Ahoy ther me hearties! It seems like everyone is talking ‘Pirate’ these days, as the anticipation builds for the launch of the Black Pearl pirate ship. This fully sailable square rigged galleon is a replica of the famous Black Pearl in the Pirates of the Caribbean films. 1st June saw the opening of the restaurant at the Half Crown Rocks. Andy McKnight a trained chef treated the first diners to a lavish three course meal with three options of meat, fish and vegetarian. The Three Crowns in Nabq which has now closed became famous for its tag line Sharm el Steak – now Sharm el Steak is back in the Half Crown Rocks. World class squash success in Sharm el Sheikh for Welsh star Tesni Evans. Welsh wonder;Tesni Evans won the prestigious ÂŁ25,000 international squash tournament held in Sharmlast month. The 22-year-old ace was seeded seventh, but defeated Egyptian opponents in the last eight, semifinals and final to win the first World Professional title of her career. Earlier in the tournament Tesni topped the number four seed and world number 19 Salma Hany Ibrahim of Egypt 3-2 in a monster quarter-final battle that took 85 minutes to resolve. Rezidor announces new general manager for Park Inn by Radisson and Radisson Blu Resort, Sharm El Sheikh Erwin Popov joins the Rezidor Hotel Group as general manager overseeing both Park Inn and Radisson Blu Resort, Sharm El Sheikh in Egypt. Popov, a Swiss national, started his career in the hospitality industry in 1987 as executive souschef at Fiesta Americana Villas & Plaza in Cancun, Mexico. In the following years he pursued his career working across different continents in

various hotel positions mainly within food and drink. In 1998, Popov was appointed director F&B at Holiday Inn Vinogradovo in Moscow, Russia. He then took on the role of food and beverage director for TUI Iberotel Grand Sharm Hotel. In April 2000, he returned to Moscow as executive assistant manager in charge of the F&B Department for Swiss Gourmet Wings & Partners Ltd., a hospitality management and solutions company. Popov has most recently been working as general manager for Red Sea Hotels Group, Red Sea Riviera in Egypt since 2005.

The Gathering’ event returns for 2015 Once again, friends old and new came together for the Sharm El Sheikh ‘Gathering 2015’. Its spring time in Sharm or more like summer with temperatures soaring to unusual highs, but this doesn’t seem to hinder or heed the equally soaring interest of cycling. Have you noticed there are more and more of us; cycling is fast becoming the new fitness challenge in Sharm and what a fantastic place to do it. One of the pioneers of cycling in Sharm and an advocate for its benefits is Mostafa Omar. His name, inspiring posts and photos are popping up everywhere and his passion and enthusiasm for cycling is catching. Mostafa first came to Sharm in 2012 as the Landscape and Irrigation project manager of the City Stars Golden Cost in Nabq. After living in Qatar, Cairo and Dubai he found the large open areas of the national park and fresh clean air rejuvenating, so started to cycle. Word got around and it wasn’t long before he embarked on his first sport ride when he was invited by Prince AlWalid Bin Talal Bin Abdulaziz Al Saud team from Saudi Arabia to join him for a cycle ride from Four Seasons/ 10

Meanwhile at the other end of town the Governor of South Sinai and the City Council have also embarked on a journey to promote and encourage cyclers with the construction of the cycle path. Any new cycler will sympathize with those first few wobbly days when you are just getting your cycle legs and balance sorted out. At this stage the added anticipated danger of traffic can put you off. The new cycle path makes travelling from ‘old market’ (coming soon) to Naama Bay a safe and easy passage. More and more residents are opting to commute to Naama by bike rather than by taxi or bus. MIX June 2015


This was exactly the case for myself and Jilly Healey who after biking to Naama and back on a daily basis decided to ‘bike hike’ for charity. On the 29th May both of us set out at 5am from the entrance of Ras Mohamed National Park and rode 40km against the wind to the entrance of Nabq Protectorate through the Sinai desert. We raised £2,240 GBP for BrainsTrust the chosen charity of Carrol Flowers a long term and much loved resident of Sharm who is currently fighting the disease. Mostafa’s campaign to get people cycling is putting bottoms on saddles and he now has a large following even offering night cycling. Due to his determination, love of Sharm and the sport; he has now joined forces with Soho Square and on the 15th May organised an event to

cycle from Soho Square to La Strada and back. Lots of new cyclers joined him, however he is keen to advertise the sport and the sponsors Soho Square and Turkish Airlines rather than put the emphasis on who is cycling. As the popularity gains momentum Mostafa is aware that there is a lack of quality cycles and accessories available in Sharm. In answer to his dilemma to provide quality bikes the Spanish cycle experts Orbea have now sponsored him and made him the official supplier in Sharm. As Mostafa says; a professional bike dramatically improves your performance; making cycle distances achievable, more comfortable and less strain. Whether you want to ride alone or join Mostafa and Soho’s cycle challenges the

sport offers many fitness benefits. Cycling is one of the easiest exercises without the need of a high skill level – once you have learnt, you don’t forget. All you need is a bike, half an hour when it suits you and a bit of confidence.

ACTIVITIES Some ladies may think cycling just builds stocky leg muscles; fact is that cycling builds strength in a holistic manner as every part of the body is involved; upper and lower body muscles, stomach muscles, heart, lungs and cognitive function for balance. The other major benefit is it improves muscle tone gradually without the risk of over exercise or strain. It helps with mobility of the knee and hip joints but is nonimpact so doesn’t stress the joints. If you’re looking to burn calories cycling is the perfect exercise to do it. It steadily burns approx. 300 calories per hour. From an article on the net it says that if you cycle for 30 minutes every day you would burn 5 kilos of fat a year and because it builds muscle your metabolic rate is boosted long after you finish your ride, plus you get ‘buns of steel’. One of the benefits that Mostafa connects deeply with is that cycling reduces stress. He talks quite openly about when he arrived in Sharm. He had a personal tragedy; coming to Sharm helped him. As most of the long term residents know; Sharm has a very special karma and a healing energy. Being able to cycle in the open air in Sharm’s beautiful nature helped to heal him and get him out of depression. We all know

that exercise increases the ‘happy hormones’ endorphins which in turn make us feel better, add this to a caring compassionate community and you are suddenly on to a winning streak and power pedalling all the way to a happier healthier lifestyle. If you haven’t joined the cycle crew yet and want to try but don’t want to buy a bike; Mostafa can offer options to borrow or hire. Cycling is fun, its great exercise and promotes Sharm el Sheikh as a green eco-city – so want are you waiting for; let’s cycle.

You may of heard a whisper round town about Sharm’s best kept secret? Well after a little sprucing up this Sharm secret is ready to reveal it’s self – we’re talking about Shark’s Bay Umbi Restaurant. It’s been there for decades but somehow this little treasure gets forgotten as for us ‘city dwellers’ it seems to be off the beaten track; in reality it is just up the road. However once you have re-discovered this gem you won’t forget it again.

track you need to go deep into Shark’s Bay – literally only 1 minutes’ walk. The restaurant is tucked away and set on a raised veranda right on the beach. There is a beautiful sandstone cobbled floor, cute wooden and tile tables and pretty lantern lighting which all add to the rustic ambiance and true Bedouin feel. This is not a tourist trap of ‘let’s pretend to be Bedouin’ this is the real McCoy. In fact you are dining at the table of one of the most renowned Bedouin families of Sinai.

One of Sharm’s best assets is her beautiful coastline and sea; so many restaurants claim they are seaside, but few are so close that you can hear the gentle lapping and swish of the waves within earshot of your table. At Shark’s Bay Umbi restaurant there is no need for music; the sensational sea creates her own symphony which makes the most romantic mood, whether you are dining with your loved ones (friends and family) or just dining with you loved one.

It is highly unlikely that you will want to dine inside as the terrace and sea symphony is the most amazing setting, but if you fancy something a little more enclosed and cosy then there is an indoor dining room with a beautiful natural rock feature wall, ambient lighting and pretty décor – see if you can spot the subtle stencilled Gecko.

When you arrive at Shark’s Bay make your way along the beach on the left side. As this is Sharm’s best kept secret, it makes sense that it is tucked away and a little hidden – so keep going. Go past the first restaurant at the entrance, past the beach bar, past the shops and past Umbi’s dive centre and when you see the Bedouin tent go a little further. Yes that’s right if you want tranquillity, away from the hustle and bustle of Naama Bay, off the beaten

So now you’re sitting in Sharm’s best kept secret and possibly the most chilled out location, what is there to eat? Well as this is a Bedouin restaurant there is always a good selection of freshly caught fish and seafood which is always excellent. When we went to dine we asked the friendly waiter what was fresh that day. He came back to our table with a platter of two types of fish which were bright eyed and pink gilled. Some seafood restaurants will have a

massive selection of fish with over ten different types to choose from, but think about it – if it is freshly caught by Bedouins then it makes sense there would be less variety but fresher quality, as this fish is definitely not trucked down from The Med. With a little chat with the waiter, who happily gave us advice of how much to order per person, we ordered two grilled fish, shrimp and calamari plus rice, salad and bread. Now here is another distinction – have you ever tried local calamari? Oh yes there is a difference and once you have tried it you won’t want to go back to the other imported one. It is so sweet and succulent with a tender texture and amazing taste. Whilst the waiter went off to place our order with the Chef, we were served chilled white wine and water. Sitting by the sea under the moonlight it seemed like only minutes before our freshly cooked fish was delivered to our table. main menu you can choose dishes such as Steak au Poivre, Seafood a la Crème and Sweet and sour chicken. Don’t miss the ‘menu of the day’ as this features some of his latest creations like Chicken with Cashew nut sauce and an absolutely to die for freshly baked and zingy Lemon Tart. Our fish and seafood was plentiful, the taste was delicate and divine. The fish was cooked to perfection and even my ‘fish-bone phobia’ friend was pleasantly surprised at how easy it was to fillet the fish tableside. To finish our sweet evening we were served a fresh fruit platter – once again simplicity at its best – juicy watermelon, grapes, honeydew and orange slices, the perfect finish to our meal. Shark’s Bay Umbi restaurant is also open for lunch. The menu is extensive, there are pasta dishes, pizza, burgers, sandwiches and salads – all perfect for lunch time treat. Also I can’t forget the tasty Tagines – this is a delicious tomato stew cooked with either fish, shrimp or calamari. I could ramble on and on about the delights of Sharm’s best kept secret, but the best thing to do is go and discover it, but please keep is ‘Shhhhhhhhhhhh’ as we don’t want any din and definitely don’t want to spoil the secret or the sea’s symphony. 19

He started working as a Chef Assistant Steward in Sharm at the age of 20. This brief introduction into the world of cooking cemented his believe that working with food was his destiny. He wanted to develop his talent so moved to Cairo and became the Chef of Spectra where he started to develop and improve his techniques especially with Italian food. Apart from his passion for Italian and Egyptian food his second passion was to live in Sharm, so when the opportunity came up to return he followed his dream without hesitation. As Ramadan is coming soon, he chose one of his dishes which is international but could be also suitable for Iftar…chicken fajitas

- 150gr chicken breast - Mix of pepper (green, red, yellow) - 130gr fresh mushroom - 90gr onions. - Soya sauce - Fajita sauce

To prepare the chicken for the grill, simply add all above ingredients with the chicken breast and leave to marinate for 15 minutes Then take the chicken breasts to grill for 5-7 minutes

For preparing chicken: - Vinegar - Onion water - Black pepper - Lemon

Cut pepper and onions for medium size and mushroom Put some oil in the pan and heat, add all the mushrooms, peppers, onions in the pan for 3 minutes then add the chicken from the grill and cook both for 4-5 minutes. If you have skillet plate it must be heated on a high heat for 10-12 minutes, so when you add the chicken to the skillet it will make delicious smelly smoke aroma just like the restaurant. 21

amadan is the ninth month of the Islamic Hijri (lunar) calendar. Each new month of the calendar begins when the new moon is sighted, which lasts for 29 days. This means a year is 354 days, and why Ramadan starts approximately 11 days earlier each year when the new moon is sighted.

During the month of Ramadan it is believed that Prophet Muhammad (PBUH) received a visit from the Archangel Gabriel, who revealed the 114 surahs of the Quaran. This is why it is a month devoted to the Muslim faith; it is also believed that during the month of Ramadan all your sins can be burnt away, if you are devout. Every day during this blessed month of Ramadan, Muslims all over the world abstain 28

from food, drink, and other physical needs during the daylight hours. It is a time to purify the soul, refocus attention on God, and practice self-sacrifice, Ramadan is much more than just not eating and drinking. Muslims are called upon to use this month to re-evaluate their lives in light of Islamic guidance. We are to make peace with those who have wronged us, strengthen ties with family and friends, do away with bad habits and essentially clean up our lives, our thoughts, and our feelings. The Arabic word for “fasting” (sawm)literally means “to refrain” - and it means not only refraining from food and drink, but from evil actions, thoughts, and words.

During Ramadan, every part of the body must be restrained. The tongue must be restrained from backbiting and gossip. The eyes must restrain themselves from looking at unlawful things. The hand must not touch or take anything that does not belong to it. The ears must refrain from listening to idle talk or obscene words. The feet must refrain from going to sinful places. In such a way, every part of the body observes the fast. Therefore, fasting is not merely physical, but is rather the total commitment of the person’s body and soul to the spirit of the fast. Ramadan is a time to practice self-restraint; a time to cleanse the body and soul from impurities and re-focus one’s self on the worship of God. During the Holy month of Ramadan you will probably see that most hotels and restaurants are serving a sunset buffet called Iftar, but what is Iftar? The word means breakfast or more precisely breaking the fast, and is the first meal to be served once the sun has set following the day light hours of fasting. There are many traditional foods eaten at this time and it is nice to join one of the hotel sunset buffets to experience the joys of a traditional Iftar. Typically the meal starts with a healthy drink of milk infused with fresh dates. The main course consists of a lavish feast of mashi – which are various vegetables like courgettes, peppers, and aubergines stuffed with meat and rice, a meat goulash, rice with noodles, potatoes sliced and cooked with tomatoes and onions, salad, and torshi – mixed pickeles. Save room for some sweets as these are always plentiful during Iftar, you will find such delicacies like Konafa – shredded wheat with nuts or cream drenched in honey syrup, Kataef – mini pancakes stuffed with nuts, deep fried and served with syrup, and Khoshaf a dried fruit desert made from apricots, prunes, or dried figs. Some hotels will follow the tradition of serving for the first 10 days white meat dishes, then red meat dishes, with the final 10 days fish. The time of Iftar changes very slightly throughout the month following the change in time of the sunset. For more information on Islam and Ramadan you may wish to visit one of the cities Islamic sights El Mustapha Mosque (one of the Prophet Mohamed’s names (PBUH)). How long does it take to put together a new idea and do you always ‘think out of the box’ or sometimes is it easier to just to do the norm?

Currently we are performing our show called Fire & Ice. We are just in the process to do some new acts and are constantly trying to reach the level higher. For three months we have been working every day 7 days per week with 2 to 3 shows per night. It is a lot but if you can make your passion as your job it is great and very rewarding. To be on stage is addictive. I always try to mix different styles into my shows. Currently I have a great fire performer and an amazing classical ballerina. I believe this is what makes the shows more interesting as there is something for all tastes. As we work in different stages it is very important to be fast and adaptable to any situation. I always want to make more than the ‘norm’. Of course we are mainly performing in hotels, so sometimes I have to be realistic as some of my ideas would be suitable for a theatre but not for a small

Do you have a favourite place to perform or does it depend on the show? I think your performers have to be very adaptable; one minute you are on a stage the next dancing ‘barefoot’ at the beach – how do you successfully change the ambiance of the show to suit the setting and the people? There are stages where it is easier to perform. A nice backstage with mirror and enough place to stretch before the show and a nice floor to work on is always great, as we dance almost all of the

shows barefoot. However the most important thing is the audience. If we feel they are giving us their full attention and appreciate our show we give them everything. We have one day where we start on the smallest stage in Sharm, then we switch to a huge space and end up in the sand for a beach party. Days like that are normal for us, we adapt; this comes with experience. We have done our show in a parking place, in a lobby of a hotel and next to the swimming pool; nothing can stop us to perform. It is all about the right attitude, perseverance and love for our job. I always say to my team if you can dance in Sharm you will be able to perform everywhere. Lastly where can people watch one of your performances? And finally what’s in store for Barefoot in the future? I think the list would be too long but people can contact me directly to know the location and times. I am working on a new project something never seen before in Sharm but will keep it as a secret until we are ready. Sharm is an amazing place and has become my second home so I will keep on pushing for artistic shows and believe that arts are very important in this city.
