together’ we’re making this amazing story called Passe Partout! Many thanks to my co-shareholder Philippe for his belief in us, and the unwavering support from his team when we need it. We’re very grateful to you, dear reader who is about to explore this book. cup of illy coffee is the final act in a long and varied journey. It is the end-product of a veritable obsession with quality that began all the way back in 1933, the year when Hungarian born Francesco Illy chose Trieste to start up a business based on one simple idea: to offer the finest coffee in the world. That business is illycaffè. To this day, the company is still run by the Illy family: Anna, Ernesto’s wife and Honorary Chairman of illycaffè, and their children Riccardo, Anna, Francesco and Andrea, who is the company’s Chairman. Massimiliano Pogliani, who became illy CEO in 2016, is the first non-family member to hold this post. The company has built up a vast universe of intelligence, experience, taste, science and art around the pleasures of a perfect cup of coffee. Worldwide, illycaffè produces and sells a unique blend of premium coffee made out of nine types of pure Arabica.

Company founder Francesco Illy was behind one of the radical innovations that revolutionized how we have made, considered and tasted coffee since the twentieth century: in 1935, the â&#x20AC;&#x153;Illettaâ&#x20AC;?, the forerunner of todayâ&#x20AC;&#x2122;s professional espresso coffee machines, and one year before, in 1934, the pressurization, which replaced the air in packaging with inert pressurized gas. This system captures the aroma of freshly-roasted coffee, maintains its freshness within the packaging and heightens and refines these qualities over time. It was pressurization that made it possible to export coffee beyond the area of production, enabling the company to pursue its international vocation.

Twenty-five years ago, Francesco Illy had the brainwave of inviting a group of artists to express their creativity on the outside of an espresso cup that Matteo Thun had designed for illy. The resulting illy Art Collection transformed an everyday object into a blank canvas. Over the years, more than one hundred internationally renowned artists have worked on this canvas, from Michelangelo Pistoletto to Marina Abramović, from Anish Kapoor to James Rosenquist, from William Kentridge to Yoko Ono, Gillo Dorfles, Robert Wilson and Maurizio Galimberti.

n the spring of 2018, Brewery De Bock officially opened its doors. The micro-brewery with accompanying tasting room is a new initiative of Belgian brewing engineer Pieter De Bock. With an extensive career within the Brewery World, Pieter creates dozens of new beer recipes for customers in Belgium and abroad each year, of which multiple turn out to become award-winning creations.

He still found enough creativity and passion for his own brewing project, which started in 2015 with the launch of Remi Blond. The traditional specialty beer which knew immediate success and grew into a popular local product in Beveren and the nearby region. Remi Blond serves us traditional craftsmanship combined with a modern touch. Not only is the intense hoppy aroma a tribute to the rich Belgian beer culture, it also honours the grandfather of its brewer Pieter de Bock. Because he was fond of a pleasant bitter aftertaste. Thatâ&#x20AC;&#x2122;s why Remi blond is a perfect thirst quencher with a slight hint of nostalgia. Delicious at any time of the day, all year round.

As a second creation followed Den Engel. This ruby coloured IPA is a winged beer which stands with both feet firmly on the ground. The refined balance of its medicinal hop infusion ensures a harmonized taste and a fresh aroma. Listen to the angel on your right shoulder and let yourself be immersed in the heavenly taste of this intensely hoppy flavoured beer.

BELGIAN WHITE GOLD:

ASPARAGUS T

he typical Flemish asparagus is white, as it is grown covered in soil to prevent photosynthesis. This prevents the asparagus from turning green and results in a taste that is a little sweeter and much more tender than green asparagus. It is generally harvested from late April to early June. In Flanders, due to the short growing season and demand for local production, asparagus commands a premium and the asparagus season is a highlight of the foodie calendar. It is often nicknamed â&#x20AC;&#x153;white goldâ&#x20AC;?. Only young asparagus shoots are commonly eaten: once the buds start to open, the shoots quickly turn woody and become strongly flavoured. The shoots are prepared and served in different ways around the world, typically as an appetizer or a vegetable side dish.

RESTAURANT HERBERT ROBBRECHT – – ASPARAGUS RESTAURANT 2018 Being selected as the Asparagus Restaurant 2018 makes Herbert feel particularly appreciated. When it comes to asparagus, he doesn’t serve dishes with only this ‘white gold’ vegetables. He loves to combine them with exclusive ingredients, but with the asparagus setting the tone of the dish. He has been preparing asparagus the same way for 24 years: he makes a bouillon of the white peel and uses this again to cook the asparagus itselves. A simple technique that works every time.

Pertuis asparagus, sea bass tartare, king crab and green herb sorbet

INGREDIENTS: avocado cream, Vene cress, Shiso Purple cress, asparagus shoots, nasturtium leaf, finely grated bottarga, 2 Pertuis asparagus stalks, 1 raw king crab claw, algae mayonnaise, wasabi mayonnaise.

FOR THE SEA BASS TARTARE: 25 g sea bass per person, dashi, soy sauce, rice vinegar with Bonito tuna, lime juice, dill, chives, pepper, salt. For the herb sorbet: 40 g lime juice, 360 ml water, 120 g sugar, 60 g Procrema stabiliser, 50 g blanched green herbs (dill, parsley, basil, etc.).

PREPARATION: For the tartare, cut the fish into small, equally-sized dice and season with the other ingredients. Fill a ring with the tartare and press down firmly. Arrange the asparagus around the tartare. Cook the king crab claw sous vide and arrange on the tartare. Combine all the ingredients for the sorbet and freeze in Frix cups. Garnish the dish with the herbs and mayonnaises.

‘RACE IN STYLE: MILLE MIGLIA’

ille Miglia under the sign of the Freccia Rossa (Red Arrow) is symbol of Italian excellence in the world. The race is able to combine tradition and innovation, sportiness and elegance, internationality and Italian lifestyle. Creativity, pragmatism, excellence, uniqueness, charm and tradition are the positive values that characterize 1000 Miglia, the classic route to Rome and back.

Respecting the tradition which dates back to 1927, the route will start and end in Brescia, travelling through half of Italy before and after the turning point in Rome. Four laps will cover 1,700 kilometers of Italian roads characterized by evocative and artistic landscapes, with the involvement of 440 vintage cars of extraordinary historical, technical and sporting value, belonging to 72 different car companies. Participation requests for the “unique traveling museum in the world”, as 1000 Miglia has been described by Enzo Ferrari, are constantly growing. All the owners of cars that meet the necessary requirements will be able to submit their candidacy to participate in the thirty-sixth (editions 2018) reenactment of “the most beautiful race in the world”.

Vehicles of which at least one specimen was registered in the Mille Miglia speed edition (1927-1957) can be entered, in one of the models on the list of candidate cars published on their website. 440 vehicles will be allowed to race: in order to be selected, registered cars must have at least one of these documents: ACI-CSAI (Italian Automobile Sport Commission), Htp FIA (Historic technical passport issued by the Fédération Internationale de l’Automobile ) or FIVA ID (Identity Card of Fédération Internationale des Véhicules Anciens). Registered cars will be selected by a special commission consisting of experts nominated by 1000 Miglia Srl and by international technical commissioners from the FIVA Technical Commission.

The 725 crew members registered to the race (2018) come from 44 different countries all over the world. The applications coming from Italy still represent 28% of the total. The Netherlands take the second place, followed by Germany and the United Kingdom. The number of participants from Belgium, the United States of America and Japan is growing year after year. The most represented car company is Alfa Romeo with 47 cars, followed by Fiat with 42, Jaguar with 34 and Mercedes-Benz with 33.

eert Pattyn has been a self-employed floral designer for twenty years. Before that, he worked in a flower shop, after a training period in three different shops. You can find his workshop on the farm in Geluwe, where he grew up. He likes living and working in his parental home. â&#x20AC;&#x153;This is a rural place, quiet and pleasant. I have got the space here to prepare and realize big as well as small jobs. Even when I was young, I already had my own botanical garden here in which I made all kinds grow and thrive. I am still grateful to my parents because they passed the love of nature on to me.â&#x20AC;?

Geert is well-renowned, nationally as well as internationally. The past few decennia, his reputation has grown by him giving demonstrations and workshops, taking part in competitions, collaborating with Fleur Creatief magazine, transferring his knowledge to others and gathering a faithful core of clients. For Geert, the nice thing about his job is the variation. “Not only variety in everything I do, but also the change of season is something I find terribly beautiful. In Autumn I work a lot with branches and fruit. In Spring I look forward to the buds and spring bloomers. My customers know I prefer to work with seasonal materials; they won’t ask for sunflowers in Winter. The bond with my regular clients is very strong.” You can define Geert’s style as pure, simple and natural. That is what Be-Chocolate is all about. It started out as a hobby, but it is getting better and better all the time... Two passionate hands work on the most beautiful and delicious chocolate creations for five years now. This couple emerged as real entrepreneurs in their own chocolate business. With craftsmanship and intense care, each praline comes from the heart, from the filling to the final product. Truffles, trail mix and orangettes are traditionally crafted in the studio beside the store. In recent years, a range of logo pralines has been added with great success. Business and private customers are eager to snap up the most delicious pralines with a personalised logo. They are a great way to make birthday teas, anniversaries, first communion parties and other celebrations even more personal. Also the Passe Partout chocolates are made out of those 4 hands. You can taste them at every fair and event. A praline made with love tastes twice as delicious.
